Abstract

Background: Stunting is a condition in which growth and development is disrupted by children caused by chronic malnutrition. This study aims to determine the relationship between exclusive breastfeeding and the age of complementary feeding (MP-ASI) with the incidence of stunting. This study uses a quantitative approach with secondary data analysis and tested by chi-square with the sample. The statistical results show a value of p = 0.05. This study can be concluded that there is a relationship between the age of complementary feeding (MP-ASI) and the incidence of stunting. In other words, it is said that the sooner prelactal food is given, the easier it is for stunting to occur in children aged 0-2 years. The statistical results show p = 1,000, this shows that there is no relationship between exclusive breastfeeding and the incidence of stunting

Abstract

Pantai Labu Pekan Village, Pantai Labu District, Deli Serdang Regency, is one of the villages whose area is located on the coast. According to the research conducted, there are still toddlers who experience stunting and malnutrition, the low coverage of poverty, and the low knowledge of pregnant women in toddlers causes the growth and development of toddlers to be disrupted and this can affect their health status broadly. The purpose of this research is to apply science and technology to the community to increase knowledge and skills in the health sector, form/develop community groups in the health sector, apply research results to improve public health for the welfare of public health. This research is observational research with a descriptive research design. The research was conducted in June 2023 in Pantai Labu Pekan Village, Pantai Labu District. In this Community Service activity, the methods carried out were training in local pagan-based snack food processing for pregnant women and WUS and conducting demonstrations on making sukahitu cookies, moringa leaves, fish nuggets, fish sandwiches, rebon shrimp crackers and satay donuts. This program to increase the knowledge of pregnant women and wus starts from 4 stages, namely licensing, preparation, implementation and evaluation. The results of community service activities are that there is an increase in the knowledge of pregnant women and WUS about snack foods which can help in efforts to deal with stunting and there is an increase in the knowledge of pregnant women and WUS about snack foods. From snack foods that are highly nutritious to prevent stunting and snacks containing moringa leaves as a way to overcome anemia and breast milk production.

Abstract

The accumulation of free radical production impacts on the development of degenerative diseases which are the highest cause of morbidity and mortality in the world. Biofortification of purple okra in the form of encapsulated extract has the potential as a nutraceutical through the role of antioxidants. This study aimed to analyze the potential of encapsulated purple okra extract as a nutraceutical by determining physical-chemical characteristics, microbial and heavy metals contamination, antioxidant capacity, total flavonoids, and quercetin. This was a laboratory experimental study on purple okra which was extracted using the maceration method. The results of physical-chemical characteristics showed that purple okra extract has the form of dry powder, greenish-brown color, odor characteristic of okra extract (caramel-like), and sour taste with yield of 4%, pH of 4.8, undetectable solvent residue, water content of 13.5%, total ash content of 10.4%, and disintegration time of 1.25 minutes. The results of microbial contamination showed a total plate count of 3.1 102 CFU g⁻¹, yeast and mold count, E. coli, S. aureus negative CFU g⁻¹, and Salmonella spp negative CFU 10g⁻¹. The results of heavy metal contamination showed that As, Pb, Cd, and Hg were not detected every mg Kg⁻¹. The results of antioxidant capacity, total flavonoids, and suspected quercetin derivatives showed a value of 84.88%, 81.32 mg QE g⁻¹, and 4.91 mg g⁻¹. These bioactive components act as free radical scavengers in helping to prevent chain reactions. Encapsulated purple okra extract has shown its potential as a nutraceutical that helps prevent degenerative diseases.

