Abstract

This research explores the optimization of mango yogurt production, leveraging mango as the primary fermentation ingredient and Lacticaseibacillus paracasei strain Shirota (LcS) as the probiotic inoculum. Traditional yogurt, typically derived from animal milk, faces competition from plant-based alternatives. The research objective is to investigate the impact of inoculum ratios and sucrose concentrations on LcS density and sensory attributes, with a focus on the Substrate to Inoculum Ratio (S/I) as a critical parameter influencing microbial metabolism and population dynamics. Various inoculum ratios (1:1, 1:2, 1:4, 1:8 v/v) and sucrose concentrations (0%, 2.5%, 5%, 7.5%) were applied in mango yogurt production. Results from ANOVA analysis indicated significant differences in LcS density among inoculum ratios (F3,16 = 37.01, P = 0.000) and sucrose concentrations (F3,16 = 19.07, P = 0.000). The 1:2 inoculum ratio and 7.5% sucrose concentration emerged as optimal, as evidenced by stable pH conditions and lactic acid profiles within recommended standards. Sensory analysis, employing a 5-point hedonic scale for color, odor, taste, and texture evaluation, revealed moderate acceptance. In conclusion, this study introduces an innovative approach to mango yogurt production, highlighting the potential of specific inoculum ratios and sucrose concentrations for optimal results. The findings contribute to the broader landscape of plant-based yogurt alternatives, underscoring the need for ongoing refinement to meet commercial standards and ensure consumer satisfaction.

Abstract

Background: Cholesterol is the most well-known sterol. The body produces two types of cholesterol, namely good cholesterol or High-Density Lipoprotein (HDL) and bad cholesterol or Low-density Lipoprotein. Both types of cholesterol are needed by the body, but hypercholesterolemia occurs when there is too much cholesterol in the blood. Many people consume food without considering what compounds are in the food, one of which is cholesterol levels. Hypercholesterolemia is a risk factor for death at a young age and plays an important role in the occurrence of atherosclerosis, which is a degenerative process and a risk factor for cardiovascular disease. Objective: To describe, determine the levels before and after, and the effect of dry cupping therapy on reducing cholesterol levels in hypercholesterolemia patients. Method: This case study design is presented descriptively with the aim of describing how the application of dry cupping therapy reduced cholesterol levels in three patients who experienced hypercholesterolemia. Results: The dry cupping therapy intervention which was carried out for seven days interspersed with three days intervals resulted in dry cupping therapy being able to reduce cholesterol levels with an average result before the intervention of 255 mg/dL and after three interventions became 199 mg/dL. On average, the three respondents experienced a decrease in cholesterol levels, namely 56 mg/dL. Conclusion: The application of dry cupping therapy given for seven days interspersed with intervals of three days can have an effect on reducing cholesterol levels in hypercholesterolemia.

Abstract

Abstract: This study focuses on analyzing a hadith narrated by Imam Ahmad in Musnad Ahmad 22391, which emphasizes unity, integrity, and the rejection of discrimination based on lineage or descent. The topic of peace and unity is highly relevant in addressing the challenges of modern multicultural societies, where diversity in ethnicity, language, and religion often leads to conflicts. Previous studies have explored the concepts of peace and unity but lack a specific focus on analyzing hadith texts as foundational guidance. This research addresses that gap by examining the quality of sanad and matan of the hadith and contextualizing its message for contemporary applications. Using a qualitative approach with a content analysis method, the study analyzes the hadith’s authenticity and meaning, supplemented by references to Islamic scholarly texts. Data were collected through library research and interpreted systematically to understand its implications for fostering societal harmony. Findings reveal that the hadith underscores piety as the true measure of nobility, promoting mutual respect and coexistence while discouraging divisions based on heritage or status. These findings reinforce the role of Islamic teachings in fostering peace and security in multicultural settings. This study contributes to the academic discourse by highlighting the relevance of hadith in supporting societal harmony amidst diversity.

