Hospitality Study Program, Politeknik Negeri Bali (PNB), hadnâ€™t implemented integrated learning practice optimally. The aim of this research was improving the learning process method as an integrated practice learning model involving three courses (Food Production, FB Service, English for Restaurant) in the same topic. This study was conducted on the forth semester of Hotel Study Program as the sample used in this research. After the random sampling was selected two classes as research samples, those were IVA class as an experiment group and IVB class as a control. Thus the samples could be determined according to the number of students in each class as many as 26 people. The application of integrated practice learning had an effect on the achievement of student competency in waiter/s occupation at Hotel Studies Program. The result of statistical test showed that there was a significant difference of competency achievement between integrated learning practices with partial practice learning students groups. Itâ€™s suggested to the management Hospitality Study Program to encourage and to facilitate the lecturers especially of core subjects to apply integrated learning practices in order to achieve the competency.

The participation rate of Balinese labor in cruise ships over the last years has dramatically increased. The growth of Balinese labor who works on cruise ships in the past four years reached more than 18 percent. This fact seems unique since working there does not only attract Balinese men as happened in the past but also the women. It is happening because they have been prepared themselves in accordance to the competencies and qualifications needed in cruise ships. The present study aimed to analyze the impacts of Balinese women works on cruise ships overview from economic and socio-cultural perspective. The research subjects were Balinese women who used to or were still working in the cruise ships. This research used qualitative data. The collected data started from one Balinese women having experience in the cruise ships and then spread to the other workers. To answer the research questions, data collection was conducted through observation and deep interviews. The data were analyzed by qualitative analysis. The impact of Balinese women working in cruise ships was overviewed from economic and socio-cultural perspectives. The economic perspective likes: Balinese women working in cruise ships able to improve the family economy, and employment for the community directly or indirectly in the cruise ships. The socio-cultural perspective likes: by working in cruise ships able to motivate the other Balinese women to works on cruise ships, with working in cruise ships can open the horizons and the way of thinking society, increase the personal discipline, and then improve the science and technology in tourism especially at cruises, and growth the awareness to conserve the cultural after seeing the variety of cultures in the word

Desa Serangan merupakan salah satu destinasi wisata yang sudah terkenal di pulau Bali baik oleh wisatawan nusantara maupun wisatawan mancanegara. Keberadaan kawasan ini sangat strategis karena berada diantara dua destinasi wisata utama yaitu kawasan pariwisata Nusa Dua di selatan dan kawasan pariwisata Sanur berada di belahan timur dayanya. Desa Serangan berada 10 km dengan pusat Kota Denpasar. Desa Serangan sangat potensial untuk dikembangkan menjadi desa karena memiliki daya tarik wisata yang unik seperti keindahan alam pantai yang berpasir putih serta usaha pelestarian hewan langka penyu. Perekonomian masyarakat desa Serangan adalah dominan dari kegiatan kelautan dan perikanan. Kegiatan perekonomian tersebut terdiri atas berbagai kegiatan terkait dengan bidang perikanan yaitu adanya kelompok nelayan pantai yang menangani terumbu karang, kelompok nelayan yang menangani keramba, dan kelompok nelayan lepas pantai untuk menangkap ikan di laut lepas. Namun hasil masyarakat tersebut belum terkelola secara professional, sehingga belum mampu memberikan manfaat maksimal terhadap kesejahteraan masyarakat. Oleh karena itu diperlukan pendidikan dan pelatihan terhadap masyarakat desa Serangan khususnya ibu-ibu PKK sehingga mampu meningkatkan nilai jual dari hasil perikanan para nelayan lokal. Kegiatan pelatihan oleh tim Food and Beverages Division Politeknik Negeri Bali terhadap masyarakat lokal (ibu-ibu PKK) telah mampu meningkatkan pengetahuan dan ketrampilan mereka dalam mengolah makanan berbahan dasar ikan laut dalam usaha mendukung sektor pariwisata yang berkembang di desa Serangan.

