Abstract

The purpose of this study was to analyze the effect of canna flour substitution as much 25%, 35% and 45% on quality of choux paste in terms of shape, color, aroma, texture and taste. This type of research is an true experiment with the completely randomized design method (RAL) and three repeats. The source of data in this study was obtained from 3 expert panelists. The tool used in taking data is in the form of questionnaires containing questions about the quality of choux paste. The data was analyzed using ANAVA, if Fcount ≥ Ftabel then continued with the Duncan test. The results showed that there was a significant effect choux paste of canna flour substitution between 25%, 35% and 45% on the quality of thes, namely on the quality of the dark brown color of the out, and light brown on the inside of the choux paste, the aroma of canna scented choux paste. The quality of the shape (round, neat and hollow), crunchy texture on the outside and soft on the inside, savory taste has no effect on the quality of the choux paste. The best canna flour choux paste quality test results are in X3 treatment with canna flour substitution as much as 45%.Keywords: Canna Flour, Choux Paste, Quality

Abstract

This research aims to analyze the potential micronutrient content in traditional foods in West Pasaman Regency as an effort to prevent stunting in children. The research method involves collecting traditional foods commonly consumed by local communities and analyzing them to identify the content of micronutrients such as vitamins, minerals and other important nutrients. The research results show that traditional foods that are widely consumed in West Pasaman Regency have great potential in providing essential micronutrients for children's growth. A number of traditional foods are high in vitamins A, D, E and K as well as minerals such as iron and zinc, which are important for healthy growth and development. Analysis of traditional foods also revealed the presence of antioxidant compounds that help protect the body from cell damage and can play a role in preventing stunting in children. These findings highlight the important role of traditional foods in providing the micronutrients needed to prevent stunting. The implications can support the promotion and increase in consumption of local, nutrient-rich foods in West Pasaman Regency as part of a strategy to prevent stunting in children.

Abstract

This research aims to learn deeper knowledge about traditional food products in Kec Kubung, Solok Regency. The research was carried out in October-December 2022 in the Kubung District, Solok Regency. To prevent the loss of these traditional foods, efforts are needed to preserve and introduce traditional food products to the current generation. The purpose of this research is to identify the types of food, materials used, and learn how to make traditional food. The type of research used is a mix method (qualitative and quantitative). Research data obtained from two ways, namely primary data and secondary data. Where the primary data is by identifying the types of traditional food, the ingredients used, and the way of making traditional food in Kec Kubung, Kab Solok, while secondary data is in the form of regional demographics in Kec Kubung, Kab Solok. Data collection techniques are carried out by observation, interviews, and documentation. Data analysis in the field by reducing data, presenting data, concluding then verifying. The conclusion from the results of the study is that traditional food in Kec Kubung, Kab Solok, is food that has been around for a long time. The materials used are self-developed food ingredients. As well as the equipment used is daily cooking equipment but still has a characteristic, namely the stove which is arranged in a triangular shape using wood.

Abstract

This research was motivated by several complaints from guests regarding the ethics and responsiveness of waiters while on duty at the Mentawai Restaurant Hotel Pangeran Beach Padang. This research aims to analyze the ethics and responsiveness of waiters in breakfast service at the Mentawai Restaurant Hotel Pangeran Beach Padang. This research is useful as considerations and suggestions regarding waiter ethics and responsiveness.This research method is descriptive quantitative. The population in this study were all guests staying at the Pangeran Beach Hotel Padang. The sampling technique in this research was Non Probability Sampling with the accidental sampling method and obtained a sampel of 372 respondents. The data used is primary data and secondary data. Data were collected in this research by distributing questionnaires, and the trial sampel for this research was 30 people. Instrument testing uses validity and reliability tests. The data analysis techniques in this research are data tabulation and data description.The results of the research that has been carried out show that the waiters at the Mentawai Restaurant Hotel Pangeran Beach Padang have good ethics (89%) and responsiveness (89%), however there are still 2 to 3% of waiters who do not have good ethics and responsiveness. The Prince Hotel should remind employees to have good ethics and responsiveness when working and provide training regarding etiquette and responsiveness with external sources from the hotel or company.

Abstract

This research was motivated by the use of fish as the main ingredient in making sausages which are still rarely found. Tilapia is one of the leading sources of animal protein in fisheries in Indonesia because of its easy cultivation. The addition of soy protein isolate and porang flour in this study is as a binder and sausage filler.  The purpose of this research was to analyze the organoleptic properties of tilapia sausage with the addition of soy protein isolate and porang flour. This study used a Complete Randomized Design method (RAL) with 4 treatments and 3 repeats. The research data was obtained from organoleptic tests by 5 limited panelists in May 2023 at the Culinary Workshop of Padang State University. Data were analyzed using Analysis of Variance (ANAVA), if Fcount > Ftable then Duncan's Test was continued. The results showed that there was a significant influence on texture. While shape, color, odor and taste did not show a significant effect. Overall, the best results of this study were found in X2 treatment with the addition of soy protein isolate and porang flour 1: 1.

Abstract

This research was motivated by the discovery of different methods for making pies so it needed to be tested to see the quality produced using the rub-ib and blending methods. The aim of the research was to determine the comparison of pie crust quality using the rub-in and blending methods. This type of research is pure experiment using the Independent Sample T-test method. The research was carried out by providing an organoleptic test format to the panelists. The data obtained is then tabulated in table form and a level test is carried out on each variable X1 and X2 to find out whether there is a quality comparison for these variables. The results of the research show that there is no significant influence on the quality of the shape, color, aroma, texture and taste of the pie crust, for the quality of the shape (neat) it has an average value of X1 (2.77) and X2 (3.78), quality shape (uniform) X1 (4.00) and has an average of X1 (3.67) and X2 (3.78), while the average value for texture quality (dry) has an average of (crispy) has an average value of X1 (4.00) and X2 (3.67), finally for taste quality (savory) has an average value of X1 (4.00) and X1 (4.00).

