Abstract

Tujuan dilakukan penelitian ini untuk menganalisis tentang upaya menjaga dan penerapan hygiene dan sanitasi dapur di Restaurant XXX. Informan peneliti ini adalah para karyawan dapur Restaurant XXX. Dengan penelitian ini akan diketahui hal-hal yang perlu dipertahankan sekaligus hal-hal yang perlu ditingkatkan Metode pengumpulan data menggunakan metode wawancara, observasi dan dokumentasi. Teknik analisis dalam penelitian ini menggunakan teknik analisis deskriptif kualitatif dengan melakukan observasi yang beracuan dengan SOP (Standard Operating Procedure) hygiene dan sanitasi yang telah ditetapkan. Masalah yang dihadapi dalam menerapkan penerapan hygiene dan sanitasi area dapur, penerapan hygiene dan sanitasi peralatan dapur serta penerapan personal hygiene adalah kurangnya kesadaran diri pada saat melakukan pekerjaan, adanya karyawan yang belum sepenuhnya mengetahui bagaimana cara persiapan diri dan pembersihan pada area dapur dengan benar. Sebaiknya dilakukan refreshment kepada karyawan dapur agar semuanya tahu dan ingat bagaimana SOP yang sebenarnya harus di terapkan dan agar tidak terjadinya perbedaan penerapan dari persiapan diri karyawan serta pembersihan pada area dapur sesuai dengan SOP yang telah ditetapkan. The purpose of this studiy was to analyze the efforts to maintain and apply kitchen hygiene and sanitation at Restaurant XXX. The research informants were Restaurant XXX kitchen employees. This research will identify things that need to be maintained as well as things that need to be improved. Data collection methods use interviews, observation and documentation. The analysis technique in this study used a qualitative descriptive analysis technique by making observations with reference to the established standard operating procedure (SOP) for hygiene and sanitation. The problem encountered in implementing the implementation of hygiene and sanitation in the kitchen area, the application of hygiene and sanitation of kitchen equipment and the application of personal hygiene is a lack of self-awareness when doing work, there are employees who do not fully know how to properly prepare and clean the kitchen area. It is better to do refreshments for kitchen employees so that everyone knows and remembers how the actual SOP should be applied and so that there are no differences in the implementation of employee self-preparation and cleaning in the kitchen area according to the SOP that has been set.

Abstract

Pasar Ekstreme Tomohon merupakan salah satu objek wisata budaya yang ada di Sulawesi Utara. Keberadaan objek wisata ini kerap memicu kontroversi dan berbagai macam perspektif dari berbagai macam kalangan usia, termasuk Generasi Z. Generasi Z merupakan orang yang lahir pada kurun tahun 1995-2010, serta merupakan penduduk terbanyak di Indonesia. Penelitian ini bertujuan untuk mengetahui persepsi wisatawan generasi Z terhadap objek wisata pasar ekstreme tomohon di Sulawesi Utara. Metode yang digunakan dalam penelitian ini adalah metode deskripftif kuantitatif dimana data diperoleh melalui kuesioner dengan tujuh indikator, diantaranya: persepsi internal, persepsi eksternal, atraksi, amenitas, aksesibilitas, dan ancillary. Hasil penelitian menunjukkan wisatawan Generasi Z memberikan tanggapan dengan akumulasi rata rata nilai 3,04 dari 5, dengan kategori ragu-ragu. Data tersebut menunjukan bahwa persepsi serta komponen pariwisata yang dimiliki Pasar Ekstreme Tomohon sudah baik, namun adapun beberapa aspek yang perlu ditingkatkan. Dalam pengembangan kedepanya perlu disarankan adanya peningkatan terkait fasilitas umum di objek wisata pasar ekstrem tomohon khususnya toilet, melaksanakan kegiatan bersih bersih setelah jam operasional, serta untuk pemerintah kedepan hendaknya mulai melakukan kolaborasi dengan luar negeri untuk lebih memperkenalkan uniknya budaya yang dimiliki oleh masyarakat lokal sulawesi utara, khususnya objek wisata Pasar Ekstreme Tomohon. Tomohon Extreme Market is one of the cultural tourist attractions in North Sulawesi. The existence of this tourist attraction often triggers controversy and various perspectives from various age groups, including Generation Z. Generation Z are people born in the period 1995-2010, and are the largest population in Indonesia. This research aims to determine the perceptions of generation Z tourists towards the Tomohon extreme market tourist attraction in North Sulawesi. The method used in this research is a quantitative descriptive method where data is obtained through a questionnaire with seven indicators, including: internal perception, external perception, attractions, amenities, accessibility and ancillary. The research results show that Generation Z tourists responded with an average accumulated score of 3.04 out of 5, in the doubtful category. This data shows that the perception and tourism components of the Tomohon Extreme Market are good, but there are several aspects that need to be improved. In future development, it is recommended that there be improvements related to public facilities at the Tomohon extreme market tourist attraction, especially toilets, carrying out cleaning activities after operational hours, and for the future the government should start collaborating with foreign countries to further introduce the unique culture of the local people of North Sulawesi, especially the Tomohon Extreme Market tourist attraction.

