Abstract

The traditional village festival demonstrates the essence of unity values, catalyzing social cohesion within the community. Various cultural manifestations, such as customary deliberations, traditional ceremonies, and local arts performances, signify the underlying social system. This study aims to elucidate the social cohesion among the Kondowa-Dongkala community through the village festival in Buton. Employing a qualitative research method, data were collected through in-depth interviews with key informants, including Parabela Anamohane and local community members actively involved in the festival proceedings. The findings reveal that the village festival is an annual event, preceded by a village deliberation to establish customary laws governing community behavior on land and sea. Conservation efforts are evident in prohibiting marine resource extraction within the kaombo area for one year, followed by communal utilization during the festival. Each night is marked by local art performances featuring traditional drumming and dances by various age groups, underscoring the village festival's cultural richness and social cohesion.

Abstract

Lactose intolerance is a condition where a person experiences digestive disorders because the stomach cannot digest milk sugar (lactose). The high level of public awareness of lactose intolerance makes it necessary to develop healthy milk/vegetable extracts by utilizing high protein plant foodstuffs. Therefore, the combination of sweet corn extract and peanuts is expected to increase the protein content and acceptance of these products by consumers. The purpose of this study was to analyze the effect of the comparison of sweet corn and peanuts on the organoleptic characteristics of the resulting peanut sweet corn juice drink, to determine the most preferred formulation of sweet corn and peanuts based on the level of preference of the panelists for the product by organoleptic testing, and to analyze the chemical properties of the resulting peanut sweet corn juice drink product. The method in this study was to formulate sweet corn extract products combined to peanuts with following formulations namely 30% : 0%, 20% : 10%, 15% : 15%, 10% : 20% and 0% : 30% with three repetitions and analyzed using a Completely Randomized Design (CRD). The parameters of the analysis carried out were organoleptic tests, tests for protein content, fat content, carbohydrate content, total dissolved solids, and testing the degree of acidity (pH). The results of this study indicate that based on the average organoleptic test value, the most preferred obtained was formulation A2 with a ratio of 20% sweet corn extract : 10% peanuts with a value of 3.21 (rather like). The results of the analysis of the chemical properties of the peanut sweet corn juice drink product obtained results with an average value of 1.57% protein content, 1.92% fat content, 2.58% carbohydrate content, pH 6.71 and 6oBrix total dissolved solids. The conclusion obtained in this study was that the best treatment of peanut sweet corn juice drink obtained in this study is in accordance with several parameters in the SNI for vegetable based beverage/milk products. Abstract

According to Government Regulation Number 17 of 2018 concerning Sub-Districts, Article 10 letter (c) states that the Sub-District Head (Camat) has the authority to coordinate the implementation of public order and security within their jurisdiction. In practice, this coordination includes responsibilities related to regional stability, continuity of inter-agency processes, systematic regulation, unity of action, and achieving common goals. As an extension of the regional government, the Camat plays a strategic role in aligning various community elements, village officials, as well as vertical institutions such as the Indonesian National Armed Forces (TNI) and the National Police (Polri) to address issues related to public order. This study employed a descriptive qualitative method, with data collected through interviews, observation, and documentation involving informants such as the Camat, Head of Public Order (Kasi Trantibum), village heads (Lurah), community leaders, and security personnel. The results showed that the Camat of Pinggir Sub-District has regularly coordinated with related institutions, although several challenges remain. These include a lack of reports from neighborhood units (RT/RW), low community involvement, and weak supervision of social issues such as covert prostitution and alcohol distribution. Additionally, the lack of structured directives to field officers has hindered coordination effectiveness. Therefore, strengthening cross-sectoral communication and actively involving all stakeholders are necessary.

Abstract

Abstract

This study aimed to develop a freeze-dried lactic acid bacteria (LAB) starter for coffee fermentation by optimizing incubation time and coating formulation. The research was conducted in two stages: determining the optimal incubation time for the liquid coffee starter and formulating the dry starter coating material. The liquid starter was prepared using coffee skin powder, glucose, peptone, and minerals, and inoculated with Lactobacillus plantarum, Weissella sp., and Leuconostoc mesenteroides. Incubation was performed at room temperature for 24, 28, 32, and 36 h. The optimal incubation time was found to be 32 h, resulting in a LAB viability of 4.2x1013 CFU/mL and a total acid content of 1.76%. The dry starter was prepared by encapsulating the liquid starter with various coating materials (gelatin and gum arabic) at different concentrations (5, 6, and 7%) using the freeze-drying method. The formulation with 5% gum arabic best maintained cell viability at 46.77% over a 4-week storage period. Coffee fermentation using the dry starter showed improved organoleptic qualities, with the best results obtained after 48 h of fermentation. This study presents a sustainable approach to producing high-quality fermented coffee, such as Luwak coffee, without the use of animals.
