Abstract

AbstractPia edamame attracts consumers as a typical food of Jember Regency. However, its development involves a high level of competition because of various types and quality of similar products with competitive prices. It then improves the opportunities for consumers in selecting the product according to their expectations to meet the satisfaction. Pia edamame of Said's Roti (SR), therefore, needs to develop its product to achieve high competitiveness as a typical food of Jember. This study aims to know the consumers attributes requirements and strategies to improve the competitive predominance of pia edamame SR. One of the methods used to assess and interpret consumer expectation is Quality Function Deployment (QFD). Application of QFD in this research, in the context of the process of quality improvement of pia edamame SR, provides various important information regarding consumer expectations and requirement. The results show that the goal values of attributes for consumer demand on packaging and flavor variant of pia edamame SR have not met the target, thus require improvement. Besides, the value of benchmarking was lower than its two competitors on the several technical responses. Hence, pia edamame SR requires a planning of competitive strategies by improving packaging and increasing the flavor variant.Keywords: pia edamame, quality, Quality Function Deployment, strategy AbstrakPia edamame sebagai makanan khas Jember memiliki daya tarik tersendiri bagi para konsumen. Potensi tersebut mengakibatkan tingginya tingkat persaingan antar pelaku bisnis serta munculnya berbagai macam produk sejenis dengan mutu dan harga yang bersaing. Hal tersebut memberikan peluang pada konsumen untuk lebih selektif memilih produk sesuai dengan selera dan kebutuhannya, sehingga konsumen mendapatkan kepuasan tersendiri. Oleh karena itu, pia edamame Said’s Roti (SR) perlu terus dikembangkan agar mampu bersaing di pasar sebagai makanan ciri khas Kabupaten Jember. Tujuan penelitian ini adalah untuk mengetahui atribut kebutuhan yang diinginkan oleh konsumen serta mengetahui strategi yang perlu dilakukan untuk meingkatkan keunggulan bersaing pia edamame SR. Salah satu metode yang dapat digunakan untuk menilai dan menerjemahkan keinginan konsumen adalah metode quality function deployment (QFD). Penerapan QFD pada penelitian ini terkait dengan proses peningkatan kualitas pia edamame SR yang dapat memberikan berbagai macam informasi penting mengenai kebutuan dan keinginan konsumen. Hasil penelitian menunjukkan bahwa nilai goal atribut kebutuhan konsumen terhadap kemasan dan varian rasa pia edamame SR belum mencapai target sehingga perbaikan harus dilakukan pada kedua atribut tersebut. Nilai benchmarking pia edamame SR juga masih di bawah kedua pesaingnya pada beberapa respon teknis sehingga diperlukan perancangan strategi bersaing pia edamame SR dengan memperbaiki kemasan dan menambah varian rasa.Kata kunci: kualitas, pia edamame, Quality Function Deployment, strategi

Abstract

This community service activity aims to provide education on stunting and training on healthy food preparation for mothers in Gunung Pasang, Suci Village. The main objective of this activity is to enhance understanding and knowledge about stunting to break its cycle in Suci Village. The educational session was conducted on August 4, 2024, at the Gunung Pasang field, with 35 mothers and 10 teenage girls participating. The education included delivering materials related to stunting prevention. The results indicate a positive impact on the community, as evidenced by the increased knowledge of mothers and teenage girls, reflected in the pre-test and post-test results conducted by the health division of PPK Ormawa UKM-O Badminton. Similar counseling sessions are proposed to be held regularly to improve the quality of life of the residents, particularly the mothers and teenage girls

Abstract

Tourism is a human activity that utilizes natural resources for recreational needs. It is without considering long term sustainability can damage nature and be detrimental to human life. Gadingan Village in Situbondo Regency is building a spring tourist destination called Gadingan Mas. Pokdarwis efforts in the construction of Gadingan Mas are constrained by the lack of public awareness to preserve the environment , which is indicated by the use of springs for toilet activities by some communities and the disposal of garbage around waterways. The principle of sustainability in the triple bottom line was adopted by socializing the development of clean Gadingan Mas tourism, so that it is useful and brings profit to the community. The method of implementation is by counseling the importance of maintaining environmental health, socializing environmental sanitation to the community around tourism and providing hygiene facilities. The results of the activity show the use of cleaning facilities that show awareness and cleanliness. The sustainability of Gadingan Mas tourism is supported by public awareness of cleanliness which encourages an increase in the number of tourists in Gadingan mas tourism.

