Abstract

Breastfeeding period is a very important and valuable period for a mother and her baby. During breastfeeding period, most of the nutritional needs of infants derived from breastmilk, therefore the consumption of infants calories and nutritions during breastfeeding was influenced by the quality and quantity of breast milk consumed by the baby. This study aimed to determine the breastfeeding pattern and the 0-6 months baby weight gain in smoker and non-smoker families in Binjai. This study was descriptive with cross sectional design and the sample size of 100 infants aged 0-6 months, with gradual clustering technique. Data were collected based on study variables of the breastfeeding pattern, baby weight gain, family smoking status, with direct interviews of respondents (mothers) using closed questionnaires. The results showed that 100 infants 0-6 months were from 46% of smoker families and 54% of non-smoker families. Among the 46% of smoker families, families that have infants with good breastfeeding pattern were 76.1% and infants with good weight gain were 56.5%. Among the 54% of non-smoker families, infants with good breastfeeding patterns were 61.1% and infants with good weight gain were 75.9%.It was expected to provide input to the Community Health Center to increase public knowledge through counseling about the hazard of cigarette smoke that gives effect to breastfeeding mothers and baby weight gain. To non-smoker families was suggest to reduce the number of daily cigarettes smoked and not smoking in the house especially near the baby. Abstract

Pumpkin Jam is one of the innovative processed jams that contain high vitamin C from yellow pumpkin. Pumpkin jam can also be used as a source of daily carbohydrate needs. This research is an experimental research with complete randomized design with two treatment that is A1 with ratio of pumpkin and sugar by 60%: 40%, and A2 with pumpkin and sugar ratio equal to 70%: 30%. Pumpkin jam receipt test conducted on FKM USU students as many as 30 people and nutrient analysis of carbohydrate, fiber and vitamin C was done in Biochemistry Laboratory / KBM FMIPA USU. Based on Mann-Whitney test results, the differences in the treatment of each sample gave a significant effect on the color and texture, but did not affect the aroma and taste of pumpkin jam. The results of organoleptic tests on the color, aroma, taste and texture of pumpkin jam at both treatments included in the likes category. The results of nutrient analysis of pumpkin jam showed that the nutrient content in the pumpkin jars both A1 and A2 treatment each contributed daily nutritional needs of 10% and 9.3% of carbohydrates, Fiber by 5.8% and 17% and vitamins C at 29.2% and 31.3%. It is suggested to the community to be able to utilize the yellow pumpkin as the basic ingredient of making jam and consuming jam of pumpkin as one of the daily energy source.   Keywords: Acceptance  Test, Pumpkin Jam, Yellow Pumpkin, Nutritional Content.

Abstract

At present, Indonesia faces multiple nutritional problems that are less nutritional problems and more nutritional problems. The problem of malnutrition is generally caused by poverty, lack of food availability, poor quality of environment, lack of knowledge of society, on the other hand nutritional problem is more caused by economic progress in certain society layer accompanied. The results of Riskesdas (2013) nationally estimated the prevalence of malnourished children under five and less by 19.6%. Number of 23,708,844 children, so the number of malnutrition and less equal to 4,646,933 children under five.The results of the preliminary survey in the work area of Sibuhuan Health Center with the number of children under five years of age 1,536 people. showed that nutritional status of BB/U malnutritional 2.60%, TB/U short 1.82% and BB/TB lean 2.27%. The purpose of this study is to know the description of income, knowledge and parenting patterns of mother and nutritional status of children under five in the working area of Sibuhuan Public Health Center in Padang Lawas year 2017. Type research is a descriptive survey with cross sectional research design. The population in this study was all childrens aged under 12-59 months with a sample of 94 people.                The result of the research showed that the nutritional status of children based on the weight of the nutritional status with malnutrition status category and less was 58,6%, chronic malnutrition (TB / U) with short and short nutritional status category 55,3%, while the nutritional status of chronic (BB / TB) with the category of nutritional status is very thin and thin 47,8%, more income in the category of income below the UMK (<Rp 1.605.000) as much as 55,3%, more knowledge in 40,4% enough category, mother in feeding more on category not good 55,3% and care of children under five more in good category 56,4%, then mother care pattern (feeding and care of children under five) more in category not good 52,1% while good 47,9%.  It is recommended that Padang Lawas District Health Office, Sibuhuan Health Center and health workers are expected to increase counseling, supervision and more active in handling nutritional status of children under five so that better nutrition of children under five and increasing of public health status. Abstract

