The average annual production cost was IDR 127,868,087, utilizing 6,645 kg of raw materials to produce 33,225 packs per year, with a sales volume of 33,059 packs. The price hygiene tempeh is IDR 6,000 per pack, the annual revenue was IDR 198,354,000, yielding a profit of IDR 70,485,913. Financial feasibility analysis indicated an NPV of IDR 23,367,681, an IRR of 16.50%, a PI of 1.10, and a payback period of 4 years, 4 months, and 21 days. Satisfaction and loyalty levels of consumers have been analyzed by the Customer Satisfaction Index (CSI), Importance Performance Analysis (IPA), and customer loyalty pyramid methods. The research results showed that the CSI value was 83.97%, indicating that consumers are very satisfied with all the marketing mix 9P attributes in Filosofi Kopi. Based on IPA analysis using the cartesius diagram, performance and importance attributes in each quadrant should be maintained. The customer loyalty pyramid showed that espresso–based coffee consumers in Filosofi Kopi were in the “committed buyer” category with the highest percentage values of 80.71%. Consumer Satisfaction variable (Y) has dominant influence to Consumer Loyalty (Z). Abstract

This study aims to optimize the use of cashew apple extract (CAE) as a substitute for tomato sauce in marinades and evaluate its effects on the chemical and sensory qualities of chicken steak. Four different marinade formulations containing varying concentrations of CAE (0, 5, 10, and 15%) were applied to chicken steak samples. Chemical analyses measured protein, fat content, and polycyclic aromatic hydrocarbon (PAH) levels, while sensory evaluations were conducted to assess tenderness, juiciness, aroma, and overall preference using a semi-trained panel. The results demonstrated that increasing CAE concentrations significantly elevated protein content (p<0.05) and reduced fat levels. PAH levels were below detectable limits in all samples, suggesting the marinade’s potential in reducing PAH formation. Sensory analysis revealed that the 5% CAE marinade was the most preferred, particularly for tenderness and juiciness. These findings suggest that CAE is a viable alternative to tomato sauce in marinades, offering both nutritional benefits and consumer acceptability.

Abstract

Strengthening food security at the village level has become a national priority, with farmer groups (Gapoktan) serving as key grassroots institutions. However, the organizational and strategic capacity of many Gapoktan remains underdeveloped, especially in rural areas such as Mulyoagung Village, Bojonegoro. This study addresses the need to design targeted strategies for empowering Gapoktan Sumber Harjo to support food security programs funded through the Village Fund. This study uses a quantitative strategic model to formulate strategic priorities for developing Gapoktan Sumber Harjo. The research applied a descriptive approach using Internal Factor Evaluation (IFE), External Factor Evaluation (EFE), Strengths-Weaknesses-Opportunities-Threats (SWOT) matrix, and Quantitative Strategic Planning Matrix (QSPM). Data were collected through interviews, documentation, and expert judgment scoring. The IFE results indicated a score of 2.6608, suggesting moderately strong internal conditions. The EFE score reached 3.0090, showing that external conditions are highly supportive, especially through the Village Fund policy and local government programs. QSPM analysis identified the most attractive strategies to generate leadership and capacity-building in digital skills. This study concludes that Gapoktan’s internal reinforcement must precede any external partnership or digitalization effort. Strategic development based on empirical scoring ensures policy alignment and community participation. These findings will inform local governments and grassroots institutions in prioritizing sustainable, data-driven agricultural strategies.

Abstract

The purpose of this study was to analyze the preferences of industrial consumers and to analyze the effect of price, quality, availability, type of processed product, sales turnover, and taste on consumer preferences of the hydroponic lettuce industry produced by Kebun Bertani Agro Farm, Semarang City. The research method used was a survey. The study was conducted in October - November 2024 in Mijen District, Semarang City. The determination of the research location was carried out purposively. The data collection method was carried out by interview using a closed questionnaire on a Likert scale. The sampling method used a census sampling technique, namely industrial consumers who had become regular customers of Bertani Agro Farm. The number of respondents used was 43 industrial consumers consisting of 18 kebab MSMEs, 5 food stalls, 5 catering, and 15 restaurants. The types of data used were primary and secondary. Data analysis used data tabulation calculations and analyzed using the SPSS program. The data analysis methods used were conjoint analysis and multiple linear regression. The test analysis used was the classical assumption (Shapiro-Wilk normality, linearity, multicollinearity, and heteroscedasticity) and hypothesis testing. Based on the research results, it was found that the most important attributes in order were price, availability, and quality, with a combination of product attributes that industrial consumers consider most for hydroponic lettuce is that it has a price of IDR 25,000, lettuce quality with green leaves, no holes and has a shelf life of ≤ 3 days, and availability that exceeds demand. Having a significance value of the t-test and F-test of less than 0.05, indicating that both partially and simultaneously all X variables have a significant effect on industrial consumer preferences. The adjusted R square value is 0.976, which means that 97.6% of the variation or change in consumer preferences is explained by the variables and the rest is not analyzed in the model.

Abstract

Rice milling plays a crucial role in maintaining rice quality and business profitability. UD Dadi Mulyo, which has focused on glutinous rice production since 2021, faces various economic and market challenges affecting its sustainability. This study aims to analyze production costs, revenue, income, and the profitability of the rice milling business at UD Dadi Mulyo, Jepara Regency. The findings are expected to provide valuable insights for the company to evaluate its business performance and make strategic decisions. The research was conducted from November to December 2024 using a case study approach. The research location was purposively selected because UD Dadi Mulyo shifted its focus from regular rice to glutinous rice in 2021 due to declining demand for regular rice. Data analysis includes calculating production costs, revenue, income, and profitability ratios, including Gross Profit Margin (GPM), Net Profit Margin (NPM), and Return on Investment (ROI). The results were compared with bank deposit interest rates and industry standards using a one-sample t-test. The study found that the business has a higher ROI than bank deposit interest rates, but its GPM and NPM remain below industry standards. The one-sample t-test confirmed that the business's profitability is lower than the industry average in terms of GPM and NPM. These findings provide insights for the company to improve cost efficiency and marketing strategies to enhance business profitability.
