Abstract

Stunted is a condition of malnutrition caused by inadequate nutrient intake, especially in protein and zinc. Zinc deficiency can lead to impaired growth and increased risk of infectious disease due to inadequate zinc intake and low bioavailability of zinc in food. The purpose of this research was to analyze the nutrient intake and phytate-to-zinc molar ratio in children. This research was an analytical observational study with cross-sectional design. Children aged 6-59 months with stunted (n=61) and non-stunted (n=65) nutritional status were chosen by stratified random sampling in Ciptomulyo Health Center, Malang city. Nutrient and phytate intake were taken using 2x24 hour food recall method, while zinc bioavailability was calculated using phytate-to-zinc molar ratio. The difference of independent variables were analyzed using Independent t-test and Mann Whitney test. The result of this study showed that there were significantly different energy and protein adequacy levels (p=0.018; p=0.001) and phytate intake (p=0.016) among stunted and non-stunted children. On the other hand, fat, carbohydrate, and zinc adequacy level did not show any significant differences. Furthermore, there were no significant difference in phytate-to-zinc molar ratio in the two group (p=0.158) with more than half children had high phytate-to-zinc molar ratio category. In conclusion, the stunted and non-stunted children showed significant differences in energy, protein, and phytate intake, while their zinc intake was not significantly different resulting in similar phytate-to-zinc molar ratio between both groups. This study show that sufficient intake of zinc can help to lower phytate-to-zinc molar ratio regardless of nutritional status of children.

Abstract

Masa balita merupakan masa yang tergolong rawan dalam pertumbuhan dan perkembangan karena pada masa ini anak mudah sakit dan mudah mengalami kekurangan gizi. Survei awal yang dilakukan di wilayah kerja Puskesmas Peulimbang Kabupaten Bireuen dengan melakukan pengukuran antropometri terhadap 20 balita, ditemukan 13 balita yang mengalami gizi kurang dan 7 balita lainnya memiliki status gizi baik. Tujuan dalam penelitian ini adalah untuk menganalisis faktor yang berhubungan dengan penerapan prinsip sadar gizi pada tatanan rumah tangga terhadap status gizi balita. Jenis penelitian ini merupakan survei analitik dengan rancangan cross-sectional study. Penelitian dilakukan di wilayah kerja Puskesmas Peulimbang Kabupaten Bireuen dengan sampel sebanyak 50 orang ibu yang memiliki balita. Berdasarkan hasil penelitian diketahui bahwa adapun faktor-faktor yang berpengaruh terhadap status gizi balita adalah pengetahuan (p=0,020), dukungan keluarga (p=0,012),dan sosial ekonomi (p=0,000).

Abstract

Food image recognition is essential for developing an elderly-friendly daily food recording application in Indonesia. However, existing datasets and models are limited and do not cover the diversity and complexity of Indonesian food. In this paper, we present a new dataset of 24,427 images of 160 types of Indonesian food with higher variety and quality than previous datasets. We also train and compare the performance of 67 models based on 16 state-of-the-art deep learning architectures on this dataset. We find that efficientnet_v2_l provides the best accuracy of 85.44%, followed by other models such as convnext_large and swin_s. We also discuss the trade-off between model size and performance, as well as the challenges and limitations of food image classification. Our dataset and models can serve as a basis for developing a user-friendly and accurate food recording application for the elderly population in Indonesia.

Abstract

Chronic energy deficiency (CED) in pregnant women is a condition of insufficient protein and energy intake which can cause health problems for the mother and fetus. This study aims to determine the factors that influence the occurrence of CED in pregnant women. An analytical survey method with a cross-sectional approach was used by collecting primary data through questionnaires and secondary data from Community Health Center reports. The research was conducted at the Tanjung Unggat Community Health Center, Tanjungpinang City in December 2023 with a sample of 51 pregnant women selected using the Total Sampling method. Data analysis used univariate, bivariate (chi-square test), and multivariate (logistic regression) analysis. The results of the analysis show that maternal age, education, employment, parity, knowledge, Body Mass Index (BMI), and hemoglobin (Hb) levels have a significant relationship with the occurrence of CED. The Hb variable has the greatest influence on KEK with an Exp (B) value of 15,098. This study concludes that there is no effect of age and education on CED, while employment, parity, knowledge, BMI, and Hb are related to the incidence of CED in pregnant women. It is recommended that health workers promote and prevent pregnant women by recommending regular Antenatal Care (ANC) visits to health workers to detect health conditions early.