Abstract

Inferior red dragon fruit has the potential as a source of natural dye. This research aimed to examined the quality of natural dye powder as a referenced for optimization. To optimized the formula for natural dye powder based on rejected dragon fruit, and to examined the physical and chemical quality of natural dye powder at the optimum formula. The varied ingredients in this research were ascorbic acid and tween 80. The upper and lower limits of use of both ingredients were 3% and 1% for ascorbic acid, as well as 1% and 0.5% for tween 80. The method used laboratory experimental method and quantitative analysis data. The experimental design used in this research was an experiment with the application of the simplex lattice design (SLD) method, so that several formulas were obtained based on the variation of two factors. Results of the observation data were inputted into the Design-Expert version 13 application so that a regression equation is obtained to determine the optimum formula. All data were presented in tables and graphs and analyzed descriptively. The results showed that F5 (ascorbic acid 3%: tween 80 0.5%) was the optimum formula because it had the highest desirability of 0.998 with a water content of 2.15%; total dissolved solids 9.66%; pH 3.766; L 53.71, a 14.20; b 7.39; dissolved time 61.33 seconds; Chroma 16,00; Hue 27.33? (red), and anthocyanin content 3,37 mg/mL. On exposure to the sun, outdoor and indoor experienced the highest degradation, namely 30.48% and 0.93%, respectively. Keywords: Ascorbic Acid, Red Dragon Fruit, Foam Mat Drying, Natural Dye, Tween 80 Buah naga merah inferior berpotensi sebagai sumber pewarna alami. Penelitian ini bertujuan untuk mengkaji kualitas serbuk pewarna alam sebagai acuan optimasi. Mengoptimalkan formula bubuk pewarna alami berbahan dasar buah naga afkir, dan menguji kualitas fisik dan kimia bubuk pewarna alami pada formula optimum. Variasi bahan dalam penelitian ini adalah asam askorbat dan tween 80. Batas atas dan bawah penggunaan kedua bahan tersebut adalah 3% dan 1% untuk asam askorbat, serta 1% dan 0,5% untuk tween 80. Metode yang digunakan adalah metode eksperimen laboratorium dan data analisis kuantitatif. Rancangan percobaan yang digunakan dalam penelitian ini adalah percobaan dengan penerapan metode simplex lattice design (SLD), sehingga diperoleh beberapa rumus berdasarkan variasi dua faktor. Data hasil observasi dimasukkan ke dalam aplikasi Design-Expert versi 13 sehingga diperoleh persamaan regresi untuk menentukan formula optimum. Seluruh data disajikan dalam bentuk tabel dan grafik serta dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa F5 (asam askorbat 3%: tween 80 0,5%) merupakan formula optimum karena memiliki desirabilitas tertinggi 0,998 dengan kadar air 2,15%; total padatan terlarut 9,66%; pH 3,766; L 53,71, a 14,20; b 7,39; waktu terlarut 61,33 detik; Kroma 16,00; Hue 27,33? (merah), dan kandungan antosianin 3,37 mg/mL. Pada paparan sinar matahari, outdoor dan indoor mengalami degradasi tertinggi yaitu masing-masing 30,48% dan 0,93%. Abstract

