Abstract

One of the causes of nutritional problems or Children's growth and development is nurturing,. Among others,  gives attention, time and support for comply the  physical, mental, and social children. Mothers who get married at an early age may not yet understand the good parenting, especially in the fulfillment of nutrition. The purpose of this study is to know the description of parenting with the nutritional status of children in mothers who were married at an early age in the village Tiga Panah Seberaya Karo district of North Sumatra province Year 2016.               This type of research is descriptive research with cross sectional design. The population is all toddlers which born from mothers who married under the age of 19 years, amounting to 66 (total sampling). The data collected in this study include eating pattern, cleanliness pattern, health care pattern and  nutrition status of a toddler based on  W/A, H/A and W/H. The method used is a direct interview using a questionnaire to know the action of  mothers in giving the pattern of eating, pattern of  hygiene, and health pattern for toddlers. Then, to obtain data on weight and height toddlers do for weighing and measuring. The data obtained were analyzed using Chi-square test.               The results showed that category of good eating pattern is 50%, and category of not good eating pattern is 50%, the category of good cleanliness pattern  is 51.5%, and the lowest category of not good cleanliness pattern is 48.5%, and category of  health care pattern is 75.8% and the lowest category of not good health care pattern is 24.2%. While the nutritional status of children is based on W/A mostly in the category of malnutrition is 63.6% and the lowest category of good nutrition is 36.4%, nutritional status of children based on H/A mostly in the normal category is 65.2% and the lowest category short is 34.8%, and the nutritional status of children is based on W/H mostly in skinny category  is 69.7% and the lowest normal category is 30.3%.                Toward health workers to improve the activities about good parenting to the mother and invites mothers to do regularly weigh and height measurement to monitor the abnormal growth of underfive children. Abstract

The game of football is a sport that requires physical endurance and intensity high so that a good nutritional status is required as well as enough nutrients to support performance and the performance of the athletes. The need to maintain fluid balance in the body, because if the lack of fluid consumption can lead to dehydration which can degrade the performance of the sport. This research was conducted to find out the description of the level of knowledge of sports nutrition, the frequency of drinking fitness isotonic drink, physical, and nutritional status in football athletes at Premier Division Persatuan Sepakbola Langkat (PSL) Bapor Pertamina Pangkalan Susu. This research uses a cross-sectional design with sampling technique using total sampling. Sport nutrition knowledge measurement using questionnaires, frequency beverages isotonic method using a Food Frequency Questionnaire, physical fitness test method using balke, and nutritional status using the method of anthropometry. Then data analyzed are descriptive. The results showed that athletes have knowledge of sports nutrition less 53,3%, do not consume drinks isotonic 40,0%, enough physical fitness 66,7%, and status malnutrition 56,7%. It is recommended that the athlete applying a good diet and healthy to optimize intake of energy and nutrients your body needs to improve performance fitness athletes in sports. Abstract

Behavior from a biological point of view is concerned organism activity that can be observed directly or indirectly. Mother is the name for the woman who gave birth to us, a woman who has been married, call prevalent in women. Breastfeeding is one of the components of the reproductive process consisting of menstruation, conception, pregnancy, childbirth, lactation, and weaning. Exclusive breastfeeding of infants aged 0-6 months is given only breast milk without giving additional food or other drinks. This research was conducted to see the description of mother's behavior in breastfeeding and food complementary in children 0-2 years in Area of ​​Puskesmas Pembantu Padang Bulan Subdistrict of North Rantau Labuhanbatu Regency 2017. This research is a descriptive research with cross sectional design. Data obtained from direct interviews to mother of toddler which include data of knowledge, attitude, and action of mother about breastfeeding and food complementary . Analysis of data processed and analyzed descriptively, presented in the form of frequency distribution table. The result of this research shows that knowledge on good category breast feeding is higher that is 52,5%, for giving exclusing breastfeeding is 46,3%,on food complementary of good category is higher that is 73,8%. Attitudes on breast feeding category is not good higher tht is 51.3%, in food complementary  category not good higher that is 52,5%. The action on breastfeeding category is not good is higher that is 55%, in food complementary  category not good higher that is 55,1%. Based on the results of the study is expected to increase counseling about breastfeeding and food complementary  are good to children under two and for health workers to motivate health cadres in disseminating information to mothers about breastfeeding and food complementary  are good against children under two. Abstract

