Abstract

The prevalence of obesity in the adult is increasing each year due to increased consumption of fast food and decreased consumption of fiber.  Based on Basic Health Research there was 20% of Indonesians suffered from obesity in 2018. The objective is to analyze changes in dietary fiber intake in adult obese in Bogor City. Methods: This research is conducted using secondary data from Risk-Factor of Non-Communicable Disease Bogor. The research design was prospective cohort.  Total subjects were 138 subjects who were newly suffer from obesity in 2014 and 2016, and had normal BMI in baseline (2011 and 2012). Consumption data were collected using 24-hr recall and FFQ and were processed and analyzed using Nutri Survey, Microsoft excel and SPSS 23.0 version. Univariate analysis was used to see the characteristic of the subjects, while different test was using Wilcoxon test since the data are not distributed normally. Results,most subjects were women (77,5%) aged 35-44 years old. The mean of dietary fiber intake was at about 9,7 g in the beginning and it increased by 1,2 g. Despite the increment in the percentage of the people who consumed dietary fiber at about 58%, the mean was still under the recommendation (<25g) at 96,4%. Conclusions, there was an increasing number of dietary fiber in the obese adult who were newly suffered from obesity in two years follow-ups, but the intake is still under the recommendation.

Abstract

Inappropriate breastfeeding, complementary feeding and repeated infections are direct causes of stunting in children under two years of age.  The objective of this research was to investigate the relationship between history of breastfeeding and history of infection with stunting in children living in rural areas who were between the ages of 6 and 24 months old. The research was conducted using a case control study, carried out in the working area of Puring Health Center in 2021 using a sample of 43 children aged 6-24 months taken by simple random sampling. The data were gathered through anthropometric measurements of child’s body length and mother’s height, questionnaire interviews for history of breastfeeding and infection, and the examination of Maternal and Child Health (MCH) book. The chi-square test and multiple logistic regression were utilized in the analysis that was carried out.  The final results suggested that stunting was caused by gender (p=  0,032), mothers’s height (p= 0,032), and food parenting pattern aged 6-8 months (p= 0,026). Food parenting pattern aged 6-8 months was the most dominant factor associated with stunting (p=0,026 AOR 5,17 95% CI:1,22-21,95). In conclusion, gender, mother’s height, and food parenting pattern aged 6-8 months were significantly associated with stunting.

Abstract

The adolescent dietary quality in Indonesia remains subpar, with a substantial proportion of ≤ 95% of adolescents not consuming enough or any fruits and vegetables. The main objective of this research was to evaluate the impact of nutrition education programs based on the Health Belief Model (HBM) and conventional methods on the knowledge, attitudes, and eating habits of adolescents, with the ultimate goal of promoting healthy dietary practices. This study was a quasi-experimental study with a non-randomized control group pre and post-test design to 78 adolescents 13-15 years who met the inclusion criteria at the Bogor Regency Junior High School. Diet quality data was collected using 2x24 hours of food recall. The knowledge, attitude, and health belief model questionnaires that had been collected through questionnaires were then analyzed using SPSS version 25.0 using the Wilcoxon and paired t-test. There was no change in the quality diet in the health belief model and control groups with p-value>0.05. However, there was an increase in knowledge and attitude in both groups with a p-value<0.05. Only three constructs that improved were vulnerability, seriousness and self-efficacy with p-value < 0.05. Perceived benefits, barriers and action cues did not increase with p-value > 0.05. Health belief model nutrition education methods can improve knowledge and attitude, but not give a change in behavior. Health belief model nutrition education method can improve knowledge and attitudes, but not changes in eating behavior. Further health belief model-based nutrition education programs are needed to increase motivation and willingness to act.