Abstract

Stunted is a condition of malnutrition caused by inadequate nutrient intake, especially in protein and zinc. Zinc deficiency can lead to impaired growth and increased risk of infectious disease due to inadequate zinc intake and low bioavailability of zinc in food. The purpose of this research was to analyze the nutrient intake and phytate-to-zinc molar ratio in children. This research was an analytical observational study with cross-sectional design. Children aged 6-59 months with stunted (n=61) and non-stunted (n=65) nutritional status were chosen by stratified random sampling in Ciptomulyo Health Center, Malang city. Nutrient and phytate intake were taken using 2x24 hour food recall method, while zinc bioavailability was calculated using phytate-to-zinc molar ratio. The difference of independent variables were analyzed using Independent t-test and Mann Whitney test. The result of this study showed that there were significantly different energy and protein adequacy levels (p=0.018; p=0.001) and phytate intake (p=0.016) among stunted and non-stunted children. On the other hand, fat, carbohydrate, and zinc adequacy level did not show any significant differences. Furthermore, there were no significant difference in phytate-to-zinc molar ratio in the two group (p=0.158) with more than half children had high phytate-to-zinc molar ratio category. In conclusion, the stunted and non-stunted children showed significant differences in energy, protein, and phytate intake, while their zinc intake was not significantly different resulting in similar phytate-to-zinc molar ratio between both groups. This study show that sufficient intake of zinc can help to lower phytate-to-zinc molar ratio regardless of nutritional status of children.

Abstract

Masa balita merupakan masa yang tergolong rawan dalam pertumbuhan dan perkembangan karena pada masa ini anak mudah sakit dan mudah mengalami kekurangan gizi. Survei awal yang dilakukan di wilayah kerja Puskesmas Peulimbang Kabupaten Bireuen dengan melakukan pengukuran antropometri terhadap 20 balita, ditemukan 13 balita yang mengalami gizi kurang dan 7 balita lainnya memiliki status gizi baik. Tujuan dalam penelitian ini adalah untuk menganalisis faktor yang berhubungan dengan penerapan prinsip sadar gizi pada tatanan rumah tangga terhadap status gizi balita. Jenis penelitian ini merupakan survei analitik dengan rancangan cross-sectional study. Penelitian dilakukan di wilayah kerja Puskesmas Peulimbang Kabupaten Bireuen dengan sampel sebanyak 50 orang ibu yang memiliki balita. Berdasarkan hasil penelitian diketahui bahwa adapun faktor-faktor yang berpengaruh terhadap status gizi balita adalah pengetahuan (p=0,020), dukungan keluarga (p=0,012),dan sosial ekonomi (p=0,000).

Abstract

Food image recognition is essential for developing an elderly-friendly daily food recording application in Indonesia. However, existing datasets and models are limited and do not cover the diversity and complexity of Indonesian food. In this paper, we present a new dataset of 24,427 images of 160 types of Indonesian food with higher variety and quality than previous datasets. We also train and compare the performance of 67 models based on 16 state-of-the-art deep learning architectures on this dataset. We find that efficientnet_v2_l provides the best accuracy of 85.44%, followed by other models such as convnext_large and swin_s. We also discuss the trade-off between model size and performance, as well as the challenges and limitations of food image classification. Our dataset and models can serve as a basis for developing a user-friendly and accurate food recording application for the elderly population in Indonesia.

Abstract

Chronic energy deficiency (CED) in pregnant women is a condition of insufficient protein and energy intake which can cause health problems for the mother and fetus. This study aims to determine the factors that influence the occurrence of CED in pregnant women. An analytical survey method with a cross-sectional approach was used by collecting primary data through questionnaires and secondary data from Community Health Center reports. The research was conducted at the Tanjung Unggat Community Health Center, Tanjungpinang City in December 2023 with a sample of 51 pregnant women selected using the Total Sampling method. Data analysis used univariate, bivariate (chi-square test), and multivariate (logistic regression) analysis. The results of the analysis show that maternal age, education, employment, parity, knowledge, Body Mass Index (BMI), and hemoglobin (Hb) levels have a significant relationship with the occurrence of CED. The Hb variable has the greatest influence on KEK with an Exp (B) value of 15,098. This study concludes that there is no effect of age and education on CED, while employment, parity, knowledge, BMI, and Hb are related to the incidence of CED in pregnant women. It is recommended that health workers promote and prevent pregnant women by recommending regular Antenatal Care (ANC) visits to health workers to detect health conditions early.

