Abstract

Early in 2020 the world is tossed with the advent of the corona virus (covid-19). In the face of the covid-19 pandemic, all parties must rise and not continue to crash under the conditions, especially in the tourism sector. Pokdarwis is part of a society that plays a crucial role in recognizing awareness of the covid-19 health protocol in a tourist attraction. The assessment aims to know the role of pokdarwis in covid-19 socialization healyh protocol, recognizing the efforts pokdarwis performs in Covid-19 socialization of the acttractions Rumah Singgah Tuan Kadi.wich is an icon of Pekanbaru, has become one of the tourist acttraction areas that implement CHSE during the pandemic. The uses qualitative descriptive methods, the data collection techniques used in this study are observation, interviews, documentation, and literature studies. The informants in this study consisted of the head of Pokdarwis, the caretaker, and the coordinator of the tourism object area rumah Singgah Tuan Kadi Pekanbaru. in the stages of planning, implementation, and utilization stage have been done by Pokdarwis even if they have not been properly implemented. Pokdarwis efforts in the socialization of covid-19 health protocol by following BISA activities, and maintaining environmental sustainability by mutual assistance. Abstract

Royal Asnof Hotel is a 3-star Hotel in Pekanbaru, this Royal Asnof Hotel provides facilities and services to arrange weddings held at the Royal Asnof Ballroom. The department that requested the holding of this wedding was the Banquet Part was part of the Food and Beverage Service Department at the Royal Asnof Hotel in Pekanbaru. Holding a wedding with 1000 invited guests / people is not efficient to be carried out for several reasons. Supervisors as manager leaders who play an important role in leading the wedding event 1000 / person. The purpose of this study was to analyze the planned implementation of the leadership role that was carried out by supervisors in the implementation of 1000 wedding events / people in the banquet section of the Royal Asnof Hotel Pekanbaru.Keywords: Banquet Supervisor, Banquet Section, Hotel.

Abstract

Recruitment is the process of selecting and attracting prospective employees who are able to work in a management. So recruitment is an effort to find and attract prospective workers to submit their applications to job vacancies in a company. The purpose of this research is to find out the implementation, constraints and obstacles that occur in the process of recruiting workers at the sales marketing department at Novotel Pekanbaru. This study uses a qualitative method with a descriptive approach to describe the real situation by collecting information data directly from the field. The key informants of this research are the senior sales manager of Novotel Pekanbaru, marketing communication of Novotel Pekanbaru and the TNC department of Novotel Pekanbaru. This study uses data collection techniques from literature study, observation, documentation and interviews. The results of this study can be seen from the recruitment process starting from planning, until the work contract is going well in accordance with the SOP implemented by management and Novotel Pekanbaru, so that employees who are accepted meet the required qualifications. Abstract

This Research aims to know about the Implementation of Guiding Technique at Urbanitas Tour and Travel Pekanbaru. This Research was used qualitative method with descriptive approach to describe and explain the condition that happened by collecting the data and information on the field. And the Informant key in this research was 1 chief executive officer and also become a Tour Leader during a Tour. and  3 employees of urbanitas tour and travel pekanbaru and also becom a Tour Leader during a tour. in this research, the technique to collecting the data used interview,observation and documentation technique. Based on the result of the research, can be concluded that the Tour Leaders at Urbanitas Tour and Travel Pekanbaru have done almost all the thing that refer to the theory that used. Buat there was also the thing that haven’t done by the tour leaders.Key words : Implementation, Guiding Technique

Abstract

In Indonesia, the tourism sector is currently growing faster, the tourism sector is a potential that is developed to be a source of income. Riau is one of the tourist destinations that is quite interesting, such as Rokan Hulu Regency which has tourism potential of natural wealth which makes a tourist attraction, namely Hapanasan hot water which is a superior tourist spot in Rokan Hulu Regency, with that the author takes the title of visitor assessment of facility management at Tourist attraction Air Panas Hapanasan Rokan Hulu which aims to determine the responses of visitors who visit the object air panas hapanasan regarding facilities in tourist objects, the researcher uses Spillane's theory (1994), which says that the facility is a means of supporting daily operational tourism objects. To accommodate the needs of visitors, it indirectly supports growth but develops at the same time after the attraction of this research is carried out at air panas hapanasan , Rokan Hulu Regency, this research was conducted for 4 months, starting from March to June 2020. This research is a quantitative research, the data collection technique uses observation questionnaire techniques, and documentation. The sample of the research is visitors. The results of this recapitulation show that overall the respondents gave good responses to the facilities at the air panas hapanasan tourism object.  Keywords: Assessment, Management, Facilities, Tourism and Attration.