The infant and child mortality rate of health development of a country and the quality of life of the communit. One effort that can be done to reduce infant mortality rate is through the promotion of eksklusif breastfeeding to infants for 6 months. To support the promotion, one way that can be done is by applying an early breastfeeding initiation program which is giving breast milk to the baby immediately within 1 hour after birth. This study aims to determine the description of the behavior of health workers in the activities of Early Breastfeeding Initiation in RSI Ibnu Sina and RSUD dr. Adnaan WD in Payakumbuh. The type of this research is descriptive quantitative by using cross sectional design. The population of 43 people and all the population sampled (total sampling). Primary data include knowledge, attitudes and actions obtained by interview using questionnaires. Data on the number of early breastfeeding initiation and number of births were ontained from hospital documentation. The results showed that overall behavior of health workers in Early Breastfeeding Initiation activities has been included in the category either with knowledge level that is equal to 83,7%, attitude that is equal to 79,1% and action equal to 69,8% but health worker always doing early breastfeeding initiation activity is only 30,2%. Characteristics of health workers consisting of age, type of education, duration of work and IMD training can not affect health workers in performing IMD activities. Good knowledge and positive attitudes will not always bring good action in the execution of IMD activities, because an action will be possible if conditions and conditions support. It is therefore desirable for the hospitals to require health workers to deliver IMD to every newborn infant with no medical indication that could impede IMD implementation and to give strict sanction to those who do not carry out the activity and to the health officer to further improve the implementation the activity of the IMD in each newborn if there is no medical consideration that can be a hindrance to the implementation of the activity. Abstract

Some of studies indicate that family sosio economic is the cause of stunting. The low income affect to capability of feeding and causing bad dietary habit. It had opportunities of stunting. This research aims to know description about knowledge of balance nutrition, the consumption pattern, history of diseases and family sosio economic in stunting students in SMP Negeri 2 Rantau Selatan. Types of study is an observational of cross sectional study design. This sample of research is all stunting students as many as 112 students and use total sampling method. Data for this study using 24 hours  food recall method and food frequency question form. This research held in July up to October 2017 in SMP Negeri 2 Rantau Selatan. This results showed the knowledge of balance nutrition of stunting students in good chategory but the consumption pattern is lack according to the food quantity based on macro nutrient and micro nutrient. According to the type of food, stunting students consump rices as staple food; fishes and eggs as side dishes; spinaches, kales, cassava leaves as vegetables. In great measure, stunting students don’t have history of diseases, and their mothers in well education but don’t have occupation . It causing low family income so the nutrtional adequacy  can’t be fulfilled. From the result of this research suggested to public health office that gives balance nutrtion counseling to society especially to low income family. Suggested to school to provide healthy canteen so the stunting students can improve their growth with good consumption of food. Abstract

Malnutrition is caused by inadequate food intake and infectious diseases. Nutritional problems, especially short children, inhibit the development of young people with negative impacts that will take place in the next life. This study aimed to find out the pattern of child eating stunting in SMP Negeri 1 Dolok Masihul. Type of this research was descriptive survey research with cross sectional research design. This study was conducted by calculating the adequacy of energy, protein, calcium, phosphorus, magnesium, zinc vitamin A, vitamin C and iron by using 24 hours food recall method. This sample of research was all students stunting as many as 102 people. The result of this research showed that the stunting student pattern in SMP Negeri 1 according to the amount of food based on the sufficiency of macro nutrient was the sufficiency of energy equal to 98,0% and protein sufficiency equal to 77,5% less category, and for the sufficiency of micro nutrient that was calcium equal to 98, 0%, phosphorus 92,2%, magnesium 65,7%, zinc 97,1%, vitamin A equal to 88,2%, vitamin C equal to 92,2%, iron equal to 99,0% less category. According to the average type of food consumed was 3 types per day and stunting students eat rice as a staple food. Most stunting students often eat fish, eggs and tempeh as side dishes, kale and cassava leaves as vegetables, and bananas as fruit. For the school it was advisable to cooperate with the puskesmas to make an extension activity and make a poster in every class about the importance of consuming diverse food with enough amount every day to catch up the growth of stunting student. Abstract

Stunting is a failure to achieve optimal growth experienced since ancient times thus causing the achievement of growth that is not perfect. So this research aims to determine the correlation between zinc and iron consumption habit and stunting insidence in children of elementary school in SD Negeri No. 117504 Aek Pamingke Labuhan Batu Utara. Based on the initial survey established found 42% of students sustain stunting and students with the consumption of zinc and iron are in the good chategory only in the amount of 9%. This type of research is quantitative with cross sectional design and sample is 75 students. The data about student’s characteristic (age and sex), zinc and iron consumption habit obtained by using qustionarre, and stunting case data obtained by using  anthropometry measurement. Analysis correlation between independent variabel and dependent variabel using chi square test. Result showed the percentage proportion of stunting students is 44% and non-stunting students is 56%. From bivariate analysis result between zinc consumption habit with stunting incidence showed p value=0,022 and RP value=4,13. Result analysis between iron cinsumption with stunting incidence showed p value=0,006 and RP value=4,421. So can be observed meaningful correlation between zinc and iron consumption habit with incidence of stunting in children of the primary school. Then from the result can be concluded that consumption habit of zinc and iron relate to the stunting incidence in SD Negeri No. 117504 Aek Pamingke Labuhan Batu Utara. This result suggested to the school and parents in order to pay more attention to children food consumption, both at school and home, to reduce the risk of stunting in children. Abstract

