Abstract

Bakery product is a product with huge business opportunities in the domestic and international halal food market. Bakery companies demand to keep consumers' trust in their bakery products. This study aims to design the halal assessment model required to determine the critical point in the bakery-making business process. This assessment tool is intended to understand, acknowledge, and determine the critical point of the bakery production process from the halal degree and is reviewed from all aspects, such as the materials’ content, as well as the material acquisition and processing method based on 18 criteria of Good Manufacturing Practices (GMP) principles. The halal assessment model designed in this research used the Quality Function Deployment (QFD) approach, which was integrated into the company's business process. The halal critical bakery (HCB) was grouped based on Supply Chain Operations Reference (SCOR) model. Matrix 1 integrated GMP and business process (BP), and matrix 2 integrated GMP and HCB. The results of the design model implementation based on the standards set by the Halal Auditor of Institute for the Study of Food, Drugs, and Cosmetics Indonesian Ulema Council (LPPOM MUI) found that the company met the standard matrix component one by 47%. In comparison, matrix component 2 was only able to meet the Auditor standards by 34%, and the matrix component 3 standards were able to be fulfilled by the company by 75%. The fulfillment value of each matrix is influenced by the negative gap that occurs; the negative gap occurs because of the standard criteria in the technical matrix that are not accomplished. This halal assessment model design is expected to help the company evaluate and control critical points in the business processes.

Abstract

This research focuses on clustering the readiness of halal practice implementation in Minang weaving businesses, then based on the clusters that are very ready, it is then carried out the identification of the determinant factors of the readiness to implement the Halal Assurance System in Minang weaving businesses. Sampling was conducted using the non-probability sampling technique through purposive sampling from 103MSMEs of weaving in West Sumatra. The results of this research through K-means cluster analysis show that the grouping of Technology, Organization, Environment (TOE ) halal adoption in weaving MSMEs consists of 6 readiness groups, namely termination (15 MSMEs), maintenance (43 MSMEs), action (23 MSMEs), preparation (13 MSMEs), contemplation ( 2 MSMEs), pre-contemplation (7 MSMEs) spread across five cities/regencies in West Sumatra (Sawahlunto City and 50 Cities Regency which consists of 34 MSMEs respectively, 30 MSMEs from Tanah Datar Regency, 3 MSMEs from Sijunjung Regency, and 2 MSMEs from Payakumbuh City). Of the three determinants of TOE adoption tested, MSMEs' perceptions of technology readiness through the dimensions of compatibility and perceived benefits are higher than organizational and environmental factors. This research has theoretical and practical implications through exploration of the TOE model so that the results of this study can become a further research agenda in encouraging halal certification through developing a halal adoption strategy based on HAS 23000 in weaving MSMEs in West Sumatra.

Abstract

In today's rapidly evolving industrial landscape, businesses are increasingly challenged to strike a balance between enhancing productivity and maintaining product quality. Company X, a renowned cement manufacturer in Indonesia, relies heavily on four key raw materials, among which clay is particularly crucial for the raw mix. Recent trends have shown a decrease in the Al2O3 composition of clay, necessitating adjustments in clay capacity to uphold quality standards. A thorough technical evaluation of the plant highlighted that a significant number of critical machines, totaling 17, were operating with mechanical availability below the desired threshold. Additionally, a utility analysis pinpointed a shortfall in meeting the required clay tonnage, leading to the identification of machines that would benefit from retrofitting. The financial implications of this initiative were substantial, with the initial investment for the upgrades and subsequent operational costs in the first year being considerable. Yet, this expenditure was offset by a notable profit in the first year post-retrofitting. Key financial metrics further underscored the project's viability: a highly favorable Net Present Value (NPV), an impressive Internal Rate of Return (IRR), a rapid Payback Period (PP), and a significant Profitability Index (PI). These parameters, derived from an exhaustive analysis, clearly support the strategic decision to invest in retrofitting the production machinery at Company X's cement plant, illustrating the project's feasibility and the prospective benefits of this investment.
