Abstract

Pineapple or which has the Latin name Ananas Comosus L. MERR has two main ingredients, namely vitamin C and manganese. Vitamin C is very important for the growth and development of the immune system and can help the absorption of iron from food, meanwhile manganese is a natural mineral that has antioxidant properties or can ward off evil compounds in the body and help increase the body's immunity to avoid the Covid-19 disease outbreak.. Therefore, researchers are interested in researching pineapple juice, because what people consume every day is pineapple juice. The aim of this research was to determine the levels of vitamin C in pineapple juice (Ananas comosus L. MERR) and whether the vitamin C content in pineapple juice (Ananas comosus L. MERR) can meet daily nutritional adequacy rates. This research method uses quantitative methods. Where is the relationship between the independent variable and the dependent variable. The independent variable is pineapple filtrate and the dependent variable is vitamin C content. The parameters of this research are vitamin C levels using the UV Spectrophotometry method. The conclusion of this study shows that the results of the examination of pineapple juice levels are 54.6816 21.6678 mcg/g, and the vitamin C content in pineapple juice can meet the daily nutritional adequacy figure, namely 33 mg to 76 mg.

Abstract

Some food industries still use synthetic dyes. Synthetic dyes, if consumed, can harm your health. Turmeric can be used as a natural food coloring. This natural coloring is applied to sweet jelly. This natural coloring agent must be used in fresh juice. To extend the use time of the natural dyes turmeric-bay leaves, ginger-bay leaves, this research was carried out in a variety of storage conditions without using preservatives. The aim of the research was to determine the results of the content of secondary metabolite compounds in turmeric-laurel extract, curcuma-laurel extract, turmeric extract and curcuma extract, in making solid preparations using preservatives, namely citric acid, maltodextin and sucrose. This research uses experimental methods with Sari method is done on a mixture of turmeric-bay leaves and ginger-bay leaves using a water solvent using the distillation method. Determination of variations in storage conditions was carried out for 7 days and the effect of storage temperature. Color stability and intensity measurements were carried out using visible spectrophotometry and characterization methods. The results of this research were obtained. The absorbance intensity test on turmeric-bay leaves was carried out at a wavelength of 425.14 nm with a result of 0.442 (day 1), ginger-bay leaves had an absorbance of 0.490 ( day 1). In the color stability test, there was a change in color from day 3 at drying cupboard temperature, at refrigerator temperature and at room temperature, the color remained stable.

Abstract

Indonesia is a country that is famous for its wealth of natural energy sources and plants that have medicinal properties. Avocado is one of the plants that residents have used from generation to generation for traditional medicine. Avocado (Persea americana Mill.) is a plant that contains many compounds that have antioxidant properties. Secondary metabolite bioactive compounds that play a role are saponins, alkaloids, flavonoids, steroids, safrole, and tannins. Antioxidant compounds are electron distributors, which can counteract oxidants' negative impacts. This research aims to determine the ethanol extract content of avocado leaves containing secondary metabolites and the IC50 value of avocado leaf extract. One method of measuring free radicals by antioxidant compounds is to use the DPPH (1,1-diphenyl-2-picrylhydrazyl) method with a UV-Vis spectrophotometer at a wavelength of 516 nm and vitamin C as a comparison. The research showed positive results in the phytochemical screening of Simplicia and avocado leaf extract against alkaloids, flavonoids, tannins, steroid saponins, and glycosides. It can be concluded that the results of research on the antioxidant activity of avocado leaves have an IC50 value of 9.24 µg/ml in the very strong category, equivalent to vitamin C comparison, which has antioxidant activity with an IC50 value of 1.942 µg/ml in the very strong category.

