Abstract

Nutrition is a human basic need starting from the embryo in the womb until elderly. The problem of nutrition occurs because of a person’s behavior in nutrition is wrong, that is, the imbalance between the consumption of nutrition and the sufficiency in nutrition. The aim of the study was to know the influence of game as health promotion media on the balanced nutrition behavior among the student’s of Senior High School 1 of Bagan Sinembah, Bagan Sinembah subdistrict, Rokan Hilir District Riau in 2012. The type of the study was quasi experiment with one pre-test and post-test group design. The treatment was by games in the classroom. The measurement was done after four weeks.The samples comprised 52 student’s. A paired t-test was used to know the effectiveness of media. The result of the study showed that there of knowledge before and after treatment with t value = -5,131 and p = 0.000. The student’s attitude and practice about balanced nutrition also increase (t value = -7.392, p = 0.000 and t value = -12.460, p = 0.000) after treatment among four weeks. The result of reseach indicate that there was no increase in the nutritional status. The conclusion of the study showed that game media could increase teenager behavior on balanced nutrition although it did not influence nutritional status. It is recommended that the management of the school to use games as one of the alternatives in teaching such as history and biology for the senior high school student.   Keywords:  Behavior of  Balanced Nutrition, Nutritional Status, Game, Senior High School Student

Abstract

Babyhood time is as the golden period for optimal growth and development of baby. In this period, babies need to have good nutrition caring pattern such as breast feeding  and complementary feeding. This research was aimed to describe the nutritional caring pattern and the nutritional status of 6 up to 12 months infants in the poor society in the working area of Sirait Publich Health Center, Nainggolan Subdistrict, Samosir District, in 2013. This research was a descriptive survey with cross sectional approach. The population was 6 up to 12 months infants since these ages were susceptible of malnutrition. The sample  is total sampling and the respondents were the infant’s mother. Primary data include maternal identity data, the identity of the baby an infant nutrition caring pattern (breast feeding  and complementary feeding practice), obtained from interviews mothers. The infants nutritional status was obtained from the results of weighing an measuring the body’s length.The result of the research showed that the nutritional caring pattern, that is breast feeding practice, the majority was categorized as moderate and not found good breast feeding. This is because there is a lack of ASI given to babies, while the complementary feeding practise was mostly good and there is a practice of feeding with food litlle or no nutritional value. The majority of infants nutritional status, based on the indicator of weight for age was categorized as normal, but we still can find some with less weight. The majority of infants nutritional status, based on the indicator of height for age was categorized as normal. However, some babies still were short and very short. The majority of infants nutritional status, based on the indicator of weight for lenght was categorized as normal, and there were a few infants had thin. Based on the results of research, it is suggested that the management of the Healthy Center to increase the information about giving the exclusive breast feeding, how to provide and give the complementary feed, an balanced nutrition to infants.   Keywords: Nutritional Caring Pattern, Infants Nutritional Status, Poor Society

Abstract

The consumption of balance nutrition is a balance of nutrition that required by body, either qualitatively or quantitatively that consumed by a girl in each served food. In order to have a qualified human resource  by increase the nutritional status of the people include the young girl  that manifested by the daily food activities.This research is a descriptive study with cross sectional design in order to know the behavior of a teenanger in consuming the balance nutritional and nutrition status at SMAN 1 Tarutung in 2012. The behavior of balance nutrition consumption can be indicated based on knowledge, attitude and consumption pattern. The measurement is conducted by scoring method to the questionnaire with the weight that categorized in good, medium or poor, while the nutritional status can be indicated by IMT. The number of sample is 90 persons and the data  is processed manually and put into a frequency distribution table and be analyzed by descriptive method.Based on the results of study, it is concluded that the knowledge and attitude of respondent to the balance nutrition is classified into 61.1% and 51.1%. While consumption pattern of respondent on the balance nutrition  is classified into did not eat various food (62%) that prefer rice (100%), fish (78.9%), spinach (46.7%) and orange fruit (41.1%). And the nutritional status of respondent is classified normal (75.6%), thin (12.2%) and obese (10%) and very obese (2.2%).It is suggested to the principal and teacher at SMAN 1 Tarutung to optimize the health promotion by provide the socialization to the students when provide the lesson to maintain the nutrition sufficient to increase the learning achievement. Abstract

