Abstract

Program Sekolah KUMKM-Tangguh adalah program pendampingan dan pelatihan yang merupakan salah satu layanan yang ditawarkan oleh PLUT-KUMKM Kota Batu. Namun, manfaat program ini belum dapat dirasakan oleh KUMKM secara luas. Upaya digitalisasi dengan memanfaatkan platform digital diharapkan mampu memperluas jangkauan Sekolah KUMKM-Tangguh. Tim MF Universtias Brawijaya berperan proaktif dalam inisiasi dan pendampingan kegiatan Digitalisasi Sekolah KUMKM Tangguh. Tujuan dari kegiatan ini adalah untuk melakukan analisis keperluan kegiatan Digitalisasi Sekolah KUMKM-Tangguh Kota Batu, melakukan pengadaan sarana pengembangan podcast dan pendampingan pengembangan konten podcast. Kegiatan dilaksanakan selama 6 bulan, yang terdiri dari 4 tahap, yaitu survei KUMKM, pengadaan alat podcast, pelaksanaan pembuatan podcast dan evaluasi kegiatan. Berdasarkan hasil survei KUMKM, tim MF menyusun rencana kegiatan dan konten digital; melaksanakan pengadaan peralatan podcast dan melakukan pendampingan pengembangan konten podcast. Evaluasi kegiatan dilaksanakan di akhir kegiatan berdasarkan jumlah viewer dan like pada video podcast yang diunggah pada YouTube.

Abstract

One of the producers of apple dodol in Batu is SMESBrosem, which applies a supply chain system consisting of the supplier, producer, and retailer. This application carries potential risks, such as apple supply delay, production delay, and competitors. Therefore, there is a need for alternative strategies in order to reduce these risks. This study aims to organize a strategy that can be applied in SMESBrosem using Analytical Hierarchy Approach (AHP). The proposed strategies that potentially reduce the risks include making a production plan, conducting a workshop for employees, improving information access and collaboration.Keywords: Apple dodol, Strategy, Supply Chain

Abstract

The purpose of this research is to determine the grouping of SMEs apple dodol in Batu and to determine an appropriate development strategy for each cluster. The method of grouping using K-means clustering which is integrated with the Analytical Hierarchy Process (AHP) method to determine the priority of the development strategy for each cluster. Variables used in grouping include the production capacity per month (X1), long of operation (X2), investment value (X3), the average sales revenue per month (X4), the amount of assets of SMEs (X5) and number of labor (X6). Factors to determine the development strategies are industry cluster, government also related and supporting industries. The number of sample for SMEs apple dodol consisted of five units. The result showed formed 2 clusters of SMEs apple dodol are created by k-means clustering method. The result of AHP method indicates the priority of development strategy for SMEs dodol apples, in cluster 1 is improving the quality and standardization of product and cluster 2 is increasing marketing access.

Abstract

The study focuses on SMEs X, a producer of various processed fruit products, primarily apple chips. The business experienced a 90% decline in revenue due to an 8-month market closure during the Covid-19 pandemic, with ongoing challenges such as reduced revenue and production capacity post-pandemic. This study aims to identify business models in SMEs using the Business Model Canvas (BMC) approach, develop alternative business strategies through SOAR analysis of BMC elements, prioritize these strategies using the Analytical Hierarchy Process (AHP) method, and enhance their BMC. Four expert respondents participated in the study. The research results highlight the current business conditions across the 9 BMC elements. The SOAR matrix produced eight alternative strategies, prioritized using the AHP method, including optimal production planning and scheduling (OR2), strengthening apple chips brand awareness (OA2), disseminating freeze-drying production technology innovations (OA1), developing business unit production (SA2), expanding the marketplace (SA1), maximizing the use of social media (OR1), product quality standardization (SR1), and forming partnerships with other fruit chip SMEs to innovate freeze-dried products (SR2). The BMC was further developed by integrating SR2 and OA1 into the key partnerships element, SA2 into the key resources element, OA2, OR1, and OA2 into the key activities element, SR1 into the value proposition element, and SA1 into the channel element.

