Abstract

Fermentation is a widely utilized food processing technique that enhances sensory characteristics, extends shelf life, and increases product diversity, particularly in cereals. Furthermore, fermentation processes can generate bioactive metabolites that confer various health benefits. Metabolomics is employed to assess changes in the nutritional composition and metabolite profile of fermented cereal products. This research contributes to identify and synthesize findings from various studies that evaluate the effects of fermentation on the quality of the final product using a metabolomics approach, with particular emphasis on metabolic pathways and the metabolites formed. The research highlights that metabolomics, through sophisticated analytical techniques, has successfully identified metabolites produced during fermentation, which are categorized into volatile compounds (such as organic acids, alcohols, and aldehydes) and non-volatile compounds (including polyphenols, amino acids, fatty acids, free sugars, esters, and amides). These compounds play a pivotal role in enhancing the sensory properties of the product and exhibit bioactive potential that can help prevent the development of metabolic diseases, including diabetes, obesity, digestive disorders, and liver cancer. Despite its potential, the metabolomic approach faces challenges due to the large and intricate datasets it produces. Recent technological advancements have led several studies to incorporate Artificial Intelligence (AI) to enhance the accuracy of data derived from metabolite databases. Moreover, integrating other omics disciplines, such as foodomics, is crucial for achieving more detailed research results, encompassing metabolite composition, sensory attributes, and their effects on health. Such integration would contribute to a more holistic understanding and help bridge the gaps in contemporary metabolomic research.

Abstract

Literasi merupakan kemampuan seseorang menggunakan bahasa dan gambar dalam berbagai macam bentuk, seperti membaca, menulis, berbicara, melihat, dan berpikir kritis dalam menyajikan suatu ide dalam pengembangan awal. Penelitian ini bertujuan untuk memperkuat literasi menulis siswa melalui kegiatan menulis cerita pendek di kelas VA SD Negeri Pondok Cabe Udik 02, Tangerang Selatan. Metode deskriptif kualitatif untuk menganalisis efektivitas kegiatan menulis cerpen dalam meningkatkan minat dan kemampuan literasi siswa. Subjek penelitian adalah 25 siswa kelas VA, yang mayoritas memiliki tingkat literasi rendah berdasarkan wawancara awal dengan guru. Kegiatan penelitian terdiri dari tiga tahap, yaitu orientasi, pelaksanaan, dan evaluasi. Pada tahap orientasi, siswa diberikan pemahaman mengenai pengertian, struktur, dan langkah-langkah menulis cerpen. Pada tahap pelaksanaan, siswa mempraktikkan penulisan cerpen secara mandiri dengan bimbingan peneliti. Hasil penelitian menunjukkan bahwa kegiatan menulis cerpen tidak hanya meningkatkan kemampuan menulis siswa, tetapi juga mendorong kreativitas dan minat mereka terhadap literasi. Kegiatan ini berperan sebagai strategi efektif untuk meningkatkan keterampilan berbahasa siswa dan mengembangkan potensi mereka. Dengan demikian, disarankan agar guru mengintegrasikan kegiatan serupa ke dalam pembelajaran secara rutin untuk memperkuat literasi siswa.

Abstract

The development of science and technology leads students to learn independently by utilizing technology. 21st century learning is carried out by adapting to the learning styles of millennial generation children who use audio-visual formats more, rely on technology and like learning with teachers who position themselves as friends. However, based on the results of observations, the learning carried out at SMK Bina Budi still uses the lecture method. However, the lecture method still has many advantages, which is mentioned by Tarmudji that by using the lecture method educators can summarize learning material so that it is easy for students to understand and educators can more easily master class conditions, students are also trained to use their sense of hearing well, trained to be able to conclude material quickly and precisely. The method used in this research is quantitative correlation of two variables, the sampling technique in this study uses saturated sampling. The data analysis techniques used are validity test, reliability test, normality test, homogeneity test, linearity test, correlation test and significant t test. Based on the results of data analysis, it was concluded that the students' responses to the lecture method had a significant relationship to the students' cognitive learning outcomes. This shows that the use of the lecture method is still relevant for use in the learning process. Abstract