Nutritional status is closely related to the high rate of morbidity and mortality of infant/toddlers, Exclusive breastfeeding is one effort to reduce morbidity and mortality in infants/toddler.One of the causes of the low coverage of exclusive breastfeeding is the lack of maternal health support in terms of counseling to breastfeed babies. This study aims to determine the effect of Exclusive breastfeeding education on knowledge and attitude of pregnant women in Kelurahan Alur Dua Kecamatan Sei Lepan Kabupaten Langkat. This type of research is quasi experimental with one group pre- and post-test design. The population is all 42 and 42 trimester pregnant women. Sampling technique using total sampling technique, Exclusive breastfeeding effect on mother's knowledge and attitude was analyzed by t-dependent test at 95% confidence level. The results showed that the average value of mother's knowledge before giving Exclusive breast feeding was 7.71 and after being given Exclusive breastfeeding counseling of 12,69, the mean of attitude attitude of mother before giving exclusive breast feeding equal to 38,62 and after giving breast feeding Exclusivity of 54.02, this shows that there is a significant increase (p = 0,000) of knowledge and attitude of mother in giving exclusive breastfeeding between before and after being given Exclusive breastfeeding counseling. It is suggested to Langkat District Health Office for exclusive breastfeeding to mother hami as one of the tools to increase coverage of breastfeeding mother in infants / toddlers and health workers to further improve the quality of health services in providing education. Abstract

Stunting case in school-age children is a manifestation from stunting in toddler, because there is no improvement on catch up growth intake of macro and micro nutrients which is not accordance with long term needs. This research aims to know the description intake of nutrients and academic achievement of stunting students in Yayasan Pendidikan SMP Swasta Anugerah Sitinjo Kabupaten Dairi years 2017. This study is a descriptive research with cross sectional study design. This study doing by calculating energy, protein, vitamin A, calcium, phosphorus and iron intake by using 24 hours food recall method and food frequency form, and academic achievement calculating by the value of the report cards. This sample of research is all stunting students as many as 63 students. The result of this study show that intake of nutrients of stunting students in Yayasan Pendidikan SMP Swasta Anugerah Sitinjo Kabupaten Dairi according to the amount of food based on the macro nutrients intake namely energy and protein intake classified deficient, and micro nutrients intake namely vitamin A, calcium, phosphorus and iron classified deficient. According to the type of food  consumed an avarage of 2 types per day and most of the stunting students consume rice as a staple food, fish and eggs as a side dish. From the academic achievement, stunting students is in good chategory. The suggested is the school cooperate with the primary health care to gives nutritional education to children and to stunting students expected to consume complete food sources of nutrients every day suitable with the amount and the type of food to be able to catch up the growth. Abstract

Crackers made from cassava are very easy to find, contained in various shapes, sizes, colors of interest, and a distinctive taste so popular for people, especially children. Industry competition forces manufactures to innovate on their products. However, still many snacks are suspected to use rhodamine B as food coloring. Based on the observations there are cassava crackers with striking red color that often found in the market and school area. The purpose of this research is to find out the description of knowledge and the attitude of crakers maker with the use of rhodamine B dye on the typical red cassava crackers Banjar Kobun. This research is descriptive with cross sectional design. Samples was red cassava crackers maker and sample unit was crackers. The results showed that the knowledge and attitude of craftsmen in the good category about the use of rhodamine B on cracker amounted to 73.3% and 66.7%. However, based on the results of cracker analysis conducted on rhodamin B is known all samples using dye indicated containing rhodamin B. Regional Health Office division of health promotion and National Agency of Drug and Food Control in North Sumatra are expected to make a building and color inspections regularly to red cassava crackers makers typical Banjar Kobun. Abstract

Low nutrient status of one of them is caused by the tendency of people who like to eat fast food that generally contain less fiber. Banana hump is a functional food that has great benefits, but the level of consciousness to consume and use it is still low, though the banana tree is a plant that thrives in Indonesia. This food can be processed into additional ingredients in making chicken nuggets, one of the fast food that people love. Type of research is experiment. The power test receipt uses a complete randomized design study with organoleptic tests to see the panelist's preference for food. The subjects of acceptance test are 30 people who are college students of the Faculty of Public Health University of North Sumatra. The object of this research is chicken nuggets with the addition of 10%, 20% and 30% banana hump from the weight of the main ingredient. The nutritional content seen includes protein and fiber. Chicken nugget with the addition of banana hump has the highest 12.81% protein content found in chicken nugget with the addition of 10% banana hump and the highest coarse fiber found in chicken nugget with the addition of 30% banana hump that is equal to 6,60%. The results of the organoleptic test, the panelists prefer chicken nugget with the addition of 10% banana hump in color, smell and taste indicator which each has a score of 88.8%, 93.3%, 80% with criteria like, while for textures indicator panelists prefer chicken nuggets with the addition of 30% banana humps that have a score of 83.3% with criteria like. Chicken nugget with the addition of banana humps produced can be used as alternative food. Banana humps can be recommended for ingredients in chicken nuggets that have higher fiber content.  Keywords: Chicken Nugget, Banana hump, Acceptance, Nutrition Content.