Abstract

SMEs of peanut snack “Enting geti” in Blitar Regency is divided into several clusters based on performance and product quality. The center of Enting geti SMEs is in Rejowinangun village, Blitar Regency, East Java. The main problem in SMEs is the diversity of production process between SMEs and unstandardized formulas such as inconsistencies in quality. This study aimed at determining the best formula of Enting geti based on the Indonesian National Standard (SNI) and determining the quality improvement strategy of production process. This research used 2 methods of the consumer acceptance test (organoleptic test) analyzed with the Effectiveness Index and laboratory test with Multiple Attribute. The improved production process was on caramelization process and reduction of wijen composition. The treatments used were the cooking temperature of 75±2ºC and 85±2ºC. The results based on acceptance test and laboratory test showed that the second treatment (temperature 85±2ºC with 10% wijen reduction) was the best treatment. The priority of determining the strategy with Fuzzy Analytical Hierarchy Process found that the best strategy in the production process variable with an alternative strategy is to establish a partnership that can be done by building cooperation with several fixed suppliers and by improving the flow of information.

Abstract

Increasing the productivity of potato chip in Micro, Small, and Medium Enterprises (MSMEs) through the institutional model is significantly strengthening the economy of Batu City, especially as a tourist destination city. The institutional model ensures the smooth operation of supply chain activities due to the interactions between the actors, facilitating coordination, information sharing, and integration from upstream to downstream. This model can be used to improve the performance. To improve the performance, supply chain of potato chip MSMEs cluster faces several challenges including a limited supply of raw materials and finished products, price fluctuations, non-optimal drying processes, and inconsistent quality. Therefore, the study aimed to conduct a holistic evaluation and improvement method on the interconnected constraints to enhance supply chain’s performance. The integration of Interpretive Structural Modelling (ISM) and Analytic Network Process (ANP) methods was applied to observe interactions between key elements in development of supply chain institutional potentials and to prioritize development strategies. The results showed that the key elements that influenced development of the organizations related to labor capability, diversity of raw material quality, the potential for collaboration relationships, minimizing the risk of drying during the rainy season, and participation of various actors. Based on the largest WANP weight value (0.230), the primary strategy for supply chain development in the SME cluster was the implementation of digital-based marketing. Furthermore, improving the institutional performance model of potato chip MSMEs cluster supply chain included the participation of internal and external quality assurance organizations in the product quality audit process. Ensuring product quality consistency through these audits would support digital-based marketing and help mitigate issues related to product quality and supply consistency.

Abstract

New product development is highly complex because it integrates technical challenges from both internal and external sources. The potential for uncertainty or failure exists at every step of the product development process. One of the important tools to minimize risks in product development is risk management in new product development. This paper aims to review some research literature on the concept, process, and category of risk management in new agro-product development. This research uses a literature review analysis to analyze the concept and process of risk management in new product development. The articles were selected from Emerald, Elsevier, Springer, MDPI, and Taylor & Francis databases. The findings of this study demonstrate the critical role of risk management in minimizing risks associated with new product development through the implementation of diverse strategies. Risk management involves identifying, analyzing, evaluating, and treating risks. A variety of internal and external factors influence risk in product development. Internal factors are design, production, financial, management (organizational), marketing, market, technology, and supplier risks. External factors include suppliers, customers, and retailers outside the company. Many businesses, including small and medium-sized enterprises (SMEs), have adopted risk management to prevent product failures and financial losses. This paper provides a research framework for applying risk management to new agroindustrial product development.

