Abstract

The objective of this study was to develop a balanced diet index (BDI) in relation to nutritional quality of the diet (NQ) in Indonesian adult females. This study used food consumption data from the Basic Health Research (Riskesdas) of 2010. The food consumption data were collected using 24-h food recall method through a cross-sectional study. Total subject of this study was 61,759 adult females19—55 years. The NQ of 16 nutrients was used as a gold standard in the validity testing. The results showed that the simplest and the most valid measurement was BDI3-60 (correlation coefficients with the NQ=0.7) which was based on three levels of scoring system (0, 5, and 10) and six food groups (carbohydrate food sources, animal protein food, plant protein food, vegetable, fruit, and milk), without considering fat, saturated fat, cholesterol, and sodium. The mean score of BDI3-60 was 31.0±12.1.

Abstract

The purpose of this study was to develop formula of sausage based on tempeh flour with the addition of oyster mushroom (Pleurotus ostreatus) as functional food rich in protein and dietary fiber as healthy snack product for children. Sausage was formulated by addition of oyster mushroom used trial and error method. A selected formula was determined based on semi trained panelist preference. Acceptance of the selected sausage formula was examine by children using hedonic test. The contribution of protein and dietary fiber contained in sausage per serving size (50 g) was calculated for general consumer. The accepted sausage with 20% oyster mushroom addition contained 24% of protein and can be claimed as source of protein and 7.64 g of dietary fiber per 100 g and can be claimed rich in dietary fiber.

Abstract

Ice cream from goat milk kefir is lower lactose than cow milk kefir. Combining goat milk kefir with red dragon fruit in ice cream formulations can improve the quality of the product. This study aims to determine the sensory characteristics, total solid, total flavonoid, and antioxidant activity of goat kefir-based ice cream flavored red dragon fruit as quality evaluation. The study used a completely randomized design with 4 treatments and 3 replications. The treatment was the ratio of goat kefir and dragon fruit, including 40:60, 50:50, 60:40, and 70:30 in the ice cream mixture. 30 panelists participated in the organoleptic test. Total solid testing referred to SNI 01-3713-1995. Determination of total flavonoid content was carried out by forming AlCl3 complexes spectrophotometrically and assaying antioxidant activity used 2.2-diphenyl-1-picrylhydrazyl (DPPH) method. The results showed that there was no significant difference in the organoleptic test for taste, color, and texture. The results of the total solids test showed that the higher the addition of goat kefir to ice cream, the lower the total solids produced. While the addition of goat kefir increased the total flavonoids in ice cream. The antioxidant activity with the best formulation of 50:50 was categorized as moderate level, which is 136.59 ppm.

Abstract

Green okra is obtained from the planting process and harvested after 3 months of cultivation. Analysis was carried out in the form of Dietary fiber, Microbial Content, Physical properties tests, and Antioxidant Capacity Analysis. This green okra pudding product study employed a Completely Randomized Design (CRD). The formula comparison treatment was divided into three treatment levels, namely the comparison of mucilage addition (10, 15, and 20 ml). The response variable of this study was the organoleptic properties of okra pudding. There are 3 (three) stages in making green okra pudding, consisting of blanching green okra fruit, extracting green okra (mucilage), and making pudding. Based on the results of this study, the selected green okra pudding formula from the hedonic test is formula 3 which contains 1.24% dietary fiber, no Staphylococcus aureus and contamination by Escherichia coli bacteria is very minimal, pH of 7.21, aroma and texture were rated as typical SNI 01-2891-1992 standard and IC50 result of 24.27% indicates the concentration of the product needed to inhibit 50% of free radical activity, which means that this product has indicating notable antioxidant effectiveness. Abstract