This research is motivated by the development of the times which greatly affect the morals, behavior, ethics and morals of the student party caused by the ease of accessing the internet so that phenomena, news, and events can be obtained easily. In this case, schools play an important role in balancing the development of the times through moral education. This research is based on Roykan's theory which states that the book of Akhlak lil banin is suitable to be implemented with the development of adolescent children. This study uses a qualitative approach with a field research methodology. Data collection techniques used are in-depth interviews, observation, and documentary studies. The analysis technique uses data reduction, data presentation, and conclusions. While testing the validity of the data using the source triangulation technique and the triangulation technique. The results of the study show that: 1) Teachers of the book of Akhlak lil banin have met the qualifications of teacher competence even though they are not yet fully optimal. 2) The essence of the book Akhlak lil banin volume one contains the morals that a child must have, volume two contains the obligations of a child and volume three contains the etiquette that a child must do. 3) The book of lil banin morality is very influential and acts as a behavioral controller gradually from class VII to class IX.

Abstract

Pendidikan Agama Islam (PAI) mempunyai peranan penting dalam membentuk karakter dan moral peserta didik, terutama di tingkat dasar. Namun dalam praktiknya, pembelajaran PAI sering kali menghadapi berbagai tantangan, seperti kurangnya minat peserta didik dan metode pengajaran yang monoton. Oleh karena itu, diperlukan inovasi dalam proses pembelajaran dengan menggunakan metode interaktif dan bahan ajar inovatif. Kegiatan ini bertujuan untuk mengoptimalisasi pembelajaran PAI dengan meningkatkan motivasi dan hasil belajar peserta didik kelas 2 di SDN Jatirigas II, serta meningkatkan kepercayaan diri peserta didik dan membangun kekompakan dan kerja sama yang baik antara guru dan peserta didik. Optimalisasi pembelajaran PAI menggunakan LKPD Canva diharapkan dapat meningkatkan minat dan hasil belajar peserta didik tentang malaikat dan tugasnya. Metodologi pengabdian ini menggunakan pendekatan Participatory Action Research (PAR), metodologi ini dirancang untuk melibatkan peserta didik secara aktif dalam proses pembelajaran dan untuk menciptakan lingkungan belajar yang lebih menarik dan interaktif. Hasil evaluasi pembelajaran menunjukkan bahwa rata-rata nilai peserta didik meningkat setelah menggunakan LKPD Canva pada penilaian formatif, dibandingkan dengan metode pembelajaran sebelumnya. Tulisan ini memberikan gambaran bahwa penggunaan LKPD Canva dalam pembelajaran PAI dapat menjadi strategi yang efektif untuk meningkatkan kualitas pembelajaran.

Abstract

This research aims to determine the effect of green tea extract cream 6%, 8%, and 10% w/w against Staphylococcus epidermidis and Propionibacterium acne. The method begins with making green tea extract using the maceration method, and qualitative flavonoid, alkaloid, saponin, and tannin tests are carried out. Next, S. epidermidis and P. acnes were rejuvenated on NA media and cultured at 37°C for 24 hours. Both bacteria were then inoculated into different test tubes containing 0.9% NaCl. The suspension was then vortexed, and the turbidity level was equalized with McFarland's solution. Both bacteria were then cultured on NA media, and paper disks that had previously been soaked in clindamycin (control +) and 0%, 6%, 8%, and 10% green tea extract cream were placed on the agar media. The culture was then incubated for 24 hours at 37°C, and the inhibition zone was checked with a caliper. Results show that green tea extract has positive tests for flavonoids, alkaloids, saponins, and tannins. The optimum concentration of extract cream on antibacterial activity against S. epidermidis and P. acne is 10%. Inhibition zone comparison showed a significant difference between the diameter of the inhibition zone of S. epidermidis and P. acne, p = 0,00485 (p < 0,05), which means that green tea extract cream is better at fighting P. acne.

