Abstract

Hypertension is now a risk factor for morbidity and mortality for the elderly. Riskesdas 2013 mentioned that the prevalence of hypertension in Indonesia ranges from 25.8% and the incidence of this disease is more common in women (28.8%) and in the elderly group. In North Sumatra, the prevalence of hypertension is about 24.7% based on Riskesdas 2013. Data from Puskesmas in Mekar Bahalat village 2015 mentioned that the prevalence of hypertension in the elderly is about 21 people (8.8%). The purpose of this study was to determine and analyze the correlation between food consumption with the incidence of hypertension in the elderly in Mekar Bahalat village, District of Jawa Maraja Bah Jambi, Simalungun. This research type is an analytic observational study with cross sectional design. The population in this study were all elderly that aged ≥ 60 years in Mekar Bahalat village that totaling 120 people, and the samples are 55 respondents. This research was in Mekar Bahalat village, District of Jawa Maraja Bah Jambi, Simalungun in September 2015 to May 2016. The results of this research showed that the type of food detterents hypertension that often consumed by the respondents are corn, fresh water fish, tempeh, tomatoes, bananas, green beans and the type of food triggers hypertension that often consumed by the respondent are pork, salted fish, and biscuits. The results also showed that the variables were significantly related to the incidence of hypertension is variable fat (p = 0.025), sodium (p = 0.039) and fiber (p = 0.029), while the variable carbohydrate (p = 0.821) and protein (p = 0.189 ) is not significantly related to the incidence of hypertension. The advice can be given to people in Mekar Bahalat especially the elderly is to reduce the consumption of foods that high in sodium or salt, high fat, and also increase consumption of fruits and vegetables at affordable prices every day. Abstract

Beads flower (Canna edulis Ker.) was sweetless arrowroot with lower carbohydrate (22,6%). Catfish (Pangansius hypopthalmus) was one of incantations fish with upper protein. This research discussed of cookies formulated by Beads flower rhizome flour (Canna edulis Ker.) and Catfish flour (Pangansius hypopthalmus) as a selected nutrient-rich snack where maintain the nutrient status of the community. The aim of the research was to get ideal cookies with nutrient content and determine the most preferred by community. This research used organoleptic assessment using hedonic scale. The object consisted four cookies formulation with beads flower rhizome flour (75% and 80%) and catfish flour (20% and 25%). Two from the four samples added to wheat-flour (5%) as a comparison of organoleptic test. Instrument of data collect used panelist by incidental sampling. The method analysis of organoleptic used paired analysis of variance (Repeated ANOVA Test) and descriptive analysis by percentage. The results stated the acceptance panelist byscored mean cookies obtained the best treatment was showed from cookies2 with combination additionof beads flower rizhome flour 75%, catfish flour 20% and wheat-flour 5%.Cookies2 were preferably in terms of colour (4,2), flavor (4,6) and taste (4,8). Based on the analysis of varian paired (Repeated ANOVA Test) with5% value of significance level( p< 0,05 ) obtained there was the difference in quality among the samples in terms of colour, flavor, taste and texture. This recommended cookies 2 as cookies with ideal criteria for a supplementary snack selection to donate and maintain the nutrient status. Abstract

Food diversification is the governments effort to realize food security. Hence, as an effort to support the food diversification program, so did the utilization of red ginger starch is by product from making instant red ginger as modified of wheat flour in making onions chips. The type of research was an experiment conducted by completely randomized design. There were 2 treatment, the first treatment with composition red ginger starch 30%, cassava flour 20%, wheat flour 50% and second with composition the red ginger starch 50% and wheat flour 50%. Test acceptability onions chips done to 30 people the panel are student of public health faculty of Sumatera Utara University Medan, nutrient analysis was analyzed in the Laboratory of Industrial Research and Standarization Agency Medan. Data was analyzed by using Wilcoxon test . The results research showed that based on color , aroma , texture , and flavor, the onions chips that preferred is with the red ginger starch 30 % : cassava flour 20 % : wheat flour 50 % with  total score 311. Nutrition content onions chips is carbohydrates 46,9 % , proteins 4,38 % , fat 40,6 % , calcium 50,2 mg / kg , and iron 38 mg / kg . Red ginger starch onions chips it suggested can be consumed as a snack food or food variation for familly, school children, and teenagers. In addition can also be consumed by pregnant women and a person who often motion sickness experienced travel experienced travel to reduce a feeling of nausea . Abstract