Nutritional status of school children is determined by balanced food consumption as well as role of parents, and the awareness of the primary school children. The eating habit of the primary school children is influenced by their culture and the condition of their family income. The purpose of this descriptive study with cross-sectional design was to find out the description of the nutritional status of the primary school children of the ex-transmigration area and local people in Pelawan Subdistrict The population of this study was all of the 3,933 primary school children of the ex-transmigration area and local people, and 184 of them were selected to be the samples for this study through purposive sampling technique with proportion estimation formula. The data for this study were obtained through measuring body weight and body height and food-recal and food-frequency based interviews. The result of this study showed that, based on the IMT, by age, most of the nutritional status of the primary school children in the ex-transmigration area and in the local people area was in normal category; but 11.0% of the  primary school children in the ex-transmigration area and 20.4% in the local people area were in thin category, whereas 4.4% of the  primary school children in the ex-transmigration area and 2.2% in the local people area were in overweight category. Based on Body Height, by age, most of the  nutritional status of the primary school children in the ex-transmigration area and  in the local people area were in normal category; but 26.4% of the  primary school children in the ex-transmigration area and 40.9% in the local people area were in short and very short category. Based on the energy level, 75.9% of the primary school children in the ex-transmigration area and 87.1% in the local people area were in inadequate category. Based on the protein consumption level, 65.9% of the  primary school children in the ex-transmigration area and 80.7% in the local people area were in inadequate category. It is suggested that the food consumption, especially for energy and protein consumption be better improved that the nutritional status becomes normal then make an education or counseling about the balanced nutrition in schools and in community, and for the government should pay more attention and make a policy related to the use of agricultural land for food crops as well as the improvement of community’s economy. Abstract

The pattern of food consumption is a factor that has a direct impact to the nutritional status of under five children. The purpose of this research is to know the description the food comsumption pattern during the harvest and the planting seasons and nutritional status of under five children in the Lau Gunung. This research is descriptive with cross secsional design.  Taking the sampel by total sampling of 64 under five children. The results of the research showed in the planting season that energy intake was categorized good 48.4%, moderate 28.1%, low 18.8%, deficit 4,7% and when during harvest time energy intake was good categorized 68.8%, moderate 25.0%, less 6.3%. Meanwhile, intake of proteins when post harvest good category 32.8, moderate, 40.6%, less 20.3%, deficit 6.3% and when during harvest time good category 78.1%, moderate 18.8% and less 3,1%. Nutritional status for the under five children in the planting and during harvest seasons accoding by index weight for age is 78.1% and 85.9%, accoding by index height for age is 84,4% and 84,4% and accoding by index weight for height is 73.4% and 87.5%, mostly in normal category. The recommended that to the housewife noticed provision in accordance with the pattern of food menu balanced diet and to the local healthcare providers to more focus for counseling on nutrition balanced the mothers with the under five children to improving the pattern of food consumption and nutrional status of under five children.   Keywords: Alpha food pattern consumption, nutritional status, under five children, the planting, harvest

Abstract

Areca catechu is a plant that belongs to coconut family. The people of Toba Batak use the  fruit as one  meal for friends or quests, as the substitution of the cigarette for men. For children, the fruit of areca catechu is used as the substitution for candy. This research is intended to know the description of the consumption of the fruit of areca catechu, the occurrence of suffering worms,  and nutritional status of Elementary School 175750 in Pardamean Nainggolan village, Pahae Jae  district, North Tapanuli regency in 2013. This was descriptive research with cross-sectional design.  The sample of research was 58 students consisting of class 4 and class 6 who consumed  the fruit of areca catechu and who did not consume the fruit of areca catechu. The results of research showed 91.4% of the students in Pardamean Nainggolan village consumed the fruit of areca catechu and mostly of them consumed with the frequency once or twice in a day and quantity of consumption mostly 1- 3 fruit in a day, who mostly consumed during the day. From  the  result of helminthiasis checking, 94.8% the students of Elementary School classified negative and 5.2% classified positive. Mostly of student consumed energy and protein in worse deficit level, that was each for 86.2% and 53.4% respectively. The description on the nutritional status of Elementary School based on H/A as normal 67,2%, short 31% and very short 1,7% and based on BMI/A 84.5% as normal 84,5% and thin 6,9%. It is suggested for the health center to give guidance and counseling about the consumption of the fruit of areca catechu. In addition, there should be the control for suffering  worms and socialization about General Guide of Balanced Nutrient. Hemoglobin test should be conducted for the students of Elementary School 175750 Pardamaen Nainggolan village. Abstract

