Abstract

WHO states that about 75% of new diseases affecting humans in the last two decades are caused by pathogens derived from animals or animal products, so that food products of animal origin (meat) are potentially harmful to consumers. Therefore, the health and food safety aspects of animal origin (meat) need special attention. This research aimed to analyze the health and quality of pork from the abattoir/pig slaughterhouse to its circulation chain (meat stall/market). This research used a qualitative explorative method that is analyzing pig's health by inspection, palpation, and incision and the quality of pork is subjectively examined include color, aroma, consistency, and texture test, and objective test includes the test of Water Holding Capacity, Water Content, pH, and early decay. The research sample was taken from Pesanggaran and Dharmasaba abattoir and its distribution place (meat stall in Badung and Kereneng market), with 100 samples. The data of the research were analyzed qualitative descriptively. The results showed that pork from the production site to its distribution, good health. Similarly, pork from the production site (Pesanggaran abattoir and Dharmasaba) to the distribution (Badung and Kereneng market) is good. It can be concluded that pork's health and quality from production place until its distribution chains is still good, so it can be recommended healthy, safe, and feasible to be consumed.

Abstract

Almost all meat on the market is contaminated by microorganisms. As a result of the contamination of microorganisms, it changes in color, odor, and consistency. This research aims to study the effect of various levels of concentration and soaking time of Pegagan (Centella asiatica L.) leaf juice and to study whether there is an interaction between concentration and soaking time of Centella asiatica L. juice on the quality of pork in terms of the organoleptic test. Soaking pork in the juice of Centella asiatica L. juice is done by inserting each piece of meat into eight glasses, which have been filled with control, 5%, 10%, and 15% concentration juice. Soaking is done for 5 minutes, and 10 minutes then the meat is drained for 15 minutes, then an organoleptic test is performed and analyzed by variance. The results of the concentration had a significant effect (P<0.05) on changes in color, odor, and consistency of meat. While the soaking time had a significant effect (P<0.05) on the smell of meat but no significant effect (P>0.05) on the color and consistency of pork. And also, there is no interaction between concentration and soaking time.

Abstract

A research has been done in order to determine a physical characteristics i.e water holding capacity, acidity level (pH), and cooking loss of beef from bali and wagyu cattle which were sold in supermarkets around Denpasar. The sampels used in this study were 15 rib eye part of bali and 15 of the wagyu beef respectively, the sampels from both types were tested on the water holding capacity parameter, the acidity level, and cooking loss. The data were analyzed by qualitative descriptive analysis. The result showed that, the bali beef contained 66.13 % water holding capacity, 5.75 of acidity level and 31.74 % of coking loss, whereas the wagyu beef contained 63.84 % water holding capacity, 5.20 of acidity level and 32.29% of cooking loss.

Abstract

Bali beef is an ideal medium for the growth of microorganisms, because it is rich in protein, minerals and water. When placed at room temperature, the meat will spoil more quickly. The purpose of this study was to determine the effect of laying beef at room temperature on the pH value and total bacteria. This research method tested 24 pieces of beef with a weight of 10 grams each and placed at room temperature (27-30°C) then tested with pH and total bacteria tests. The research design used was Completely Randomized Design (CRD) with 4 treatments of laying time at room temperature for 0 hours, 3 hours, 6 hours, and 9 hours with 6 replications. The research data were analyzed by means of variance and if the results were significantly different, it was continued with Duncan's test. The results showed that laying beef at room temperature had no effect on the pH value (P>0.05), but had a very significant effect (P<0.01) on increasing total bacteria. It concluded that the quality of bali beef placed at room temperature will reduce the quality

Abstract

Cysticercosis is an infection caused by the larval stage of pork tapeworm (Taenia solium)which still poses a public health problem. Papua is one of the largest endemic areas of cysticercosisin Indonesia. This survey aim was to determine the seroprevalence of cystisercosis in Mimikaregion, Papua. A total of 44 pig serum samples were collected from Kwamki Narama district (28samples), Mimika Baru (13 samples), and Kuala Kencana (3 samples) they were examined by using Enzyme Linked Immunosorbent Assay (ELISA). The result of the survey showed that theaverage of seroprevalence of cysticercosis in Mimika region, Papua was 50% (22/44), where thelargest seroprevalence found in the district of Kuala Kencana was 100% (3/3), District of KwamkiNarama was 46,4% (13/28), and district of Mimika Baru was 46,1% (6/13). It concluded that theseroprevalence of cysticercosis in Mimika was very high.Therefore,it is necessary to do moreintensive programs to prevent and control this disease.

