Abstract

Kegiatan urban farming menjadi solusi strategis untuk menghadapi tantangan ketahanan pangan di daerah perkotaan. Kelompok Wanita Tani (KWT) memegang peran sentral sebagai aktor utama, seperti yang diimplementasikan oleh KWT Asri di Kelurahan Kedaung, Kecamatan Sawangan, Kota Depok, yang merupakan wilayah dengan Indeks Pembangunan Manusia (IPM) di bawah rata-rata kota. KWT Asri merupakan bagian dari inisiatif Pemerintah Kota Depok, yaitu program Kampung Cerdas Ramah Keluarga (CARAKA) yang mengintegrasikan berbagai permasalahan, termasuk Pekarangan Pangan Lestari (P2L). Penelitian ini bertujuan untuk menganalisis model pemberdayaan KWT Asri dalam pemenuhan kebutuhan pangan lokal. Riset ini mengadopsi pendekatan kualitatif melalui studi lapangan dengan teknik pengumpulan data triangulasi: wawancara mendalam, observasi partisipatif, dan dokumentasi. Analisis menggunakan model CIPOO (Content, Input, Process, Output, dan Outcome). Hasilnya menunjukkan bahwa proses pemberdayaan KWT Asri melibatkan kolaborasi antara Kelurahan Kedaung, Mitra Perguruan Tinggi (UPN Veteran Jakarta dan Universitas Sahid Jakarta), dan anggota KWT sendiri. Input mencakup penyediaan sarana dan prasarana (lahan, rumah pembibitan, kolam ikan, benih), serta pelatihan P2L dan pembuatan pupuk organik. Output yang dihasilkan beragam, seperti kangkung (50 ikat), bayam (15 ikat), terong (12 kg), timun suri (15,2 kg), kacang panjang (75 ikat), cabai (15 kg), dan pepaya (10 kg). Outcome utama kegiatan ini adalah pendistribusian sebagian besar hasil panen kepada keluarga yang memiliki bayi dan balita, sebagai upaya nyata intervensi gizi dan pencegahan stunting. Hasil panen sisanya dijual untuk modal kerja KWT. Dengan demikian, model pemberdayaan ini berhasil meningkatkan ketahanan pangan lokal, ketersediaan pangan segar, dan menciptakan model ekonomi sirkular berbasis komunitas di wilayah urban.

Abstract

Latar Belakang: Integrasi layanan gizi dalam manajemen bencana merupakan komponen penting untuk mencegah peningkatan malnutrisi pada kelompok rentan. Namun di Indonesia, integrasi Nutrition in Emergency (NiE) dalam kebijakan daerah belum optimal. Gempa bumi Cianjur 2022 memberikan konteks penting untuk memberikan gambaran sejauh mana kebijakan terkait bencana di daerah telah mengakomodasi aspek gizi. Metode: Analisis konten dilakukan terhadap 4.816 dokumen Jaringan Dokumentasi dan Informasi Hukum (JDIH) Kabupaten Cianjur (2022–2023). Seleksi bertahap menghasilkan 15 dokumen yang relevan. Analisis isi menggunakan lima domain: struktur kelembagaan, mandat fungsi, panduan operasional, integrasi gizi, dan pembiayaan. Data diperkuat dengan temuan lapangan dan wawancara pemangku kepentingan terkait respons gizi pasca-gempa. Hasil: Analisa dokumen menemukan bahwa meskipun terjadi penguatan struktur kelembagaan bencana, tidak ada regulasi yang secara eksplisit mengatur layanan gizi darurat, termasuk Pemberian Makan Bayi dan Anak (PMBA) dalam situasi bencana, maupun manajemen wasting. Dokumen tanggap darurat mengatur logistik dan komando, tetapi tidak memuat standar pelayanan gizi minimum. Implementasi gizi di lapangan berlangsung secara ad-hoc dan bergantung pada inisiatif tenaga kesehatan, bukan sebagai mandat kebijakan formal. Kesimpulan: Evolusi kebijakan kebencanaan di Cianjur belum mengintegrasikan NiE secara sistematis. Diperlukan peraturan daerah yang menetapkan layanan gizi darurat, struktur koordinasi, panduan operasional, dan pembiayaan untuk meningkatkan kesiapsiagaan gizi pada bencana mendatang

