Abstract

Fast food is characterized by unbalanced nutrient content. mostly high in calories, fat, but very low in fiber. consumption of fast food will lead to excessive problems of nutrition. This research was conducted to study the behavior (knowledge and attitude) of female adolescent and the diet of fast food (frequency, type, and number of carbohydrate, protein, fat and fiber) to the female adolescent at SMAN 1 Barumun. This research is descriptive study by cross sectional study.sample amounted to 77 is the  female student in class X, XI, XII, SMAN 1 Barumun. primary data collection using questionnaires, forms meal frequency and recall 24 hours. The result of research indicates that the female adolescent have good knowledge (97,4%) and have good attitude (74%) to the fast food, type of fast food consumed by adolescent is snack , fried, sausage, and instan noodles with frequency of weekly, daily, weekly, and monthly. Contribution of carbohydrates, proteins and fats consumed by adolescent SMAN 1 Barumun already exceed the recommended dietary allowance figures, while the fiber is still far from the recommended dietary allowance. It suggested of the female adolescent to have a good diet pattern and minimize the consumtion of fast food to avoid the obesity. Keyword : fast food behavior, nutrition status.

Abstract

The body of human is the site of a variety of metabolic processes to sustain the life. The metabolic process produces the hazardous waste materials that if it was accumulated in the body. The failure of kidney function to maintain the metabolism and balance the liquid and electrolyte is called by the chronic renal failure. The study was conducted by using a descriptive study with a cross sectional design which aimed to know the description of dietary pursuance and family support in chronic renal failure patients who underwent the out patients hemodialysis in RSU Haji Medan. The samples that was taken was all population of chronic renal failure patients were as many as 32 people. In the study, the respondents was a family who understood and regulated the diet of patients. Data that was collected include the identity of the patient, dietary pursuance, and family support. The results of this research shows that the obedient of the chronical renal failure are 19 people and the unobedient of the chronical renal failure are 13 people. Most of the support from the family of chronic renal failure are generally in a good category. The dietary pursuance of chronic renal failure patients which is supported by a good family, the obedient patients are 19 people and the unobedient patiens are 12 people. It was expected to HR RS especially for (doctors and nurses) in order to improve the provision of better education about diet chronic renal failure patients. Abstract

Children under five yearsare group of society that very unstable from nutrition problem. They have a very fast Growth and development in this period so need enough and gratify food and nutrition supply. If malnutrition happens and even severe malnutrition can cause permanent growth and development disturbance physically, mentally, socially, and intelligently that will be brought until adult. If this problem ignored, the worst probability in the next 30 years is lost generation where decreasing human quality in many aspects and will influence productifity so when productifity is low the result is low also. So, to create a better Human Resources quality must begin early that is watch out nutrition status of children of five. This research is observational method by using secunder data from Health center of Pekan Labuhan to learn correlation of Supplementary Feeding Program of Recovery with body weight improvement ofchildren under five that severe malnutrition.According to researched variables, known that there was different body weight of children under five before and after receiving Supplementary Feeding Program of Recovery in Health centre of Pekan Labuhan where all children under five years undergo improvement body weight.During follow Supplementary Feeding Program of Recovery process suggested always given socialitation inorder mothers watch out energy intake of children under five and make sure that they complete PMT-P. Abstract

Cardiovascular disease is a disorder of the heart and blood vessel, included heart disease and stroke. Theraphy for cardiovascular disease can be done by admission to the hospital, receiving medical treatment and supported by proper diet treatment. The efficacy of the diet provided by the hospital can be evaluated by nutrient consumption and food acceptance of the food served. The purpose of this research is to study nutrient consumption and food acceptance among cardiovascular disease hospitalized patients to the food served in Adam Malik General Hospital. A descriptive study was conducted on 32 cardiovascular disease patients based on physician diagnosis. Patient food consumption data obtained using food recall 24 hours form. Univariate data analysis to look at the frequency distribution of consumption levels, the level of adequacy, and acceptability of food served. The result of the research showed the tendency of the intake of food the patient is at the level of the deficit, because the patient is not able to spent the hospital food. The tendency of sufficient levels of nutrients patients are also at the level of the deficit, that can slow the healing process and increase the time of patient care in hospitals. Food acceptance measurement showed that food provided by hospital was well accepted. Consumption of food patients can be stimulated by increasing social atmosphere, good service, and provide a menu option or modify the menu to avoid boredom patients on hospital food served.   Keywords : nutrient consumption, food acceptance, cardiovascular disease