Abstract

Food safety aspects of animal origin need special attention because the new diseases that attack humans are almost 75% caused by infectious agents that come from animals or animal products. The purpose of this study was to analyze the health of pork and offals (innards) by slaughterhouse production, which potentially transmits zoonotic disease in humans. This research used a qualitative explorative survey method that analyzed the health of pig meat and offals inspected by inspection, palpation, and incision based on sex difference (male and female) and animal age (young and adult) with total samples examined each of 100 samples. The results of this study indicate that pork is examined in Pesanggaran abattoir all healthy, pulmonary organs show necrosis 15% (9% adult females/AF and 6% adult males/AM), 30% pneumonia (22% AF and 8% AM), hemorrhage and pneumonia 5% (4% AF and 1% AM), in the heart organ 13% showed hypertrophy/hyperplasia (7% AF and 6% AM), and 1% of the liver (AM) had cysticercosis. It can be concluded that pork slaughterhouse production in Pesanggaran is all healthy and only a small part of the offals (5-30%) shows abnormalities that have the potential to transmit zoonotic diseases to humans.

Abstract

Pemberian perasan bahan antimikroba alami dan lama penyimpanan pada suhu kulkas (5oC) berpengaruh terhadap jumlah bakteri Coliform pada daging babi karena salah satu cara untuk menjaga kualitas pangan adalah dengan menambahkan bahan aditif berupa zat antimikroba dalam bentuk rempah – rempah dan penyimpanan daging pada suhu dingin dapat menurunkan kemampuan bakteri untuk memperbanyak diri. Sepuluh gram daging direndam dengan perasan antimikroba selanjutnya dihitung jumlah bakteri Coliform dengan metode sebar. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) Faktorial 4x4, dengan 4 faktor perlakuan (kontrol, kunyit, jahe, dan bawang putih) dan 4 faktor lama penyimpanan (0, 3, 5, dan 7 hari). Selanjutnya data yang diperoleh diuji dengan  Analisis Ragam (Uji F)  dan dilanjutkan dengan Uji Duncan. Hasil penelitian menunjukkan bahwa perasan alami dari bawang putih sangat nyata (P<0,01) menurunkan jumlah bakteri Coliform dibandingkan perasan dari jahe, kunyit, dan kontrol (direndam dalam NaCl). Lama penyimpanan menunjukkan bahwa semakin lama penyimpanan pada suhu kulkas maka semakin meningkat secara sangat nyata (P<0,01) terhadap pertumbuhan bakteri Coloform. Terdapat interaksi yang sangat nyata (P<0,01) antara pemberian bahan antimikroba alami dengan lama penyimpanan pada suhu kulkas (5oC) terhadap penurunan jumlah bakteri Coliform pada daging babi.

Abstract

Cysticercosis is a parasitic disease caused by tapeworm larvae, called Cysticercus. Cysticercus found in pigs is Cysticercus cellulosae which is the larvae of the tapeworm Taenia solium. The purpose of this study was to determine the levels and fractions of Crude protein antigen C. cellulosae. C. cellulosae used is local isolates obtained from infected pigs originating from Karangasem - Bali. Determination of protein content larvae were performed using an Invitrogen Quibit Fluorometer and determination of protein fractions larvae techniques using SDS-PAGE electrophoresis. The results showed that levels of the protein C. cellulosae from local isolate was 867 µg/ml. As for protein fractionation obtained 6 bands protein with a molecular weight: bands 1 = 120.5 kDa, bands 2 = 99.8 kDa, bands 3 = 60.8 kDa, bands 4 = 47.7 kDa, bands 5 = 35.6 kDa, and bands 6 = 23.3 kDa.

Abstract

Tiren chickens are basically carcasses, namely chickens that die not because of slaughter, but chickens that have previously died due to poor endurance during the trip or affected by the disease then deliberately slaughtered for sale on the market. This study aims to detect the possibility of yesterday's sale of dead chicken meat (tiren) sold in four traditional markets in Denpasar City. The method used in this study is the purposive sampling method, which was a total of 72 samples of chicken meat were taken from four traditional markets in Denpasar City, each with three samples per market with six replications. The variables tested in this study were detection of tiren chicken with Malachite green test and pH test for chicken meat. The results showed that 19.44% (14/72) samples showed positive Malachite green test and average chicken meat pH 5.93 (5.32 - 6.45). Based on the results of the study it can be concluded that 19.44% chicken meat sold in four traditional markets in Denpasar City, it is suspected that tiren chicken is suggested to consumers to be more selective in choosing chicken meat for consumption

Abstract

Cysticercosis is a zoonotic disease caused by the larvae of Taenia solium which can affect human and animal health. Papua is one of the endemic areas of cysticercosis in Indonesia. This study aim was to determine the seroprevalence of swine cysticercosis in the region of Wamena, Papua. A total of a hundred and eleven swine serum samples collected from the region was then tested by using Enzyme Linked Immunosorbent Assay (ELISA). The results showed that the seroprevalence of cysticercosis in swine samples was 39.64% (44/111). It can be concluded that the seroprevalence of cysticercosis in swine of the region Wamena, Papua is realtively high. Therefore, it needs to design the disease control and eradicate program by relevant agencies in the region of Wamena, Papua.