Abstract

Background: Hypertension is a leading global cause of death associated with oxidative stress. Antioxidants help prevent oxidative stress, potentially reducing the risk of hypertension. Food bars from mocaf flour, moringa leaf flour, and mackerel flour have potential to be developed as functional foods due to their flavonoid, α-tocopherol, and antioxidant activity content.Objectives: This study analyzed the total flavonoid content, α-tocopherol, and antioxidant activity in food bars as potential antihypertensive functional foods.Methods: This study used an experimental method with a completely randomized design and three formulas. The study was conducted from June to August at three different locations. Flavonoids were analyzed using AlCl₃ UV-Vis spectrophotometry, α-tocopherol using HPLC, and antioxidant activity using the DPPH method. The results of the measurements were analyzed descriptively, followed by a normality test, with a one-way ANOVA and Duncan's test if normally distributed, and Kruskal-Wallis and Mann-Whitney tests if not normally distributed.Results: The results showed that Among the formulas, the highest total flavonoid content was in F1 (0.71 ± 0.01 mg/g), and the highest α-tocopherol content was in F2 (8.62 ± 0.23 mg/100 g). The strongest antioxidant activity among the three formulas was observed in F1 (1414.105 ± 0.84 mg/L). Based on the Shapiro-Wilk test, the three contents tested were normally distributed (p>0.05), but only the antioxidant activity and α-tocopherol showed a significant difference (p<0.05).Conclusion: Food bars made from mocaf flour, moringa leaf flour, and mackerel flour contain flavonoids and α-tocopherol, which contribute to antioxidant activity, making them potential functional foods with antihypertensive properties.

Abstract

Background: Diabetes Mellitus (DM) is a disease that occurs when the body cannot use insulin effectively, resulting in increased glucose levels in the bloodstream. According to the Indonesian Ministry of Health, the prevalence of diabetes mellitus in Indonesia reached 45.3 million in 2023. One strategy for DM management is the consumption of foods with a low glycemic index (GI). Low-GI foods help control blood glucose levels and are beneficial for the prevention and management of diabetes mellitus. Foods with high dietary fiber content generally have  lower GI values. Food bars are considered functional snack alternatives with potential benefits for DM prevention.  Objectives: This study aimed to analyze the dietary fiber content, glycemic index, and glycemic load of a food bar.Methods: An experimental laboratory design with a crossover approach was used. The research was conducted at the Nutrition Laboratory of UPN “Veteran” Jakarta and Saraswanti Indo Genetech (SIG) from June to August  and involved 10 UPNVJ student subjects who metthe inclusion criteria off  being  male or female, aged 18-23 years, BMI 18.5-22.9 kg/m2, no history of DM, and normal fasting blood glucose levels ranging from 70-115 mg/dl. The dietary fiber content was analyzed using the gravimetric method, and the glycemic index was determined using the IAUC method. Data were analyzed using the Shapiro-Wilk normality test and Paired Sample T-Test.Results: The average dietary fiber content of the food bars was 11.26% per 100 g. The GI value obtained was 29.54 (low category), and the glycemic load was 10.92 ( upper limit of the low category). The difference test showed that p<0,001 indicating a significant difference between the reference and test foods.Conclusion: Food bars had high  dietary fiber content and low GI values.