Biofoam (Biodegradable foam) is an alternative packaging to Styrofoam made from natural raw materials that can be biodegraded in the soil. Biofoam is generally made from 3 constituent materials in the form of main ingredients in the form of starch or other similar materials, plasticizers such as PVA and also fillers in the form of fibers containing cellulose. The purpose of this study was to determine the effect of the combination of porang glucomannan, PVA and seaweed pulp on biofoam and to determine the best formulation and characteristics of the biofoam samples made.. The technique of making biofoam was done using baking technique with 9 different treatments. Each treatment was repeated 3x and observations were made on biofoam structure, mechanical properties testing (tensile strength, elongation and young modulus), water absorption test, and biodegradation test. The results showed that Polyvinyl Alcohol plays a role in the formation of a hollow biofoam structure. The thickness parameter value for each treatment was 0.628-1.939 mm. The tensile strength value of each treatment has a value ranging from 15.989-35.265 N/mm². The elongation value for each treatment ranged from 25.719-76.427%. The young modulus value for each treatment ranged from 0.343-0.896 N/mm². The water absorption value of each treatment obtained values ranging from 35.81-77.12%. And the value of testing biodegradation parameters obtained values ranging from 8.68-32.18%. So that the best treatment obtained using the multiple attribute method is the A3B1 treatment (PVA 15% and the ratio of seaweed pulp concentration to glucomannan 1: 2).

Abstract

People and culture are an inseparable, while the supporters of culture are the people themselves. Jember Regency has one of its cultural assets, namely the Calok site. The site is a relic of the Megalithic era. The calok site has the potential to become a cultural educational tourism destination. The tourism community Arjasa has pioneered the development of the Calok Site as a cultural education tourism destination, but this development has been slow due to the Covid-19 pandemic. The development of the Calok Site aims to introduce the existence of the Calok Site to the community in order to raise awareness of cultural preservation. The empowerment method is carried out by counseling and training on the development of the Pinching Site to tourism community and providing information media on the Pinching site for the community using a barcode. The results of this activity are the increased ability of tourism community to develop cultural tourism and the availability of information about the Calok Site.

Abstract

Manalagi apples are an agricultural product that is easily damaged. Damage that occurs to Manalagi apples can be inhibited with an edible coating. The edible coating is a coating on the surface of fruit that can maintain quality and extend shelf life. Edible coatings can be made from hydrocolloids, including porang glucomannan. This research aims to determine the quality characteristics of Manalagi apples after being coated with an edible coating. Apart from that, to analyze the effect of glucomannan flour concentration on the quality characteristics of Manalagi apples, the viscosity of the edible coating solution, and the characteristics of the resulting coating and to choose the best treatment using the multiple attribute method. This research uses a Completely Randomized Design (RAL) with three replications. The treatment in this study was a glucomannan flour formulation of 5 levels, namely A0 (without treatment), A1 (0.5%), A2 (0.75%), A3 (1%), A4 (1.25%), carried out for storage for 7 days and observed on days 1, 3, 5, and 7 at room temperature (± 25℃). Porang glucomannan flour in edible coating significantly affected in respiration rate but had no significant effect on weight loss, L color, b color, and total dissolved solids. The best treatment based on calculation results using the multiple attribute method is A2 (0.75%) with the lowest weight loss was 2.97%, the highest L color with a value of 80, the lowest b color with a value of 15.1, the lowest total dissolved solids with a value of 11.6°Brix, the lowest respiration rate with a value of 0.006 ml CO2/gr/hour.

Abstract

Black soldier fly (Hermetia illucens) is a vital organism in waste bioconversion, and optimizing its breeding environment can enhance its effectiveness. This study investigates the development of a prototype system designed to regulate temperature and humidity in the egg-laying area to improve the living conditions for breeding black soldier flies. The research evaluates the prototype through several parameters: tool functionality, sensor performance, and egg production outcomes. Field tests confirm that the prototype effectively maintains the ideal conditions necessary for the mating process of black soldier flies. The functionality testing showed that the prototype achieved a functionality score of 1, indicating compliance with the ISO/IEC 9126 standards for software quality. Regarding sensor performance, the DHT22 sensor used for temperature monitoring demonstrated an average relative error of 4.49% and an absolute temperature error of 1.33°C. For humidity measurements, the sensor showed an average difference of 0.63% relative humidity (RH), with the maximum observed error being 1% RH. In terms of egg production, observations revealed a notable increase following the introduction of the control system. The egg yield improved significantly from an initial 43 grams to 151 grams, highlighting the positive impact of the prototype on reproductive performance. Overall, the study concludes that the prototype system is effective in creating a controlled environment that enhances the breeding conditions for black soldier flies. This improvement not only supports the flies' mating process but also boosts their productivity, thereby contributing to their efficiency as waste bioconversion agents.

