Abstract

Terong belanda adalah buah yang mengandung banyak gizi dan manfaat. Namun masyarakat kurang tertarik mengonsumsi terong belanda karena memiliki rasa manis asam, berukuran kecil, dan mengandung banyak biji. Oleh sebab itu diperlukan adanya inovasi produk untuk meningkatkan daya tarik konsumen. Salah satu produk yang mengalami mudah ditemukan, dan banyak diminati adalah yogurt. Pengolahan menjadi yogurt diharapkan dapat meningkatkan kesukaan masyarakat terhadap terong belanda, meningkatkan gizi dan manfaat kesehatan. Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan sari terong belanda dan suhu fermentasi terhadap vitamin C dan pH yogurt. Penelitian ini menggunakan metode eksperimen dengan rancangan acak kelompok dengan pola faktorial 3 x 2 dan ulangan sebanyak 2 kali. Faktor S (suhu fermentasi) S1 (suhu ruang 28-32℃) dan S2 (suhu inkubasi 43℃). Faktor T (penambahan sari buah terong belanda) T1 (15%), T2 (20%), T3 (25%). Variabel yang diukur adalah kandungan vitamin C dan pH yogurt. Hasil penelitian menunjukkan bahwa penambahan sari terong belanda dan suhu fermentasi memberikan pengaruh nyata terhadap kandungan vitamin C (P<0,05), namun tidak berpengaruh nyata pada pH (P>0,05). Yogurt yang dibuat dengan menambahkan sari terong belanda sebanyak 25% dan difermentasi pada suhu ruang memiliki vitamin C tertinggi yaitu sebanyak 91,49 mg/ kg dan pH terendah yaitu 4,3

Abstract

Wasting pada anak usia rawan gizi (5-12 tahun) menggambarkan kondisi gizi kurang - buruk dan menjadi manifestasi Kurang Energi Protein (KEP). Asupan makanan dalam bentuk enteral direkomendasikan untuk anak dengan kondisi wasting. Peneliti mendesain enteral tinggi protein berbasis kedelai dalam sediaan Isolated soy Protein (ISP) dengan metode RAL. Penelitian ini bertujuan untuk menganalisis statsitik deskriptif kandungan energi dan zat gizi makro formula dengan komposisi bubuk ISP (FA 0%, FB 5%, FC 7,5%, dan FD 10%), susu skim (5%), MCT oil powder (5%), gula pasir (10%), dan air mineral hingga formula mencapai 200 ml. Uji organoleptik dilakukan untuk menganalisis perbedaan kesukaan antara keempat sampel pada panelis anak 5-12 tahun. Uji organoleptik dianalisis dengan uji non-parametik Kruskall Wallis dan uji sampel independent Mann-Whitney untuk mengetahui perbedaan kesukaan antar sampel. Uji dinilai bermakna atau terdapat perbedaan jika p-Value < 0,05. Rerata kandungan energi formula FA (0%), FB (5%), FC (7,5%), dan FD (10%) berkisar senilai 211,9-241,4 kkal dalam 200 mL. Rerata kandungan protein formula berkisar senilai 11,01-16,96 gram. Lemak formula berkisar pada rata-rata sebesar 7,26-7,56 g. Rata-rata karbohidrat senilai 28,51-29,27 g. Hasil analisis uji perbedaan kesukaan organoleptik menghasilkan nilai p-Vaue < 0,05. Terdapat kandungan energi dan zat gizi makro dari keempat formula dengan FB (5%) sebagai formula modifikasi terbaik dengan kandungan yang paling mendekati FA (0%) sebagai formula kontrol. Uji organoleptik menunjukkan terdapat perbedaan yang signifikan terhadap kesukaan rasa, aroma, warna, dan tekstur.

