Abstract

Perkembangan budaya third wave coffee meningkatkan permintaan kosumen pada kopi spesial. Kopi arabika dikenal sebagai kopi spesial karena keunikan cita rasa dan kualitasnya. Kopi arabika spesial dihasilkan melaui kerjasama antar pelaku rantai kopi mulai dari produsen sampai konsumen akhir. Kerjasama yang terjalin antar pelaku membentuk suatu sistem manajemen dalam melakukan regulasi dan kontrol kualitas kopi. Sistem tersebut membentuk pola tata kelola yang secara tidak langsung mengikat dan mengatur semua pelaku. Analisis tata kelola pada rantai nilai kopi arabika dilakukan dengan tujuan mengtahui tipe tata kelola yang terbentuk dan pelaku yang memiliki kekuatan dalam mengatur rantai nilai kopi arabika. Data penilitian ini dilakukan dengan mewawancarai 56 pelaku rantai nilai kopi arabika yang terdiri atas petani kopi, pedagang kopi keci, dan pedagang kopi besar. Data dianalisis menggunakan analisis tata kelola (governance) rantai nilai global dengan mengidentifikasi tiga variabel yaitu complexity, codify, dan capability. Hasil analisis menunjukkan tipe tata kelola rantai nilai kopi arabika adalah tipe modular dengan kondisi pasar eksplisit rendah (setiap pelaku mengikuti pelaku yang lebih kuat) dan asimetri kekuatan yang rendah serta pelaku yang memiliki kekuatan mengatur rantai nilai adalah konsumen.

Abstract

Rata-rata konsumsi pangan komoditas kentang di Indonesia sebanyak 2.20 kg/kapita/th dan meningkat rata-rata sebesar 9% dari tahun 2013. Tingkat konsumsi kentang Indonesia masih dibawah negara tetangga seperti Malaysia dan Thailand. Peningkatan laju konsumsi kentang lebih tinggi dibandingkan dengan laju pertumbuhan produksi kentang di Indonesia. Peningkatan produksi kentang dapat dilakukan melalui peningkatan produktivitasnya. Tingkat produktivitas kentang di Indonesia masih tergolong rendah dan berfluktuatif dengan rata-rata produktivitas kentang sebesar 18,23 ton/hektar. Tingkat produktivitas tersebut masih dibawah beberapa negara produsen utama kentang di dunia. Peningkatan produktivitas kentang dapat dilakukan dengan peningkatan efisiensi teknis produksi atau penggunaan benih bersertifikat. Tujuan penelitian ini untuk menganalisis pengaruh penggunaan benih kentang bersertifikat terhadap produksi dan efisiensi teknis usahatani kentang di Kecamatan Pangalengan sebagai salah satu sentra produksi kentang di Kabupaten Bandung. Analisis efisiensi teknis usahatani kentang menggunakan fungsi produksi Cobb-Douglas Stochastic Frontier Analysis. Total responden pada penelitian ini sebanyak 70 orang petani kentang, dengan rincian 30 orang menggunakan benih kentang bersertifikat dan 40 orang menggunakan benih kentang non sertifikat. Hasil analisis menunjukkan bahwa penggunaan benih kentang bersertifikat dapat meningkatkan produksi kentang. Secara keseluruhan tingkat efisiensi teknis usahatani kentang di Kecamatan Pangalengan rata-rata 70,10%, artinya upaya peningkatan efisiensi masih diperlukan. Tidak terdapat perbedaan yang signifikan antara nilai efisiensi teknis usahatani kentang dengan benih bersertifikat dan non sertifikat artinya penggunaan benih bersertifikat belum mampu meningkatkan nilai efisiensi teknis usahatani kentang. Salah satu faktor yang berpengaruh terhadap efisiensi teknis yaitu status kepemilikan lahan.

Abstract

Sugar is a strategic commodity that plays an important role. As the primary sweetener, the use of sugar has not yet been completely replaced by other sweeteners. Another essential role can also be seen in the extent of linkages in downstream industries, such as food and beverage, refined sugar, and pharmaceutical industries. This research aims to analyze what factors influence the supply of sugar and the elasticity of the sugar supply in Indonesia. This research uses secondary data in the form of time series data between 1992-2021. The analytical method that will be used quantitative method. The quantitative method uses a simultaneous equation modeling approach, where each equation is estimated using the Two-Stage Least Square (2SLS) method. Data processing in this research was carried out using the Microsoft Excel 2010 and EViews 12. The research results show that the factors that influence the supply of sugar in Indonesia include the amount of production, imports, exports and Indonesian sugar stocks. The amount of Indonesian sugar production is controlled by sugar-cane production and yield, with positive elasticity. Domestic sugar consumption affects the number of Indonesian sugar imports with positive elasticity, while exchange rate and sugar production affect the number of imports with negative elasticity. Domestic sugar prices affect the amount of Indonesian sugar export with negative elasticity, while GDP have a value positive elasticity. Sugar stock is the identity function of the previous year's sugar supply and the previous year's sugar consumption. The total supply of Indonesian sugar is the identity function of sugar production, sugar imports, sugar exports, and year-end sugar stocks.

