Abstract

Remaja putri rentan terhadap anemia gizi besi, dalam usia remaja terjadi perubahan fisik san hormonal. Perkembangan ini mempengaruhi kebutuhan zat gizi dimasa remaja. Kebutuhan akan zat besi pada remaja sering tidak terpenuhi karena remaja putri memiliki kebiasaan makan yang buruk. Dampak anemia gizi besi akan lebih serius efeknya karena remaja putri nantinya akan hamil dan melahirkan anak, sehingga dapat meningkatkan bahaya kematian ibu dan kelahiran prematur. Data World Health Organization (WHO) pada tahun 2019 di Indonesia angka kejadian anemia pada perempuan 15-49 tahun yaitu sebesar 31,2%. Penelitian dilakukan bulan Mei-Agustus 2021 dengan tujuan mendeskripsikan pengetahuan tentang anemia gizi besi pada remaja putri di SMA Negeri 3 Manado. Menggunakan jenis penelitian kuantitatif dengan desain penelitian deskriptif dengan jumlah sampel 241 responden. Hasil penelitian berdasarkan pengumpulan data menggunakan kuesioner pengetahuan tentang anemia gizi besi diperoleh bahwa responden dengan kategori pengetahuan baik yaitu sebanyak 59 remaja putri (24,5%) kategori pengetahuan cukup sebanyak 144 remaja putri (59,8%), dan kategori pengetahuan kurang sebanyak 38 remaja putri (15,8%). Kesimpulan dari penelitian ini adalah sebagian besar remaja putri di SMA Negeri 3 Manado berada pada kategori pengetahuan cukup yaitu sebanyak 144 orang (59,8%). Kata Kunci: Anemia Gizi Besi, Remaja Putri ABSTRACTAdolescent girls are susceptible to iron deficiency anemia, in adolescence there are physical changes in hormonal san. This development affects the nutritional needs in adolescence. The need for iron in adolescents often goes unmet because young women have poor eating habits. The impact of iron deficiency anemia will be more serious because young women will later become pregnant and give birth to children, so it can increase the danger of maternal death and premature birth. World Health Organization (WHO) data in 2019 in Indonesia the incidence of anemia in women 15-49 years is 31.2%. The study was conducted in May-August 2021 with the aim of describing knowledge about iron deficiency anemia in young women in State High School 3 Manado. Using quantitative research types with descriptive research designs with a sample number of 241 respondents. The results of the study based on data collection using knowledge questionnaires about iron deficiency anemia were obtained that respondents with good knowledge categories were as many as 59 young women (24.5%) enough knowledge categories as many as 144 young women (59.8%), and less knowledge categories as many as 38 young women (15.8%). The conclusion of this study is that most of the young women in State High School 3 Manado are in the category of sufficient knowledge, which is as many as 144 people (59.8%). Keywords: Iron Deficiency Anemia, Adolescent Girl