Dodol is classified into classes, prepared from fruits and prepared from flour such as rice flour and glutinous flour. During the time, the usage of eggplants on society just for vegetable, dishes and less of interest. There is various way to produce it becomes dodol. In general, society just threw up the papaya peel. Its underutilized even the nutrient content usefull for health. The purpose of this research is to know the acceptability and nutrient content of dodol with purple eggplant and papaya peel addition. The research conducted with experimental research using complete random design with to treatment. The addition of purple eggplant andpapaya peel with comparison 70%:30% (treatment A1) and comparison of 50%:50% (treatment A2). The hedonic test of dodol with purple eggplant and papaya peel addition made against 30 students of the Faculty of Public Health University of Sumatera Utara. The analysis of nutrient content held on research and Industry Standardization Laboratory Medan and Technology Laboratory Faculty of Agriculture University of Sumatera Utara. Organoleptic data analysed with Wilcoxon Signed-Ranks Test. The result of nutrient content analysis in dodol with purple eggplant and papaya peel addition on treatment A1 (70%:30%) contain carbohydrates 23,4%, fiber 1,23%, posfor 65,2 mg/100g and contain beta carotene 0,34 mg/100g. The result of nutrient content analysis for treatment A2 (50%:50%) contain carbohydrates 23,4%, fiber 1,02%, posfor 84,3 mg/100g and contain beta carotene 0,20 mg/100g. Based on organoleptic test on color, smell, taste, and texture its found that panelis preferred dodol with comparison (70%:30%). It is suggested for society to utilize purple eggplants and papaya peel in producing another kinds of dodo and can be used as a small business cental that increasing income and increasing the diversity of dodol processed products from vegetable ingredients and papaya peel. Abstract

Fish is the main source of protein for fisherman families. Kelurahan Pasir Bidang is one of the areas that majority the regions have livelihood as fisherman, either catching fisherman or working fisherman. Therefore, almost in every day they consume fish as side dishes including their toddler. The purpose of this research is to understand the relation of fish consumption and protein sufficiency rate of the toddler in the fisherman families in Kelurahan Pasir Bidang, Kecamatan Sarudik, Kabupaten Tapanuli Tengah. This research was observational with cross-sectional design. The population of toddlers are 281 toddlers, and the samples are 74 toddlers. Sampling technique was done by simple random sampling technique. Data which taken from the research are the quantity of fish consumption and the daily protein sufficiency. Data were collected with use the 2x24 hours food recall and food frequency method. The relation of fish consumption and protein sufficiency rate was taken by chi-square test with p<0,005. The result of the research showed the type of fish that frequently consumed is layang fish (sea food) about 97,5% and infrequently consumed is lele fish about 24,3%. Average of toddlers fish consumption is 97,5 grams with average of daily protein sufficiency is 21,45 grams. The result of the research also showed that there is the relation between the total of fish (gr) with the protein sufficiency rate of toddlers among aged 12-36 months (p=0,003) and also among aged 37-60 months (p=0,004). Based on the results of the research, it is suggested that the mothers who are responsible to prepare food in the household can more increase the fish protein consumption with use the source of fish protein that got from the fishermen, and to improve public knowledge about nutrition, especially about the consumption of fish and the contribution of the protein needs, is expected to the local health officer to give conseling to a lot of people. Abstract

Red palm oil and olive oil can be utilized in making of mayonnaise. The purpose of the study was to determine acceptance of mayonnaise combined with red palm oil and olive oil involve color, aroma, taste, texture and nutrition contents. Research object in this study is mayonnaise combined with three different ratio of red palm oil and olive oil (red palm oil : olive oil 5%:95%; 10%:90%; 15%:85%). This study used experimental design with completely randomized design. Panellists in this study was 30 student of public health in University of Sumatera Utara. Hedonic test data analysis methods used descriptive analysis percentage and statistic tests used friedman test, whereas anlysis of nutrition content used spectrophotometer, HPLC, and GC conducted in PPKS Medan. The study conducted in april until june 2016. The result of this study showed that mayonnaise used red palm oil 15% and 85% preferably with characteristics such as very yellow, distinctive aroma mayonnaise, distinctive flavor mayonnaise, very creamy texture, and contains carotene 296 ppm and vitamin E 175,12 ppm. As a sauce, mayonnaise with red palm oil and olive oil is recommended as contribute daily intake of vitamin A and as one of preventions to vitamin A deficiencies.
