Abstract

Currently, there are still many people who have not processed food with due regard to cleanliness and hygiene. Foodborne illness is still a public health problem in Indonesia because of the lack of personal hygiene and environmental sanitation in food preparation and service. This study aims to determine the extent to which GMP-WISE is implemented at IKM Kerupuk Saluyu Putra so that later this business can improve safety and produce hygienic preparations. This research will be conducted on Jl. Raya Barat Cicalengka, Panenjoan, Cicalengka District, Bandung Regency, West Java from December 2021 to November 2022. This research was conducted using the Good Manufacturing Practices and Work Improvement in Small Enterprises (GMP-WISE) method. Data collection used questionnaires, and data analysis used several stages, namely observing current conditions, suggesting improvements, and validating employee knowledge. The results of the hypothesis test show that there is a relationship between the implementation of GMP-WISE and employee hygiene and sanitation knowledge. Production process improvements, GMP-WISE guidelines, and employee training need to be carried out to maintain product safety.

Abstract

Program Studi Teknologi Industri Pertanian Universitas Padjadjaran memiliki produk unggulan berupa black garlic yang dikembangkan oleh Dosen dan Mahasiswa Program Studi tersebut. Tujuan dari penelitian ini adalah untuk mengidentifikasi pemasaran pada media sosial dan memperoleh strategi pemasaran yang dapat diterapkan pada media sosial Instagram Equine. Tahap analisis data pada penelitian ini terbagi menjadi dua, yaitu analisis data kualitatif dari hasil wawancara dan analisis data kuantitatif dari hasil implementasi strategi pemasaran selama 2 periode (1 periode = 4 hari implementasi). Hasil analisis menunjukan bahwa tahap conviction menjadi prioritas untuk saat ini karena dapat mempengaruhi audiens sehingga terjadi konversi pembelian, sedangkan pada tahapan awareness perlu dimaksimalkan performanya. Hasil penelitian menunjukan peningkatan pada tanda suka (likes) dan peningkatan 10 followers, mendapatkan rata-rata 25 komentar (comment), total 78 konten tersebar (share), total 10 konten tersimpan (save), dan mendapat konversi penjualan sebanyak 6 jar.

Abstract

The application of sustainable industry is carried out by utilizing pineapple plant waste by bibliometric and exploratory descriptive analysis using VOSviewer 1.6.18 software using a database of Scopus-indexed journal publishers. This study aimed to determine research trends on the utilization of pineapple plantation industry waste for nanocellulose production in Indonesia. The Scopus database collected information regarding Nanocellulose Research Trends From Pineapple Plant Waste. To obtain search results, subject categories with titles, keywords, and abstract criteria from Nanocellulose Research Trends From Pineapple Plant Waste were used as a reference. Using VOSviewer, search result extraction was performed. The results of bibliometric mapping were then further evaluated. The findings of the bibliometric study demonstrate through network visualization, overlay visualization, and density visualization that nanocellulose research in Indonesia has increased over the past seven years, beginning in 2015.

Abstract

Black Garlic Honey merupakan produk diversifikasi, mengandung black garlic, madu, dan propolis. Produk Black Garlic Honey merupakan produk baru sehingga dibutuhkan perancangan kemasan premium dengan menggunakan metode Quality Function Deployment (QFD) untuk mengetahui kebutuhan konsumen dan respon teknis. Atribut kebutuhan konsumen diperoleh melalui wawancara terhadap konsumen dan pengolahan data dilakukan melalui diagram House of Quality (HOQ). Terdapat 9 atribut kebutuhan konsumen dan 11 respon teknis. Atribut kebutuhan konsumen untuk kemasan Black Garlic Honey adalah bahan yang digunakan aman dan tidak mudah rusak, mencantumkan informasi produk yang jelas dan lengkap, dapat melindungi produk, desain yang menarik, tulisan jelas dan mudah dibaca, kemudahan konsumen untuk membuka dan menutup, mudah untuk dibawa, komposisi warna yang menarik dan elegan, serta ukuran yang sesuai dengan produk yang dikemas. Respon teknis dengan nilai bobot teknis paling tinggi adalah ‘penyesuaian ukuran, bentuk dan bahan kemasan dengan ukuran dan berat produk’, ‘perancangan desain visual kemasan yang menarik’, ‘pemilihan jenis penutup kemasan yang mudah dibuka dan ditutup kembali’. Terdapat 3 hasil rancangan desain kemasan untuk 3 varian jenis produk Black Garlic Honey yang diterima oleh produsen dan responden, dengan menggunakan kombinasi warna cream, coklat muda, dan coklat tua, dan grafis berupa foto produk dan logo. Pertama, kombinasi black garlic utuh dengan madu dengan kemasan jar kaca 250 gr. Kedua, kombinasi black garlic yang dihaluskan dengan madu yang dengan kemasan botol plastik PET  150 gr. Ketiga, kombinasi black garlic yang dihaluskan dengan madu dan propolis dengan kemasan sachet 20 gr.