Abstract

Tepung pisang awak masak (Musa paradisiaca var. awak) dan kecambah kedelai (Glycine max ) dapat diolah menjadi biskuit. Biskuit merupakan makanan yang disenangi semua kalangan usia termasuk balita. Biskuit memiliki bentuk yang menarik dan rasa yang manis.Tujuan penelitian ini adalah untuk mengetahui daya terima dan kandungan gizi dari biskuit yang disubstitusikan tepung pisang awak masak dan kecambah kedelai. Penelitian ini merupakan penelitian eksperimen dengan rancangan acak lengkap dengan dua faktor dan tiga perlakuan yaitu penambahan tepung pisang awak masak 40%, tepung kecambah kedelai 40% dan campuran tepung pisang awak masak dan kecambah kedelai masing – masing 20%. Uji daya terima biskuit substitusi tepung pisang awak masak dan kecambah kedelai dilakukan terhadap 30 ibu balita dan balita di posyandu Namogajah Kecamatan Medan Tuntungan dan analisis zat gizi dilakukan di Laboratorium Badan Riset dan Standarisasi Industri Medan. Hasil penelitian uji organoleptik terhadap warna, aroma, rasa, dan tekstur, biskuit oeleh 30 ibu balita yang paling disukai adalah biskuit dengan campuran tepung pisang awak masak 20% dan kecambah kedelai 20%. Daya terima pada anak balita menunjukkan semua balita menyukai ketiga perlakuan biskuit. Hasil analisis Kandungan gizi ketiga perlakuan mengandung karbohidrat sebesar 61,95%, 55,47%, 55,46%, protein sebesar 7,69%, 13,7%, 10,3%, lemak sebesar 22,4%, 24,3%, 25,9%. Disarankan kepada masyarakat agar dapat menjadikan biskuit substitusi tepung pisang awak masak dan kecambah kedelai sebagai alternatif makanan tambahan untuk balita.   Kata kunci: tepung pisang awak masak, kecambah kedelai, biskuit

Abstract

Mother's behavior in the use Health Card consists of three domains, namely knowledge, attitudes, and actions in daily life affect nutritional status because of the KMS are monitoring the growth and development of infants. This study aims to reveal the mother's behavior in the utilization Towards Health Card and nutritional status of children in the region of Integrated Health Care Center of Lawe Perbunga Babul Makmur District of Southeast Aceh Regency in 2015 were carried out in August 2014-July 2015 with the 83 mothers who have children under two years old as respondents. This is a descriptive study with a sampling technique that is proportionate random sampling. The researes instruments were are behaviovral questionnaire and assessment for nutritional status of under two children with weight for age, height for age, and weight for height indicators. The results showed that the mother's knowledge in the use of KMS most in less category as much as 46 people (55.4%), the attitude of the mother in the use of KMS most in the category of quite as many as 43 people (51.8%), while the mother's actions in using KMS most in the category of pretty much as 55 people (66.3%), as well as nutritional status indicator of children under two years old with weight / age majority of good nutrition as much as 78 children under two years old (94.0%), nutritional status and indicators of height / age normal majority of 74 children under two years old (89.2%) and nutritional status based on indicators weight / height is a normal majority of 80 children under two years old (96.4%). Results  of cross tabulation shows that  knowledge and action are most lackingknowledge but action is good and sufficient. Whose actions are both more likelyto  have  an  attitude  that  is  less  while  the  actions  are  enough to  have  a  goodattitude. An act which did have sufficient nutritional status children under twoyears old higher than that perform good actions. Although the act of mother isgood but still found children under two years old who have poor nutritional statusand are still short. Based on these results we can conclude that although the mother's knowledge inthe use of KMS is still lacking, but the action of mothers in the use of KMS prettygood. While the mother's attitude is quite good but their actions are good enough,their attitude quite good but their actions are good. So we advised to the clinic to provide more intensive and sustained information for getting better behavioral changeand that mothers continue to monitor the growth and development of infants every month through KMS. Abstract

Red crackers is a lots of food consumed by the people of Indonesia as a complement to eat fried rice, fried noodle and others. Substance dye used in the manufacture of red crackers are often using the dye that banned such as rhodamine B. Beetroot Essence can be used as a natural dye on manufacture of the red crackers. This is an experimental research with two treatment, where is the treatment given is : the addition of beetroot essence 25 % (P1) and the addition of beetroot essence 50 % (P2). Data collection method conducted with organoleptic test by 30 not trained panelists, they are students from Faculty of Public Health University of Sumatera Utara. Data analysis of the organoleptic test result it was descriptive qualitative percentage. The result of this experimental showed that acceptability for crackers with the addition of beetroot essence 50 % (P2)  more preferred by the panelists in terms of aroma, color, flavor and texture, with a total score of each 90 (74,9 %), 98 (81,6 %), 91 (75,7 %), dan 95 (79,1 %). The laboratory test result showed the addition of beetroot essence 50 % contains of fiber higher 8,5 %, contains of protein higher 0,8750 % and contains of vitamin C higher 3,3 % . The addition of beetroot essence 25 % contains of fat higher 54,1 % and contains of moisture higher 0,24 %. Laboratory test result for ash, the addition of beetroot essence 25 % and 50 % contains the same result is 0,33 %. Efforts should be made to introduce more crackers with addition of beetroot essence as a natural dye that is safe to the public.   Keywords : Crackers, Beetroot Essence, Natural Dye