Abstract

Abstrak: (1) Probiotik merupakan mikroorganisme menguntungkan yang berperan dalam menjaga keseimbangan mikroflora usus, meningkatkan imunitas, serta mendukung metabolisme tubuh. salah satu upaya untuk mencegah terjadinya diabetes melitus adalah melalui konsumsi probiotik melalui pemanfaatan minuman fermentasi kombucha. Kota Depok menjadi wilayah sasaran karena angka diabetes melitus masih cukup tinggi. (2) Untuk meningkatkan pengetahuan kelompok wanita tani (KWT) dan warga Kelurahan Kedaung mengenai probiotik dan pemanfaatan kombucha melalui edukasi dan praktik sederhana. (3) Kegiatan dilakukan dengan ceramah dan praktik pembuatan kombucha pada anggota Kelompok Wanita Tani dan warga. Sebanyak 16 peserta mengikuti pre-test dan post-test (4) Terdapat peningkatan skor pengetahuan dari 71,25 menjadi 78,75. Mayoritas responden (62,5%) mengalami peningkatan pengetahuan. Sehingga edukasi probiotik dan pelatihan pembuatan kombucha efektif meningkatkan pengetahuan peserta serta mendukung pemanfaatan minuman fermentasi sebagai upaya pencegahan diabetesAbstract: (1) Probiotics are beneficial microorganisms that maintaining intestinal microflora balance, boosting immunity, and supporting the body's metabolism. one of the ways to prevent diabetes mellitus is through the consumption of probiotics by utilizing kombucha fermented drinks. Kedaung, Depok City, is the target area because the rate of diabetes mellitus is still quite high. (2) To increase the knowledge of the women farmers group (KWT) and residents of Kedaung Village about probiotics and the use of kombucha through education and simple practices. (3) The activity was conducted through lectures and kombucha-making practices for members of the KWT and residents of Kedaung. A total of 16 participants took the pre-test and post-test. (4) There was an increase in knowledge scores from 71.25 to 78.75. The majority of respondents (62.5%) experienced an increase in knowledge. Thus, probiotic education and kombucha-making training effectively increased participants' knowledge and supported the use of fermented beverages as a diabetes prevention measure.

Abstract

Abstrak: Data prevalensi stunting pada anak secara nasional tahun 2024 sudah mencapai 19,8%. Berdasarkan data SSGI 2024, Kota Depok memiliki prevalensi stunting sebanyak 12,5% sehingga membutuhkan intervensi atau strategi terarah untuk menekan angka tersebut. Tingginya kasus disebabkan oleh kurangnya pengetahuan gizi keluarga serta pemanfaatan pangan lokal yang belum optimal untuk mendukung pertumbuhan anak. Stunting tidak hanya berdampak pada kesehatan dan kognitif anak, tetapi juga berdampak terhadap ekonomi masa depan. Tujuan kegiatan ini adalah untuk meningkatkan pengetahuan dan sikap masyarakat dalam upaya menekan angka stunting melalui pemanfaatan pangan lokal dari pekarangan rumah. Kegiatan Pengabdian Masyarakat ini dilakukan di Paud Wijaya Kusumah, Kelurahan Kedaung, Depok. Terdiri dari 16 peserta yang merupakan anggota Kelompok Wanita Tani (KWT) Asri Kedaung dan warga setempat. Metode yang dilakukan adalah penyuluhan dengan media audio visual, serta adanya praktik langsung. Evaluasi peningkatan pengetahuan mitra dilakukan melalui pengisian pretest dan posttest yang terdiri dari 10 soal, kemudian dilakukan analisis statistik menggunakan SPSS dengan uji paired sample t-test. Hasil yang diperoleh adalah kegiatan ini berjalan lancar, peserta aktif dan mengikuti kegiatan hingga akhir. Tidak terdapat peningkatan pengetahuan peserta yang signifikan, tetapi terdapat peningkatan rata-rata pada hasil pre-test dan post-test peserta. Kegiatan ini sebagai upaya untuk meningkatkan pengetahuan dan sikap masyarakat dalam menekan angka stunting.Abstract: The national prevalence of stunting in children in 2024 has reached 19.8%. Based on SSGI 2024 data, Depok City has a stunting prevalence of 12.5%, requiring targeted interventions or strategies to reduce this figure. The high number of cases is due to a lack of nutritional knowledge among families and the suboptimal use of local foods to support child growth. Stunting not only affects children's health and cognition, but also has an impact on their future economic prospects. The aim of this activity is to increase community knowledge and awareness in order to reduce stunting rates through the use of local food from home gardens. This community service activity was carried out at the Wijaya Kusumah Early Childhood Education Center in Kedaung Village, Depok. It consisted of 16 participants who were members of the Asri Kedaung Women Farmers Group (KWT) and local residents. The methods used were audio-visual counseling and hands-on practice. The evaluation of the partners' knowledge improvement was carried out through the completion of a pretest and posttest consisting of 10 questions, followed by statistical analysis using SPSS with a paired sample t-test. The result obtained was that this activity ran smoothly, with participants actively participating and following the activity until the end. There was no significant increase in participants' knowledge, but there was an average increase in participants' pre-test and post-test results. This activity was an effort to increase public knowledge and attitudes in reducing stunting rates.

