Abstract

ABSTRACT This study aimed to determine the organoleptic characteristics and nutritional contents of biscuits made from red rice flour and broiler chicken eggshell flour as a high-calcium snack. This study used a completely randomized design (CRD) consisting of five types of treatment, namely B0 (100% red rice flour: 0% eggshell flour), B1 (95% red rice flour: 5% eggshell flour), B2 (90% red rice flour: 10% eggshell flour), B3 (85% red rice flour: 15% eggshell flour), and B4 (80% red rice flour: 20% eggshell flour). Observation variables consist of organoleptic assessment with testing parameters including color, aroma, texture, and taste. The results indicate that the best treatment for biscuits was the B2 treatment with average preference scores for color, aroma, texture, and taste reaching 3.53 (like), 3.61 (like), 3.56 (like), and 3.62 (likes). The nutritional analysis shows that the B2 sample contained 2.46% water, 0.68% ash, 14.09% protein, 12.59% fat, 70.17% carbohydrate, and 0.25% calcium. The calcium content of red rice biscuits met the SNI 01-2986:1992 and BPOM No. 13- 2016 standards. Keywords: Chicken eggshell flour, brown rice flour, calcium, biscuits. ABSTRAK Penelitian ini bertujuan untuk mengetahui karakteristik organoleptik dan kandungan gizi biskuit berbahan dasar tepung beras merah dan tepung cangkang telur ayam ras sebagai makanan selingan tinggi kalsium. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 5 jenis perlakuan, yaitu B0 (100% tepung beras merah : 0% tepung cangkang telur), B1 (95% tepung beras merah : 5% tepung cangkang telur), B2 (90% tepung beras merah : 10% tepung cangkang telur), B3 (85% tepung beras merah : 15% tepung cangkang telur) , dan B4 (80% tepung beras merah : 20% tepung cangkang telur). Variabel pengamatan terdiri atas penilaian organoleptik dengan parameter pengujian meliputi warna, aroma, tekstur, dan rasa. Hasil yang diperoleh menunjukkan bahwa perlakuan terbaik biskuit yaitu B2 dengan ratarata kesukaan terhadap warna 3,53 (suka), aroma 3,61 (suka), tekstur 3,56 (suka), dan rasa 3,62 (suka). Analisis kandungan gizi pada biskuit perlakuan terbaik yaitu : kadar air 2,46%, kadar abu 0.68%, kadar protein 14,09%, kadar lemak 12,59%, kadar karbohidrat sebesar 70,17% dan kadar kalsium sebesar 0,25% telah memenuhi standar SNI 01-2986:1992. Kadar kalsium biskuit beras merah telah memenuhi standar BPOM No 13 2016. Kata Kunci: Tepung cangkang telur ayam ras, tepung beras merah, kalsium, biskuit.

Abstract

Bacterial contamination in chicken meat is an indicator in determining the quality of food ingredients. Contaminant bacteria cause damage to meat and cause foodborne disease due to their metabolite products. Staphylococcus aureus is a bacterium that causes food poisoning due to its toxin products. Meat contamination by Staphylococcus aureus occurs through the food itself or through the environment where it is processed. This study aims to isolate and identify the presence of Staphylococcus aureus in chicken meat and the production environment. The results of this study indicate that Staphylococcus aureus can be isolated from chicken meat (40%), the floor of the holding cage (26.67%), the place for bleeding (62.22%), the hair removal machine (64.44%) and the table. processing (80%) as a representation of environmental quality assessment indicators. These results illustrate that it is necessary to improve chicken slaughterhouses in traditional markets to increase and guarantee the quality of chicken meat.

Abstract

Foot and mouth disease (FMD) is a disease caused by the FMD virus which has an impact of economic losses for farmers with a high morbidity rate. Knowledge and attitude of farmers towards FMD is very important in efforts to control this disease. The Aim of this study was to describe the knowledge and attitudes of farmers towards foot and mouth disease in cattle in Kendari. This research was conducted from September to December 2022 on 40 cattle farmers in the city of Kendari. Methods of data analysis using descriptive statistics univariate analysis. The results of the farmers' knowledge and attitudes towards foot and mouth disease were 62.83% and 64.25%. The relationship between the variables of gender, age, education level had no significant effect on farmer's knowledge and attitudes (P>0.05). Knowledge and attitude of farmers towards foot and mouth disease in Kendari city is in the sufficient category.

Abstract

This study aims to analyze the development potential of Bali cattle in the Baito District, South Konawe Regency. Respondents in this study were Balinese cattle breeders in Baito District, South Konawe Regency. Determination of respondents in this study was carried out by purposive sampling with a total of 80 respondents so that each village/sub-district was represented by 10 breeders with the criterion of breeders having ≥ 3 Bali cattle. The research variables observed were technical aspects and non-technical aspects. Data analysis used in this study is descriptive analysis, to describe the condition of Bali cattle farms in the Baito District area. The results stated that Baito District of South Konawe Regency has the potential as a Bali cattle development area based on the parameters of the age of productive breeders and the experience of breeders is long enough, semi-intensive maintenance systems and breeding maintenance patterns, normal reproductive activity, types and sources of feed available, and adequate livestock officers, and facilities and infrastructure available.