Abstract

Mineral mikro sangat penting karena berperan dalam pembentukan antibodi untuk mengurangi angka kesakitan dan penyakit infeksi. Mahasiswa di tengah kegiatan daring dalam masa pandemi saat ini membutuhkan asupan makanan yang sehat, bergizi, dan seimbang, karena peran gizi yang dikonsumsi merupakan satu upaya pencegahan dalam menghadapi COVID-19. Penelitian ini bertujuan untuk melihat gambaran kecukupan mineral mikro mahasiswa semester VI FKM UNSRAT saat pembatasan sosial masa pandemi COVID-19. Penelitian ini termasuk dalam jenis penelitian deskriptif, yang dilakukan di FKM UNSRAT pada bulan April 2020 sampai Februari 2021 dengan sampelnya sejumlah 128 responden. Alat ukur penelitian ini menggunakan formulir food record yang dilaksanakan dalam waktu 2 hari dan buku foto makanan. Hasil penelitiannya memperlihatkan jika mayoritas respondennya mempunyai tingkat kecukupan asupan besi yang kurang (89,8%), tingkat kecukupan asupan seng yang kurang (70,3%), tingkat kecukupan asupan tembaga yang cukup (53,1%), dan tingkat kecukupan asupan mangan yang cukup (74,2%). Kata Kunci: COVID-19; Kecukupan mineral mikro; Gizi; Mahasiswa ABSTRACTMicro minerals have a very important role in the formation of antibodies that can reduce morbidity and infectious diseases. In the middle of dense online activities during the current pandemic, students need healthy, nutritious, and balanced food intake. This because the role of nutrition that consumed by the students is one of the efforts to prevent the COVID-19.  The objective of this research was to determine the adequacy of micro minerals intake for 6th semester students of the FKM UNSRAT during the social restrictions of COVID-19 pandemic. This research is a descriptive study, which was conducted at the FKM UNSRAT, from April 2020 to February 2021 with 128 samples of respondents. The measuring instrument of this research used a food record form that conducted in 2 days and a food photo book. The results of this study indicate that most of the respondents had insufficient iron intake (89.8%) and insufficient zinc intake (70.3%). Adequate level of adequate intake of copper (53.1%), and adequate level of adequate intake of manganese (74.2%). Keywords: COVID-19; Adequacy of micro minerals; Nutrition; Students

Abstract

Manusia memerlukan makanan untuk tetap bertahan hidup. Makanan yang aman untuk dikonsumsi ialah makanan yang bebas dari cemaran. World Health Organization (WHO) menyatakan 600 juta kasus penyakit bawaan makanan disebabkan oleh makanan yang terkontaminasi patogen (bakteri, virus, parasit atau zat kimia berbahaya). Makanan yang tidak diolah dengan prinsip higiene dan sanitasi makanan yang tepat bisa berdampak pada kesehatan manusia seperti menimbulkan penyakit dan keracunan akibat bahan kimia dan mikroorganisme. Penelitian ini dilaksanakan pada bulan Februari-Juli 2021 dengan tujuan untuk mendeskripsikan penerapan prinsip higiene dan sanitasi makanan di PT. Aeroprima Food Service Manado menggunakan metode penelitian campuran melalui observasi dan wawancara mendalam pada 8 informan. Hasil penelitian berdasarkan wawancara mendalam diperoleh bahwa pemahaman penjamah makanan memiliki pengetahuan baik sebesar 58% terkait prinsip higiene dan sanitasi makanan dan berdasarkan hasil observasi uji kelaikan fisik telah memenuhi persyaratan Permenkes RI No. 1096/Menkes/VI/2011  tetapi dalam pelaksanaannya belum berjalan maksimal seperti pada prinsip penyimpanan makanan jadi yang belum menggunakan penutup serta masih didapati beberapa penjamah makanan yang tidak menggunakan Alat Pelindung Diri dengan lengkap saat menjamah makanan. Pelaksanaan yang kurang maksimal karena dipengaruhi oleh beberapa faktor diantaranya seperti pelatihan, kebiasaan, sarana-prasarana, sosial-ekonomi, program, dan sumber daya manusia di perusahaan tersebut. Kesimpulan dari penelitian ini adalah penerapan prinsip higiene dan sanitasi makanan di PT. Aeroprima Food Service Manado sudah berjalan dengan baik memenuhi persyaratan dalam Permenkes RI No. 1096/Menkes/VI/2011. Kata kunci: Higiene, Sanitasi, Makanan, Penjamah Makanan. ABSTRACT Humans need the source of food to survive. Food which is considered safe for consumption is free from contamination. The World Health Organization (WHO) states that 600 million cases of foodborne illness are mostly caused by contaminated pathogens (bacteria, viruses, parasites or harmful chemicals). Food which is processed with no proper principles of food hygiene and sanitation may affects human health in terms disease and food poison due to chemicals and microorganisms. This research was conducted in February-July 2021 which aimed to describe the Implementation principles of food hygiene and sanitation at PT. Aeroprima Food Service Manado by using mixed methods research through observation and in-depth interviews which consists 8 informants. The results of this research from in-depth interviews that covers the understanding of food handlers related to the principles of food hygiene and sanitation was well-decent by 58% and the observation results based on the physical fitness test  had notably comply with the requirements under The Ministry of Health of the Republic of Indonesia policy No. 1096/Menkes/VI/2011, but within its implementation, there are several aspects running not optimally such as the principle of storing cooked food which is not using cover yet and there are still some food handlers who did not use complete Personal Protective Equipment when handling food. The implementation is less optimal because it is influenced by several factors including training, habits, infrastructure, socio-economics, programs, and human resources in the company. In conclusion, this research of the implementation of the principles of food hygiene and sanitation at PT. Aeroprima Food Service Manado has been running well in accordance to the requirements from The Ministry of Health of the Republic of Indonesia No. 1096/Menkes/VI/2011. Keywords:  Hygiene, Sanitation, Food, Food Handler