Abstract

Batu City is one of the potential centers of agroindustry SMEs based on local wisdom to become superior regional products contributing to the economy and community empowerment. Potato chips are one of Batu City's regional superior products that have been clustered into 2 Micro and Small scales based on indicators of turnover, production capacity, number of workers, length of operation, and halal certification. The contribution of the potato chip SME cluster is essential in evaluating the structural performance of supply chain institutions to increase the efficiency of integration of upstream and downstream actors. The research aims to develop a structural model of supply chain institutions in the Potato Chips SME Cluster. The research method uses Interpretive Structural Modeling (ISM), which is relevant to the complexity of the supply chain. The object of research involved three actors of the potato chip SME cluster, including raw material suppliers, micro and small cluster SMEs, and distributors. The results showed that the key structural elements in micro-cluster SMEs include low labor skills; diversity in raw material quality; implementation of labor training and development activities; labor training and development on GHP, GMP, and production SOPs; improvement of labor skills and SME productivity; and collaborative relationships between supply chain actors. Structural key elements in small cluster SMEs include low labor capability; implementation of labor training and development activities; provision of supply chain information systems; labor training and development on GHP, GMP, and production SOPs; improvement of product quality standards and periodic evaluation of the 3 supply chain flows; improvement of labor skills and SME productivity; and sustainable collaborative relationships between supply chain actors. Both SME clusters involved 3 supply chain actors as key elements of the involved institutions.

Abstract

Packing tempeh chips in the XYZ business unit is carried out in a sitting position on the floor, body slightly bent, head down, and legs bent. These conditions need to be corrected so as not to cause injuries and musculoskeletal disorders (MSDs). This study aims to determine the risk level of MSDs in tempeh chip packaging workers using the QEC (Quick Exposure Check) and REBA (Rapid Entire Body Assessment) methods. The study was conducted at the XYZ tempeh chips business unit in Malang City. The research subjects were workers in the packaging section. Data collection was carried out in two stages: a survey of musculoskeletal symptoms using the NBM (Nordic Body Map) questionnaire and a questionnaire to assess the level of risk based on the QEC method. The second stage is the evaluation of work posture with the REBA method. The results showed that the complaints of pain felt by workers were in the upper neck, left shoulder, back, and left and right calves. Complaints of severe pain in the right shoulder, waist, and left and right legs. The MSDs risk level based on the QEC method shows that all tasks are at the exposure level of 52.3% – 62.5%, and immediate corrective action is taken. Based on the REBA method, a 7-12 was obtained, indicating that the risk of MSDs ranged from moderate to high. Corrective action needs to be taken immediately for high risk. Corrective action is needed now for very high risk. To reduce the risk of MSDs are improving work posture by improving the layout of packaging facilities, adding work facilities, and setting working time standards to set appropriate minimum packaging targets.

Abstract

Limbah cair dari Industri batik dengan kandungan berbagai zat kimia, seperti pewarna dan bahan pencuci dapat mencemari lingkungan jika tidak diolah dengan baik. Oleh karena itu, sistem pengolahan air limbah yang efektif, ramah lingkungan, dan sesuai dengan kebutuhan usaha kecil menengah (UKM) diperlukan. Kegiatan pengabdian ini bertujuan untuk merancang dan menguji keefektifan Mini Instalasi Pengolahan Air Limbah (Mini IPAL) dengan model biofilter berbasis Teknologi Tepat Guna (TTG) dalam mengolah limbah cair dari proses pembuatan batik agar dapat digunakan kembali atau dibuang tanpa membahayakan lingkungan. Metode yang digunakan meliputi tahap persiapan, tahap pelaksanaan dan tahap evaluasi. Hasil kegiatan berupa Mini IPAL dengan sistem biofilter yang terdiri dari beberapa komponen, seperti bak pencucian, tangki pengendapan, tangki penyaringan yang terdiri dari beberapa lapisan filter (batu besar, pasir gombong kasar, arang, pasir halus, ijuk, dan batu seloidin), serta instalasi perpipaan untuk aliran air limbah. Hasil uji coba menunjukkan bahwa Mini IPAL model biofilter mampu mengurangi kadar polutan secara signifikan, termasuk zat warna dan partikel tersuspensi, dengan efisiensi yang tinggi. Sistem ini juga terbukti ekonomis, mudah dalam perawatan, dan hemat ruang, menjadikannya cocok untuk diterapkan pada UKM di daerah dengan keterbatasan lahan dan sumber daya.
