Abstract

Cookies are a popular type of dry cake in Indonesia and are liked by various groups. Generally, cookies are made using wheat flour as the main ingredient, but black glutinous rice flour, which is rich in fibre and has health benefits, is chosen as an alternative substitute for wheat flour. This study aims to explore the effect of substituting black glutinous rice flour in cookies on organoleptic acceptance and nutritional content of the product. Objective: This study aims to identify the effect of substituting black glutinous rice flour on the organoleptic acceptance of cookies and to identify the effect of substituting black glutinous rice flour on the nutritional content of cookies.Method: This study uses an experimental method with a Completely Randomised Design (CRD). Organoleptic tests were conducted to assess parameters of colour, aroma, taste, crunchiness, and texture by using the Kruskal-Wallis test. Analysis of nutritional content using the anova test was carried out to measure the levels of water, ash, fat, protein, and carbohydrates in cookie products that use black glutinous rice flour as a substitute. Results: The results showed that there was a significant effect of adding black glutinous rice flour on the parameters of colour, aroma, taste, and crunchiness (P<0.05). However, there was no significant effect on the texture parameter (P>0.05). The nutritional content analysis showed that the water content of cookies varied, with the lowest value in P2 (4.98%), which almost reached the SNI standard limit (maximum 5%). Ash content increased with the increase in substitution of black glutinous rice flour, reaching the highest value in P4 (2.36%), which exceeded the SNI standard limit (maximum 1.8%). Fat content also increased, although it remained within the limits allowed by SNI (maximum 35%). Protein content slightly decreased in P2 (8.09%) compared to P1 (8.18%), showing no significant increase. Meanwhile, carbohydrate content decreased with the increase in substitution of black glutinous rice flour, with a significant difference between P1 (60.66%) and P2 (59.63%). Conclusion: Substitution of black glutinous rice flour in cookie production can improve organoleptic acceptance and nutritional content of the product, especially in terms of colour, taste, aroma, and crunchiness. The addition of black glutinous rice flour also affects the levels of water, ash, fat, protein, and carbohydrates, with the potential to increase the nutritional value and health benefits of the product.

Abstract

This study examines the implications of the European Union's Deforestation-Free Regulation (EUDR) 2025 policy on Indonesia and Malaysia as major producers of land-based commodities. This study analyzes three critical aspects: the impact of implementation, forms of resistance, and challenges in its implementation. This study employs secondary data (2020-2024) sourced from Google Scholar, Scopus, government publications, and news portals. Thematic coding was applied for data analysis, with triangulation across academic journals, media reports, and policy documents ensuring validity. The EUDR has triggered systematic resistance through diplomatic alliances, WTO lawsuits, national policy adjustments, and farmer protests. Its impacts span multiple dimensions: regulatory, economic, social, and environmental. This study developed an institutional theory framework to understand the impact of global environmental policies, empirically by mapping the strategic responses of developing countries, and practically through concrete policy recommendations in the form of harmonization of certification standards, development of inclusive funding systems, and evidence-based diplomacy strategies. The main findings of the study emphasize the importance of a just transition approach that considers the specific capacities and needs of producer countries in the Global South in implementing global environmental policies.

Abstract

As the backbone of Medan’s economy, Micro, Small, and Medium Enterprises (MSMEs) play a central role in sustaining livelihoods and driving regional growth. However, to overcome persistent challenges such as limited capital, market access, and human resource constraints, effective leadership becomes a critical factor for ensuring resilience and long-term sustainability. This study aims to analyze the role of transformational leadership in improving employee performance in the MSMEs sector in Medan City. Using a qualitative approach through case studies on several MSMEs such as Serumpun Deli, Animers Craft, Dian Kitchen, and Gallery Fika, this study found that the four main dimensions of transformational leadership, ideal influence, inspirational motivation, intellectual stimulation, and individual attention are able to increase employee loyalty, motivation, and productivity. These findings reinforce the theories of Bass and Avolio and show that the application of transformational leadership is effective in building an innovative and collaborative work culture. This study recommends strengthening leadership capacity in MSME actors as a strategy to increase competitiveness in the era of digital transformation.

Abstract

Tujuan penelitian ini adalah untuk mengetahui Beban Kerja dan Keselamatan Kerja berpengaruh secara parsial terhadap Kinerja Karyawan PT. Nusantara Sakti Parepare, dan untuk mengetahui Beban Kerja dan Keselamatan Kerja berpengaruh secara simultan terhadap Kinerja Karyawan PT. Nusantara Sakti Parepare. Penelitian ini dilakukan dengan metode kuantitatif. Teknik pengumpulan data menggunakan metode observasi, wawancara, kuesioner, studi pustaka, serta dokumentasi. Teknik analisis data yang digunakan adalah analisis regresi berganda dan diolah menggunakan program SPSS 26. Sampel dalam penelitian ini menggunakan teknik sampling jenuh, yang berarti bahwa seluruh karyawan PT. Nusantara Sakti Parepare yaitu sebanyak 38 orang. Data yang digunakan dalam penelitian ini menggunakan data primer yang bersumber dari hasil kuesioner yang telah di isi oleh seluruh responden. Hasil penelitian ini menunjukkan bahwa Beban Kerja secara parsial tidak berpengaruh terhadap Kinerja Karyawan pada PT. Nusantara Sakti Parepare. Sedangkan Keselamatan Kerja secara parsial berpengaruh terhadap Kinerja Karyawan dengan nilai thitung 5,884 > ttabel 2,030. Dengan signifikan 0,000 < 0,05, Beban Kerja dan Keselamatan Kerja berpengaruh secara simultan dengan nilai fhitung 18,554 > ftabel 3,26 dengan signifikan 0,000 < 0,05.

