Abstract

Rice is the staple food for the majority of the Indonesian people. Siam unus rice is a local rice in South borneo which has a low glycemic index is 50.1. Food with a low glycemic index, low in carbohydrates and high in fiber can help people with diabetes to control blood glucose levels. The purpose of this study is to analyze different of carbohydrate, crude fiber and the glycemic index in the processed siam unus rice (lemper nasi, arem-arem and pepes nasi) as altternatif snack diabetes mellitus. This research is experimental. Analysis of the carbohydrate content using the gravimetric method, crude fiber using Luft schoorl, while the glycemic index levels made by examining blood glucose levels to 8 healthy respondents. Blood glucose tests performed before feeding trials and for two hours afterward with a span of 30 minutes. The results of this study found no difference in carbohydrate content lemper nasi, arem-arem and pepes nasi (p = 0.040), there are differences in crude fiber lemper nasi, arem-arem and pepes nasi (p = 0.006), and no differences in glycemic index processed siam unus rice (p = 0.958). Glycemic index of lemper nasi and pepes nasi relatively low at 53.40 and 52.87, while arem-arem had moderate glycemic index that is equal to 55.34. Abstract

Rice is the food source of carbohydrates and fiber contain enough . food stuffs with a low carbohydrate content and high fiber content tends to have a low glycemic index . consuming foods with a low glycemic index will lower blood glucose levels. In patients with diabetes mellitus .siam rice varieties of pearls , and sabaunus widely cultivated by the farmers of south kalimantan , other than that consumed by many people South Kalimantan The research objective was to determine the levels of fiber, carbohydrate and analyze differences in the glycemic index of the rice varieties of rice siam (pearl, Unus and Saba) that can be used for people with diabetes mellitus. It is an experimental research to analyze fiber, carbohydrate and glycemic index level. To determine levels of fiber used luftSchoorl method for inspection and carbohydrate levels are used the gravimetric method , while the glycemic index levels made ??by examining blood glucose levels to 8 healthy respondents . The blood glucose is examined before giving the tested food and during two hours afterwards with 30 minutes susceptible time. Results of this study found with mean fiber are 3.12%, 3.24%, and 3.07%, respectively and carbohydrate levels are 10.47%, 12,51% and 13.95%, respectively.Mean glycemic index is gained after analyzing and counting the data, 54.4% for mutiara rice, 50.1% for unus, and 53.4% for saba . Based on statistic test with repeated anova it showed that p>0.05 (0.792). From this research, it can be concluded that glycemic index level of siam rice is included in low category thus, it can be used as can alternative food for diabetic mellitus.

Abstract

Riskesdas 2018 data, the prevalence of heart disease in Indonesia is 1.5%. Congestive Heart Failure (CHF) is the inability of the heart to pump blood to meet the needs of oxygen and nutrients to the body's tissues. The most common symptom of recurrence is shortness of breath. One of the dietary managements of CHF patients is the limitation of sodium and fluid. The study aimed to determine sodium intake, fluid balance and nutritional status in the occurrence of shortness of breath based on Respiration Rate (RR) in Congestive Heart Failure (CHF) patients in Cardiac Hospitalization at H. Moch. Ansari Saleh Banjarmasin. This study was conducted through the an observational analytic with a prospective approach. The samples were 12 people with CHF who were hospitalized in RSUD H. Moch. Ansari Saleh Banjarmasin from April 16 to May 6, 2018. taken based on inclusion and exclusion criteria. The data was collected using a 1x24 hour food recall form, a liquid form and a Respiration Rate form.The collected data was further analyzed by using the Spearman rank correlation test with a 95% confidence level. The study has found that there is a correlation between sodium intake (p = 0.049) and fluid balance (p = 0.01) to the occurrence of shortness of breath based on the RR value of CHF patients and not significant for nutritional status. Based on the finding, therefore, adjusting sodium intake and fluid balance is useful to reduce symptoms of shortness of breath in CHF patients. Abstract