Exposure to UVB rays in humans largely affects vitamin D synthesis, and approximately 90%–95% of vitamin D is produced in the skin. Allergic diseases have a significant impact on the health of the affected individuals. This study aimed to determine the relationship between sun exposure and the incidence of allergies in adult women. This research used a quantitative cross-sectional design. This research was conducted in Bogor from August to November 2023. The population investigated consisted of the entire adult female population living in the city of Bogor. This study used simple random sampling to select representative respondents. The data were collected using a questionnaire. The study sample comprised of 395 people. The inclusion criteria were women aged between 19 and 49 years who permanently resided in Bogor City. The exclusion criteria are women who are pregnant, breastfeeding, experiencing menopause, using hormonal contraception, and diagnosed with diabetes or other infectious or non-communicable diseases. Bivariate data was analyzed using the chi-square test to determine the relationship between sun exposure and the incidence of allergies in women in Bogor City. Processed shellfish foods and products are a common cause of allergies in women in Bogor. The frequency of sunbathing and the use of sunscreen have a significant effect on allergies. Sunbathing 2 times/week reduces allergies, whereas never sunbathing causes allergies. Sunscreen use increases allergies, and more research is needed to develop effective prevention strategies.

Abstract

Penelitian ini bertujuan mengetahui pengaruh pemberian ekstrak etanol daun pegagan terhadap gambaran darah dan peningkatan fungsi kognitif pada tikus. Penelitian ini menggunakan 16 ekor tikus Wistar jantan, dibagi secara acak ke dalam 4 kelompok dan masing-masing diberi ekstrak etanol daun pegagan setiap hari dengan level 0, 100, 300, dan 600 mg ekstrak/kg bobot badan selama 8 minggu. Hasil penelitian menunjukkan bahwa pemberian ekstrak pada level 300 mg/kg bobot badan meningkatkan nilai packed cell volume (PCV), sel darah merah (SDM), dan nilai hemoglobin (Hb). Pengamatan aktivitas pada kelompok dengan level 300 dan 600 mg/kg bobot badan menunjukkan adanya peningkatan dibandingkan kelompok kontrol (P0,05). Pemberian ekstrak etanol daun pegagan juga berperan dalam meningkatkan keberhasilan pengenalan lorong target. Hasil di atas mengindikasikan dengan kuat bahwa ekstrak pegagan mempunyai peran penting dalam perbaikan profil hematologi dan meningkatkan fungsi kognitif.

Abstract

The rising prevalence of diet-related diseases necessitates a focus on individual food selection to enhance nutrition intake and promote overall health. This study introduces a novel food recommender system utilizing artificial intelligence, specifically a genetic algorithm (GA), to intelligently match diverse nutritional needs with available food items. The research incorporates machine learning methodologies, such as collaborative and content-based filtering, to develop a recommendation model. Data from a commercial restaurant, Nutrisurvey, and the Indonesian food composition list inform the nutritional analysis of five menu items. Consumer variability, considering factors like sex, body mass index, medical conditions, and physical activity, are integrated into the GA framework for personalized food pattern matching. The presented results demonstrate the efficacy of the proposed model in offering tailored food recommendations for consumers with non-communicable diseases (NCDs), such as diabetes, hypertension, and heart disease. The multi-objective optimization technique employed in the system ensures a balance between nutritional adequacy and individual preferences. The presented GA-based approach holds promise for promoting healthier food choices tailored to individual needs, contributing to the broader goal of fostering a sustainable and personalized food system.

Abstract

Laporan ini memaparkan kasus pasien bayi laki-laki berusia 11 bulan dengan spontaneous bacterial peritonitis, gizi buruk marasmik perawakan sangat pendek fase rehabilitasi, diare akut dehidrasi ringan sedang teratasi, atresia bilier fibrosis stage Laennec score 4B (sirosis bilier), small secundum ASD (atrial septal defect), cytomegaloviral disease. Pasien dirawat di rumah sakit karena perawatan infeksi dengan kondisi malnutrisi. Pasien mengalami jaundice, ikterik, dan mual. Hasil pemeriksaan biokimia pasien mengalami anemia, trombositopenia, hipoalbuminemia, dan ketidakseimbangan elektrolit. Pemberian makan pada bayi malnutrisi dilakukan bertahap sesuai kondisi pasien. Asupan zat gizi selama tiga hari pengamatan meningkat secara bertahap hingga mencapai target intervensi yaitu minimal 90% kebutuhan energi dan zat gizi.