Abstract

Penelitian ini bertujuan untuk melakukan analisis kualitas fasilitas Daya Tarik Wisata Monkey Forest berdasarkan Peraturan Menteri Pariwisata No. 3 Tahun 2018. Terdapat permasalahan pada fasilitas viewdeck dan ditoilet. Belum tersedia viewdeck di area Monkey Forest dan fasilitas dalam toilet disabilitas. Dari hal tersebut terdapat kesenjangan antara fasilitas yang ada di monkey forest dengan fasilitas yang seharusnya yang ada di Peraturan Menteri Pariwisata dan Ekonomi Kreatif No.3 Tahun 2018. Hasil penelitian menunjukkan bahwa Fasilitas yang ada di Monkey Forest telah memenuhi sebagian besar persyaratan yang ditetapkan dalam Peraturan Menteri Pariwisata No. 3 Tahun 2018. Fasilitas di Monkey Forest memberikan kenyamanan dalam berwisata dengan fasilitas yang lengkap. Fasilitas pendukung di Monkey Forest, seperti area parkir, toko suvenir, dan area istirahat, juga memadai dan sesuai dengan persyaratan Peraturan Menteri Pariwisata. Fasilitas toilet dan tempat makan juga tersedia, yang meningkatkan kenyamanan pengunjung. Dalam hal kebersihan, pengelola Monkey Forest secara rutin menjaga kebersihan area wisata dengan melakukan pembersihan dan pengawasan secara teratur. Secara keseluruhan, kualitas fasilitas yang ada di Monkey Forest sudah baik dan sudah memenuhi persyaratan Peraturan Menteri Pariwisata No. 3 Tahun 2018. This study aims to analyze the quality of Monkey Forest Tourist Attraction facilities based on the Minister of Tourism Regulation no. 3 of 2018. There are problems with the viewdeck and toilet facilities. There is no viewdeck in the Monkey Forest area and facilities in disabled toilets. From this there is a gap between the facilities in the monkey forest and the facilities that should be in the Regulation of the Minister of Tourism and Creative Economy No.3 of 2018. The results of the study show that the facilities in the Monkey Forest have fulfilled most of the requirements set out in the Regulation Minister of Tourism No. 3 of 2018. Facilities at the Monkey Forest provide comfort in traveling with complete facilities. Supporting facilities at the Monkey Forest, such as parking areas, souvenir shops, and resting areas, are also adequate and in accordance with the requirements of the Minister of Tourism RegulationsOverall, the quality of the existing facilities at the Monkey Forest is good and meets the requirements of the Minister of Tourism Regulation no. 3 of 2018.

Abstract

Setelah pandemi COVID-19, terjadinya perubahan adanya peningkatan kunjungan wisatawan ke bali, salah satu contohnya adalah The Bloom Garden. Penelitian ini bertujuan untuk memahami bagaimana Atraksi Wisata, Fasilitas dan Harga mempengaruhi Keputusan Wisatawan Berwisata ke The Bloom Garden. Metode penelitian yang digunakan adalah pendekatan kuantitatif dengan metode pengumpulan data dilakukan dengan metode kuesioner, dan hasil analisis menggunakan regresi linier berganda yang dimana responden nya berupa wisatawan domestik. Hasil penelitian menunjukkan bahwa terdapat pengaruh positif signifikan antara atraksi wisata terhadap Keputusan Wisatawan Berwisata dan terdapat pengaruh positif signifikan antara Fasilitas terhadap Keputusan Wisatawan Berwisata dan dampak negatif yang signifikan dari Harga terhadap pengambilan keputusan Wisatawan Berwisata ke The Bloom Garden. After the COVID-19 pandemic, changes have occurred with an increase in tourist visits to Bali, one example is The Bloom Garden. This research aims to understand how tourist attractions, facilities and prices influence tourists' decisions to travel to The Bloom Garden. The research method used is a quantitative approach with data collection methods carried out using a questionnaire method, and the results of the analysis use multiple linear regression where the respondents are domestic tourists. The findings of the study indicate that tourist attractions have a significant positive impact on tourists' decisions to travel. Additionally, facilities significantly and positively affect tourists' decisions to travel, while prices have a significant negative effect on tourists' decisions to visit The Bloom Garden.