Abstract

Buah Delima (Punica granatum L.) merupakan tanaman yang memiliki banyak manfaat, diantaranya memiliki kandungan antioksidan. Kandungan antioksidan dalam buah delima yang utama adalah vitamin C. Vitamin C sebagai antioksidan dibutuhkan dalam sistem imun untuk menjaga kekebalan tubuh dan juga dapat menjaga elastisitas kulit. Kandungan vitamin C dari buah delima dapat diperoleh dengan cara ekstraksi. Vitamin C tidak tahan pada suhu yang tinggi, sehingga dibutuhkan teknologi ekstraksi yang tepat. Ultrasound Assisted Extraction (UAE) merupakan ekstraksi ultrasonikasi yang dipilih karena tidak menggunakan suhu yang tinggi dan waktu ekstraksi lebih singkat. Penelitian ini bertujuan menentukan kondisi UAE optimum yang meliputi kombinasi 3 variabel, yaitu amplitudo, waktu, dan jumlah pelarut yang menghasilkan vitamin C optimum dari ekstrak daging buah delima. Tipe alat UAE yang digunakan pada penelitian ini adalah tipe Qsonica – Q500 (500 W, 20 kHz). Metode penelitian adalah eksperimental laboratorium menggunakan RSM (Response Surface Methodology) tipe CCD (Central Composite Design) dengan amplitudo minimum 40% dan maksimum 50%; waktu minimum 20 menit dan maksimum 25 menit; dan jumlah pelarut minimum 150 ml dan maksimum 225 ml. Hasil penelitian menyimpulkan bahwa banyaknya jumlah pelarut memberikan pengaruh yang nyata, sedangkan amplitudo dan lama waktu ekstraksi tidak berpengaruh nyata. Model signifikan pada nilai P < 0,05 dengan kondisi UAE optimum pada kombinasi perlakuan amplitudo 50%, waktu 25 menit, dan jumlah pelarut 150 ml yang menghasilkan nilai kadar vitamin C optimum sebesar 47,79 mg/100 gram.

Abstract

Consumers demanded the quality of solid soap for the bath were having a solid texture, high foam stability, and fulfillment of the national quality standard in SNI 3522:2021. Soap characteristics and quality are affected by soap bases and the existence of natural additive matter with antioxidant properties such as propolis extracts. The study aims to determine an optimum formula for soap production using Response Surface Methodology (RSM) with Box-Behnken experimental design. The research conducted in several stages, its consist to propolis extraction, soap formulation and production, RSM analysis towards predetermined responses, model validation, and products characterization (in optimum formulation). Optimized factors consist of the content of propolis extracts, coconut oils, palm oils, and olive oils, while the response was moisture content, foam stability, and antioxidant inhibition. The results showed each response has a significant model to get an optimum formula for propolis extracts soap production. The optimum formula for soap production requires 1.545 g propolis extracts, 13.097 g coconut oils, 29.629 g palm oils, and 29.809 g olive oils with the model validation for each response were 95.5% moisture content, 96.5% foam stability, and 97.5% antioxidant inhibition. Soap characterization in the optimum formula fulfilled the quality standard requirement in SNI 3522:2021 its consists of 20.24% moisture content, 2.22% insoluble ingredients in ethanol, and 0.07% free alkali content. Keywords: Box-Behnken Design, Formula Optimization, Propolis Extracts, RSM, Solid Soap.

Abstract

Red ginger is known as one of the medicinnal and aromatic plants that have high value in the form of essential oils. The distillation of red ginger essential oils required large amounts of water, and then most of the water was disposed of as wastewater. This wastewater is known as hydrosol, which still contains a small amount of essential oils and secondary metabolites such as zingiberene and geraniol. These compounds were considered to have the potential to be utilized in cosmetic products such as foot sanitizers. The aim of this study was to evaluate a foot sanitizer product based on red ginger hydrosol that combined with coffee extracts based on its antibacterial activity against Staphylococcus aureus and the physical characteristics of the product. Foot sanitizer was produced in three formulations with different concentration (in percentage) of red ginger hydrosols and coffee extracts consist of F1 (45:25), F2 (35:35), and F3 (25:45). The results showed the F3 formulation provided the largest antibacterial inhibition (2.89±0.60 mm) compared to other formulations. The F3 formulation has a physical characteristics such as coffee scent aroma, a dark brown color, a pH of 5.5, a density of 960.73 kg/m3 and has a weak antibacterial activity. Based on the comparison results with previous studies, the utilization of coffee extracts in red ginger hydrosols-based foot sanitizer needs to be substitued with other natural extracts, especially having a strong antibacterial activity. It should be carried out to increase the potential value of valorizing red ginger hydrosols as foot sanitizer.

