Abstract

School-age children are the age group of 6-12 years and an important period of growth and development, so adequate nutritional intake is needed to avoid nutritional problems. Children's nutritional intake that does not comply with the 2019 Nutritional Adequacy Intake and unhealthy physical activity patterns can disrupt energy balance and trigger nutritional problems. Mother's nutritional knowledge is important in determining the type and amount of food consumed by children so that the child's nutritional status is normal. The purpose of this study was to determine the relationship between children's nutritional intake, physical activity, and maternal nutritional knowledge with the nutritional status of school-age children at UPT SDN 104244 Jati Sari, Lubuk Pakam District, Jl. Inpres, Tg. Garbus I Village. This research was conducted at UPT SDN 104244 Jati Sari, Lubuk Pakam District from January 13 to January 20, 2025. This type of research is observational with a cross-sectional design. The population in this study were students in grades III to V who were selected by random sampling, with a sample of 57 people using the Slovin formula Data was collected through measurements of height and weight, a non-consecutive 3x24-hour food recall form, the Physical Activity Questionnaire for Children (PAQ-C) and maternal nutritional knowledge questionnaire. The statistical analysis employed was the Chi-square test. The research results indicate a significant relationship between children's nutritional intake (energy, carbohydrates, protein, fat, vitamins A, B6, E, C, iron and zinc) with p-value = 0.001, physical activity (p-value = 0.001), maternal nutritional knowledge (p-value = 0.001) and the nutritional status of school-age children.

Abstract

Green mussel is a food ingredient rich in nutrients and widely known by the general public due to its affordable price and easy accessibility. Mackerel fish floss with the substitution of green mussel is one alternative dish that can help improve the provision of protein and iron for women of reproductive age. This research aims to develop and analyze the nutritional content of the floss product based on mussels. The study used three different formulations with varying ratios of mackerel fish and green mussel: F0(100:0), F1(80:20), and F2(60:40). Based on organoleptic tests, physical characteristics, and nutritional content analysis, F2 was determined as the selected formula. The selected formulation of the floss contains 8.93% moisture content, 6.04% ash content, 34.91% protein, 27.85% fat, 22.27% carbohydrates, and 8.17 mg of iron. A serving size of the mackerel fish floss with green mussel substitution, equivalent to 1 tablespoon, contributes 72 kcal (3.2-3,5%) of daily energy for woman of reproductive age. The selected formulation of mackerel fish and green mussels floss meets the criteria to claim it as a high-protein and iron product.

Abstract

SSGI (Nutritional Status Study of Indonesia) survey in 2021 found that prevalence of stunted infants in Sumatera Utara province is still higher (25.8%) than the national limit. It is known that stunting is multifactorial condition with breastmilk/weaning food feeding behavior as one of the contributing factor. Furthermore, family’s attitude toward consuming wide variety diets is also considered as factors related to stunting. Secondary data from SSGI 2021 involving 10,755 households was used in this study. STATA application was used to help analyzing the data. Statistical analysis was conducted by using Chi Square and showed that breastmilk/weaning food feeding behavior, and varied diets in family were not contributing factors of stunting in Sumatera Utara province. However, we found that educational background was significant contributing factor to stunting (p = 0.000). We suggest that other approach, such as qualitative measure may be used in future study to investigate factors attributable to stunting.