Abstract

This research is motivated by the lack of predictions about the level of sales of randang products in gift shops, resulting in products that take a long time to sell and reduce product quality. There is a decrease in consumers shopping at certain times. This research aims to describe consumer preferences for randang products in souvenir shops in the city of Padang. This type of research is descriptive with quantitative data. The sampling technique in this research was Proportional Random Sampling which came from 3 souvenir shops in the city of Padang. The selection of respondents was carried out randomly, namely those who had shopped at the souvenir shop amounting to 100 respondents. Data collection for this research was carried out by distributing questionnaires designed based on a Likert scale. The results of the research show that consumer preferences for randang products in souvenir shops in the city of Padang show a respondent achievement level of 86% in the very high category. In terms of price indicators, respondents said that the prices offered were very affordable. The consumer service indicator said it was very good at serving. Finally, in the taste indicator, respondents said that the taste of each souvenir shop was very delicious and had its own characteristics.

Abstract

This study aims to learn more about traditional food in West Pasaman District. The type of research used is a mix method (qualitative and quantitative). This research data was obtained from two ways, namely primary data and secondary data. Primary data was conducted to identify the types of traditional food, ingredients used and traditional food processing techniques in West Pasaman District. While secondary data is in the form of demographics of West Pasaman District. Data collection techniques are carried out by observation, interviews, and documentation. Data analysis is done by reducing data, presenting data, and concluding. The conclusion of the research results is that traditional food in West Pasaman Regency is a typical food that has existed for a long time. The ingredients used are food ingredients developed by yourself. As well as traditional food processing techniques that are typical in West Pasaman District.

Abstract

Muffins are a type of bread without yeast that are made in personal sizes and can be eaten in just a few bites. Muffins that are generally developed at this time are classified as quick bread because they use chemical raising agents that can react quickly as a substitute for yeast which is a biological raising agent that reacts more slowly. In this research, the main ingredients in making muffins are wheat flour, sugar, eggs, fat, baking powder and liquid. Jicama flour is flour that comes from jicama tubers that are dried, ground, then sifted to become flour. Currently, there are many innovations in muffin recipes both in terms of taste and raw materials for making them. The city of Padang is the area that produces the most jicama in West Sumatra, but it is still limited in terms of processing because jicama is usually only consumed fresh. Thus, to optimize the processing, especially for jicama fruit which is no longer attractive to sell because the skin color has started to turn black, the author wants to use it by processing it into flour which will be substituted in muffins.  This research aims to analyze the effect of 15%, 30% and 45% substitution of jicama flour on the quality of shape, color, aroma, texture and taste of the muffins produced. The type of research used in this research is pure experiment (True Experiment) with organoleptic tests. The research was carried out 3 times with 4 treatments each and tested on 3 expert panelists. Then the data obtained was tabulated in table form and analysis of variance (ANOVA) was carried out. If they differed, they were tested using the Duncan Multi Ranges Test (DMRT). Then data analysis is carried out, if the data obtained by Fcount is greater than Ftable then proceed with the Duncan test. Muffins with jicama flour substitution had the best results at 15% treatment (X1).

Abstract

Penelitian ini dilakukan berdasarkan dari pengamatan peneliti di Kampoeng Lega Café mengenai kepuasan tamu dan kualitas pelayanan. Penelitian ini dilakukan berdasarkan beberapa fakta masalah mengenai kepuasan tamu dan kualitas penelitian di Kampoeng Lega Café. Penelitian ini bermaksud untuk melihat bagaimana kepuasan tamu, kualitas pelayanan dan bagaimana pengaruh kualitas pelayanan terhadap kepuasan tamudi Kampoeng Lega cafe. Jenis penelitian ini adalah kuantitatif dengan metode asosiatif kausal. Populasi pada penelitian ini adalah karyawan Kampoeng Lega Café. Sampel penelitian berjumlah 100 orang tamu. Metode pengambilan sampel adalah non probability samplingdengan jenis purposive sampling data penelitian ini menggunakan data primer yaitu dari penyebaran kuesioner dan data sekunder yaitu jumlah tamu di Kampoeng Lega Café. Penelitian ini dilakukan dengan menggunakan kuesioner yang berisi 67 pernyataan yang telah di uji validitas dan realibelitasnya yang dibagikan kepada tamu Kampoeng Lega Café. Data yang diperoleh dideskripsikan dengan uji persyaratan analisis dan juga pengujian hipotesis dengan uji regresi linear sederhana dan koefisien determinan menggunakanSPPS 20.00. Hasil penelitian diketahui variabel kualitas pelayanan kerjadi kategori baik (73,72%). Variabel kepuasan tamu di kategori baik(74,29%.). Uji regresi linear sederhanasebesar 35,986 nilai signifikan sig 0,000<0,05. Nilai R square 0,259. 25,9% kualitas pelayanandapat mempengaruhi kinerja karyawan dan 74,1% yang mempengaruhi kepuasan tamuadalah faktor lain. Nilai t sebesar 5.848dengan nilai signifikan 0,000<0,05 sehingga dapat diperoleh adanya pengaruh yang signifikan antar kedua variabel. Pengujian koefisien regresi nilai 0,950 yang nilai signifikannya 0,000<0,05 dimana setiap satuan beban kerja dapat menaikkan 0,950 satuan kepuasan tamu.