Abstract

Turmeric (Curcuma longa L.) has become one of the potential plants to be developed due to its numerous benefits from the active ingredient, curcuminoid. Curcuminoid has antibacterial, antioxidant, and antihepatotoxic properties that can enhance the absorption of vitamins A, D, E, and K. The process to obtain curcuminoid can be carried out through an extraction process using a solvent. This research aimed to optimize the extraction process of curcuminoid from turmeric at a lower cost. The response surface methodology with a central composite design was used in this study to optimize the concentration of ethanol solvent (50-90%, v/v) and the flow rate of ethanol solvent (20-40 mL/minute) on the yield and curcuminoid. The research results indicate that the optimum conditions for the percolation extraction process (ethanol concentration = 90% and ethanol flow rate = 20 mL/minute) result in a yield value of 22.75% (w/w) and curcuminoid content of 13.54% (w/v). The curcuminoid was characterized based on several parameters, including water content of 11.15% (w/w) and antioxidant activity of 98.39% (w/v). The research concludes that the optimum results of the process conditions demonstrate the percolation extraction method with the variables of ethanol concentration and minimal ethanol solvent flow rate, which require lower costs while yielding optimum yield and curcuminoid content. Therefore, this can be applied in further research on curcumin production or its application in the food and non-food industries.

Abstract

Pandemi virus cov-19 yang telah menyebar ke seluruh dunia berdampak sangat besar. Imbas dari pandemi ini menghantam seluruh lapisan masyarakat pada seluruh sektor baik formal maupun informal. Hal tersebut memberikan dampak besar pada ketahanan ekonomi keluarga  terutama untuk keluarga menengah kebawah yang hanya mengandalkan hidupnya pada pendapatan harian. Diperlukan strategi agar ketahanan ekonomi keluarga dapat stabil, salah satunya dengan meningkatkan nilai tambah dari komoditas pertanian menjadi suatu produk yang juga memiliki nilai tambah. Jalan Waas Kelurahan Batununggal merupakan salah satu kawasan padat penduduk di Kota Bandung yang yang sebagian besar warganya bekerja dengan pendapatan harian. Penilitian ini bertujuan untuk meningkatkan ketahanan ekonomi keluarga di Jalan Waas kawasan Batununggal Kota Bandung melalui pelatihan pembuatan sabun padat berbahan baku minyak kelapa sawit sehingga dengan memberdayakan ibu rumah tangga di wilayah tersebut. Metode yang dilakukakan adalah kualitatif dan kuantitatif. Metode kualitatif yaitu observasi partisopatif dan metode kuantitatif dengan menyajikan data grafis dan pengujian statistik Mc Nemar dari hasil evaluasi yang dilakukan selama kegiatan. Hasil penelitian menunjukan bahwa terdapat pengaruh signifikan setelah dilakukan pelatihan dan pendampingan pembuatan sabun padat berbahan baku kelapa sawit. Diharapkan bahwa dengan kegiatan tersebut dapat menjadi salah satu referensi masyarakat kelurahan Batununggal dalam membuat produk sabun padat ekonomis berbahan dasar minyak kelapa sawit yang ada di rumah guna meningkatkan ketahanan ekonomi keluarga

Abstract

Quality and safe food products are the basic right of every consumer, including food products produced by small and medium industries. Good food production is an important factor in meeting quality standards or food safety licensing requirements. In setting standards, the government also plays an important role in providing direction and assistance to small and medium industries on achieving the specified quality standards. During this time the process is still carried out in a conventional manner directly to the industry. This conventional process is still considered ineffective by seeing the low level of business actors’ knowledge of the standards for Good Food Production Practice (GFPP). So, with this lack of knowledge, business actors’ interest in making food licensing is low. This study designed the application of an expert system that stimulates and provides an illustration for a standards assessment of Good Food Production methods. This research was conducted using Object Oriented Programming (OOP) engineering method for program development and using forward chaining for reasoning methods. This research proved that the application of an expert system for licensing due diligence can function in accordance with standards set by the government.