Abstract

This community service aims to educate students' information literacy and minimize the misuse of social media for students at SMPN 1 Purwakarta. This is based on the problem of high internet usage rates in the 15 to 24 year age group. This research was conducted with descriptive-quantitative research with a Participatory Action Research (PAR) design. First, observing the problems that occur, second, analyzing the problems that occur at SMPN 1 Purwakarta and followed by the next step systematically by taking action in the form of compiling information literacy education seminar activity materials for students in Purwakarta district as an effort to minimize the misuse of social media and then observing the increase in information literacy insight and digital competence in students at SMPN 1 Purwakarta. With the information literacy education seminar activity for students at SMPN 1 Purwakarta, information literacy insight experienced an average increase of 14 points and the digital competence score of the education seminar participants was 13.10, which shows that the participants' digital competence is in the high category.ABSTRAKPengabdian kepada masyarakat ini bertujuan untuk mengedukasi literasi informasi siswa dan meminimalisir penyalahgunaan media jejaring sosial siswa di SMPN 1 Purwakarta. Hal ini didasari pada masalah tingginya angka penggunaan internet pada kelompok umur 15 sampai dengan 24 tahun. Penelitian ini dilakukan dengan penelitian deskriptif-kuantitatif dengan desain Participatory Action Research (PAR). Pertama melakukan pengamatan atas masalah yang terjadi, kedua yaitu menganalisa masalah yang terjadi di SMPN 1 Purwakarta dan diikuti langkah selanjutnya secara sistematis dengan melakukan tindakan berupa penyusunan materi kegiatan seminar edukasi literasi informasi bagi pelajar di Kabupaten Purwakarta sebagai upaya untuk meminimalisir penyalahgunaan media jejaring sosial dan selanjutnya mengamati peningkatan wawasan literasi informasi dan kompetensi digital pada siswa di SMPN 1 Purwakarta. Dengan adanya kegiatan seminar edukasi literasi informasi bagi pelajar di SMPN 1 Purwakarta, wawasan literasi informasi mengalami peningkatan nilai rata-rata sebesar 14 poin dan angka kompetensi digital peserta seminar edukasi yakni 13,10 yang menunjukkan kompetensi digital peserta berada pada kategori tinggi.

Abstract

The accumulation of rubbish is also due to a lack of public awareness in disposing of rubbish in its proper place. Community empowerment is an effort to make people recognize themselves. Community empowerment is an effort to develop one's abilities freely while simultaneously overcoming the waste problem through the management of used goods. The form of activity carried out is going directly to the field on Sunday, February 25 2024 in Depok Village, Darangdan District. Before implementing empowerment, it goes through three stages: 1. Observing each RW regarding waste problems 2. Providing explanations about waste and waste management to residents 3. Implementing community empowerment activities by using used bottles. Community empowerment through waste management can help the economy if carried out sustainably and continuously upgrading these crafts. . With this service, the community can be more aware of the classification of waste and the value of used goods if they are managed into crafts. Of course, making flower crafts from used bottles will also reduce waste generation. Abstract

This study is motivated by the importance of management in improving the effectiveness of religious activities in majelis taklim, particularly in responding to the challenges of modernization, lack of innovation, and weak community participation. The purpose of this study is to analyze and describe the implementation of religious activity management applied by Majelis Taklim Az-Zahra. The research focuses on how managerial functions, including planning, organizing, implementing, and supervising, are carried out in the context of increasing community participation in religious activities. This study employs a descriptive qualitative approach using the case study method. Data were collected through in-depth interviews, participatory observation, and documentation. The results of the study indicate that the management of religious activities is carried out systematically and adaptively, with a family-oriented character and an approach based on Islamic values. The use of digital technology and Islamic art further enhances the appeal and effectiveness of the programs implemented.

Abstract

Stinky tofu and suan-tsai are traditional Taiwanese fermented foods produced through spontaneous fermentation involving lactic acid bacteria (LAB). This study aimed to explore the diversity of lactic acid bacteria present in suan-tsai and stinky tofu through the isolation, characterization, and identification of bacterial strains based on characteristics and the API 50 CHL Kit with 16S rRNA gene sequencing considered for future confirmation. Samples were diluted and cultured on MRS agar with the addition of CaCO₃. The 20 colonies forming clear zones were selected for morphological and biochemical characterization including microscopy, gram staining, motility, and catalase activity. Two isolates exhibiting clear zone formation, Gram-positive staining, non-motile behavior, cocci or rod-shaped morphology, and negative catalase activity were selected for identification using the API 50 CHL test kit. One isolate from stinky tofu (A11) was identified as Leuconostoc mesenteroides with 99.8% similarity and, one isolate from suan-tsai (C9) was identified as Lactobacillus casei with 99.4% similarity. Both strains were gram-positive, non-motile, and catalase-negative, indicating LAB characteristics. L. mesenteroides is a heterofermentative bacterium that produces lactic acid, CO₂, and ethanol contributing to creating an acidic condition and flavor development. L. casei is a homofermentative bacterium that support maintenance of low pH, inhibits pathogenic microorganisms, and supports food preservation. The probiotic potential of these strains was based on literature reports describing the antimicrobial and health promoting properties. These findings highlight representative LAB from Taiwan traditional fermented foods and its potential role in preservation, quality, and functionality.
