Abstract

The development of gluten-free brownies with purple yam paste and mocaf is an alternative for individuals who avoid consuming gluten. This study aims to determine the effect of the ratio of purple yam paste and mocaf on the characteristics of brownies. A Randomized Block Design was used with six treatment levels of purple yam paste to mocaf ratios: 0:100, 15:85, 30:70, 45:55, 60:40, and 75:25. Each treatment was replicated three times. The data obtained were analyzed using Analysis of Variance. If a significant effect was found, the analysis was continued using Duncan new Multiple Range Test (DnMRT) at the 5% level. The results showed that the ratio of purple yam paste to mocaf significantly affected the texture, color, and the hedonic organoleptic qualities of texture and color. The best treatment was the 75:25 ratio which resulted in a texture force of 105.5 N, water content of 20.16%, and color values of L* 37.1 a* 7.8 b* -2.9. Organoleptic scores for this treatment were: texture 3.48 (rather soft), color 4.40 (purple), taste 4.00 (like), overall acceptance 4.04 (like). However, texture and overall acceptance were lower than commercial brownies. The nutritional composition of this treatment included an ash content of 1.42%, protein content of 4.82%, fat content of 29.12%, and carbohydrate of 44.49%.

Abstract

Mandai is a traditional fermented food from East Kalimantan made from the peel of cempedak (Artocarpus champeden). To the best of our knowledge, this study is the first to report the isolation and characterization of lactic acid bacteria (LAB) from mandai. The fermentation process was carried out for 14 days using MRS Agar medium, resulting in 17 bacterial isolates, consisting of nine Gram-negative and eight Gram-positive isolates. Among them, eight Gram-positive isolates were dominant and exhibited typical LAB characteristics, including acid and gas production from glucose, negative catalase activity, non-motility, growth at 48°C but not at 16°C, and the ability to hydrolyze starch, fat, and casein. During fermentation, the pH decreased from 6.8 to 3.8, confirming active lactic acid production. These findings demonstrate that LAB play a crucial role in generating the characteristic sour taste and improving the quality of mandai. Importantly, the identified LAB isolates have potential as starter cultures to enhance the safety, consistency, and nutritional value of this traditional food.

Abstract

Research on languages, particularly regional languages, is extremely challenging to conduct because there is very little or no language corpus available, particularly for Indonesia's regional languages. This project seeks to construct a translation machine for Indonesian in Meher and Woirata languages, and vice versa. However, to be able to achieve this, a corpus of Meher and Woirata languages must first be developed. The production of this corpus was carried out through field studies, the researcher requested various speakers of this language to translate manually and then compared the results from several translators through focus group talks to identify the appropriate use of words. The outcomes of this translation process are then written in the form of a database of Indonesian-Meher and Indonesian-Woirata language pairings which will subsequently be utilized as a learning database for the translation machine that will be created. This research succeeded in collecting 714.000 words in the Meher language and 805.000 words in the Woirata language. These results were then employed as a machine translation learning corpus, the output of the translation carried out by this machine was then validated through direct assessment by speakers of the two languages. The results of this testing indicated an accuracy above 80% for both translation into the Meher language and translation into the Woirata language. From the research carried out, it can be concluded that the construction of the Meher language corpus and the Woirata language corpus which was carried out through field research was successful in gathering and establishing a language corpus for these two languages. Apart from that, the experimental results suggest that the employment of translation algorithms to convert Indonesian into regional languages and vice versa may be carried out and provide translations with acceptable accuracy. The contribution of this research is in the establishment of the Meher and Woirata language corpus so that it can be generally accessed by anyone who requires it.

Abstract

Due to the increasing reduction in non-renewable natural resources such as petroleum and the increasing amount of ash and charcoal waste from palm oil mills that has not been utilized, the author synthesizes the silica content from a mixture of ash and charcoal from palm oil waste to be used as a Cr/SiO2 catalyst which will be used for cracking. catalytic from CPO (Crude Palm Oil) to gasoline.  This research aims to determine whether a mixture of waste ash and charcoal from the PTP VI Sungai Bahar factory waste can be used as a silica source to produce Cr/SiO2 catalysts and to determine its activity in the catalytic cracking of CPO into gasoline.  The cracking process was carried out in a fixed bed reactor which consists of a horizontal reactor and a vertical reactor and equipped with an electric heater and temperature controller. Catalytic cracking was carried out with several ratios of catalyst : CPO, namely 1:20, 1:25, and 1:30.  Similar cracking process without catalyst (the thermal cracking) was also carried out as a comparison.  The conversion of CHP into gasoline using ratios 1:20, 1:25, 1:30 were 13.67%, 10.78%, 11.59% respectively. Meanwhile, the gasoline conversion produced by thermal cracking was only 9.46%, 9.95%, 6.86%. These results show that catalytic cracking produced more gasoline than thermal  cracking.

Abstract

Fuel oil reserves are currently decreasing due to an imbalance between the increasing need for fuel consumption and the finding of new sources to fulfill these needs. On the other hand, plastic waste is also an environmental problem. Plastic waste is a synthetic polymer made from petroleum that is difficult to decompose in nature. An alternative route for waste must be applied to prevent a further environmental problem. Catalytic cracking is one alternative that converts plastic waste into liquid hydrocarbons. This research aims to determine the quantity of gasoline produced from the catalytic cracking process of polypropylene (PP) plastic waste using modified H-USY and Cr-USY catalysts. The sample used was plastic waste derived from bottled water packaging. The plastic waste was cut into small pieces, weighed, and then cracked thermally and catalytically with a catalyst: sample ratio 1:10. The results showed that catalytic cracking of PP waste using the H-USY catalyst produced 20.73% gasoline, while using the Cr-USY catalyst resulted in 14.4% and 13.68% gasoline using Cr-USY catalyst 0.1% and 0.3% respectively.