Abstract

ABSTRACTThis study was conducted to evaluate the effect of tempe that were made from Genetically Modified (GM) and non-GM soybean on protein quality, malondialdehide (MDA) levels, intracellular antioxidant superoxide dismutase (SOD) activity in the liver and kidneys, as well as spermatozoa profile of experimental rats. Fourty five Sprague Dawley rats divided into eight treatment grups and one control, fed with tempe and soybean from GM and non-GM at 10% and 20% concentrations for 90 days. The results showed that there was no significant difference in term of protein quality, tempe made from GM soybean is substantially equivalent with tempe made from non-GM soybean. Results showed that group which was given ration of 10% protein from conventional soybean had lower liver and kidney MDA levels as compared to GM tempe 10% and 20% groups, but was not significant compared to conventional soybean 20% and casein 10% groups. While the value of liver and kidney SOD activity were not significantly different (p>0.05) between the groups of rats. There was no significant differences among the spermatozoa profiles treatment groups and control and they were within normal condition. Results of protein quality, MDA, SOD, and spermatozoa profile showed that tempe made from GM soybean was substantially equivalent with the non-GM soybean.Keywords: GM soybean, MDA, non-GM tempe, SOD, spermatozoa profileABSTRAKTujuan penelitian ini adalah untuk mengevaluasi pengaruh tempe Pangan Rekayasa Genetik (PRG) dan non-PRG meliputi kualitas protein, kadar malondialdehida (MDA) hati dan ginjal, aktivitas superoksida dismutase (SOD) hati dan ginjal, dan profil spermatozoa pada tikus percobaan. Sebanyak 45 tikus terbagi ke dalam delapan perlakuan dan satu kontrol yang diberikan perlakuan dengan ransum tempe dan kedelai, baik PRG maupun non-PRG, dengan konsentrasi 10% dan 20% selama 90 hari. Hasil percobaan menunjukkan bahwa tidak ada perbedaan yang signifikan dalam kualitas protein, tempe PRG memiliki nilai yang sama dengan tempe non-PRG. Tikus yang diberi ransum 10% protein kedelai non-PRG mempunyai nilai MDA hati dan ginjal yang lebih rendah dibandingkan dengan tempe PRG 10% dan 20%, tetapi tidak signifikan dengan kelompok kedelai non-PRG 20% dan kasein 10%. Sementara itu, nilai SOD hati dan ginjal tidak signifikan antar grup perlakuan (p>0,05). Tidak ada perbedaan yang signifikan pada profil spermatozoa antar perlakuan. Hasil dari kualitas protein, MDA, SOD, dan profil spermatozoa menunjukkan bahwa kedelai dan tempe PRG memiliki kesamaan substansial dengan kedelai dan tempe non-PRG.Kata kunci: MDA, profil spermatozoa, SOD, tempe kedelai PRG, tempe kedelai non-PRG

Abstract

This study aimed to assess the effect of polyphenols in turkey berry fruits on level of antioxidant enzyme (erythrocyte superoxide dismutation [SOD]) and oxidative stress marker (serum 8-isoprostane) in obese adult women. The study was quasi experimental trial with cross-over design. Eight obese women subjects in Benteng Village-Ciampea, Bogor District, West Java were randomly assigned to a control group (n=4), and a turkey berry group (n=4) for 2 x 1 week daily treatment with a one week wash-out period between treatment periods. Turkey berry group consumed home diet and ±160 g of cooked turkey berry (as a side dish or snack) while the control group consumed only home diet. A food record consumption data was collected twice each week. Blood samples were obtained in the morning at day 1, 8, 15, and 22 of interventions and analyzed for the level of erythrocyte SOD and serum 8-isoprostane. The results showed that the different levels of erythrocyte SOD between post and pre intervention on turkey berry groups was not significantly different compared to the control group (p=0.607). Whereas, the different level of serum 8-isoprostane between post and pre intervention on turkey berry group in which decreasing was significantly different from the level on control group which was increasing (p<0.05). It seems that daily consumption of cooked turkey berry fruits can improve oxidative stress condition.