Abstract

One of the global health issues is diabetes mellitus, characterized by elevated blood glucose levels. The absorption of glucose in the body occurs through the digestion of carbohydrates by the enzyme α-glucosidase, which is responsible for hydrolyzing carbohydrates into sugar. Ashitaba (Angelica keiskei) is a  herbal plant from Japan and has long been utilized in traditional medicine for its various health benefits and preventive properties against multiple diseases. This plant has also been cultivated in Indonesia, including Trawas Mojokerto, East Java. This study aims to develop ashitaba crackers and evaluate their potential α-glucosidase inhibitory activity to develop safe and effective natural products to assist in managing diabetes more efficiently. This research was conducted from July to September 2022. Two formulations of fresh ashitaba leaves were used (12% CAST 1 and 18% CAST 2 of 100 g of flour). Based on the results of this research, chemical composition tests showed that the carbohydrate and dietary fiber content in CAST 1 were higher than those in CAST 2. Protein, lipid, water, and ash content in CAST 2 had higher values than in CAST 1. Flavonoid content and inhibitory activity test results of ashitaba crackers showed significant differences between the two formulation groups regarding flavonoid content and percentage inhibition against the α-glucosidase enzyme. Both flavonoid content and inhibitory activity in CAST 2 were higher than in CAST 1. Ashitaba crackers with the best formulation in this study, based on flavonoid levels and their ability to inhibit α-glucosidase enzyme, were identified as CAST 2.

Abstract

Status gizi kurang dan lebih merupakan salah satu masalah gizi yang banyak dihadapi pada usia anak sekolah dasar. Status gizi dapat dipengaruhi oleh berbagai faktor seperti pengetahuan gizi, aktivitas fisik, kebugaran, dan kebiasaan makan. Tujuan penelitian ini adalah menganalisis hubungan kebiasaan konsumsi sayur dan buah serta aktivitas fisik dengan status gizi dan kebugaran jasmani siswa di SDN 1 Cijeungjing. Penelitian ini dilaksanakan pada bulan Oktober-November 2022 pada 58 subjek dengan desain cross sectional study. Pengambilan data dilakukan melalui pengukuran tinggi badan dan berat badan, wawancara, Harvard step test, dan pengisian kuesioner yang meliputi karakteristik subjek dan keluarga, PAQ-C, dan FFQ. Sebagian besar subjek berjenis kelamin laki-laki (72,4%) dengan status gizi normal (79,3%). Siswa SDN 1 Cijeungjing memiliki kebiasaan mengonsumsi sayur dan buah sebanyak 1-2 kali per minggu. Mayoritas subjek memiliki aktivitas fisik yang tergolong rendah dan kebugaran jasmani yang baik sekali. Hasil analisis menunjukkan terdapat hubungan yang signifikan (p<0,05) antara kebiasaan konsumsi sayur dan buah dengan aktivitas fisik. Terdapat hubungan yang signifikan (p<0,05) antara aktivitas fisik dengan kebugaran jasmani. Namun, tidak terdapat hubungan yang signifikan antara kebiasaan konsumsi sayur dan buah dengan status gizi dan kebugaran jasmani. Tidak terdapat hubungan yang signifikan antara aktivitas fisik dengan status gizi.

Abstract

Penelitian ini bertujuan untuk mengetahui dan menganalisis hubungan antara stres dan emotional eating dengan kualitas diet dan asupan serta kecukupan zat gizi mahasiswa gizi tingkat akhir di Institut Pertanian Bogor. Desain penelitian ini merupakan studi cross sectional dengan jumlah subjek sebanyak 50 mahasiswa Gizi Masyarakat IPB tingkat akhir. Penelitian dilakukan secara online dari bulan Mei hingga Juni 2023. Tingkat stres diukur menggunakan instrumen kuesioner DASS 42 dan emotional eating diukur menggunakan AEBQ. Sebagian besar subjek mengalami stres ringan (34%) dan emotional undereating (EUE) (60%). Sebagian besar subjek tergolong dalam kategori HEI need improvement (70%). Hasil analisis menunjukkan bahwa stres tidak memiliki hubungan dengan emotional overeating (EOE) dan emotional undereating (EUE) (p>0,05). EOE dan EUE tidak memiliki hubungan dengan kualitas diet (p>0,05). Tingkat stres memiliki hubungan negatif dengan kualitas diet (p=0,000;r=-0,479). Tingkat stres memiliki hubungan positif dengan kecukupan energi (p=0,015;r=0,344), protein (p=0,004;r=0,396), dan lemak (p=0,005;r=0,388). EOE memiliki hubungan positif dengan asupan energi (p=0,020;r=0,329), protein (p=0,049;r=0,280), lemak (p=0,028;r=0,312), dan karbohidrat (p=0,019;r=0,330). Selain itu, diketahui EUE memiliki hubungan negatif dengan asupan protein (p=0,043;r=-0,288) dan asupan karbohidrat (p=0,028;r=-0,311).