Abstract

Kepuasan konsumen merupakan hal yang sangat penting dalam setiap usaha. Kepuasan konsumen dihasilkan dari kualitas produk dan pelayanan terhadap konsumen. Konsumen yang tidak puas akan berakibat pada penurunan penjualan. Salah satu usaha yang mengalami penurunan penjualan adalah UMKM De Nisa Bakery sebanyak 100 hingga 150 box dalam satu tahun. Penelitian ini bertujuan untuk menentukan atribut mutu yang berpengaruh terhadap kepuasan konsumen, menentukan tingkat kepuasan konsumen terhadap bolen pisang De Nisa Bakery, dan memberikan rekomendasi perbaikan produk untuk meningkatkan kepuasan konsumen dengan menggunakan metode Customer Satisfaction Index (CSI) dan Importance Performance Analysis (IPA). Jumlah responden yang digunakan sebanyak 80 responden dengan menggunakan kuesioner. Atribut yang dianggap penting oleh konsumen pada produk bolen pisang adalah rasa, tekstur, variasi rasa, konsistensi rasa, kemasan, harga, pelayanan, dan lokasi yang strategis. Hasil penelitian menunjukkan nilai CSI sebesar 80,2% yang berarti bahwa konsumen puas. Walaupun termasuk kategori puas, namun diperlukan perbaikan pada atribut variasi rasa, konsistensi rasa, dan kemasan. Rekomendasi perbaikan dapat berupa penambahan variasi rasa seperti rasa bolen nanas, tape singkong, nangka dan durian agar konsumen tidak merasa bosan, pemilihan bahan baku dan proses produksi sesuai dengan standar agar produk yang dihasilkan memiliki rasa yang konsisten, dan perbaikan desain kemasan agar lebih menarik serta dilengkapi dengan label yang lebih informatif.

Abstract

Semakin pesatnya persaingan usaha pada perusahaan roti menjadikan perusahaan dituntut untuk terus meningkatkan mutu/kualitas produknya. Amirah Bakery merupakan salah satu industri roti yang hingga kini masih berdiri di Kabupaten Tulungagung dan konsisten melakukan pengembangan terhadap bisnisnya dengan mengedepankan kepuasan pelanggan sebagai prioritas utamanya. Penelitian ini  diharapkan dapat menjawab tingkat kepuasan konsumen roti Amirah Bakery; prioritas atribut produk dan layanan Amirah Bakery; dan rekomendasi perbaikan yang dapat implementasikan di Amirah Bakery untuk menunjang keberlanjutan bisnisnya. Metode yang digunakan dalam penelitian ini yaitu CSI (Customer Satisfaction Index), dan Importance Performance Analysis (IPA). Alat penelitian yang digunakan berupa kuesioner, dan hasil penelitian menunjukkan bahwa pelanggan sangat puas dengan kualitas roti Amirah Bakery dengan nilai CSI sebesar 81,73%, dan perbaikan yang harus diutamakan berdasarkan Importance Performance Analysis adalah atribut 9, 10 dan 20, yaitu kemasan roti, warna roti dan performa pelayanan karyawan toko. Adapun rekomendasi perbaikan yang dapat dilakukan antara lain: mendesain ulang kemasan, mengembangkan inovasi produk, dan perlu adanya himbauan kepada karyawan untuk memahami perilaku yang ideal dalam bekerja.