Correctional institutions often have over capacity, South Kalimantan has over capacity reaching 255%. Pelaihari Class IIB State Detention Center is in 2nd place with excess capacity, namely 263.2%. The Pelaihari Detention Center does not yet have a Nutritionist whose job is to oversee the administration of food so that it affects intake and has an impact on the nutritional status of inmates. The aim of the study was to determine the relationship between menu variations, perceptions of portion size and energy intake on the nutritional status of prisoners. The aim of the study was to determine the relationship between menu variations, perceptions of portion size and energy intake on the nutritional status of prisoners. This research is an analytic observational with a cross sectional approach tested statistically using Spearman's rank. The sample is convicts in January - June 2022 with a total of 46 respondents. This research was conducted in April 2023 and located in the Class IIB Pelaihari Detention Center. The research variables are menu variations, perceptions of portion size, and energy intake of prisoners by interviewing questionnaires. The results of the study were that respondents rated menu variations as not varied, namely 45.7%, perceptions of portion sizes were not appropriate 31%, and good energy intake 82.6%. BMI calculation results normal nutritional status 78.3%. There is no relationship between menu variety and energy intake (p=0.060), there is no relationship between perceived portion size and energy intake (p=0.568) and there is a relationship between energy intake and nutritional status (p=0.018). Inmates at the Pelaihari Detention Center are expected to eat the food served at the detention center so that daily intake can be fulfilled optimally and nutritional status remains normal.       ABSTRAK Lembaga pemasyarakatan sering terjadi over kapasitas, Kalimantan Selatan over kapasitas mencapai 255%. Rumah Tahanan Negara Kelas IIB Pelaihari menduduki urutan ke-2 kelebihan kapasitas yaitu 263,2%. Rutan Pelaihari belum memiliki Ahli Gizi yang bertugas mengawasi penyelenggaraan makanan sehingga mempengaruhi asupan dan berdampak pada status gizi narapidana. Tujuan penelitian mengetahui hubungan variasi menu, persepsi besar porsi dengan asupan energi terhadap status gizi narapidana. Penelitian ini merupakan observasional analitik dengan pendekatan Cross Sectional diuji statistik menggunakan rank Spearman. Sampel adalah narapidana pada bulan Januari – Juni 2022 sebanyak 46 responden. Penelitian ini dilaksanakan pada bulan April 2023 dan lokasi di Rutan Kelas IIB Pelaihari. Variabel penelitian yaitu variasi menu, persepsi besar porsi, dan asupan energi narapidana dengan wawancara kuesioner. Responden menilai variasi menu tidak bervariasi yaitu 45,7%, persepsi besar porsi kurang sesuai 31%, dan asupan energi baik 82,6%. Hasil perhitungan IMT status gizi normal 78,3%. Hubungan variasi menu dengan asupan energi  menunjukkan tidak ada hubungan yang signifikan (p=0,060), persepsi besar porsi dengan asupan energi menunjukkan tidak ada hubungan yang signifikan (p=0,568) dan asupan energi dengan status gizi menunjukkan hubungan yang signifikan (p=0,018). Narapidana di Rutan Pelaihari diharapkan menghabiskan makanan yang disajikan dirutan agar asupan harian dapat terpenuhi secara optimal dan status gizi tetap normal.

Abstract

The therapy given to Thalassemia patients with regular transfusions is iron chelation. One of the non-adherence in taking drugs regularly is a lack of understanding of the importance of drugs. Objectives: to determine adherence to taking iron chelation drugs, consumption of protein and iron sources through individual mentoring in thalassemia major pediatric patients in the city of Banjarbaru. Methods: Descriptive observational study with case series design of thalassemia major patients aged 5-18 years, residing in the city of Banjarbaru who received iron chelation therapy. Sampling using total sampling with 6 cases. The method of collecting data was by interviewing using a questionnaire. Data analysis used univariate analysis, descriptively in series and in depth. Results: There were 6 thalassemia patients with 50% of the patients aged 6-9 years, 66.7% of the patients were male, 66.7% of the nutritional status of the patients were normal, 50% of the children had primary education/equivalent, 66.7% of mothers and 50% of the patient's fathers have junior high and high school education/equivalent. Compliance with taking iron chelation drugs in the pretest in the lowlevel category (66.7%) and posttest in the low level category (66.7%). Consumption of protein sources during the pretest in the frequent category (66.7%) and the posttest in the frequent category (66.7%). Abstract

Panti Perlindungan dan Rehabilitasi Sosial Lanjut Usia (PPRSLU) Budi Sejahtera in Banjarbaru and Martapura is one of the implementation units of the South Kalimantan Provincial Social Service which in its activities provides social services to the elderly. These social institutions are located in two areas with the same management, namely in Martapura and in Landasan Ulin Banjarbaru. There are 70 elderly people in Martapura and 140 elderly people in Landasan Ulin Banjarbaru with 4 managers. Disease data from the clinic shows that hypertension always occupies the top 3 most common diseases every month. This community service activity by providing assistance and monitoring and evaluating the results of activities to make fruit and vegetable juices by nutritionists as well as nutrition education, and measuring blood pressure by the Banjarmasin Polytechnic team in Banjarbaru.The results of the juice making assistance activities and juice giving activities can be carried out and can monitor directly or indirectly the independent activities of giving fruit and vegetable juices. The results of this activity received a positive response to be continued as a program from the orphanage. Suggestions for the sustainability of the program to be continued continuously need to be planned for the addition of existing jurumasak personnel, so that nutritionists can consistently carry out the full duties and functions of nutritionists, especially in implementing the program of providing fruit and vegetable juices to the elderly. Abstract