Tempeh burger is one of an innovative product of burgers, which has high phyto-protein. Most of people know that tempeh only made from soybean, but the other legume such as mung bean and red kidney bean can also be processed into tempeh because they almost have the similar nutrient composition with soybean. This was an experimental study that aims to determine the nutrient composition and the acceptable of patty with the difference of tempeh ingredients, such as soybean, mung bean, and red kidney bean. Based on laboratory test at the Laboratory of Nutrition FKM and Food Technology Laboratory FP USU, showed that the soybean tempeh patty has highest content of energy, fat, and carbohydrate; while the highest content of protein and ash belongs to the mung bean tempeh patty. Based on the organoleptic test by 30 students of FKM USU as a panelist, showed that the soybean tempeh patty was the most preferred. With Anova Test, the difference of tempeh for making the tempeh patty was only influenced different variety of color, aroma, and texture, but not for the taste. It’s recommended that consumer, especially those who like burgers but limiting meat consumption, make tempeh burger as their alternative snack. The mung bean tempeh patty was the best choice for young people who are still in their growth stage, because it had highest content of protein and ash. It is also need to do the further study to eliminate unpleasant contained in mung bean and red kidney bean tempeh patty. Keywords: Tempeh Patty, Nutrient Composition, Acceptability

Abstract

Crackers that is made with the addition of pora-pora fish is expected to increase the diversity of  fish crackers that has been on the market and also increase the nutritional value of the cracker itself. The purpose of this study was to determine the effect of pora-pora fish to the nutrients composition and acceptability of crackers. This research use experimental design consisting of a treatment i.e the addition of pora-pora fish in making crackers with three concentrations (5%, 10%, and 15%). Protein content of pora-pora fish crackers P1, P2, and P3 is 2,00%, 4,11%, and 6,40%. Calcium content of pora-pora  fish crackers P1, P2, and P3 is 28,6 mg, 51,3 mg, 77,1 mg. Based on organoleptic test of color and texture the most preferred is crackers  with the addition of  pora-pora fish 5%, while the flavor and taste the most preferred is cracker with the addition of  pora-pora fish 15%. Based on the analysis of variance, the addition of  pora-pora fish with deffrent concentration in making crackers gave a significantly different effect on the color and texture, but the addition of fish pora-pora different concentration, does not give a different effect on the flavor and taste of the crackers. It is suggestioned for consumer to make pora-pora fish crackers as an alternative food precent variations in household and industry levels. Also be made to introduce pora-pora fish crackers to cooperate with the school canteen and other foods made with the addition of the diversification of  pora-pora fish. Abstract

Taburia means supplemental food of multivitamin and multimineral to fulfill nutrient needs and the growth for the babies aged 6-24 months.  Taburia is as the expansion of local product of micronutrient powder (MNP) and as the strategy to overcome the anemia as the effect of iron deficiency and other micro nutrient deficiencies. The objective of this research was to know the description of consumption pattern and nutrient status of the babies aged 6-24 months getting Taburia in  Kemenangan Tani  area,  Medan Tuntungan, Medan City in 2012. This research was quantitative descriptive with Cross sectional design. The results of research showed that consumption pattern of the babies  aged  6-24  months  based on  the category of food  menu was categorized  good for  67,7% and  consumption pattern of the babies aged 6-24 months based on  the category of eating  frequency was categorized good for 53,2%, whereas based on  the weight  per age  was categorized  normal  for 57,6%, nutritional  status based on height  per  age was categorized normal for 68,1% and nutritional status based on weight per height  was categorized normal  for 73,0%. Taburia administration program may enhance nutritional status of two years old of the babies into normal. Hence, it is expected that Health Department should continue Taburia  administration program since it is proved that  it may enhance  nutritional  status of  two years old of  the babies in Kemenangan Tani area, Medan Tuntungan and also it is expected that Primary Health Center is more active in giving  the socialization of  information and counseling about good consumption pattern of the baby and  Taburia administration.

Abstract

Cassava is one of the food ingredients to support food diversification program. For it is necessary to introduce processed cassava product to get new food alternatives. Brownies made with cassava flour and cassava flour can add additional types of brownies that have been there in the market. This study is an experiment that is making brownies using 100% cassava flour and cassava flour addition of 50%. Panelists in this study were student school of public health University of North Sumatra as thirty people. Acceptability test data obtained were analyzed descriptively and nutritional value of carbohydrates was deretmined by hydrolysis methode and phosphor was determined by AAS method (atomic absorption spectrofotometri) and the method was tested in the laboratorty standardization agency for industrial research and medan. the results showed that student receive the test public health University of North Sumatraagainst brownies. The addition of cassava flour is preferred by the addition of 50% brownies. The addition of cassava flour in making brownies giving increasing amountd of carbohydrat and phosphor on the brownies. The addition of cassava flour in making brownies with a variety of different influence evident on the assessment test acceptability in terms of taste, aroma and texture and nutrient content of the resulting brownies. But did not give a significatly different efect on the color brownies. Then it is recommended that the public can make brownies cassava as food alternatives because it contains carbohydrates and phosphorus necessary body.Keyword : Brownies, Cassava, Nutrient Composition, Acceptability Test