Abstract

Analysis of the carrying capacity of the region is needed as an appropriate development direction. This study aims to analyze the carrying capacity of the area for the development of Bali cattle in Baito District, South Konawe Regency. The data used in the study are primary. Primary is obtained directly from interviews with Balinese cattle farmers in Baito District. The method used is the census method of all breeders. The data analysis used in this study was livestock density analysis. Based on the results of the study, it was concluded that economic density can still be developed, the density of agricultural businesses is possible to accommodate Balinese cattle to be developed, and the density of the area is still very likely. Baito sub-district is based on a combination of livestock density, which includes distribution and development areas in a combination of farmer-region and development areas in 2 combinations, namely economy-farming and economy-region.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh substitusi serai terhadap nilai organoleptik, fitokimia dan kimia teh serbuk kulit salak dan untuk mengetahui pengaruh substitusi serai terhadap penilaian kimia teh serbuk kulit salak. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 5 perlakuan serai dengan konsentrasi 0%, 10%, 20%, 30%, dan 40%. Metode yang digunakan analisis ragam dengan uji Duncan Multiple Range Test (DMRT) dengan taraf kepercayaan 95% (α=0,05). Hasil penelitian ini menunjukkan bahwa perlakuan kontrol memiliki kadar air sebesar 13,40% dan perlakuan terpilih sebesar 13,59%. Kadar abu pada perlakuan kontrol sebesar 1,53% dan perlakuan terpilih memiliki kadar abu sebesar 1,47%. Untuk fitokimia pada perlakuan kontrol positif mengandung alkaloid, flavonoid, saponin, tanin, namun negative mengandung polifenol. Untuk perlakuan terpilih positif mengandung alkaloid, flavonoid, saponin, tanin, dan polifenol.

Abstract

One of the main problems in kampong chickens breeding is the limited natural hatching by hens, the use of automatic hatching machines can help improve the quality of kampong chicken hatchery output. The community service activities carried out by the Lecturer Team from the UHO Faculty of Animal Husbandry aim to help the kampong chicken breeders in solving the problems faced, one of which is hatching in the kampong chicken breeding business. This activity was carried out at the kampong chicken farm in Kendari City, Southeast Sulawesi, the main programs carried out was training in making automatic hatching machines and assisting in hatching chickens. This activity received high appreciation from kampong chicken breeders in Kendari City and succeeded in increasing their ability in kampong chicken hatchery.

Abstract

This service program aims to increase the knowledge and skills of partner breeders regarding feed formulation techniques using local raw materials and superior local chicken breeding techniques using automatic hatching machines as well as seed production systems intensively and semi-intensively raised. The implementation of this service program uses group and individual counseling methods, which include non-physical and physical activities. Non-physical activities take the form of theoretical counseling using lecture and discussion methods. In contrast, physical activities are carried out using demonstration methods and field visits related to feed formulation techniques using local raw materials and superior local chicken rearing techniques using automatic hatching machines and intensive and semi-intensive seed production systems. The results of the implementation of this service program showed that the technical guidance activities for raising superior local chickens, which were carried out in Alebo Village, Konda District, South Konawe Regency, received a positive and enthusiastic response from the local village government and partner breeders. This technical guidance activity for raising superior local chickens that combined non-physical activities in the form of theoretical counseling with lecture and discussion methods with physical activities in the form of demonstrations and field visits can be a solution to problems experienced by partner breeders. Implementation of this service program is effective in increasing the knowledge and skills of partner breeders regarding feed formulation techniques using local raw materials and superior local chicken raising and breeding techniques using automatic hatching machines as well as seed production systems intensively and semi-intensively raised.

Abstract

Article 4 of Law No. 33 of 2014 states that every product that enters, circulates, and is traded in Indonesia must be certified halal. The obligation for halal certification for products entering, circulating, and being traded in the Indonesian territory will be enforced starting October 17, 2024. Diversification of native chicken products into various products is highly feasible to increase product variants, thereby enhancing their marketability and bringing financial benefits to farmers. The community service activities carried out aim to (1) motivate native chicken farmers to diversify their products, (2) optimize the productivity of native chicken farmers, and (3) socialize and assist in the application for halal certification of food products. The methods used are counseling and Q&A sessions. The results of these activities showed a high level of community enthusiasm, as evidenced by the punctual attendance of community members, with an attendance rate reaching 90%, and their participation in providing tools and materials to support the activities. Based on the evaluation results, it was found that 89% of the participants understood how to process chicken meat into meatballs, shredded chicken, and floss, and 97% of the participants liked the results.

Abstract

Salah satu hambatan dalam peternakan sapi adalah adanya berbagai penyakit yang menyerang berbagai sistem organ. Tujuan dari penelitian ini yaitu untuk merepresentasikan kejadian penyakit pada berbagai sistem pada sapi di Kabupaten Muna Barat. Data penyakit berasal dari 566 rekam medis sapi yang telah ditangani di Pusat Kesehatan Hewan (Puskeswan) kusambi dari tahun 2021 sampai 2022. Data tersebut dikelompokkan berdasarkan gangguan berbagai sistem organ dan dilakukan analisis secara deskriptif. Berdasarkan analisis, kejadian gangguan sistem organ terdapat 5 kategori penyakit yaitu gangguan pencernaan (27,74 %), gangguan integumen (25,27 %), gangguan reproduksi (18,37 %), gangguan mata (5,48 %), dan gangguan pada sistem organ lainnya (3,53 %). Gangguan sistem pencernaan pada sapi merupakan gangguan yang paling banyak terjadi. Kejadian penyakit yang paling sering ditemui adalah helminthiasis, scabiosis, dan corpus luteum persistent (CLP).