Abstract

 Hypercholesterolemia estimated to cause 2.6 million deaths and 29.7 million disability problems.The incidence of Noncommunicable diseases (NCD) such as coronary heart disease (CHD), type2 diabetes, and some types of cancer can be involved with hypercholesterolemiaed. Red dragonfruit (Hylocereus polyrhizus) peel contains total phenolic compounds, flavonoids and dietary fiber.Red dragon fruit (Hylocereus polyrhizus) peel, which was originally considered as trash can beused to produce yogurt. This study aimed to analyse the effect of red dragon fruit (Hylocereuspolyrhizus) peel yogurt on levels of fasting blood glucose, lipid profile and microbial activity inhypercholesterolemic Wistar rats. This was an experimental- research with pre and post-test control group design. A total of 25 male Wistar rats were divided into five groups randomly. Hypercholesterolemic conditions in the Wistar rats were obtained from consuming solution consisted of 1% of cholesterol powder and 0.5% of cholic acid for 14 days. Each Wistar rats received 20 g/day standard feed. The grouping were Group 1 (negative control group); Group 2 (hypercholesterolemic group); Group 3 (1.8 ml/kg b.wt/day of dragon fruit peel yogurt); Group 4 (2.7 ml/kg b.wt/day of dragon fruit peel yogurt); Group 5 (3.6 ml/kg b.wt/day of dragon fruit peel yogurt). The intervention was performed for 28 days. Blood glucose levels and lipid profiles weremeasured before and after the intervention. Blood glucose, lipid profiles and microbial activity weremeasured using GOD-PAP, automatic biochemistry analyser and pour plate method respectively.Data were analysed using paired t test and one-way ANOVA. Blood glucose, TC, LDL-C, TGlevels were decreased, and the other side HDL-C was increased significantly in the Group dragonfruit peel. There was no difference in the total number of microbes in all groups. Dragon fruit peelyogurt is effective in improving glucose levels and lipid profile of hypercholesterolemic Wistar rats.

Abstract

Determining the prevalence of sarcopenia and identifying associated factors can aid in early detection and treatment among community-dwelling elderly. This study aims to estimate the prevalence of sarcopenia and identify associated factors. This cross-sectional study was conducted in the elderly community within the two areas of Public Health Center, Semarang, Indonesia, through random sampling. Sarcopenia was defined based on the 2019 Asian Working Group for Sarcopenia (AWGS) criteria. Data on socio-demographics, clinical, and functional status were collected and associated factors analyzed using multivariable logistic regression. Of the 153 participants, the prevalence of severe sarcopenia was 50.33%, and overall sarcopenia prevalence was 44.44%. Elderly individuals with severe sarcopenia had a mean age of 69.45, with a higher occurrence in women (79.2%) compared to men. Age (p=0.003; APR: 1.105; 95% CI: 1.035-1.180), toilet type (p=0.002; APR: 4.194; 95% CI: 1.677-10.493), and being female (p=0.049; APR: 2.341; 95% CI: 1.003-5.460) were identified as risk factors for severe sarcopenia. The prevalence of severe sarcopenia is elevated among community-dwelling elderly. Sarcopenia was defined as low muscle mass with low handgrip strength and/or low gait speed. Routine check-ups are needed to detect sarcopenia and its risk factors in primary health care to enable early intervention for sarcopenia in the elderly.

Abstract

ABSTRAK Perilaku Hidup Bersih dan Sehat (PHBS) merupakan kebiasaan dan tindakan yang memiliki pengaruh terhadap kesehatan individu dan masyarakat. Penerapan PHBS merupakan sikap dan tindakan yang harus diaplikasikan mulai dari kelurga, sekolah, dan komunitas. Kegiatan pengabdian ini bertujuan untuk melakukan pendampingan sekaligus sosialisasi PHBS bagi anak sekolah yang berkaitan dengan pengertian PHBS serta contoh implementasi kebiasaan PHBS. Metode pelaksanaan kegiatan pengabdian menggunakan sosialisasi, pendampingan, role play sekaligus edukasi kesehatan. Mitra pengabdian kepada masyarakat adalah para siswa usia 7-9 tahun di SD Antonius 02 Semarang sebanyak 194 orang. Hasil kegiatan pengabdian menunjukkan bahwa kegiatan sosialisasi, pendampingan, role play dan edukasi kesehatan yang dilakukan mampu meningkatkan pengetahuan para siswa yang berkaitan dengan kebiasaan hidup bersih dan sehat. Pengabdian ini juga memperoleh kesan positif dan diharapkan untuk dilanjutkan ke sekolah lain agar semakin memicu atmosfer PHBS pada anak sejak usia dini. Kata Kunci: Anak Sekolah, Kebiasaan, Perilaku Hidup Bersih dan Sehat  ABSTRACT Clean and Healthy Living Behavior (PHBS) is a habit and action that greatly affects one's health. The implementation of PHBS is something that should be applied by everyone, both in the family, school, and community. The problem found in this service activity is the lack of knowledge, attitudes, and the application of clean and healthy living habits in daily life. For this reason, the solution offered to partner problems is socialization related to clean and healthy living habits, as well as how to get used to clean and healthy behavior. The method of implementing the activity is to provide socialization and video playback on how to get used to clean and healthy living which aims to increase the capacity of SD Antonius 02 children in getting used to living clean and healthy, so as to prevent disease attacks. From this service activity, results were obtained in the form of increasing knowledge of SD Antonius 02 students about clean and healthy living behavior, besides that they also received a positive response from all participants. PHBS socialization activities can be continued in other schools as an effort to foster clean and healthy living behavior in children from an early age. Keywords: School Children, Behavioral, Healthy