Abstract

Selama masa kehamilan terjadi peningkatan kebutuhan zat gizi untuk mendukung proses tumbuh kembang janin. Sosis merupakan salah satu jenis pangan olahan yang telah dikenal dan banyak diminati oleh konsumen. Tujuan penelitian ini adalah mengembangkan sosis dari ikan kembung dan tepung daun kelor sebagai pangan sumber protein dan zat besi bagi ibu hamil. Penelitian ini menggunakan rancangan acak lengkap dengan tiga formula yang mengkombinasikan ikan kembung dan daun kelor dengan rasio yang berbeda yaitu F1 (100:0), F2 (90:10), dan F3 (80:20). Sampel yang diperoleh kemudian dianalisis dengan uji sensori (uji kesukaan dan uji intensitas atribut), analisis fisik (tekstur dan warna) dan analisis zat gizi (proksimat, kalsium dan zat besi). Hasil penelitian ini menunjukkan bahwa peningkatan tepung daun kelor dapat menurunkan kesukaan panelis pada atribut warna, aroma, tekstur, rasa dan penerimaan keseluruhan. Kadar abu, protein dan karbohidrat meningkat sedangkan kadar air dan lemak menurun seiring peningkatan tepung daun kelor yang digunakan. Formula sosis terpilih adalah dengan penggunaan tepung daun kelor sebanyak 10% (F2). Sosis formula F2 dengan berat 100 g mengandung 17,80 g protein, 100,84 mg kalsium dan 6,52 mg zat besi. Satu takaran saji sosis dengan berat 74 g, dapat memberikan kontribusi energi sebanyak 7,8-8,2% terhadap Angka Kecukupan Gizi untuk ibu hamil trimester 1-3 serta dapat memenuhi syarat untuk diklaim sebagai produk pangan sumber protein dan zat besi.

Abstract

Anemia is a condition of hemoglobin levels below normal limits which has the potential to increase the risk of stunting in future pregnancies of adolescent girls. Stunting is a health problem that is influenced by the nutritional status of the mother during pregnancy. To prevent stunting, early intervention through the provision of Blood Additive Tablets (TTD) in adolescent girls is crucial. The educational activity entitled “Healthy Teenagers, Great Indonesia” was held at SMPN 2 Ciledug, Jatiseeng Kidul Village, Ciledug Village, Cirebon Regency. This program aims to improve the knowledge and attitude of adolescents regarding TTD consumption to prevent stunting. Education was carried out through powerpoint media, posters, interactive games “Cheerful Snakes and Ladders,” and a session of taking blood supplement tablets together. Pre-tests and post-tests were conducted to evaluate respondents' understanding and attitudes before and after education. The results showed low scores during the pre-test. The educational activities conducted affected the schoolgirls' understanding of the effect of anemia on stunting. The post-test results showed a significant increase in participants' knowledge, although there was no significant change in attitude and behavior. This education is expected to contribute to breaking the cycle of stunting through improving the health of the younger generation. The sustainability of this program is expected to be monitored through collaboration with Puskesmas Ciledug, installation of educational posters, filling in the blood supplement tablets schedule calendar, and monitoring of blood supplement tablets consumption.

Abstract

The popularity of ready-to-serve foods has increased in Indonesia, particularly among busy consumers with limited time for cooking at home. However, the consumption of ready-to-serve foods high in sugar, salt, and fat (SSF) has prompted concerns regarding their potential adverse health impacts when consumed excessively. The present study aimed to investigate consumers’ behavior and perception regarding the purchase of ready-to-serve foods and the practice of food producers in providing these products. The study employed a structured questionnaire involving 100 consumers selected based on purposive sampling. Additionally, focus group discussions were conducted with 80 ready-to-serve food producers across five Indonesian cities using a cross-sectional research design. The data analysis, conducted using binary logistics, yielded significant findings regarding the relationship between consumers’ income and their purchase decisions regarding ready-to-serve food. This study revealed that price (42%), taste (31%), and accessibility (23%) were the primary factors influencing consumers’ food choices. However, it also indicated that nutrition and health aspects received inadequate attention from consumers, which is a cause for concern. Concurrently, the producers who participated in this study indicated that they prioritize sanitation and hygiene (53.8%) in their food production, citing regulatory requirements as the primary driver of this practice. It is regrettable that the majority of the producers (92.5%) lacked information regarding the nutrition content of their products. Moreover, they did not actively contribute (2%-11%) to controlling SSF levels except to respond to consumers’ demands. These findings underscore the necessity for enhanced awareness campaigns and implementation strategies involving all stakeholders to promote healthier, ready-to-serve foods. The implications of these findings for future policy and practice are significant, highlighting the need for a more comprehensive approach to nutrition education and labeling in the ready-to-serve food industry in Indonesia.

Abstract

The menstrual cycle is a problem among teenagers. The number of women who experience abnormal menstrual cycle problems caused by many factors, one of which is nutritional status, stress, physical activity and menarche age. Abnormal cycles are generally caused by unstable hormonal levels. Abnormal menstrual cycles cause long-term disruption to the reproductive system if left untreated. This type of research is an analytical survey research with a Cross Sectional research design. The purpose of the study was to find out the factors that affect the menstrual cycle in adolescent girls at SMA N 1 Kluet Selatan. The sample in this study is a student of SMA N 1 Kluet Selatan Class X, XI and XII which was obtained through the probability sampling technique, which is sampling that provides the same opportunity for population members to be selected as sample members. The results of the study showed that there was an effect of nutritional status with a P value of 0.003 (< 0.05), stress with a P value of 0.002 (< 0.05), physical activity with a P value of 0.026 (< 0.05. Menarche age, with a P value of 0.000 (< 0.05) on the menstrual cycle in adolescent girls at SMA N 1 Kluet Selatan From the results of the research, it was found that there was an effect of nutritional status, stress, physical activity, and menarche age on the menstrual cycle in adolescent girls at SMA N1 Kluet Selatan. The suggestion in this study is that it is hoped that adolescent girls can find information about factors that can affect the menstrual cycle so that they can find out early and can overcome the occurrence of disturbances during menstruation.