Having breakfast is the important thing to do before starting an activity every day, it could contribute a nutrition about 15%-30% of daily needs. For the elementary student, having breakfast is important for physical growth and achievement increase in study. This study aims to look at the consumption of breakfast, nutritional status, and level of student achievement SDN 124400 Pematangsiantar. This study is a descriptive research with cross sectional study design. This study population was all of students SDN 124400 Pematangsiantar, there were 117 people. The Sampling technique is simple random sampling with sample were 54 people. This study was conducted from February to September 2016. Data was obtained by questionnaires to the students that were selected as respondents. Data analysis wa performed as univariate. The results of this study showed that 70% of all students of SDN 124400 Pematansiantar often do breakfast with a frequency was 6-7 times a week. Most of the students have donated breakfast to sufficent energy (55,6%), and protein (74,1%) in the category enough. Nutritional status based on BMI/U showed that majority of students are categorized as normal (64,8%). The level of student achievement is largely in good category ( 75,9%). Nutritional status based on the frequency of breakfast with often category largely into normal category, and nutritional status based on the contribution of energy and protein with sufficient category largely into normal category. Student achievement based on the frequency of breakfast with often category largely into good category and level of learning achievement based on the contribution of energy and protein in sufficient category largely into normal category. Consumption breakfast elementary school students based on the frequency of breakfast was good, but the nutritional adequacy breakfast on students are still largely lacking in nutitional status and level of learning achievement is lacking. For all the students are supposed to improve their breakfast habit and for all the parents to help their children in having breakfast. Abstract

Inappropriate complementary feeding pattern, such as the age of the first giving, texture and frequency can cause many nutritional problems for infants. Appropriate breast feeding and complementary feeding has tightly connection with mother’s knowledge about breast  feeding and complementary feeding. The purpose of this study is to know the breast feeding and complementary feeding pattern and mother’s knowledge in Bunuraya Village, Tiga Panah Subdistric Karo Regency. The study is a descriptive study with cross sectional design. The study is using interview method with questionnaire, and the questions are arrange by the writer and have been tested with validity and reability test. The populations of the study are infants from 0 to 12 months and the samples are taken by total sampling method of 63 infants. And the respondent of te study are the infants’s mother. The analysis was using univariat analysis. The result of the study showed that there are 88,5% whom breast feed at least eight times of 26 infants under six months, and 69,2% have breast feeding at least 10 minutes. The age of the first giving start from under 1 month. Complementary feeding pattern based on infants age, there are 56,1% that is still give breast feeding an appropriate complementary feeding texture, and there are 53,7% that is still breast feeding with appropriate meal and snack frequency. About mother’s knowledge, there are 38,1% who have less knowledge. In order to monitor mother’s knowledge with breast feeding and complementary feeding practical by nutrition employee of the health center collaborated with the village midwife, and the midwife more active to give information and assistance to increase knowledge of expectant mother whom will give birth , continued with information and assistance to infants mother when Posyandu every month. Abstract

Nutritional problem is the problem of an unbalanced food intake. Nationally, the obese prevalence of adolescents in Indonesia amounted to 10.8%, consisting of 7.3% fat, 3.5% are very overweight (obese) and the prevalence of underweight 11.1% consisting of a very thin 3.3% and 7.8% thin. Riskesdas data changes from 2010 to 2013 to the prevalence of obese adolescents are in 2010obese adolescents of 1.4% and in 2013 obese adolescents 7.3% . These data show that each year more and more teenagers are not balanced in regulating the diet. The purpose of this study was to determine the intake of macro-nutrients and fiber also the nutritional status of MAN 1 in 2016. This research included descriptive study conducted in Madrasah Aliyah Negeri 1 Medan, the results showed the samples taken amounted to 100 students by using stratified random sampling.Analisis data using frequency distributions and cross-tabulations. The results of this study indicate the nutritional status according to IMT / U on the students of Madrasah Aliyah Negeri 1 Medan the most category of fat 46%, and the least thin 20%, then the normal nutritional status, namely 34%, whereas there is no nutritional status of very thin and obesity. Energy intake is less than the limit of AKG is 44% , carbohydrate intake is less than AKG limit is 47%, protein intake is more than the AKG limit is 52%, fat intake is more than the AKG limit is 45% and fiber intake is less than the AKG limit  is 73% Required counseling for students about a balanced intake of nutrients so that the nutritional status of students is in the normal category. Abstract

Many people are afraid and very rare eat eel because of its disgusting and scary like a snake, although eel rich in nutrients. Therefore, it’s necessary to process the eels into favorite food, one of which is fish meatballs. Eels contains iron and fat is very high so that in making these meatballs added flour coconut pulp that contains a very high fiber, and added sago flour and wheat flour. This research was an experimental with a single treatment. The purpose of this research was to acceptance test covering the taste, aroma, color and texture are determined using hedonic scale and protein content by using Kjeldahl, crude fiber content by using extracted and iron content by using AAS. Panelists in this research were students of the Faculty of Public Health University of North Sumatra as many as 30 people. The results showed that the fish meatballs made from coconut pulp and eels have protein 7,91 %, crude fiber 0,30 % and iron 26,0 mg/kg. Meatballs organoleptic test results based on the assessment of taste and texture result with less like categories, while the aroma and color based on the assessment result with categories like. Use of eel and coconut pulp in making fish meatballs contribute protein, fiber and iron which is good compared with meatballs in general. It’s recommended that the eel and coconut pulp can be utilized in making meatballs as foods rich in iron and fiber and can reduce the environmental impact of the waste coconut pulp. Abstract

