Abstract

Kelakai (Stenochlaena palustris (Burm F) Bedd) is a fern plant found in swampy or wetlands. This study aims to determine the effect of adding kelakai extract to the production process of wet noodles on the physicochemical properties of elasticity, water absorption, and moisture content, as well as the organoleptic properties of aroma, color, and texture, in order to determine the optimal formula for kelakai extract in making wet noodles. This study was designed using a completely randomized design (CRD), which consisted of 4 treatments, namely F0 (0%), F1 (60%), F2 (80%), and F3 (100%). The data were analyzed using the Analysis of Variance (ANOVA) statistical test with a confidence level of α = 0,05. If there is a significant difference between the treatments, then continued with the Duncan Multiply Range Test (DMRT) to test the Physico-Chemical properties, and the Kruskal-Wallis statistical test with a confidence level of α = 0,05 for the organoleptic test. If there is a significant difference between the treatments, then proceed with the Mann-Whitney follow-up test using SPSS 25. The results showed that wet noodles with the addition of kelakai extract had a significant effect on elasticity and water absorption where the more extracts, the higher the elasticity and water absorption. Besides, it also having a significant effect on water content, where the more extracts, the lower the water content. The results of the research on the preference level test or organoleptic data showed no significant effect on the panelists' preference for color, aroma and texture. In general, the F2 treatment is the most ideal formulation.

Abstract

The high mortality or death during the transportation process is caused by the fact that catfish fry are stress-prone fish and have fast metabolism. Handling the problem of high mortality in the process of transporting catfish seeds requires alternative probiotics from banana stems because banana stems contain saponins, flavonoids, alkaloids, and tannins. This study aims to determine the effect of giving probiotics from processed banana stems to increase the survival of catfish seeds in the 6-hour transportation process, the study used a randomized block design (RBD) with 4 treatments, namely giving fermented banana stem probiotics (T1), banana stem probiotics without fermentation (T2), commercial probiotics (T3), without probiotics (C) with 3 repetitions. The results showed that giving banana stem probiotics had an effect based on the ANOVA test of 0.00 <0.05 and in Duncan's test there was a significant difference in each treatment. In the study the effect of probiotics was seen from the still ideal water quality, fish behavior during the transportation process and survival rate (SR). SR of each treatment was (T1) 90%, 86%, 84%, (T2) 98%, 98%, 96%, (T3) 88%, 90%, 84% , (C) 20%, 28%, 20%. Giving probiotics from processed banana stems without fermentation (T2) had the best effect on the survival of catfish seeds in the transportation process.

Abstract

Utilization of red beans to be used as food ingredients is not maximized. Ice cream at room temperature melts easily and has a less soft texture, this is due to several factors, one of which is the emulsifier. To improve the quality of ice cream, researchers use natural emulsifiers in the form of red beans. The aim of this study was to determine the effect of the addition of red beans on the melting power of ice cream and organoleptic properties (color, aroma, taste and texture) of ice cream. The research design was a Completely Randomized Design (CRD) with 5 different treatments of adding red beans to ice cream, namely 0%, 30%, 50%, 70% and 100% with data analysis using the SPSS One way-ANOVA test for normal data, Kruskall-Wallis test for abnormal data, as well as Duncan's advanced test. The results showed that the addition of red beans had a significant effect on melting power (0.00<0.05), color (0.00<0.05), and texture (0.00<0.05). The addition of red beans had no significant effect on aroma (0.41>0.05) and taste (0.011>0.05).

Abstract

Anemia remains a significant nutritional challenge in Indonesia. One of the leading causes of anemia is iron deficiency, which is attributed to the requirement of essential micronutrients in hemoglobin synthesis. Various plant sources have been explored for their potential in alleviating anemia, and one such candidate is the Moringa plant. Moringa leaves, in particular, are known for their rich iron content, and they are often processed into tea to address hemoglobin deficiencies. The primary objective of this study was to determine the optimal dosage of Moringa leaf tea for increasing hemoglobin levels in anemic patients. We conducted quantitative research employing the true experimental method, with a completely randomized design (CRD) involving four distinct treatments and five repetitions. The results revealed the following hemoglobin levels in the treatment groups: treatment 1 (1 gram) resulted in a hemoglobin level of 4.08 g/dl, treatment 2 (1.5 grams) showed a level of 4.78 g/dl, and treatment 3 (2 grams) resulted in a level of 4.08 g/dl. Notably, the control group, which did not receive any treatment, did not exhibit any significant increase in hemoglobin levels. Applying the Bonferroni Post Hoc test to compare the control group with the treatment groups, we observed a p-value of 0.000, where the p-value was less than 0.05, signifying a significant difference in hemoglobin levels before and after treatment. The most effective dose of Moringa leaf tea, determined to be 1.5 grams, yielded the most substantial increase in hemoglobin level.