Abstract

School-age children need adequate nutritional intake to support learning activities at school. Meatballs contain high protein and are quite popular among children in Indonesia. In addition to protein, micronutrients such as minerals must also be met. This study aimed to develop beef meatballs with blood cockle substitution as an alternative source of protein and zinc for school-age children. This study used a Completely Randomized Design (CRD) with four treatments (substitution of beef with blood clam as much as 0, 10, 20, 30%). Data from the physicochemical properties of blood clam meatballs were analyzed using the ANOVA test and continued with the Tukey test. The results showed that the substitution of beef with blood clam results in a significant difference (p<0.05) in organoleptic acceptance (color, aroma, texture, taste, aftertaste, overall acceptance) and zinc levels. The selected meatball was F2 with 10% blood clam substitution. F2 was chosen as the best formulation based on the results of organoleptic tests and analysis of nutrient content, especially protein and zinc. This formula produces meatballs with a protein content of 13.6 g/100 g, zinc 2.28 mg/100 g, and calcium 98.18 mg/100 g. The content of macronutrients and minerals, especially zinc, from the selected formula meets the nutrient contribution of one snack to the AKG of school-age children (7-9 and 10-12 years). The serving size of blood clam meatballs was determined to be 200 g or 10 pieces. This serving size has a contribution value of 12.06% (7-9 years), 9.95% (10-12 years boys), and 10.47% (10-12 years girls) to energy. Meatballs from this selected formula can also be claimed as a source of protein and zinc. The results of this study indicate that blood clams can be used as an alternative raw material in beef-based products to improve their nutritional profile.

Abstract

This study aims to develop a pie product substituting wheat flour with composite flour from catfish head flour and chia seeds flour as an alternative high-calcium product. The experimental design used was a completely randomized design with four percentages of wheat flour substitution with composite flour (100:0%, 93:7%, 86:14%, 79:21%). The analysis used was organoleptic test (acceptance test), physical analysis (color and texture), nutritional profile analysis (proximate, calcium, and calcium bioavailability). Data were analyzed using One-Way ANOVA and independent sample T-test. The level of pie hardness, ash content, protein, fat, calcium and calcium bioavailability increased along with the increasing use of composite flour, but carbohydrate content decreased. Substitution of wheat flour with composite flour tended to decrease panelist’s preference for pie color, but did not affect panelist’s assessment of aroma, texture, taste, and overall acceptance. Substitution (86:14%) of wheat flour with composite flour was chosen as the best formula with the results of nutritional content of 13.98% water content, 2.94% ash content, 11.47% protein, 25.57% fat, 46.04% carbohydrate, and calcium content of 541.13 mg/100 grams. The results of this study indicate that substitution of wheat flour with a mixture of catfish head flour and chia seeds flour in pies can provide an alternative product of high calcium. Penelitian ini bertujuan untuk mengembangkan produk pie substitusi tepung terigu dengan tepung komposit dari tepung kepala ikan lele dan tepung chia seeds sebagai alternatif produk tinggi kalsium. Rancangan percobaan yang digunakan adalah rancangan acak lengkap dengan empat persentase substitusi tepung terigu dengan tepung komposit (100:0%, 93:7%, 86:14%, 79:21%). Analisis yang digunakan adalah uji organoleptik (uji penerimaan), analisis fisik (warna dan tekstur), analisis kandungan gizi (proksimat, kalsium, dan bioavailabilitas kalsium). Data dianalisis menggunakan One-Way ANOVA dan independent sample T-test. Tingkat kekerasan pie, kadar abu, protein, lemak, kalsium dan bioavailabilitas kalsium meningkat seiring dengan peningkatan penggunaan tepung komposit, tetapi kadar karbohidrat menurun. Substitusi tepung terigu dengan tepung komposit cenderung menurunkan kesukaan panelis terhadap warna pie, tetapi tidak memengaruhi penilaian panelis terhadap aroma, tekstur, rasa, dan penerimaan keseluruhan. Substitusi (86:14%) tepung terigu dengan tepung komposit dipilih sebagai formula terbaik dengan hasil kandungan gizi sebesar 13,98% kadar air, 2,94% kadar abu, 11,47% protein, 25,57% lemak, 46,04% karbohidrat, dan kandungan kalsium sebesar 541,13 mg/100 gram. Hasil penelitian ini menunjukkan substitusi tepung terigu dengan campuran tepung kepala ikan lele dan tepung chia seeds pada pie dapat memberikan produk alternatif tinggi kalsium.