Abstract

Selama masa kehamilan terjadi peningkatan kebutuhan zat gizi untuk mendukung proses tumbuh kembang janin. Sosis merupakan salah satu jenis pangan olahan yang telah dikenal dan banyak diminati oleh konsumen. Tujuan penelitian ini adalah mengembangkan sosis dari ikan kembung dan tepung daun kelor sebagai pangan sumber protein dan zat besi bagi ibu hamil. Penelitian ini menggunakan rancangan acak lengkap dengan tiga formula yang mengkombinasikan ikan kembung dan daun kelor dengan rasio yang berbeda yaitu F1 (100:0), F2 (90:10), dan F3 (80:20). Sampel yang diperoleh kemudian dianalisis dengan uji sensori (uji kesukaan dan uji intensitas atribut), analisis fisik (tekstur dan warna) dan analisis zat gizi (proksimat, kalsium dan zat besi). Hasil penelitian ini menunjukkan bahwa peningkatan tepung daun kelor dapat menurunkan kesukaan panelis pada atribut warna, aroma, tekstur, rasa dan penerimaan keseluruhan. Kadar abu, protein dan karbohidrat meningkat sedangkan kadar air dan lemak menurun seiring peningkatan tepung daun kelor yang digunakan. Formula sosis terpilih adalah dengan penggunaan tepung daun kelor sebanyak 10% (F2). Sosis formula F2 dengan berat 100 g mengandung 17,80 g protein, 100,84 mg kalsium dan 6,52 mg zat besi. Satu takaran saji sosis dengan berat 74 g, dapat memberikan kontribusi energi sebanyak 7,8-8,2% terhadap Angka Kecukupan Gizi untuk ibu hamil trimester 1-3 serta dapat memenuhi syarat untuk diklaim sebagai produk pangan sumber protein dan zat besi.

Abstract

Anemia is a condition of hemoglobin levels below normal limits which has the potential to increase the risk of stunting in future pregnancies of adolescent girls. Stunting is a health problem that is influenced by the nutritional status of the mother during pregnancy. To prevent stunting, early intervention through the provision of Blood Additive Tablets (TTD) in adolescent girls is crucial. The educational activity entitled “Healthy Teenagers, Great Indonesia” was held at SMPN 2 Ciledug, Jatiseeng Kidul Village, Ciledug Village, Cirebon Regency. This program aims to improve the knowledge and attitude of adolescents regarding TTD consumption to prevent stunting. Education was carried out through powerpoint media, posters, interactive games “Cheerful Snakes and Ladders,” and a session of taking blood supplement tablets together. Pre-tests and post-tests were conducted to evaluate respondents' understanding and attitudes before and after education. The results showed low scores during the pre-test. The educational activities conducted affected the schoolgirls' understanding of the effect of anemia on stunting. The post-test results showed a significant increase in participants' knowledge, although there was no significant change in attitude and behavior. This education is expected to contribute to breaking the cycle of stunting through improving the health of the younger generation. The sustainability of this program is expected to be monitored through collaboration with Puskesmas Ciledug, installation of educational posters, filling in the blood supplement tablets schedule calendar, and monitoring of blood supplement tablets consumption.

Abstract

The menstrual cycle is a problem among teenagers. The number of women who experience abnormal menstrual cycle problems caused by many factors, one of which is nutritional status, stress, physical activity and menarche age. Abnormal cycles are generally caused by unstable hormonal levels. Abnormal menstrual cycles cause long-term disruption to the reproductive system if left untreated. This type of research is an analytical survey research with a Cross Sectional research design. The purpose of the study was to find out the factors that affect the menstrual cycle in adolescent girls at SMA N 1 Kluet Selatan. The sample in this study is a student of SMA N 1 Kluet Selatan Class X, XI and XII which was obtained through the probability sampling technique, which is sampling that provides the same opportunity for population members to be selected as sample members. The results of the study showed that there was an effect of nutritional status with a P value of 0.003 (< 0.05), stress with a P value of 0.002 (< 0.05), physical activity with a P value of 0.026 (< 0.05. Menarche age, with a P value of 0.000 (< 0.05) on the menstrual cycle in adolescent girls at SMA N 1 Kluet Selatan From the results of the research, it was found that there was an effect of nutritional status, stress, physical activity, and menarche age on the menstrual cycle in adolescent girls at SMA N1 Kluet Selatan. The suggestion in this study is that it is hoped that adolescent girls can find information about factors that can affect the menstrual cycle so that they can find out early and can overcome the occurrence of disturbances during menstruation.