Elderly is an age group that is very vulnerable to suffer from hypertension. In addition to medication, blood pressure can be controlled by managing diet and giving fruits and vegetables. The Community Service Team carried out dissemination of food standards, processing of fruit and vegetable variant juices and education for the elderly with hypertension at the Tresna Werdha Budi Sejahtera Social Home Banjarbaru. The purpose of the activity is to provide input to nursing home managers regarding food standards, training and demonstrations of making fruit and vegetable juice variants as well as providing knowledge about eating arrangements for controlling blood pressure in the elderly. Method: Phase I: Dissemination to the management and health workers regarding food standards for the elderly with hypertension. Phase II: Conducting demonstrations of making fruit and vegetable variant juices and training nutritionists and health workers. Phase III: educating the elderly about eating arrangements and measuring blood pressure. The results of the activity: I. The results of the dissemination of suggestions for improving food standards for the elderly in order to control the blood pressure of the elderly at the Tresna Werdha Home., II The results of the juice making demonstration and training: the health workers were very enthusiastic, starting from the explanation from the preparation process to the making process. The results of education and blood pressure examinations found high grade 1 and 2 hypertension conditions. It is not possible to do pre and post-tests to explore the level of knowledge in the elderly. Asking questions directly from what is explained, all the elderly can answer. The preparation of food standards for the elderly with the addition of a composition of vegetables and fruit, the proposal to enter a joint juice drinking program with the elderly, providing continuous mentoring and motivation by nutritionists, are opportunities for the implementation of the MOU/cooperation agreement with the Social Institution.

Abstract

Asting, a condition characterized by low body weight in toddlers, has a prevalence of 28.94% in Martapura Timur District. This study aimed to explore the relationship between income, food availability, and consumption patterns as factors contributing to wasting among toddlers aged 12-59 months. Using a Cross-Sectional design, data were collected from 45 purposively sampled toddlers through questionnaires, food availability forms, and food frequency forms. Spearman Rank correlation (α=0.05) was employed for data analysis. Findings revealed that most mothers were under 20 or over 35 years old, with junior high school education and predominantly unemployed. Male toddlers were slightly more prevalent, with 82.2% classified as wasting and 17.8% in severe wasting. Low family income (below the minimum wage) was common (71.1%), and food availability ranged from insufficient to barely sufficient. Consumption patterns were largely suboptimal (64.4%), with staple food intake (<150 g/day) limited to rice and corn, animal protein (50 g/day) from eggs only, plant protein (<40 g/day) primarily from tofu, and minimum vegetable consumption (30 g/week of pumpkin, 1-3 times weekly). Statistical analysis indicated significant relationships between family income (p=0.048, r=0.296), food availability (p=0.048, r=0.296), and consumption patterns (ρ=0.002, r=0.455) with wasting. The strongest relationship was found in food availability. Efforts are being made to increase awareness through health centers, encouraging mothers to utilize home yards for food production, enhancing food availability, and improving children's diets. Addressing these factors can help reduce the prevalence of wasting and promote better nutrition in toddlers.

Abstract

Pendahuluan: Stunting yaitu kondisi dimana balita memiliki panjang atau tinggi badan yang kurang jika dibandingkan dengan umur. Kondisi ini diukur dengan panjang atau tinggi badan yang lebih dari minus dua standar deviasi median standar pertumbuhan anak dari WHO. Hasil pengumpula data dasar (baseline data) mahasiswa Jurusan Gizi Poltekkes Kemenkes Banjarmasin di Desa Teluk Selong adalah status gizi TB/U di desa Teluk selong pada tahun 2021 diketahui bahwa balita dengan Tinggi 1 orang (2,5%), Normal 29 orang (72,5%), Pendek 4 orang (10%), dan 6 orang Sangat pendek (15%).Sedangkan data terakhir yang didapat di Desa Teluk Selong jumlah balita stunting pada Oktober 2024 adalah 25 orang. Tujuan: Tujuan kegiatan Pengabmas ini adalah agar ibu balita yang mempunyai anak balita stunting bertambah pengetahuan tentang gizi stunting serta bisa membuat makanan untuk anak stunting dengan berbahan makanan lokal. Metode: Metode kegiatan pengabdian masyarakat dalam bentuk Edukasi dan Pelatihan Pada Ibu Balita yang mempunyai anak Balita stunting tentang  gizi stunting dan pengolahan PMT berbahan Pangan Lokal di Desa Teluk Selong Wilayah Kerja Puskesmas Martapura Barat Kabupaten Banjar. Pelatihan Pembuatan Makanan untuk Anak Stunting pada Kelompok Ibu Balita Stunting di Desa Telok Selung Kecamatan Martapura Barat Kabupaten Banjar yang diikuti oleh ibu balita yang mempunyai anak stunting berjumlah 15 orang. Kegiatan dilaksanakan pada tanggal 21 Oktober 2024 di Aula Desa Telok Selong Kecamatan Martapura Barat Kabupaten Banjar. Kegiatan ini dilakukan oleh Dosen Jurusan Gizi Poltekkes Kemenkes Banjarmasin dan mahasiswa serta kader dan dibantu aparat Desa Teluk Selong Kabupaten Banjar. Hasil: Hasil kegiatan adanya peningkatan pengetahuan ibu balita sebanyak 30 % dan antusias mengikuti kegiatan serta banyaknya pertanyaan yang diajukan menunjukan ketertarikan kegiatan ini. Luaran kegiatan pegabmas ini adalah diterbitkan publikasi jurnal pengabdian masyarakat dan video kegiatan di youtube serta inormasi kegiatan di koran.
