Abstract

Improving community welfare is the main focus of community service programs, one of which is through the use of Moringa oleifera leaves which are rich in nutrients and have high economic potential. This research was conducted in Labulo Village, Wakorumba District, North Buton Regency, where the majority of the population depends on the agricultural sector. Even though the potential of Moringa leaves is great, public knowledge about its processing is still limited. Therefore, counseling and training regarding Moringa leaf processing technology is very important. This activity aims to provide understanding and skills to the public in processing Moringa leaves into high-value products, such as Moringa leaf powder and Moringa tea. The methods used include material preparation, outreach, practical training, as well as introduction to marketing and product packaging aspects. The evaluation results showed an increase in community knowledge from 45% in the pre-test to 85% in the post-test, and 85% of participants felt confident to continue processing independently. This activity not only has a positive impact on increasing knowledge and skills but also opens up new business opportunities that can increase people's income and welfare. With this program, it is hoped that the community can utilize the potential of the Moringa plant optimally and make it a sustainable source of income. The sustainability of this program needs to be supported by mentoring and monitoring activities to ensure further business development.

Abstract

The goal of the PKM activity is to broaden the understanding and insight into the social life of the people of Gampong Lamceu, Aceh Besar Regency, on utilizing chicken eggshell waste in organic fertilizer and pest control. The implementation of PKM aims to use natural resources and surrounding waste, with the hope of improving the community's economy. This PKM activity involves lecturers and students of Politeknik Indonesia Venezuela to explore the potential and conditions in Gampong Lamceu. The implementation of Community Service activities uses a two-stage method. First, providing material to the community and explaining the techniques for making fertilizers and pest control from eggshells, then followed by discussion and questions and answers about the manufacturing process. The second stage is to practice directly in front of the villagers. The steps for making fertilizer and pest repellent from eggshells in the Community Service activity are as follows: preparing tools and materials for practice, including eggshell waste and water for the sterilization process. The water is heated to boiling, then the eggshells are put in and allowed to stand for 5 minutes. After drying, the eggshells are crushed using a blender and are ready to be used to support plant growth and as a pest repellent. From the implementation of the Community Service Program in Lamceu Village, it can be concluded that the community is very happy and enthusiastic about the activities carried out by lecturers and students of the Indonesian Polytechnic of Venezuela. The community has understood how to make fertilizers and pest repellents from eggshell waste and can develop their potential to be more creative in creating new things.

Abstract

Bread is one of the staple foods consumed by the Indonesian population, in addition to rice. It contains carbohydrates and serves as an important source of energy and calories. This study aimed to examine the effect of jackfruit flour substitution and fermentation duration on the chemical and sensory quality profile of wheat flour-based sweet bread. A factorial completely randomized design was used, with two factors: jackfruit flour substitution and fermentation time. The results showed that increasing the proportion of jackfruit flour led to higher ash content and improved sensory scores for color, taste, texture, and aroma, but had no significant effect on reducing moisture content. Similarly, fermentation duration increased ash content and enhanced organoleptic attributes without significantly lowering moisture. The combination of both factors improved ash content, sensory quality, and reduced moisture levels in the bread. The optimal treatment, based on panelist acceptance, was found at 15% jackfruit flour substitution and 60 minutes of fermentation, yielding the following product characteristics: moisture 19.21%, ash 1.58%, color 4.13 (like), taste 4.00 (like), aroma 4.20 (like), and texture 4.07 (like).