Abstract

Tujuan penelitian ini adalah mengetahui pengaruh CHSE terhadap keputusan tamu dalam melakukan kunjungan kembali di Volken Coffee Bali. Metode yang digunakan pada penelitian ini adalah metode penelitian kuantitatif. Responden yang digunakan dalam penelitian ini adalah pengunjung Volken Coffee Bali dengan jumlah sampel sebanyak 80 responden. Data yang digunakan pada penelitian ini didapatkan melalui kuesioner, selanjutnya data primer diuji menggunakan uji validitas dan reliabilitas dilanjutkan dengan uji asumsi klasik dan hipotesis dibuktikan menggunakan analisis regresi linear berganda. Hasil penelitian menunjukkan bahwa: (1) Cleanliness memiliki pengaruh positif dan signifikan terhadap keputusan tamu melakukan kunjungan kembali di Volken Coffee Bali. Hal ini dapat dilihat dari nilai thitung 2,225 > ttabel (0.05 : 35) = 2,030 (2) Health memiliki pengaruh positif dan signifikan terhadap keputusan tamu melakukan kunjungan kembali di Volken Coffee Bali. Hal ini dapat dilihat dari nilai thitung 2,261 > ttabel (0.05 : 35) = 2,030 (3) Safety memiliki pengaruh positif dan signifikan terhadap keputusan tamu melakukan kunjungan kembali di Volken Coffee Bali. Hal ini dapat dilihat dari nilai thitung 2,369 > ttabel (0.05 : 35) = 2,030 (4) Environmental sustainability memiliki pengaruh positif dan signifikan terhadap keputusan tamu melakukan kunjungan kembali di Volken Coffee Bali. Hal ini dapat dilihat dari nilai thitung 3,398 > ttabel (0.05 : 35) = 2,030. Koefisien determinasi menunjukkan nilai R Square sebesar 0,398. Hal ini menunjukkan bahwa 39,8% keputusan tamu melakukan kunjungan kembali di Volken Coffee Bali dipengaruhi oleh Cleanliness, Health, Safety, dan Environmental Sustainability, sedangkan sisanya sebesar 60,2% dipengaruhi oleh variabel lain di luar penelitian ini. The purpose of this study was to determine the effects of CHSE on guests' decisions in making return visits at Volken Coffee Bali. The method used in this study is a quantitative research method. Respondents used in this study were visitors to Volken Coffee Bali with a total sample of 80 respondents. The data used in this study were obtained through questionnaires, then the primary data was tested using validity and reliability tests followed by classical assumption tests and hypotheses were proven using multiple linear regression analysis. The results of the study indicate that: (1) Cleanliness has a positive and significant influence on the guest's decision to make a return visit at Volken Coffee Bali. This can be seen from the value of tcount 2.225 > ttable (0.05: 35) = 2.030 (2) Health has a positive and significant influence on the decision of guests to make return visits at Volken Coffee Bali. This can be seen from the value of tcount 2.261 > ttable (0.05: 35) = 2.030 (3) Safety has a positive and significant influence on the decision of guests to make return visits at Volken Coffee Bali. This can be seen from the value of tcount 2.369 > ttable (0.05: 35) = 2.030 (4) Environmental sustainability has a positive and significant influence on the decision of guests to return to Volken Coffee Bali. This can be seen from the tcount value of 3.398 > ttable (0.05: 35) = 2.030. The coefficient of determination shows the R Square value of 0.398. This shows that 39.8% of the guest's decision to make a return visit at Volken Coffee Bali is influenced by Cleanliness, Health, Safety, and Environmental Sustainability, while the remaining 60.2% is influenced by other variables outside of this study.