Abstract

Styrofoam packaging  material was often used by traders and consumers as food packaging. It is a practical, inexpensive, pleasing to the eye and no leaking, make consumers forget the impact the dangers of Styrofoam packaging containing residues of styrene monomer that can act on greasy foods especially in hot conditions. Consumers can do the bargaining position of the Styrofoam packaging, by requiring exchange Styrofoam packaging with other packaging safer. The purpose of these study was to determine the description of the knowledge and attitude of consumers to act bargaining position when receiving packaging Styrofoam as food packaging.               The research type was descriptive with cross sectional design which illustrate the knowledge and attitudes with the bargaining position of consumers on the use of Styrofoam as food packaging in Amaliun Foodcourt. This study population is consumers who buy food using styrofoam.               The results of research showed that 65,0% and 82,5% of consumers have a good knowledge and attitudes about Styrofoam packaging, while consumers bargaining position of 12,5% good category. According to the level of knowledge and attitudes of consumers to the bargaining position 7,7% and 15,2% of consumers have a better bargaining position. The reason consumers do not make them lazy bargaining position to ask the exchange and traders did not have other types of packaging.                Knowledge and attitudes of consumers not applied to the bargaining position of the Styrofoam packaging, to take preventive authors suggest to the Drug and Food Control Agency  (BPOM) field should improve surveillance of food packaging that is circulating in the community. Abstract

Chili sauce and “saus gejrot” (spattered sauce) is a food processing product which popular among the students of USU (University of Sumatera Utara) because it is used in the students’ favorite snacks, grilled bakso (meat ball) and “tahu dangdut” (the name of a kind of tofu). Generally, the process of making the sauce added dyes and artificial sweeteners to get the maximum results with low production costs .          The research was a descriptive survey in order to find out whether or not there was coloring matter in chili sauce of grilled bakso and artificial sweetener in “saus gejrot” of “tahu dangdut” sold at USU in 2015 by conducting laboratory test qualitatively and quantitatively. The unit of analysis in this study are some of the chili sauce from 5 chili sauce used on grilled meatballs and some " saus gejrot " from 7 " saus gejrot " used to " tahu dangdut " in the USU 2015 . The result of the research showed that all samples got their license from the Department of Health through the PERMENKES RI No. 033/2012 on Food Additives. There are 4 of 5 portions the chili sauce were used artificial dyes with level that exceed the maximum limit used is 200 mg/kg. That is Tradisional chili sauce, Captain, Selera Kita and Sasa. The results of the examination 7 portions of “saus gejrot”, all of them used artificial sweetener, cyclamate with levels still below the maximum limit of use is 3 g/kg. Cyclamate levels are lowest for the “saus gejrot” sold at Pajus is 0,1328 g/kg and the highest levels of cyclamate sold at Pintu 1 is 0,2960 g/kg. It is recommended that the management of BPOM (Food and Drug Monitoring Agency), Medan, increase monitoring and supervision on the use of coloring matter and artificial sweetener in sauce products. The Health Service of Medan and the Health Service of North Sumatera should provide counseling for chili sauce and “saus gejrot” producers about impact the use of coloring matter and artificial sweetener as food additives. Abstract

The safety food for consumption basically is a meal which is processing with  concern on the principles of food hygiene and sanitation. If the food hygiene and sanitation come from bad food processing, so it will produce a source of disease transmission for those who consume and if health disfunction, it will eventually cause problems on nutritional status. The objective of this research is to describe the hygiene and sanitation of food processing, incidence of diarrhea and nutritional status of male prisoners aged 18-20 years in the Correctional Institution Class II A Children's Tanjung Gusta Medan 2015. This research was descriptive with the primary data were gathered by conducted interview/observation to food processing officers and prisoners, the while secondary data were gathered from the administration and the health care section Penitentiary Class II A Children's Tanjung Gusta Medan. The population includes 7 food processors officers and 135 prisoners. Samples were 7 food processing officers and 57 food prisoners. The results showed that the hygiene and sanitation of food processing in Correctional Institution Class II A Children's Tanjung Gusta were not good which is seen from the aspect of food handler officer, food processing place and supplies and equipment in food processing. Incidence of diarrhea in male prisoners aged 18-20 years in the last 1 month was 31 people (54.39%) from 57 samples. The nutritional status of prisoners based on the Body Mass Index (BMI) was showed that most of prisoners aged 18 years which is 5 people (55,56%) were included in thin category, 4 people (44,44%) were normal category and nothing is included  in the category of obese. Based on the results of the research, it is  suggested to officer to utilized more food processing facilities and also being informed about the importance of hygiene and sanitation in food processing. It is also needs to make an improvement of food processing  and complement the existing facilities to support hygiene and sanitation in food processing in place Penitentiary Class II A Children's Tanjung Gusta Medan.
