Abstract

Cocoyam (Xanthosoma sagittifolium) is a tuber that can provide complex carbohydrates. This study aimed to look at the physicochemical (carbohydrate, protein, fat, crude fiber, ash content, and water content) and sensory analysis of cocoyam steamed brownies as an alternative snack for people with diabetes. This study used an completely randomized design (CRD) with four treatments and three replications using wheat flour and cocoyam flour formulations P0 (100%:0%), P1 (60%:40%), P2 (40%:60%), and P3 (0%:100%). Sensory characteristics were determined using 35 consumer panellists and physicochemical values were determined using proximate. The results of this study show that the highest water content was 2,65%, ash content 23,97 grams in treatment P3, and the highest protein content was 19,64 grams, fat content 17,89 grams, and carbohydrate 19,64 grams in treatment P1. The results of statistical analysis showed that cocoyam flour substitution effect on carbohydrate content (p<0.001), ash content (p=0.008), and water content (p<0.001), but no effect on protein content (p=0.791), fat content (p=0,288), or crude fiber content (p=0,366). The results of sensory analysis showed that P1 was the best treatment with panelists preference level values for color 3,17; aroma 3,0; taste 3,43; texture 2,60 and the results of statistical analysis showed that there was an effect of cocoyam flour substitution on sensory characteristics of steamed brownies, such as colour (p<0.001), aroma (p=0.012), texture (p<0.001), and taste (p<0.001). Cocoyam steamed brownies have a low carbohydrate content of 19.64 g and a high crude fiber content of 21.41 g, the first treatment, brownies (P1), can be used as an alternative snack for people with diabetes.

Abstract

Kepuasan pasien menjadi salah satu indikator penting dalam menilai keberhasilan pelayanan rumah sakit, termasuk pelayanan gizi. Pelayanan gizi rawat inap di rumah sakit wajib memenuhi Standar Pelayanan Minimal (SPM) gizi, seperti ketepatan pemberian diet dan ketepatan waktu pemberian makanan. Penelitian ini bertujuan untuk mengetahui hubungan antara ketepatan pemberian diet dan ketepatan waktu pemberian makanan dengan tingkat kepuasan pasien rawat inap di RSUD H. Abdul Aziz Marabahan. Penelitian ini menggunakan desain observasional analitik dengan rancangan cross sectional. Populasi sekaligus sampel penelitian adalah 62 pasien rawat inap di ruang Penyakit Dalam yang memenuhi kriteria inklusi (total sampling). Variabel dependen adalah tingkat kepuasan pasien, sedangkan variabel independen adalah ketepatan pemberian diet dan ketepatan waktu pemberian makanan. Analisis bivariat menggunakan uji Spearman Rank dengan α = 0,05. Hasil penelitian menunjukkan tingkat kepuasan pasien sebesar 87,1%, ketepatan pemberian diet sebesar 88,7%, dan ketepatan waktu pemberian makanan sebesar 83,9%. Uji statistik menunjukkan terdapat hubungan antara ketepatan pemberian diet dengan kepuasan pasien (p = 0,001; r = 0,40) serta terdapat hubungan antara ketepatan waktu pemberian makanan dengan kepuasan pasien (p = 0,001; r = 0,59). Disarankan rumah sakit memperkuat alur pelayanan gizi dan koordinasi antarprofesi untuk meningkatkan ketepatan diet dan ketepatan waktu pemberian makanan, sehingga kepuasan pasien dapat dipertahankan dan ditingkatkan.

Abstract

ABSTRAK Latar Belakang: Diabetes melitus tipe 2 (DMT2) adalah gangguan metabolik yang ditandai dengan peningkatan kadar glukosa darah, mempengaruhi kualitas sumber daya manusia, dan meningkatkan biaya perawatan kesehatan. DMT2 juga merupakan komorbiditas COVID-19 . Tujuan: untuk menguji hubungan antara kepatuhan diet, asupan vitamin C, aktivitas fisik, dan edukasi gizi dengan kontrol glukosa darah pada pasien DMT2. Metode: Studi observasional analitik dengan desain potong lintang dari bulan Maret hingga April 2021 di Rumah Sakit Idaman Banjarbaru. Sebanyak 40 pasien dipilih dari 90 populasi yang memenuhi syarat. Pengambilan sampel secara non-probabilitas. Data primer dikumpulkan melalui wawancara, sedangkan data sekunder diperoleh dari rekam medis. Gula darah puasa dikategorikan sebagai terkontrol (<125 mg/dl) atau tidak terkontrol (≥126 mg/dl). Data dianalisis menggunakan uji chi-square dengan tingkat kepercayaan 95%. Hasil: Penelitian ini menunjukkan bahwa sebagian besar responden berusia 46–55 tahun (40%), perempuan (80%), dan ibu rumah tangga (52,5%). Mayoritas tidak mematuhi rekomendasi diet (60%), memiliki asupan vitamin C yang rendah (47,5%), melakukan aktivitas fisik ringan (37,5%), dan telah menerima edukasi gizi (55%). Gula darah yang tidak terkontrol diamati pada 67,5% peserta. Asosiasi signifikan ditemukan antara kepatuhan diet (p=0,000), asupan vitamin C (p=0,001), aktivitas fisik (p=0,002), dan edukasi gizi (p=0,001) dengan kadar glukosa darah. Rasio odds menunjukkan bahwa pendidikan gizi dan aktivitas fisik memiliki pengaruh terkuat. Kesimpulan: Kepatuhan diet, asupan vitamin C, aktivitas fisik, dan edukasi gizi berkorelasi signifikan dengan kontrol glukosa darah pada pasien DMT2.   ABSTRACT Background: Type 2 diabetes mellitus (T2DM) is a metabolic disorder marked by elevated blood glucose levels, affecting human resource quality and increasing healthcare costs. T2DM is also a known comorbidity of COVID-19. Objective: This study aimed to examine the relationship between dietary compliance, vitamin C intake, physical activity, and nutrition education with blood glucose control among T2DM patients. Methods: An analytic observational study with a cross-sectional design was conducted from March to April 2021 at Idaman Hospital, Banjarbaru. A total of 40 patients were selected from 90 eligible participants using non-probability sampling. Primary data were collected through interviews, while secondary data were obtained from medical records. Fasting blood glucose was categorized as controlled (<125 mg/dl) or uncontrolled (≥126 mg/dl). Data were analyzed using chi-square tests with a 95% confidence level. Results: showed that most respondents were aged 46–55 years (40%), female (80%), and housewives (52.5%). The majority did not adhere to dietary recommendations (60%), had low vitamin C intake (47.5%), engaged in light physical activity (37.5%), and had received nutrition education (55%). Uncontrolled blood glucose was observed in 67.5% of participants. Significant associations were found between dietary compliance (p=0.000), vitamin C intake (p=0.001), physical activity (p=0.002), and nutrition education (p=0.001) with blood glucose levels. Odds ratios indicated that nutrition education and physical activity had the strongest influence. Conclusion: Dietary compliance, vitamin C intake, physical activity, and nutrition education significantly correlate with blood glucose control in T2DM patients.