Abstract

Penelitian ini bertujuan mengembangkan produk biskuit dengan penambahan biji rami sebagai finger food bagi baduta dengan defisiensi Omega-3 Penelitian berupa experimental study dengan rancangan acak lengkap terdiri dari tiga formula dengan perbandingan shortening: biji rami giling F0 (100%:0%), F1 (93%:7%), serta F2 (87%:13%). Prosedur penelitian uji organoleptik, analisis proksimat, serta analisis profil asam lemak dilakukan untuk menentukan formula terpilih dengan hasil F1. Biskuit formula terpilih mengandung kadar air 3,17%, kadar abu 1,36%, lemak 31,17%, protein 5,13%, karbohidrat 59,14%, omega-3 0,64 g/100 g biskuit, serta omega-6 23,64 g/100 g biskuit. Satu takaran saji biskuit setara 2 keping (37,6 g) memberikan kontribusi energi 15% (203 kkal) terhadap Angka Kecukupan Energi (AKE) anak usia 1-3 tahun.

Abstract

Background: Nutritional problems in infants and children are the focus of the scaling up nutrition movement or the acceleration of nutrition improvement. Appropriate feeding practices in Indonesia are still low because children under two have not met the minimum food diversity and also minimum frequency of eating. Dietary diversity has also been shown to be strongly related to household socioeconomic status. Objectives: The purpose of this research was to analyze the socioeconomic factors associated with the diet quality of children aged 12-23 months. Methods: The research design was cross-sectional using secondary data analysis from the 2014 SKMI. The data used were subject characteristics, family socio-economic characteristics, and diet quality as measured by the dietary diversity consumption. The relationship factor analysis used is binary logistic regression. Results: Family socio-economic factors such as family size  more than equal to 5 person (p=0,03: OR=1,4), high father's education (p=0.046; OR=1,1) low economic status (p=0.001; OR=2,2); medium economic status (p=0,005; OR=1,7) were related to the low diet quality of children aged 12-23 months, Improving family welfare in terms of education and economy needs to be done to improve the quality of food consumption for children under two years old.

Abstract

The objective of this study were to analyze the effect of nutrition education media based on android and website to behavior and their relationships with balanced nutrition in primary school students. The design of this study was quasy experimental. A pre-post intervention study was conducted in Tuban City, East Java-Indonesia and involved 144 grades 5 primary school students. The intervention was conducted at the school by applying nutrition education media such as poster, powerpoint presentation, android, and website. A self-administered measurement with a validated questionnaire was applied to assess balanced nutrition behavior before and after the program. The result showed that a total of 72.9% school children had good knowledge, 78.5% positive attitude, 54.9% good practices on balanced nutrition before intervention. After the education program, the good knowledge, the positive attitude, and the good practices on balanced nutrition increased by 11.8%, 5.5%, and 15.9%, respectively. The media of nutrition education based on android was better than the others. In conclusion, the balanced nutrition behavior could be improved by the nutrition education program.

Abstract

This study aims to explore the relationship between nutritional adequacy and height-for-age z-scores (HAZ) in toddlers in Kendari City's coastal region. This cross-sectional analysis involved 96 children aged 48‒59 months. Height measurements was converted to HAZ, while a 24-hour dietary recall was conducted to assess nutritional intake. Data were analyzed using Pearson product moment test and multiple linear regressions. The study revealed a significant HAZ correlation with calcium, iron, and copper adequacy levels (p<0.05). Notably, in Kendari City's coastal area, stunting is found in toddlers aged 48‒59 months due to nutritional inadequacy.
