Abstract

UMKM N&N yang berada di Desa Jatiroke, Kecamatan Jatinangor, Sumedang, Jawa Barat merupakan satu-satunya UMKM yang memproduksi kerupuk lakar dengan bahan dasar singkong. Awal produksi kerupuk lakar menggunakan pewarna makanan sintetis yang berada dipasaran. Mengingat bahayanya penggunaan pewarna sintetis pada makanan akan berdampak pada kesehatan manusia salah satunya adalah timbulnya reaksi alergi pada jangka waktu yang pendek dan timbulnya penyakit kanker pada jangka waktu yang lama. Oleh karena itu untuk menghindari pengunaan pewarna sintetis pada kerupuk lakar, maka tim PKM (Pemberdayaan Kemitraan Masyarakat) Universitas Padjadjaran Bandung mengadakan sosialisasi pemanfaatan pewarna alami yang berasal dari bahan alam seperti wortel (warna orange), buah naga (warna merah fanta), bayam (warna hijau) dan ubi ungu (warna ungu) untuk dijadikan pewarna pada pengolahan kerupuk lakar yang sehat dan hygienis. Adapun tujuan sosialisasi atau penyuluhan pada UMKM N&N adalah untuk mendapatkan produk kerupuk lakar yang sehat dan bebas dari pewarna sintetis, sehingga dapat meningkatkan daya tarik bagi konsumen untuk mengkonsumsinya. Hasil dari penyuluhan penggunaan pewarna alami pada makanan telah diterapkan oleh UMKM N&N pada pengolahan kerupuk lakar dengan penggunaan 4 pewarna alami seperti wortel, bayam, buah naga dan ubi ungu sehingga dapat menambah varian warna dari kerupuk lakar yang dihasilkan. Selain itu kegiatan PKM ini juga memberikan kebermanfaatan kepada UMKM N&N dengan bantuan kemasan kerupuk berupa standing pouch sehingga dapat menambah nilai jual kerupuk lakar dan dapat dijual pada pasar retail seperti minimarket dan supermarket. Kerupuk lakar yang diproduksi oleh UMKM N&N diberi nama merek dagang kerupuk lakar ANIA.

Abstract

Polen lebahmerupakan serbuk sari bunga atau bagian tumbuhan lainnya yang  dikumpulkan oleh lebah madu pejantan dari berbagai tumbuhan. Produk ini diketahui memiliki berbagai aktivitas farmakologi, diantaranya sebagai antimikroba terhadap beberapa bakteri Gram positif, Gram negatif dan jamur. Sampai saat ini, belum ada informasi mengenai aktivitas antibakteri polen lebah terhadap Salmonella typhi, penyebab demam tifoid pada manusia. Penelitian ini bertujuan untuk mengetahui aktivitas antibakteri beberapa produk polen lebah dari Kota Bandung, Jawa Barat, Indonesia terhadap S. typhi NCTC786 BCC712. Penelitian ini dilakukan melalui tahap pengujian aktivitas antibakteri produk polen lebah, penentuan nilai Konsentrasi Hambat Tumbuh Minimum (KHTM) dan Konsentrasi Bunuh Minimum (KBM) produk polen lebah teraktif dan penentuan nilai banding aktivitas antibakterinya  terhadap kloramfenikol.Hasil penelitian menunjukkan ketiga produk mempunyai aktivitas antibakteri terhadap S. typhi NCTC786 BCC712, dengan aktivitas terbesar ditunjukkan oleh produk ketiga. KHTMdan KBM dari produk polen lebah terhadap S. typhi NCTC786 BCC712 masing-masing sebesar 137,5 mg/mL dan140 mg/mL.Nilai banding aktivitas antibakteri produk tersebut terhadap  dengan kloramfenikol sebesar 1 : 0,0562. Hal ini menunjukkan aktivitas antibakteri produk polen lebah ketiga terhadap S. typhi NCTC786 BCC712 lebih lemah dibanding kloramfenikol.

Abstract

Diabetes mellitus (DM) is a group of metabolic illnesses identified by elevated blood glucose levels. The glycated hemoglobin (HbA1C) test is used to evaluate a person’s control of their blood glucose levels. According to a recent study, mHealth interventions may be particularly helpful for assisting patients with diabetes mellitus to self-monitor their status on their HbA1c level. Therefore, this systematic review aims to provide an overview of how mHealth affects individuals with diabetes mellitus, concentrating on HbA1c evaluation. A systematic review was conducted by reviewing the PubMed, Google Scholar, and Mendeley databases for randomized control trials published between February 2017 and September 2023. The studies of mHealth on the result of HbA1c were then examined. A drop in HbA1c was seen in all intervention groups. The overall average reduction in HbA1c across all intervention groups was - 0.79%, while the reduction in control groups was - 0.42%. The influence of mHealth could significantly reduce HbA1c levels. Studies show that HbA1c decreased more in patients who underwent a 3 to 6-month intervention. This study discovered 12 papers that discuss health for people with diabetes mellitus type 1 and 2. This study found that mHealth interventions significantly lower HbA1c in DM patients. For further research, bigger sample sizes and data on self-care results are needed. The views and perspectives of patients regarding the physical characteristics and design aspects of different interventions—mobile applications, texts, and phone calls—need to be further investigated.