Serangan Village is one of the famous tourist destinations in the island of Bali both by domestic tourists and foreign tourists. The existence of this destination is very strategic because it is 10 km from Denpasar city. Serangan village is very potential to be developed into a tourism village because it has a unique tourist attraction to support the development of tourism, namely: natural tourist attraction (Pura Sakenan, Pura Dalem Cemara, marine tourism, turtle conservation, manggrove ecotourism); cultural tourism attraction (cultural custom, telek dance); and special tourist attractions (culinary, souvenirs craft shells). The tourist attraction above is a big capital in tourism development in the Serangan village. However, all potentials must be managed professionally so that tourism development in Serangan village can be sustainable. The goal is that tourist attractions in Serangan village can be enjoyed by the current generation and future generations. Therefore, its management must be involved all stakeholders both government, private sector, and the community as the owner of Serangan village.Therefore, it is suggested to all stakeholders to synergize in determining the direction of tourism development policy of Serangan tourism village so as to be able to compete competitively with other tourist villages in Bali. Tabanan regency is one of tourist destination area in Bali that has many tourism areas spreading over the district and the village. One of tourism destination has been famous in Tabanan regency is Alas Kedaton tourist destination.The location of Alas Kedaton tourist destination is about 7 km from the Tabanan city. The objective of this research is (a) to know the image Alas Kedaton tourist destination by the tourist, (b) to define the marketing sustainability strategic which will be applied in the future. The data were used are secondary data and deep interview with the informan who understood about the Alas Kedaton tourist destination. Based on the research that Alas Kedaton tourist destination has positive image. The strategy that can applied is focusing on: product brand identity, spirit of the caracteristic brand, the marketing focus to the domestic market and joint venture with travel agent to market Alas Kedaton tourist destination in the future.

AbstractHospitality Study Program of Bali State Polytechnic as vocational education institution always strives for the quality to fulfill the desired competence of the user (tourism industry). This study aims to analyze the student’s competence of Hospitality Studies Program in the user. Through this analysis it is expected the management able to take the solution in order to improve the competence of the graduates. The study was conducted on student’s semester VI who have been training in tourism industry. The sample was determined 107 people, using confirmatory factor analysis. The results showed that the three factors are attitude, knowledge, and skill had a significant influence to the achievement of the students' competency. The most dominant factor determining student competence is skill factor, followed by knowledge factor, and then an attitude factor. Thus, it is suggested to the management to emphasize the attitude factor in providing education and training at the campus in order to win an increasingly competitive competition. To the lecturers, especially the lecturers of professional ethics subjects, it is expected to further improve the discipline and attitude of the students so that they can fulfill the competence according to the expectations of the user.Keywords: Analysis, competence, student, userAbstrakProgram Studi Perhotelan Politeknik Negeri Bali sebagai lembaga pendidikan vokasi selalu berusaha agar mutu lulusannya mampu memenuhi kompetensi yang diinginkan pihak pengguna (industri pariwisata). Penelitian ini bertujuan untuk menganalisis kompetensi mahasiswa Program Studi Perhotelan di industri pariwisata. Melalui analisis ini diharapkan pihak manajemen Program Studi Perhotelan mampu mengambil solusi guna dapat meningkatkan kompetensi lulusan. Penelitian dilakukan terhadap mahasiswa semester VI Program Studi Perhotelan yang telah dan sedang melaksanakan on the job training di industri pariwisata. Sampel penelitian ditetapkan sebanyak 107 orang, dengan menggunakan confirmatory factor analysis. Hasil penelitian menunjukkan bahwa ketiga faktor baik faktor attitude, knowledge, maupun skill memberikan pengaruh signifikan terhadap pencapaian kompetensi mahasiswa Program Studi Perhotelan. Faktor yang paling dominan menentukan kompetensi mahasiswa adalah faktor skill, disusul faktor knowledge, dan selanjutnya adalah faktor attitude. Dengan demikian disarankan kepada manajemen Program Studi Perhotelan Politeknik Negeri Bali untuk lebih menekankan pada faktor attitude dalam memberikan pendidikan dan pelatihan di kampus Politeknik Negeri Bali guna mampu memenangi persaingan yang semakin kompetitif. Kepada para dosen Program Studi Perhotelan terutama dosen pengampu mata kuliah etika profesi, diharapkan lebih meningkatkan disiplin serta sikap/attitude mahasiswa sehingga mampu memenuhi kompetensi sesuai harapan dari pihak pengguna (industri pariwisata)..Kata kunci: Analisis, kompetensi, mahasiswa, industri pariwisata