Abstract

One of the most popular freshwater fish species to farm, both domestically and internationally, is the koi fish (Cyprinus Rubrofuscus). However, koi fish farming is often attacked by bacterial diseases caused by the Aeromonas hyrophila bacterium, so it becomes a concern because this bacterium can cause death in koi fish. Papaya leaves were chosen as an alternative medicine in the treatment of koi fish infected with bacteria, considering that papaya leaves contain many compounds that are antibacterial and have no side effects when used. As for this study, the papaya leaves used were young papaya leaves which were extracted using the maceration method. This study was aimed to determine the effectiveness in treating koi fish infected with bacteria and what concentration of papaya leaf extract is effective as an antibacterial to treat koi fish seeds that are attacked by Aeromonas hydrophila bacteria. Papaya leaf extract was administered at different concentrations, namely 0 ml (control), 5 ml, 10 ml, 15 ml within 30 days before and after the koi fish seeds were attacked by Aeromonas hydrophila. The result revealed that papaya leaf extract has effectiveness as an antibacterial which can slow down the growth of Aeromonas hydrophila bacteria at a concentration of 15 ml with a survival rate of 95%. Therefore, the dose of papaya leaf extract is directly proportional to its effectiveness as an antibacterial. In other words, the greater the dose of papaya leaf extract, the more effective it will be in treating koi fish seeds that are infected with bacteria.

Abstract

Betel leaf has a long history of use in traditional medicine due to its natural antibacterial properties. This study focuses on the antibacterial effects of betel leaf (Piper betle) extract, particularly against Aeromonas hydrophila infections in koi fish. The research employs an experimental approach using a Completely Randomized Design (CRD) with four treatment groups, each repeated twice. The treatments consist of: a control group (Treatment K) without betel leaf extract, Treatment A with 5 ml of betel leaf extract, Treatment B with 10 ml of betel leaf extract, and Treatment C with 15 ml of betel leaf extract. The results of the study demonstrate the significant efficacy of betel leaf extract in promoting the healing of Aeromonas hydrophila-infected fish. This is evident from observations of reduced wound diameter in fish treated with betel leaf extract. In Treatment A (5 ml dose), noticeable wound diameter reduction begins in the fourth week. Treatment B (10 ml dose) shows similar progress with visible healing in the third week. Treatment C (15 ml dose) exhibits the most promising results, with wound diameter reduction or fading evident as early as the second week. Survival rates are recorded as follows: Treatment K – 50%, Treatment A – 65%, Treatment B – 75%, and Treatment C – 90%. These findings underscore the potential of betel leaf extract as an effective antibacterial remedy in combating Aeromonas hydrophila infections in koi fish.

Abstract

The high usage of rice in food products has led to a scarcity of national rice supply, which underpins this research. Talipuk is a seed from the water lily species Nymphae pubescens WILLD, abundantly available in the swamps of South Kalimantan. The addition of talipuk flour in vermicelli production is expected to reduce the reliance on rice flour. This study aims to investigate the influence of talipuk flour addition on the physical and chemical properties of vermicelli. The research adopts an experimental approach with a quantitative method, utilizing a completely randomized design by combining varying levels of rice flour and talipuk flour. Data analysis employs one-way ANOVA to determine significant differences among treatments. The results indicate that different treatments significantly affect the physical properties of vermicelli, including water absorption, integrity, and durability. Treatment variations influence chemical properties such as crude protein content and crude fiber but do not affect moisture content, ash content, and carbohydrate content.

Abstract

Antibiotics are drugs or substances produced by microbes, especially fungi, which can inhibit/eradicate other microbes (microorganisms/bacteria), especially microbes that are detrimental to humans, namely microbes that cause infections in humans. Antibiotics are not effective in treating viral, fungal, or other non-bacterial infections, and each antibiotic varies greatly in its effectiveness against different types of bacteria. The use of antibiotics is certainly expected to have a positive impact, but irrational use of antibiotics will have a negative impact. One of the negative impacts of irrational use of antibiotics is bacteria that are resistant to antibiotics. In community service, the target group was approximately 20 people, almost all of whom did not know that antibiotics should not be purchased freely without a prescription from a doctor and that irrational use could increase the impact of resistance. This can be caused by a lack of public knowledge regarding the use of antibiotics and a lack of education by health workers.