Abstract

The advancement of technology and society have led to changes including food choice patterns among citizens, especially the younger generation that prefers fast food. Noodles are included in one of the fast foods that young people opt for as it has diverse varieties. The decision-making process of purchasing noodles for young consumers is influenced by several driving factors. This study aims to analyze the decision-making process among young customers in Bogor while buying noodles, analyze factors that influence the decision-making while purchasing noodles in Bogor, and formulate managerial implications for the development of Noodles SMEs. Primary data from a survey of 95 respondents were analyzed using descriptive analysis and SEM-PLS analysis. The results indicate that consumers buy noodles primarily because they are fast and convenient while considering the taste of the product. Personal experience is the most influential factor in their purchasing decisions. There are four significant factors influencing the purchasing decisions of young consumers regarding wet noodles in Bogor, including product factors, distribution, promotion, and lifestyle. The distribution factor has the highest influence on consumer purchasing decisions with the highest correlation value. The efforts noodle SMEs in order to develop their businesses include maintaining and increasing the distribution of products as this factor is the most influential factor for customers to do the purchasing.

Abstract

Pala (Myristica fragrans Houtt) adalah salah satu rempah-rempah asli Indonesia yang berasal dari Kepulauan Maluku. Di Maluku Utara, budidaya pala telah diwariskan secara turun-temurun sebagai mata pencaharian tradisional. Namun, di Kabupaten Halmahera Tengah, meskipun terjadi peningkatan luas areal tanam, produksi dan jumlah petani mengalami penurunan. Kecenderungan ini menimbulkan kekhawatiran akan usaha pertanian pala di wilayah tersebut. Penelitian ini bertujuan untuk menilai keberlanjutan perkebunan pala di Kabupaten Halmahera Tengah dengan menggunakan metode Rap-Nutmeg melalui Multidimensional Scaling (MDS). Analisis MDS mengevaluasi keberlanjutan dalam lima dimensi: ekonomi, sosial, lingkungan, teknologi, dan kelembagaan. Penelitian ini dilakukan di empat kecamatan di Kabupaten Halmahera Tengah yaitu, Patani Timur, Patani Utara, Weda Utara, dan Weda. Data yang digunakan adalah data primer dan sekunder. Data sekunder diperoleh dari Direktorat Jenderal Perkebunan, Badan Pusat Statistik, dan literatur yang relevan, sedangkan data primer dikumpulkan melalui wawancara dengan petani. Sebanyak 100 petani pala dipilih secara purposif sebagai sampel. Analisis keberlanjutan menunjukkan hasil yang beragam di seluruh dimensi. Dimensi lingkungan (75,18) dan dimensi sosial (75,12) dikategorikan sangat berkelanjutan. Dimensi teknologi (74,74) tergolong cukup berkelanjutan. Namun, dimensi ekonomi (38,76) dikategorikan kurang berkelanjutan, dan dimensi kelembagaan (11,36) dianggap tidak berkelanjutan. Indeks keberlanjutan yang bervariasi di seluruh dimensi menyoroti perlunya intervensi dan dukungan pemerintah, terutama untuk meningkatkan dimensi yang kurang berkelanjutan dan tidak berkelanjutan, serta untuk meningkatkan atribut-atribut sensitif di setiap dimensi.

Abstract

This study analyzes the factors influencing the export value of Muntok White Pepper (MWP) from the Bangka Belitung Islands Province to its main export destinations, Singapore and the United States, from 2010 to 2023. Panel data regression with a fixed effects model is used to combine production, exchange rate, and domestic price variables with export prices and trade policies. The analysis results indicate that production, exchange rate, export price, and non-tariff barriers (NTB) policies play a significant role in affecting export value, while domestic prices do not exert a significant influence. Elasticity analysis results in the exchange rate being the most responsive factor in influencing export value. Methodologically, this study presents the interpretation of panel data regression coefficients based on elasticity to measure export responsiveness, an approach not commonly applied in agricultural trade analysis. Contextually, this study emphasizes the strategic role of Muntok White Pepper as a geographically indicated commodity in supporting the competitiveness of Indonesian spice exports. These findings provide empirical evidence and policy insights for strengthening export resilience through increased production, exchange rate management, and compliance with international trade standards.

Abstract

Effective management of working capital is essential for the profitability and long-term sustainability of micro and small-scale processed food businesses. However, at present, the business has not yet developed strong competency in managing working capital efficiently. This can certainly increase the potential for business bankruptcy, especially in the processed food business. This research examines the impact of working capital management, liquidity, and solvency ratios on the profitability of 1,563 micro and 241 small processed food enterprises in Indonesia. Multiple linear regression is used to assess the relationship between working capital management and profitability. The independent variables include the payable deferral period, inventory conversion period, current ratio, and debt-to-asset ratio, while profitability, as the dependent variable, is measured by return on assets (ROA). The findings indicate that both the payable deferral period and debt-to-asset ratio significantly affect the profitability of micro and small businesses, with the current ratio having a particular effect on the profitability of small businesses. These findings suggest that improving financial management practices, such as daily sales optimization and enhanced cash flow monitoring, could significantly enhance profitability in the micro and small processed food sector.