Abstract

Pengabdian ini bertujuan untuk memberdayakan masyarakat melalui pembinaan produksi minuman kelor sebagai upaya detoksifikasi dan peningkatan kesehatan. Program ini dilatarbelakangi oleh kurangnya pengetahuan masyarakat tentang manfaat daun kelor dan keterampilan dalam mengolahnya menjadi produk bernilai tambah. Metode yang digunakan meliputi sosialisasi, pelatihan (budidaya kelor, pengolahan, pengemasan, pemasaran), pendampingan intensif, dan evaluasi. Hasilnya menunjukkan peningkatan signifikan dalam pengetahuan masyarakat tentang manfaat kelor, keterampilan dalam produksi minuman kelor, serta potensi ekonomi melalui penjualan produk. Minuman kelor yang dihasilkan juga berkontribusi pada peningkatan kesehatan masyarakat melalui kandungan nutrisi dan antioksidan yang membantu detoksifikasi tubuh. Program ini membuktikan bahwa pembinaan masyarakat dalam pengolahan sumber daya lokal dari daun kelor dapat menjadi solusi efektif untuk meningkatkan kesehatan dan kesejahteraan masyarakat.

Abstract

The growth of Indonesia’s gig economy has reshaped labor structures, raising urgent questions about how to sustain gig workers’ well-being and productivity. This study examines the impact of trust in the platform, platform fairness, and social support on work-life balance and how work-life balance in turn influences job satisfaction, work engagement, productivity, and employee retention. It also examines the mediating roles of satisfaction and engagement, as well as the moderating effects of technological support and gig work characteristics. Using a quantitative approach, data were collected from 400 gig workers across various platforms, including Gojek, Grab, Shopee, and Freelancer.com, via stratified sampling. A pilot study with 50 workers refined the instrument. Structural equation modeling with SmartPLS 4.0 was employed for analysis, which included confirmatory factor analysis and assessments of reliability, validity, and common method bias. The results show that all three antecedents have a significant impact on work-life balance, which, in turn, improves job satisfaction, engagement, productivity, and retention. Mediators and moderators strengthen these relationships. This study extends the Job Demands-Resources model into the gig economy and offers practical guidance for platform companies to design more supportive and sustainable work environments.

Abstract

Meningkatnya prevalensi penyakit tidak menular (PTM) dan kerawanan pangan menyoroti perlunya solusi kesehatan yang berkelanjutan. Penelitian ini menyelidiki potensi penggunaan etnomedis dan praktik pola makan sehat sebagai strategi pelengkap untuk mendukung Tujuan Pembangunan Berkelanjutan (SDGs). Pendekatan metode campuran digunakan, menggabungkan wawancara kualitatif dengan praktisi kesehatan masyarakat dan survei kuantitatif yang menilai kebiasaan makan penduduk setempat. Temuan menunjukkan bahwa etnomedis memainkan peran penting dalam meningkatkan kesehatan masyarakat dengan menyediakan pilihan layanan kesehatan yang terjangkau dan sesuai dengan budaya. Selain itu, integrasi sistem pangan lokal ke dalam praktik pola makan secara signifikan meningkatkan asupan nutrisi dan ketahanan pangan. Diskusi tersebut menekankan perlunya dukungan pemerintah terhadap kebijakan yang mempromosikan etnomedis dan pola makan berkelanjutan, yang pada akhirnya berkontribusi terhadap SDG 2 (Tanpa Kelaparan) dan SDG 3 (Kesehatan dan Kesejahteraan yang Baik). Wawasan ini menekankan pentingnya memanfaatkan pengetahuan dan sumber daya lokal untuk mencapai tujuan kesehatan dan keberlanjutan yang lebih luas.

Abstract

The The rapid development of technology requires teachers to be able to utilize technology in carrying out digital-based learning processes. For this reason, besides having 4 basic skills, teachers are also required to have competence in managing digital-based education. This article aims to examine in more detail the content of teachers and competency standards that will teach teachers and their relation to the digitalization of education. The formulation of the problem in this study is how a teacher is able to balance these competencies with increasingly sophisticated technological developments. This study uses a qualitative approach with a technical analysis of literature related to the digitalization of education. Furthermore, data collection in this study was carried out by tracing various sources, both in the form of government documents, mass media, and the results of relevant research previously analyzed. Data analysis was carried out using content analysis. The results of this study indicate that the competence of a teacher is very necessary because the teacher is an allowance for students in an atmosphere of maximum learning outcomes assisted by the rapid advancement of technology. A teacher is required to have basic competencies including pedagogic, personality, social, and professional competencies. The basic competencies in question are knowledge, skills, and basic values ​​that are reflected in the habits of thinking and acting as a teacher. Therefore a good teacher is a teacher who is ready for advanced technological developments, especially in education.
