Abstract

Fermentation is the process of chemical transformation in an organic substrate through the activity of enzymes produced by microorganisms. Food fermentation provides some nutritional benefits. It also helps to maintain and increase the nutritional value of food such as vitamin C. Vitamin C, which satisfies the nutritional needs of a balanced diet, is found in abundance in fruits and vegetables. However, there is currently no preservation method that can maintain the amounts of ascorbic acid that are initially found in fruits and vegetables. This study aims to determine the effect of Vitamin C on pickle and kimchi fermentation process on some vegetable (red chilli, cucumber, water pumpkin and chinese cabbage). The result of analysis showed red chili pickle and cucumber pickle with no salt addition have vitamin C of 42.50 ± 2.07 mg/100gr and 16.13 ± 1.06 mg/100gr, respectively, while with 2.5% salt addition has vitamin C of 29.30 ± 4.14 mg/100gr and 8.80 ± 0.70 mg/100gr, respectively. While water pumpkin kimchi and Chinese cabbage kimchi with no salt addition have vitamin C of 20.50 ± 1,65 mg/100gr and 20.50 ± 0.71 mg/100mg, while kimchi and Chinese cabbage with 2.5% salt addition have vitamin C of 25.81 ± 2,30 mg/100gr and 34.12 ± 1.48 mg/100gr, respectively. Therefore, it showed that the addition of salt ingredient on red chili and cucumber pickle might reduce the vitamin C levels, while it might increase the vitamin C levels of water pumpkin and Chinese cabbage kimchi. Abstract

Infectious diseases are a public health problem for both developed and developing countries. The cause of an infectious disease such as in Shigella sonnei bacteria which occurs in dysentery is characterized by feces mixed with blood and mucus usually accompanied by fever. One solution to overcome dysentery is by utilizing plants that can be processed into medicine. One of them is mangrove (Avicennia alba Blume) which contains phytochemical compounds as antibacterial activity. This study is an experimental study that aims to determine the minimum inhibitory concentration (MIC) of mangrove leaf ethanol extract (Avicennia alba Blume) against Shigella sonnei bacteria. The minimum inhibitory concentration (MIC) value of the extract was determined using the liquid dilution method and continued with solid dilution, with concentrations of 11%, 12%, 13%, 14%, and 15%. Observations were made to see whether bacterial growth in the media. The test results showed that mangrove leaf ethanol extract (Avicennia alba Blume) had a minimum inhibitory concentration at a concentration of 15% in inhibiting the growth of Shigella sonnei bacteria with clear around the media.

Abstract

The high use of antibiotics in the community will lead to resistance. According to the results of studies in Indonesia, the problem of antibiotic resistance is very complex and will continue to increase every year. Infectious diseases account for more than 13 million deaths per year in developing countries. Wise and rational use of antibiotics can reduce the disease burden, especially infectious diseases. Conversely, the widespread use of antibiotics that do not match the indications significantly increases antibiotic resistance. Students must know the proper use of antibiotics so as not to develop antibiotic resistance. They do not know much or fully understand antibiotics during the transition from childhood to adulthood. This study aims to determine the relationship between knowledge, attitudes, and behavior of SMAN Se-Kota Pekanbaru students in the use of antibiotics. This research uses a descriptive survey method with 360 respondents. Data analysis was done using a chi-square test with a significance level of p 0.05. The results of this study showed that there were students with good knowledge (67%), with some who showed a positive attitude (75%), and less behavior in the use of antibiotics (74%). The chi-square test showed a significant relationship between attitudes and antibiotic use behavior with a p-value of 0.001 (p 0.005). While the level of knowledge and attitude had a p-value of 0.605 (p 0.05) and the level of knowledge and behavior had a p-value of 0.118 (p 0.05), indicating there was no significant relationship. From the results of this study, it can be concluded that there is no significant relationship between students' knowledge with attitudes and behavior in the use of antibiotics, and there is a significant relationship between attitudes and student behavior in the use of antibiotics.

Abstract

Many pesantren are dubbed as a hotbed of patriarchal culture by the community. Several factors that lead to patriarchal stereotypes in pesantren are, for example, the phenomenon of interpretation of the meaning of the yellow Islamic classic book, where in the yellow Islamic classic book there are no authors who are female, even in books such as the uqudulijain book, the differences in rights and obligations between men and women are evident, which are considered more favorable to men than women. In this case, the author tries to analyze the position of women in pesantren, and also tries to review how the position of women who are discriminated against in pesantren, and how the resilience of santri who experience discrimination in real form by their own caregivers. The research methodology in this study is to use a qualitative approach by extracting data using observation and interviews. With the focus of our research is on students who experience sexual violence by their own caregivers in one of the boarding schools in East Java. From the results of our research, that there are students who have high resilience so that after the incident they managed to get up and still instill positive values that can be taken from their learning while in the pesantren. However, there are also some of our informants who direct their disappointment to negative things such as smoking, drinking alcohol, and etc. Keywords : Sexual Harassment, Resilience, Patriarchy