Abstract

Kefir susu adalah minuman fermentasi yang diperoleh melalui inokulasi susu dengan butiran kefir yang mengandung simbiosis bakteri asam laktat, asam asetat, dan ragi. Proses fermentasi ini menghasilkan beragam senyawa bioaktif seperti asam organik, etanol, karbon dioksida, dan peptida antimikroba yang memiliki aktivitas antibakteri signifikan. Berbagai penelitian menunjukkan bahwa kefir susu mampu menghambat pertumbuhan bakteri patogen seperti Escherichia coli, Salmonella typhimurium, dan Staphylococcus aureus. Aktivitas antibakteri kefir susu disebabkan oleh kombinasi efek dari pH yang rendah, produksi senyawa antimikroba, dan keberadaan mikroorganisme probiotik. Selain itu, konsumsi kefir susu secara rutin diketahui dapat memperkuat sistem imun, menjaga keseimbangan mikrobiota usus, serta meningkatkan ketahanan tubuh terhadap infeksi. Dengan sifat fungsional dan terapeutiknya, kefir susu memiliki potensi besar untuk dikembangkan sebagai minuman kesehatan alami dengan manfaat antibakteri yang menjanjikan.

Abstract

Whey is a by-product of the cheese industry that is rich in lactose, protein, and minerals, but is often considered as waste. The use of whey as a basic ingredient for kefir drinks is an innovative solution that not only reduces environmental impacts but also produces functional food products with high added value. This article reviews the potential of cheese whey as a substrate in kefir fermentation, including the chemical characteristics of whey, the kefir whey production process, the health benefits of the resulting bioactive compounds, and the challenges and prospects for its development. Studies have shown that whey fermentation with kefir culture can produce probiotic drinks with beneficial effects on gastrointestinal health, the immune system, and lipid and glucose metabolism. By optimizing fermentation technology and adding complementary nutrients, whey kefir can be an alternative functional drink that is economical, nutritious, and environmentally friendly

Abstract

Diabetes adalah gangguan metabolisme pada tubuh disebabkan abnormalitas sekresi insulin, kerja insulin atau keduanya, yang ditandai dengan gangguan  metabolisme karbohidrat, lemak, dan protein. Satu satu tumbuhan obat yang memiliki aktivitas antihiperglikemik dan hipolipidemikadalah pepaya(CaricapapayaLinn).Dari hasil review beberapa artikel diketahui bahwa ekstrak air  biji pepaya. ekstrak air daun  pepaya dan ekstrak metanol kulit batang pepaya menunjukkan adanya aktivitas antihiperglikemik. Waktu  penelitian bervariasi selama 21 dan 30 hari, menggunakan tikus yang diinduksi oleh aloksan dan glibenklamid. Dosis efektif pada pengujian ekstrak air biji pepaya dan ekstrak daun pepaya adalah   400 mg/kg bb, sedangkan dosis efektif pada ekstrak metanol kulit batang pepaya adalah 500 mg/kg bb

Abstract

Lactococcus garvieae was isolated from the traditional fermented food Wadi Papuyu (Anabas testudineus Bloch) and characterized for its potential as a probiotic candidate. Growth assays demonstrated that L. garvieae could proliferate in MRS medium, reaching cell counts exceeding 107 CFU/mL after 72 h of anaerobic incubation. The isolate exhibited optimal growth at both 30 °C and 37 °C, as indicated by significant increases in absorbance at these temperatures. However, in the bile salt tolerance test using 0.5% (w/v) bile salts, L. garvieae showed a marked decline in growth, with absorbance values decreasing substantially after 24 and 48 h, indicating insufficient bile tolerance. The autoaggregation assay revealed values below 10%, suggesting limited autoaggregation capability and reduced potential for colonization in the gastrointestinal tract. In contrast, the co-aggregation assay showed that L. garvieae was able to coaggregate with pathogenic bacteria such as Escherichia coli, Salmonella spp., and Shigella spp., with co-aggregation percentages exceeding 40% after 5 h. Antimicrobial activity tests demonstrated that L. garvieae produced strong inhibition zones (diameters >10–20 mm and >20 mm) against Gram-positive and Gram-negative pathogenic bacteria. These findings indicate that while L. garvieae exhibits promising antimicrobial activity and co-aggregation ability, its limited bile salt tolerance and autoaggregation capacity are significant constraints in its development as a probiotic candidate.

Abstract

Lupun root is the local name for Poikilospermum suaveolens (Blume) Merr. in the Aranio region, South of Borneo, Indonesia. P.suaveolens is a medicinal plant traditionally used to treat various ailments and to enhance the body’s immune function. This study aimed to investigate the secondary metabolites and antioxidant capacity of the ethanol extract derived from the root of Lupun (P. suaveolens). Samples were collected from Aranio, South Borneo. Extraction was performed by maceration using 96% ethanol. The analysis included phytochemical screening and evaluation of antioxidant activity using the DPPH (2,2-diphenyl-1-picrylhydrazyl) assay measured by a UV-Vis spectrophotometer. Phytochemical screening revealed the presence of alkaloids, flavonoids, tannins, and phenolic compounds in the Lupun root extract. The antioxidant assay showed an IC50 value of 20.44 µg/mL, indicating strong antioxidant potential of the ethanol extract. These results highlight the plant’s promise as a candidate for pharmaceutical development.

Abstract

Traditional medicine is currently developing rapidly, especially those based on plants. Active plant compounds are the main basis for the development of new drugs, which after further research, can be commercialized and used in pharmaceutical treatment. This review was conducted to identify the pharmacological effects of active drug compounds isolated from medicinal plants by conducting a literature study. The results of the literature review contained 37 articles that met the inclusion criteria. Until now, there are several active drug compounds from plants that are sold commercially in the form of modern drugs. Some of the pharmacological effects found are cardiac glycosides, anticholinergics, antiplatelets, analgesics, anticancer, sympathomimetics and antimalarials. This search shows that natural materials are still used as a potential source of active drug compounds, thus encouraging research to find new active compounds from medicinal plants to overcome diseases in the future.