Abstract

The mangrove ecosystem, found along tropical and subtropical coasts, adapts to extreme conditions like rapid tidal changes, high salinity, anthropogenic influences, and anoxic environments. Mangrove sediments host diverse organisms, particularly invertebrates and bacteria, which significantly influence sediment structure and biochemical processes by enhancing permeability and water flow. Modern molecular approaches, notably Next-Generation Sequencing (NGS), are increasingly used to identify macro and microorganism communities in sediments. NGS, a powerful tool for DNA and RNA sequencing, allows for parallel sequencing of numerous DNA fragments, providing comprehensive insights into genome structure, genetic variants, gene expression, and epigenetic modifications. Its efficiency and cost-effectiveness make NGS vital for both basic biological research and clinical diagnostics. Recent NGS studies on mangrove sediments have focused on bacterial, archaeal, and fungal diversity. The study examines eukaryotic diversity in mangrove sediments at two locations, targeting the Cytochrome Oxidase Subunit I (COI) gene, a universal marker for eukaryotes. Results indicate distinct taxa at each site with minimal overlap, demonstrating eDNA's potential for assessing both macro and microorganism diversity in mangrove sediments. This preliminary study underscores the utility of molecular techniques in biodiversity research and also dynamic ecosystem changes in the mangrove sediment ecosystem. The high influence of the environment around the mangrove ecosystem will affect the quality of the mangrove itself. eDNA here provides a fast method for recording possible changes to be able to carry out better management in the future.

Abstract

The biodiversity of Mangifera spp. not only supports the local economy and preserve food security but also safeguards cultural heritage through their role in ethnoclimatology studies within the Tatangar tradition of the Banjar community in Kalimantan. The Banjar community demonstrates a unique connection with nature by utilizing specific Mangifera species as crucial indicators of seasonal transitions, deeply ingrained in their cultural identity. The aim of this study is to reveal the prevalence of various Mangifera species, including endangered ones, in diverse landscapes, promoting a sustainable agroforestry system and conservation efforts. Qualitative and quantitative research methods were employed to explore and analyze Tatangar knowledge within the Banjar community in Mandiangin Barat Village, particularly its connections to climate and weather. The Banjar community further traditionally classifies Mangifera species, or known as “asam-asaman”, based on morphological traits, aiding in their interpretation of Tatangar signs. These signs, rooted in the flowering time of Mangifera trees, serve as essential climate indicators, guiding agricultural practices and influencing decisions on planting and harvesting. This local knowledge enhances agricultural resilience, enriches their cultural heritage, and underscores the intrinsic relationship between culture, nature, and sustainability in Kalimantan, making it a valuable subject for ethnoclimatological exploration

Abstract

The goal of moral education in Islam is to develop positive traits in humans so that their morality will develop, so that they are always open to doing good and able to distance themselves from all forms of evil. Thus, a person can become a human being who has good morals and is responsible. Meanwhile, according to the concept of Hadratus-Shaykh KH. Hasyim Asy'ari in the book Adabul Alim Wal Muta'alim has provided an educational treatise that talks a lot about the moral education of teachers and students so that in the book we can understand and know in depth about the content of moral education properly. And he also colored education in Indonesia and among Islamic boarding schools. This research is a library research (Library Research) which is included in qualitative research. Data was collected through primary and secondary data sources after which the data was analyzed using a descriptive approach. This study states that in the book Adabul Alim wal Muta'alim, moral education is thoroughly integrated into the learning process. KH. Hasyim Asy'ari emphasized the importance of being calm and gentle for a teacher in interacting with his students. Likewise, students are expected to have morals that sincerely respect their teachers. In the context of learning, morality for students means always prioritizing learning by starting from the most important things to the depth of the discussion. The moral relationship between teacher and student actually reflects mutual respect and trust, which is built on awareness and respect between the two during the learning process. Ethics in interacting between teachers and students is considered as a real form of obedience to Allah and His Messenger. All of this shows that the harmonious relationship between the two parties cannot be separated from the spiritual values that are upheld in Islamic teachings