Abstract

Chronic Kidney Failure (CKD) continues to increase and requires long-term hemodialysis, impacting patients' physical, nutritional, and psychological status, as well as their quality of life. This study aims to determine the relationship between hemodialysis adequacy, malnutrition risk, and depression levels, and the quality of life of CKD patients at Dr. H. Andi Abdurrahman Noor Regional General Hospital in Tanah Bumbu Regency.This observational study used a cross-sectional design involving 34 hemodialysis patients at the time of the study. The variables studied included hemodialysis adequacy, malnutrition risk, depression levels, and quality of life. Data were analyzed using the Spearman Rank Correlation test at ? = 0.05.The majority of respondents were of productive age, female, retired, and had higher education. Furthermore, some respondents also had good hemodialysis adequacy, good nutritional status, mild depression, and a very good quality of life. There was a significant association between hemodialysis adequacy (p=0.019; r=0.401), malnutrition risk (p=0.001; r=0.530), and depression levels (p=0.014; r=0.416) and quality of life. This study shows that adequate hemodialysis, optimal nutritional status, and low depression improve patients' quality of life. It is recommended that nutritionists be placed in hemodialysis units as part of a multidisciplinary team to optimize nutrition, reduce the risk of PEW, and improve quality of life.

Abstract

Tingginya kasus balita wasting di desa Pekauman Kabupaten Banjar sebesar 10,7% lebih tinggi dari Kalimantan Selatan. Salah satu solusinya dengan meningkatkan pengetahuan dan ketrampilan praktek pola asuh makan ibu balita wasting dan kader dalam melakukan pendampingan gizi. Tujuan dari kegiatan ini adalah melaksanakan program peningkatan pengetahuan dan ketrampilan praktek pola asuh makan ibu balita wasting dan pemberian makanan anak  serta meningkatkan ketrampilan kader  dalam melakukan pendampingan gizi. Metode yang digunakan adalah dengan edukasi kader dan ibu balita dengan penyuluhan serta diskusi  untuk meningkatkan pengetahuan dan  ketrampilan ibu balita dan pendampingan oleh kader ke ibu. Kegiatan edukasi di desa Pekauman dapat meningkatkan pengetahuan  kader dan ibu tentang pengertian wasting, pola asuh makan dan praktek pemberian makan oleh ibu balita, melalui  penilaian Pre dan Post test  serta penilaian ketrampilan ibu baik dalam membuat makanan anak sesuai usia, dan ketrampilan  kader meningkat dalam melakukan pendampingan  dan konseling. Kegiatan pengabdian masyarakat ini meningkatkan pengetahuan dan ketrampilan ibu melaksanakan  pola asuh  makan dan terjadi peningkatan ketrampilan kader dalam praktek pola asuh makan.

Abstract

Diabetes Mellitus (DM) is a chronic metabolic disorder affecting 589 million people worldwide in 2024, including 11.3% in Indonesia. While nutrition counseling is a cornerstone of DM management, conventional media such as leaflets often fall short in improving dietary compliance. This study aims to analyze the comparative effectiveness of booklets versus leaflets in enhancing the knowledge of patients with Type 2 DM. This quasi-experimental study employed a nonequivalent control group pretest-posttest design at Nutrition Clinic of dr. H. Andi Abdurrahman Noor Regional General Hospital. The sample included 32 patients with T2DM. The variables assessed were nutrition counseling using leaflets and booklets, and patient knowledge. Data were analyzed using the Wilcoxon and Mann–Whitney tests. The results showed a significant difference in knowledge before and after nutrition counseling using both leaflet and booklet (p=0.000). There was a significant difference in the average knowledge score between the leaflet and booklet groups (p=0.006), with the leaflet group increasing by 5.81, whereas the booklet group increased by 7.06. In conclusion, booklets were more effective in improving knowledge. DM patients are encouraged to use the booklet to enhance their understanding of the DM diet and support healthier daily eating habits.