Abstract

Kawasan Ekonomi Khusus (KEK) adalah suatu kawasan terbatas yang dikhususkan untuk kepentingan tertentu. Sanur terkenal dengan pantainya yang tenang dan pasirnya yang putih. KEK Kesehatan yang sedang dibangun di kawasan Sanur menjanjikan nafas baru bagi pariwisata Bali. Tujuan penelitian ini untuk meneliti bagaimana dampak langsung dan tidak langsung Kawasan Ekonomi Khusus (KEK) terhadap hotel berbintang di kawasan Sanur. Penelitian ini dilakukan di Hyatt Regency Bali, dengan jumlah sampel yang dikumpulkan sebanyak lima sampel dengan teknik penentuan sampel yaitu metode purposive sampling. Pengumpulan data dilakukan dengan pendekatan wawancara mendalam, di mana instrument penelitian yang digunakan adalah pedoman wawancara. Penelitian ini menggunakan metode deskriptif dengan pendekatan kualitatif dan teori Tourism Area Life Cycle (TALC) oleh Butler (1980). Data yang dikumpulkan kemudian dianalisis menggunakan analisis SWOT dan matriks EFAS dan IFAS. Hasil penelitian menunjukkan bahwa KEK menjadi gebrakan dalam memasuki tahap peremajaan kawasan dan saat ini memberikan dampak yang positif tetapi tidak secara menyeluruh terhadap hotel berbintang di kawasan Sanur, karena KEK Kesehatan Sanur masih dalam tahap pembangunan. Namun, diharapkan KEK akan mendatangkan dampak positif yang lebih menyeluruh apabila pembangunan tersebut sudah rampung. Rekomendasi yang diberikan yaitu untuk mendekati pihak pengelola KEK agar mendapatkan keuntungan yang bisa digunakan dikemudian hari. Special Economic Zone (SEZ) is a limited area devoted to certain interests. Sanur is famous for its calm beaches and white sand. The Health SEZ which is being built in the Sanur area promises a fresh air for Bali tourism. The purpose of this study is to examine how the direct and indirect impact of Special Economic Zones (SEZ) on five-star hotels in the Sanur area. This research was conducted at Hyatt Regency Bali, with the number of samples collected as many as 5 samples with a sampling technique that is purposive sampling method. Data collection was carried out with an in-depth interview approach, where the research instrument used was an interview guide. This study uses a descriptive method with a qualitative approach and the theory of Tourism Area Life Cycle (TALC) by Butler (1980). The data collected was then analysed using SWOT analysis and EFAS and IFAS matrices. The results of the study shows that the SEZ is a breakthrough in entering the regional rejuvenation stage and is currently having a positive but not comprehensive impact on stars hotels in the Sanur area, because the Sanur Health SEZ is still under construction. However, it is hoped that the SEZ will have a more comprehensive positive impact when the construction is completed. The recommendation given is to approach the SEZ management in order to get benefits that can be used in the future.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh daya tarik wisata dan seni fotografi secara parsial dan simultan terhadap keputusan berwisata di KDTWK Kintamani. Pengambilan sampel terhadap responden dalam penelitian ini yaitu sebanyak 100 responden. Teknik analisis data yang digunakan dalam penelitian ini adalah Uji Analisis Regresi Linear Berganda. Dari hasil penelitian dapat dilihat bahwa daya tarik wisata scecara simultan berpengaruh positif signifikan terhadap keputusan berwisata, kemudian seni fotografi juga berpengaruh positif signifikan terhadap keputusaan berwisata oleh wisatawan Besarnya pengaruh pemasaran daya tarik wisata dan seni fotografi terhadap keputusan berwisata adalah 59,2%. Kesimpulannya semakin baik daya tarik wisata dan aktivitas seni fotografi yang terdapat di KDTWK Kintamani, maka akan semakin meningkatkan keputusan wisatawan dalam berwisata di KDTWK Kintamani. This research aims to determine the partial and simultaneous influence of tourist attractions and the art of photography on travel decisions at KDTWK Kintamani. The sampling of respondents in this research was 100 respondents. The data analysis technique used in this research is the Multiple Linear Regression Analysis Test. From the research results, it can be seen that tourist attractions simultaneously have a significant positive effect on travel decisions, then the art of photography also has a significant positive effect on tourists' travel decisions. The magnitude of the influence of tourist attraction marketing and photography art on travel decisions is 59.2%. In conclusion, the better the tourist attraction and photography art activities found at KDTWK Kintamani, the more it will improve tourists' decisions about traveling to KDTWK Kintamani.

Abstract

This research was in purpose of conserving river environment in developing sustainable tourism by empowering local community to control balance or harmony in life depends on local genius. Heterogeneous tourism potentials owned by Badung river’s area to be enhanced as new attraction, within eco tourism concept. This research designated by using descriptive research, since authors explored data and information regarding topics to get in-depth data for further research. In this research, authors wanted to identify designation of rain park in order to arrange Badung river as an environmental educational tourism region. Data were collected through observations, documentation, and interview with qualitative descriptive as analysis technic. The result of the research showed the development of alternative tourist attraction, namely Rain Park in Badung’s River. This tourist attraction is a part of community-based tourism that utilize element of rain and water as an attraction. Moreover, this attraction will be a viable and possible option to answer any water pollution issue among Badung river area.

Abstract

Palungan salt farming is one of commodity that is still dominated by coastal communities in Tejakula Village. However, since 2010 the number of palungan salt farmers has degraded from 200 farmers to 21 farmers. This resulted in the production of salt manger decreased. On the other hand, salt is one of the foodstuffs needed by various parties for both consumption and industrial needs. Although the Government has issued a policy to empower traditional salt farming through PUGAR, but until now the implementation has not been maximized.  The aims  of this research is to identify the potential of internal and external physical environments in Tejakula Village to consideration in the effort to conserve local wisdom in synergy with sustainable tourism development. Using the descriptive qualitative research method, Tejakula Village has internal and external potential that is useful to be developed towards the development of living museum as cultural and educational tourism in order to conserve local wisdom and improve the economic level of the community in Tejakula Village.