Abstract

Tapioca pearl is one of snacks in the form of beverage contents - small and chewy balls that are popular today especially among adolescents. Drinks for tapioca pearls are sweet, where snacks should contain nutrients, especially calcium and protein for growth in adolescence. One source of calcium and protein is chicken claws. Chicken claws can be utilized as flour and serve as an additive in making tapioca pearls.   This research type is experiment. The power test receipt uses a complete randomized design study with organoleptic test to see the panelist's preference level against the test food. Panel of power test receipt amounted to 30 people, namely students of the Faculty of Public Health University of North Sumatra. The object of this research is tapioca pearl (tapioca pearl) with chicken starch added 5%, 10%, and 15%. The nutrient content test is done at Food Technology Science Laboratory of University of Sumatera Utara and the content seen include calcium and protein.   The result of panelist organoleptic test liked the color, smell, flavor, and texture of tapioca pearls with the addition of chicken 5% chicken flour (A1), while for panelist flavor likes tapioca pearls with 10% (10%) chicken flour added (A2). Based on analysis of Kruskal Wallis test at 5% significant level (<0,05), there were difference of quality two of three treatment on color indicator. The highest nutrient content of protein and calcium is found in tapioca pearls with 15% (A3) chicken ketcher flour. Protein content was measured by Kjeldhal method and Calcium content was measured by permanganometric method.   Tapioca pearls with the addition of chicken chicken flour can be an alternative contents of beverages that are high in protein and high in calcium. Abstract

The increasingly sophisticated technology and high consumerism attitude is closely associated with people's lives now. The information is very easily obtained from broadcast television and other mass media. The information gathered will influence public knowledge particularly housewives who spent much time watching television. Lifestyle with an increasing preoccupation causes housewife choose something more practical and faster in providing food in the household. The best option that is using the instant cooking spices because it is easy to get, cheap, and delicious taste. Instant cooking spices contain preservatives, food dyes, artificial sweeteners and MSG that can damage human health. The purpose of the study is to know the correlation of knowledge and attitudes with the practice of housewives in the use of the instant cooking spices in the village of Tanjung Sari Subdistrict Medan Selayang. The design of research is cross-sectional method. The population in this study is all the housewives in Tanjung Sari Subdistrict and the number of samples as many as 99 people who obtained by simple random sampling. Statistical tests used was Chi-Square. Results of research data obtained through interviews and questionnaires that include data filling the knowledge, the attitude and actions of the housewife in the use of instan cooking spices. The results of statistical tests show that the existence of a significant relationship between knowledge about instant cooking spices with the action of housewife (p < 0.05), as well as the attitude of housewife action against the use of instant cooking spices (p < 0.05).  Knowledge and attitudes of the housewife about instant cooking spices that good has correlation with the practice of a housewife in the use of the instant Cook spices that good. Employees of the Neighborhood through the mothers PKK in cooperation with health agencies in order to promote public awareness about the negative effects of the use of the instant Cook seasoning products.

Abstract

Fish is the main source of protein for fisherman families. Kelurahan Pasir Bidang is one of the areas that majority the regions have livelihood as fisherman, either catching fisherman or working fisherman. Therefore, almost in every day they consume fish as side dishes including their toddler. The purpose of this research is to understand the relation of fish consumption and protein sufficiency rate of the toddler in the fisherman families in Kelurahan Pasir Bidang, Kecamatan Sarudik, Kabupaten Tapanuli Tengah. This research was observational with cross-sectional design. The population of toddlers are 281 toddlers, and the samples are 74 toddlers. Sampling technique was done by simple random sampling technique. Data which taken from the research are the quantity of fish consumption and the daily protein sufficiency. Data were collected with use the 2x24 hours food recall and food frequency method. The relation of fish consumption and protein sufficiency rate was taken by chi-square test with p<0,005. The result of the research showed the type of fish that frequently consumed is layang fish (sea food) about 97,5% and infrequently consumed is lele fish about 24,3%. Average of toddlers fish consumption is 97,5 grams with average of daily protein sufficiency is 21,45 grams. The result of the research also showed that there is the relation between the total of fish (gr) with the protein sufficiency rate of toddlers among aged 12-36 months (p=0,003) and also among aged 37-60 months (p=0,004). Based on the results of the research, it is suggested that the mothers who are responsible to prepare food in the household can more increase the fish protein consumption with use the source of fish protein that got from the fishermen, and to improve public knowledge about nutrition, especially about the consumption of fish and the contribution of the protein needs, is expected to the local health officer to give conseling to a lot of people.