One effort to optimize intake of protein and vitamin A for preschoolers is food diversification by utilizing local food. Purple sweet potato and ‘patin catfish’ are local food rich in nutrients, especially protein and beta-carotene. Both of the local food can be used as ingredient subtitution crackers. Crackers is a snack highly appreciated by the public, include preschoolers. This research purpose to determine the acceptability test and nutrient compasition of crackers with substitution of purple sweet potato flour and patin catfish. The type of research was an experiment conducted by completely randomized design using two factors and two treatments, the treatmens are the addition of purple sweet potato flour and ‘patin catfish’ with treatments A1 (20%;15%) A2 (15%;20%). The acceptability carried out on 30 panelists from Public Health Faculty, nutrient analysis was tested in Laboratory of Pusat Penelitian Kelapa Sawit Medan. The results organoleptic test based on aroma, taste and texture the most preferred is crackers with a mixture of purple sweet potato flour 15% and ‘patin catfish’ 20%. While the results of organoleptic test against the most preferred color is crackers with a mixture of purple sweet potato flour 20% and ‘patin catfish’ 15%. Based on the analysis of Mann-Whitney test, both crackers gives a significantly different effect on the texture. As for the color, aroma, and taste characteristics do not give a significantly different effect on the resulting crackers.The result of nutrional content analysis showed that both treatments has content of protein by 10,32% and 14,28%. The carotene content of 27,40 ppm and 14,87 ppm. It is recommended that crackers with modified purple sweet potato flour and patin catfish can be used as a snack food on children or families because the cost of making is classified as cheap and can contribute to the protein and carotene that is large enough from the needs of daily to prevent protein deficiency and vitamin A deficiency Keywords: Crackers, Purple Sweet Potato, Patin Catfish, Acceptability

Abstract

The balanced diet on elementary student are rarely fulfilled. They tend to only eat foods with few nutrients dominant, such as burgers are high in carbohydrates and fats that can cause obesity. With the existence of such problems, nutrition education made by interested media to facilitate the provision of nutritional information, especially in a balanced diet. The aim of this research is to find out the effect of nutritional monopoly games about balanced diet for the knowledge and attitude of elementary student of SDN 060902 Mangkubumi in Medan. The type of this research is quasi experimental with group pretest posttest design. Total population is 121 children and the number of samples is 35 children by dividing them into a treatment group. Analysis of data using statistical test of paired t-test, Wilcoxon test and independent sample t-test, the significant level of 95%. The results showed that children knowledge given nutritional monopoly games with pretest scores of elementary student in low category (14,37%) and posttest scores in low category (0.0%). The results also showed that the attitude of children given nutritional monopoly games with pretest scores of elementary student in bad category (34,3%) and posttest scores in bad category (5,7%). Statistical analysis showed there were enhancement in knowledge and attitude scores after given nutritional monopoly games. Results of the analysis of knowledge and attitude before and after given nutritional monopoly gamesfor a treatment group there was significant difference (p.=0.001). The conclusion of this research is nutritional monopoly games for elementary students increase the knowledge and attitude about balanced diet. Suggestions of this research is to implementing the nutritional monopoly games to the nutrition workers in community health centers picture as a media to inform about balanced diet. Abstract

Anemia is a condition when the number of red blood cells or the amount of hemoglobin (the oxygen-carrying protein) in red blood cells is below normal. Anemia is one of the problems that contributed to the increase in infant mortality. Binjai is the one city that can be said that the baby gets food intake only from a mother's breast. The purpose of this study was to determine whether there is a relationship between the consumption patterns of foods that contain iron moms breastfeeding with anemia in infants in 3 sub-district with a number of the highest maternal and infant, that is East Binjai district, North Binjai district and Binjai district. This research was an observational with cross-sectional design. Total population of infants are 1697, with a samples size of 60 people. Sampling was done by cluster sampling techniques / sampling area. The data obtained from the study is the quantity of iron consumption and energy sufficiency daily moms breastfeeding. Methods of data collection is done by using the form food recall 2x24 hour and food frequency form. The relationship between the incidence of anemia and iron sufficiency level is taken by the Chi-square test with p <0.05. The results showed the kind of food that is often consumed foods low in iron by 95% and rarely consumed foods high in iron by 5%. Likewise with energy sufficiency level that is less fulfilled by 63.3% and were met by 23.3%. The results also show that there is not a relationship between the pattern of consumption of foods containing iron with the incidence of anemia in infants (p = 0.222). Based on the research results, it is recommended that mothers in order to further improve the consumption of energy, protein and iron by utilizing sources of iron are diverse and for the health center to be more longer in outreach / information related to the incidence of anemia in infants is mainly an extension of moms breastfeeding mothers about food which should be consumed day.