The integrated practical learning process has not been comprehensively implemented in the Tourism Department yet. Therefore, it is considered necessary to improve the learning method. The study aims to analyses the effectiveness of integrated learning in the Food Division learning. The learning method which will be implemented action class experiment approach in which four courses, namely Food Production Operation, Restaurant and Bar Operation, Cost Control and English for Food Division are synergized under the same topic. The type of the research is classroom action research with student center learning approach. This current study applied the action class experiment approach in which two groups of samples were differently treated. The t-test, was used to test whether the learning achievement. The result of the test analysis showed that the implementation of the integrated practical learning process significantly contributed to accelerate the achievement of the competency of the students of the food division. Therefore, the integrated learning process is a highly effective one to be implemented in the vocational institution. The result of the statistical test showed that the competence achieved by the students with the integrated practical learning process was significantly different from that achieved by the students with the partial practical learning process. Therefore, it’s suggested to the management of the Tourism Department to motivate and facilitate the teaching staff especially those teaching the core courses to implement the integrated practical learning model to accelerate the achievement of competence in the learning materials taught to the students.

Purpose: This study aims to analyze the types of products that are suitable for development and to design a product development model for Warung Mina Kita in Kuta tourism area, Bali, Indonesia. Research methods: Data collection is sourced from participatory observation, interviews and focus group discussion. The data analysis technique uses an interactive analysis model from Miles and Huberman. Findings: The type of product developed by Warung Mina Kuta to meet customer needs was Mina Kuta special menu package consisting of appetizer (karedok), soup (fish head), main course (fried sea fish) and dessert (banana split). It emphasizes local products, which are named Mina Kuta Special Package Implication: The product process is carried out from preparing materials to raw materials being processed by a kitchen team headed by a chef, raw materials purchased from suppliers are materials that have grade A or good quality.

This study aims to describe the impacts of development of Pela Village as a tourist village in Kutai Kartanegara, East Kalimantan. Pella village has very unique tourism potential to be developed. For the sustainability of tourism development in the tourist village of Pela, it is important to pay attention to the impacts of devel-opment of a tourism village. The data were collected by observation, interviews, and literature study. Inform-ants are taken from community leaders who understand the impacts of tourism development in the village using snowball sampling techniques. Data were analyzed by descriptive qualitative. The results showed that the development of Pela Village as a tourism village able to provide positive impacts for people's lives, both in terms of economic (as lodging business, tour operators, open food stalls); social (effective interactions occur between members of the community): cultural (keeping traditional fishing gear, Kuntau art, and the development of Jepen Dance); environmental (cleaning the village environment), and political dimensions (prioritized local communities as labor). The positive impacts is able to increase the enthusiasm of the local community in supporting the development of tourist villages. It is hoped that stakeholders will play an active role in supporting the development of Pela Tourist Village in the form of guidance, counseling, management, and promotion.

Artikel ini mengkaji kolaborasi aktor pentahelix dalam pengembangan desa Timpag menuju desa wisata berbasis green tourism. Data yang digunakan adalah data kualitatif dan kuantitatif melalui metode observasi, wawancara, dan studi pustaka. Informan ditentukan dengan teknik snowball sampling. Informan yang diwawancarai sebanyak 9 orang dengan melibatkan 50 responden. Analisis data dilakukan secara deskriptif kualitatif dan kuantitatif. Hasil penelitian menunjukkan bahwa kolaborasi aktor pentahelik berperan penting dalam menentukan keberhasilan pengembangan desa ini menuju desa wisata berbasis green. Hal ini ditunjukkan dengan adanya sinergi harmonis antar aktor pentahelik dalam mendukung kegiatan pembangunan di desa, seperti: gotong-royong dalam menjaga kebersihan lingkungan, membuat jalur trekking, pembentukan pondok edukasi, maupun dalam pembentukan wadah pelestarian budaya. Kolaborasi harmonis tersebut diharapkan tetap berkelanjutan sehingga desa wisata ini tetap eksis dan mampu memenangi persaingan yang semakin kompetitif. Untuk itu pihak akademisi diharapkan lebih berkontribusi dalam memberikan pendidikan dan pelatihan bagi masyarakat untuk meningkatkan kualitas sumber daya manusia lokal sehingga mereka mampu berkontribusi tinggi dalam pengembangan green tourism di desanya.