Abstract

Hotel Pangeran Pekanbaru in making salads must have a good and correct recipe standard from the start of preparation, the process of making and serving. This is done so that the salad has a very good quality. This study aims to determine the application of standard recipes in making salads in the cold kitchen of Pangeran Pekanbaru Hotel. A recipe standard is an agreement on technical specifications that are used in instructions that explain how to make to a predetermined presentation. Standard recipes also have a goal to maintain consistency in terms of taste, texture, state of the mixture of ingredients and appearance. Cold Kitchen is a section in the kitchen that is assigned to make various cold foods. This study uses a qualitative method with a descriptive approach. The data collection technique in this study uses observation, documentation, interviews so that a very clear picture can be obtained. The informants in this study were Executive chef, Sous chef and 2 guests. Based on the research shows that the application of standard recipes in making salads in the cold kitchen of Pangeran Pekanbaru Hotel can be categorized as poor and has not applied good and correct recipe standards. Keywords : Application, Recipe Standard, Cold Kitchen,Hotel, Salad

Abstract

The kitchen equipment maintenance mechanism consist of several items: 1) Electric Frayer, 2)Broiler, 3) Salamander, 4) Soup Kettle, 5) Steam Cooker, 6) Steam Table, 7) Gas Table, 8) Barbeque Table, 9) Noodle Range. This study aims: to determine the mechanism for maintaining kitchen equipment in the kitchen section at Fox Hotel Pekanbaru. This study used a qualitative descriptive method with research subjects consisting of stewards and executive chefs. Data collection was carried out by means of observation, interviews, and documentation. Data analysis in this study was data reduction, data presentation and conclusion drawing. And the results of study indicate that the mechanism for maintaining kitchen equipment in the kitchen section of Fox Hotel Pekanbaru uses several chemicals from iclean products, including: Forcemaxx which is used to clean oily, slippery and fatty dirt on the kichen floor,Q-San for the sanitation process on the surface. or equipment, Rinsemaxx a concentrated material that functions to speed up the drying process in the dishwasher and glass washer, generalcleaner plus a versatile cleaning product for all surfaces such as from food scraps, metal poliz: a cleaner to remove stubborn stains on metal surfaces such a stainless steel, iron and others. Abstract

Patisserie (Pastry And Bakery) is a product that is produced through various processes in the form of cakes and breads. Patisseries products are usually made based on available formulas or recipes, in addition to recipes and raw materials, pastry equipment and supplies also have a very important role in supporting the success of pastry products at Pangeran Hotel Pekanbaru. This research was conducted with the aim of knowing the effect of pastry equipment on the quality of pastry products at Pangeran Hotel Pekanbaru. Pastry equipment is a very important based on its factors in the production process. Pastry Equipment based on its function is divided into 6 groups, namely storage equipment, decorating equipment, baking equipment, measuring equipment, supporting equipment, medium & heavy equipment. While product quality is how the product has a value that can satisfy consumers both physically and psychologically which shows the attributes or properties contained in an item or result. This study uses a quantitative method with a descriptive approach. Data collection technique in this study using observation, questionnaires, literature study and interviews so as to get a clear picture. The informants in this study were pastry chefs and 91 respondents. From this study, it was found that there was no significant effect of pastry equipment on a quality of pastry products at Hotel Pangeran Pekanbaru. Abstract

Kampar Regency is one of the regencies in Riau Province which has so many natural factors with tourism potential as well as various beautiful natural panoramas, customs and culture with various Hindu-Buddhist historical relics. One of them is the Tourism Village of Kampung Patin Koto Mesjid, Kampar Regency. The Tourism Village of Kampung Patin Koto Mesjid is a fostered village that has succeeded in making the name of Riau province proud on the national scene and was given an award directly by the Ministry of Tourism and Creative Economy in the Tourism Village Assistance event in 2020. The research method that will be used by researchers in this research is descriptive qualitative with the aim of describing a social phenomenon that is studied in more detail. The data obtained from this research are sourced from primary and secondary data as well as 3 key informants and 2 supporting informants. While the data collection techniques in this study used interviews, observation and documentation. This Tourism Village of Kampung Patin Koto Mesjid, Kampar Regency has a lot of potential such as the Mahligai Edge Pier, Puncak Kompe, Crow River and many more. The village management is divided into 4 functions, namely: Management, Organizing, Mobilizing and Supervising. A tourist village is a village that is the result of development based on the potential of the village and the addition of supporting facilities such as transportation and lodging. Apart from that, the natural factors and environmental conditions of the village are still beautiful and well maintained which are important factors for a tourism village. This Tourism Village Program does not change village activities in the slightest, even the activities of the village community become charms and interesting characteristics for the Tourism Village.Keywords : Tourism Village, Management, Kampar Regency

Abstract

This writing recommends to describe the process of making, packaging and carrying out the promotion of dondol kedondong which is a typical souvenir of Rengat District, Indragiri Hulu Regency. This research uses descriptive qualitative method, the research subjects are owners of the dodol kedondong KUBE Rendri industry, dodol kedondong traders and buyers of dodol kedondong. Data collection is done by observational studies, in-depth interviews and documentation. Analysis of the data used in this study, namely data reduction, data presentation and conclusions.Kedondong Dodol as a typical souvenir Rengat District Indragiri Hulu Regency is the right thing. Visitors are very satisfied with the dodol kedondong because it has good taste, the right texture, arouse the appetizing aroma, attractive color and practical packaging. The appropriate price and location of sales makes it easy for visitors to buy dondol kedondong products.
