Abstract

One of the livestock products that play an important role in improving food security in Indonesia is beef. Increased income, changes in consumption patterns, and population growth and increased public knowledge about nutrition affect the need for the number of cattle being slaughtered as one of the producers of meat protein in Indonesia. The purpose of this research was to determine the production capacity and consumption of beef in the province of Nusa Tenggara Timur (NTT). This research was conducted in NTT for 6 (six) months, starting from June to November 2019. This study of beef consumption is included in the case study classification. The type of data used in this study are primary and secondary data obtained from sources related to this study. Analysis of the data obtained was carried out descriptively, namely analysis carried out by way of explanation, writing, and statements that could be in the form of words (qualitative) and numbers (quantitative). Data analysis was conducted to determine the production capacity of beef cattle, beef production, and consumption of beef. The results of this study indicate that Slaughter cattle for the adequacy of consumption and domestic needs in the province of Nusa Tenggara Timur is still fulfilled for the community and in accordance with government recommendations (legislation), namely, cattle slaughtering is still below 10% of the total population of existing cattle (1,041,023 tails). Factors affecting the adequacy of domestic consumption and demand for beef in NTT, namely: (1) low purchasing power so that beef consumption is also low; (2) the community is not yet aware of the importance of animal protein (nutrition) needs for family consumption so that the level of beef consumption reaches 12% of the total protein requirement for each person; and (3) animal protein substitutions from other livestock which are cheaper affect people's thinking patterns in consuming beef.

Abstract

Bali cattle (Bos javanicus) are common species distributed throughout Indonesia to survive in tropical hot, and humid climates. Fluctuating asymmetry (FA) is a random deviation from perfect bilateral symmetry. FA is often used to measure developmental stability in individuals and can be used as a marker for the impact of environmental and genetic stress. This study aims to investigate the pattern of developmental instability in Bali cattle as caused by environmental stress at various altitudes using the FA index. FA indexes in this study were used to compare asymmetrical physical traits of Bali cattle in Sembalun high altitude and Serading low altitude. Sixty-five Bali cattle were used in this study reared at different altitudes, namely Serading, Sumbawa Island (50 m above sea level), and Sembalun, Lombok Island (1,186 m above sea level). The physical traits of Bali cattle measured were horn circumference (horn), a distance of hip to spine bone (pelvic), metatarsal circumference (metatarsal), and metacarpal circumference (metacarpal). The FA1 and FA5 indexes showed significant metacarpal differences between Bali cattle reared at Sembalun and Serading population (P<0.05). FA11 multiple trait index as a composite of all traits revealed a significant difference as well. (P<001). It can be concluded that various heat stress by altitude impacts the asymmetry of Bali cattle.

Abstract

The objective of this experiment was to examine the effect of protected lemuru fish oil on rumenmicrobes and its fermentation  in buffalo and cattle fattened in feedlot.  Six  male buffaloes and eight malecattle aged between 1,5-2 years old with initial live weight of 218,66±16,28 kg and 217,37±15,44 kg,respectively, were used in this study. They were fattened in feedlot using 35% forage and 65% concentratediet for 2,5 months. The protected lemuru fish oil was in the form of dried carboxylate salt mixture (DCM)and given in the form of concentrate mixture,  45 g DCM/kg concentrate. The feeding treatments includedPO (forage+concentrate) dan P1 (forage+concentrate+DCM). At the end of feeding trial, the animals wereslaughtered and the rumen liquor were collected to analyze rumen microbes and its fermentation.  Thedata were  analyzed using a completely randomized design with 2x2 factorial models, feeding trial (PO and P1) as the first factor  and  animals as second factor (buffaloes and cattle). The results showed that nointeraction was found between the two factors on  rumen pH, NH3 concentration, partial VFA, and rumenmicrobes. There were interaction effect of  diets treatment and animal species on total VFA. Total VFAconcentration in buffaloes  with DCM supplementation was significantly higher (P<0,05) than cattle  withor without DCM supplementation. DCM supplementation decreased rumen pH and increased total VFA.The buffaloes had significantly higher total VFA, proteolitic bacteria, and butiric acid,  but  had lowerrumen pH and protozoa population compared to those of cattle. It is concluded that DCM supplementationcan increase the effectivity of   protected fish oil concentration and proportion of VFA as well as rumenmicrobial population.