Abstract

Type 2 diabetes melitus is a chronic disease caused by insulin resistance. In 2023, the prevalence of type 2 DM in Indonesia among people aged ≥15 years continued to increase, reaching 11.7% among people of productive age. e implementation of a natural food-based diet with high fiber and low glycemic index is important in controlling blood glucose in people with type 2 diabetes. This study aims to describe the glycemic index and glycemic load values of test cereal drinks with added moringa leaves and compare them with commercial products. The study used a true experimental design with a crossover design on 10 subjects who met the inclusion and exclusion criteria. The treatment was given three times in the form of pure glucose, commercial cereal, and moringa leaf test cereal with a minimum washout period of three days. Blood glucose was collected at 0, 15, 30, 45, 60, 90, and 120 minutes, followed by the calculation of the glycemic index using IAUC method and glycemic load. The results showed that the moringa leaf test cereal had a GI value of 50.71% (low category), while the commercial cereal had a value of 61.06% (moderate category). Both BG values were in the moderate category, at 12.67 and 15.26, respectively. It was concluded that the moringa leaf test cereal effectively provided more stable postprandial blood glucose control due to its high fiber content and low glycemic index value.

Abstract

Jatisura Village is located in Cikedung District, Indramayu Regency. Most of the residents earn a living as agricultural workers. The village boasts various tourism opportunities, such as Situ Bolang Agrotourism, which serves to retain water for irrigating the fields of local farmers and can also yield freshwater fish that can be consumed or transformed into products for Micro, Small, and Medium Enterprises. The aim of the research is to assess the socio-cultural nutrition aspects, including economic conditions, educational levels, knowledge, and the nutritional status of school-aged children and adolescents in Jatisura Village. Method: mixed method approach. incorporating both qualitative explorative and quantitative techniques. A total of 12 participants were involved, including village officials, integrated health post cadres, adolescents, community leaders, traditional leaders, village midwives, and representatives from Islamic elementary and high schools. For the quantitative portion, purposive sampling was applied, comprising 18 health cadres, 32 adolescents from high schools, and 60 children from elementary schools. This study was carried out between September 2022 and March 2023. Results: The majority (90.1%) of residents in the village earn incomes below the Minimum Wage set by Indramayu Regency. Jatisura Village is home to Micro, Small, and Medium Enterprises that have the capacity to export their products internationally, such as Rolisa Food, which produces mango crackers, mango seed coffee, mango preserves, mango juice, orange leaf nuts, and cow skin crackers. The understanding of nutrition among less than 33% of community leaders, 28.1% of teenagers, and 88.7% of school-age children is limited. In terms of nutritional status, 28.2% of teenagers are classified as underweight, and 16.7% of elementary school children show signs of stunting. Conclusion: The tourism opportunities in Jatisura Village can be enhanced by utilizing local food resources to create distinctive souvenirs, thereby boosting the income of the villagers. There are still adolescents experiencing inadequate nutritional levels and elementary school children facing stunting issues related to nutrition. It is essential to offer nutrition education and healthy food management training to the villagers to elevate their purchasing power for nutritious food and enhance education and health for the entire community.