Abstract

Minerali makro adalahi mineral yangi dibutuhkani tubuh dalami jumlahi lebih dari 100 mg isehari, yangi termasuk mineral makroi antarai lain natrium, klorida, ikalium, kalsium, ifosfor, imagnesium. Salahi satu cara untuki mencegah ipenularan Covid-19 yaitui dengan mengonsumsii gizi yangi seimbang sertai memperbanyaki konsumsii sayur dani buah, karena kandungani vitamin dan minerali di dalami sayur dan buahi dapat memperkuati sistem imuni tubuh. Tujuan dari penelitian ini adalah untuki mengetahuii gambarani kecukupan mineral makroi pada tenagai pendidik dan kependidikani Fakultas Kesehatani Masyarakat Universitasi Sam Ratulangii selama masai pandemii Covid-19. Penetian inii bersifati deskriptif, yangi dilaksanakani pada bulani Juli 2020 - Novemberi 2021, di Fakultasi Kesehatani Masyarakati Universitasi Sam Ratulangi dengani jumlah sampeli sebanyak 40 iresponden. Alat ukur penelitiani ini menggunakan kuesioner iformulir food record dalam 2x24 jam Analisis data yang dilakukan yaitu analisis univariat. Analisis univariat dilakukan tiap variabel dari hasil penelitian ini untuk menggambarkan karakteristik umum responden dan kecukupan mineral imakro tenagai pendidiki dan ikependidikan Fakultasi Kesehatani Masyarakati Universitasi Sami Ratulangi saat pembatasani sosial pandemii Covid-19. Hasil Penelitiani ini menunjukkani bahwai paling banyak respondeni memilikii asupani natrium ikurang yaitui sebanyaki 82%, kalium  90%, kalsium 87% dan magnesium 55%. Berbeda dengan fosfor paling banyak responden yang memiliki asupan fosfor yang lebih yaitu sebanyak 45,5%.  Kata Kunci : Kecukupan Mineral Makro, Tenaga Pendidik dan Kependidikan, COVID-19 ABSTRACKBawoleng, Astriani. One way to prevent the transmission of Covid-19 is to eat a balanced diet and increase the consumption of vegetables and fruit, because the vitamins and minerals in vegetables and fruit can strengthen the body's immune system. The purpose of this study was to describe the adequacy of macro minerals in educators and education at the Faculty of Public Health, Sam Ratulangi University during the Covid-19 pandemic. This research is descriptive in nature, which was carried out in July 2020 - November 2021, at the Faculty of Public Health, Sam Ratulangi University with a total sample of 40 respondents. The measuring instrument of this research used a food record form questionnaire in 2x24 hours. Data analysis was carried out, namely univariate analysis. Univariate analysis was carried out for each variable from the results of this study to describe the general characteristics of respondents and the adequacy of macro minerals for educators and education staff at the Faculty of Public Health, Sam Ratulangi University during the Covid-19 pandemic social restrictions. The results of this study indicate that the most respondents have a reduced intake of sodium as much as 82%, potassium 90%, calcium 87% and magnesium 55%. In contrast to phosphorus, most of the respondents had more phosphorus intake, which was 45.5%. Keywords: Macro Mineral Adequacy, Educators and Education Personnel, COVID-19