Abstract

Indonesian Migrant Workers (PMI) are Indonesian citizens working abroad. To meet economic needs, many Indonesian citizens choose to work abroad. The problem found in this service activity is that working abroad has many consequences, one of which is being away from family. However, if they return to Indonesia, Indonesian Migrant Workers (PMI) have concerns about the skills they have to work in Indonesia. For this reason, the solution offered to partner problems is socialization related to digitalization of entrepreneurship through the use of social media, as well as ways to market business products. The purpose of this activity is to increase PMI's capacity as a provision for preparation to make a living after the employment contract in Korea has ended. Thus, PMI can work in Indonesia and be close to family. The method of implementing the activity is to provide socialization with the target to the Indonesian Student Association (PPI) and Indonesian Migrant Workers (PMI) in Korea. The result of this service activity is an increase in knowledge, skills, and motivation from the participants, namely PPI and PMI. In addition, it also received a positive response from all participants. This socialization activity is expected to be carried out to Indonesian migrant workers in other countries.

Abstract

This study aimed to assess the effect of kidney bean yoghurt on the immune system and sleep quality in healthy elderly subjects in Yogyakarta. The study included 17 healthy elderly aged 60-81 years. The study design was a quasi-experimental, before and after design conducted at the Abiyoso Institutional Care for elderly in Yogyakarta from April to May 2018. The subjects were given 200 ml kidney bean yoghurt everyday for 14 days. The immune system status was measured by lymphocyte count and the sleep quality was measured by the PSQI with higher scores in dicating worse sleep quality. Paired t-test was used for data analysis. Lymphocyte count after intervention (28.89±7.09) was higher than before intervention (25.96±7.41), and it was statistically significant (p=0.006). The sleep quality index after the intervention (4.88±1.83) was lower than before intervention (8.06±3.09) and the difference was statistically significant (p=0.001). This intervention study indicates that kidney bean yoghurt significantly improves both immune systems and sleeps quality among our elderly subjects.

Abstract

The high risk of accidents in elementary school environments requires physical education teachers to have emergency response competencies, including the ability to perform first aid and cardiopulmonary resuscitation (CPR). However, most teachers have not received adequate training in this area. This community service activity aims to enhance the capacity of PE teachers through theoretical and practical training covering CPR, AED use, and the integration of safety protocols into physical education activities. The implementation method includes initial coordination with the school, a pretest, classroom and field training, demonstrations, a posttest, and evaluation using a Google Form-based questionnaire. The results of the activity showed a significant improvement in participants' competencies: 90% of teachers were more skilled in handling emergencies, 95% were able to integrate safety protocols into learning, and 100% obtained formal competencies in CPR skills. Additionally, 95% of teachers demonstrated improved support for the school's medical team system, and 90% were able to incorporate physical safety into the curriculum. These findings confirm the effectiveness of systematic and practical training in enhancing teachers' preparedness. In conclusion, strengthening teachers' competencies in school safety should be an integral part of education policy, and such training should be conducted regularly to ensure comprehensive student safety.