Abstract

Antioxidants are chemical compounds that, in specific amounts, can inhibit or slow down cell damage caused by free radicals. Antioxidants function to protect the body from free radical attacks. The more free radicals in the body, the more cells will be damaged. One plant that contains antioxidant compounds is casturi mango (Mangifera casturi Koesterm.). Casturi mango (Mangifera casturi Koesterm.) is a plant that contains secondary metabolite compounds such as saponins, tannins, triterpenoids, flavonoids, and phenolics which have potential as antioxidants. This research aimed to determine differences in secondary metabolite compounds and antioxidant activity of ethanol extract of casturi mango leaves (Mangifera casturi Koesterm.) growing in Gampong Drien Bungong, Pidie Jaya. The stages of this research include sample processing, making ethanol extract of kasturi mango leaves, characterization examination, phytochemical screening, and antioxidant activity test. The sample used was musk mango leaves. The ethanol extract of casturi mango leaves (Mangifera casturi Koesterm.) was extracted using maceration with 96% ethanol solvent. The antioxidant activity test was carried out using the DPPH (1-1-Diphenyl-2-Picrylhydrazyl) method using a UV-Vis spectrophotometer at a maximum wavelength of 516 nm and vitamin C as a comparison. Based on the results of phytochemical screening tests, there are differences in secondary metabolites in the ethanol extract of kasturi mango leaves in Gampong Drien Bungong, Pidie Jaya, namely alkaloids, flavonoids, tannins, saponins, steroids, and glycosides, and the results of antioxidant activity obtained an IC50 value of 9.06 ppm with the category very strong, equivalent to the antioxidant potential of vitamin C, having an IC50 value of 4.63 ppm in the robust category.

Abstract

The yellow wood sampled was taken from the Samarkilang area of Central Aceh. The use of yellow wood plants as herbal medicinal ingredients. The chemical compounds contained in Yellow Wood are alkaloids, phenolics, flavonoids, saponins, and tannins. Phenolic compounds and flavonoids have activity as antioxidants. The purpose of this study was to determine the chemical compounds contained in the ethanol extract and to determine the total flavanoid value of the ethanol extract of the yellow wood (Arcangelisia flava (L.) Merr). This research method is an experimental method which includes processing plant materials, making 50%, 70%, and 96% ethanol extracts. Examination of characterization, phytochemical screening and determination of total flavonoid content of the ethanol extract of Kayu kuning using the Uv-Vis spectrophotometry method. Yellow wood extract was prepared by maceration method using various ethanol concentrations of 50%, 70% and 96% the extract obtained was concentrated with a rotary evaporator. Furthermore, the determination of total flavonoid levels was carried out using the Uv-Vis spectrophotometry method. The results of the phytochemical screening on the ethanol extract of Kayu kuning contained groups of chemical compounds such as alkaloids, flavonoids, saponins, tannins, and steroids/triterpenoids. Determination of total flavonoid content was carried out by determining the maximum wavelength of quercetin, operating time, measuring the quercetin calibration curve and calculating total flavonoid content using the Uv-Vis spectrophotometry method. The results of determining total flavanoid levels in ethanol solvent extract with a concentration of 50% 0,96882 ± 0,2157 mgQE/g, in ethanol solvent extract with a concentration of 70% was 2,6693 ± 11,7041 mgQE/g, and in ethanol solvent extract with a concentration of 96 % is 3,838 ± 1,3036 mgQE/g.

Abstract

Raru (Corylelobium lanceolatum Craib) is a group of endemic tropical forest plants from the Dipterocarpaceae family in Indonesia. Raru is a term for a group of types of bark added to palm sap, which aims to increase the taste and alcohol content of the drink. People in Sumatra believe that raru bark (Cotylelobium lanceolatum Craib) can be used as an antidiabetic drug. This study aims to determine the antioxidant activity of raru bark, the toxicity activity of raru bark extract, and the secondary metabolites in raru bark. This research was conducted in descriptive was born with a descriptive method. The sample used was raru bark. The research phase included sample preparation, plant identification, simplicial manufacture, antioxidant activity test, DPPH standard stock preparation, blank solution preparation, phytochemical screening, antioxidant activity test based on IC50, Toxicity test, and toxicity activity test based on LC50 value. The result obtained in testing the antioxidant activity of raru bark had an IC50 value of 94.25 µg/mL in the vary strong category. While the result of the probit analysis for the toxicity of raru bark extract using the BSLT method obtained an LC50 value of 350.9942 µg/mL. It is in the toxic category and has the potential to be an anticancer.

Abstract

The use of plant-based traditional medicine remains a common practice in developing countries, with more than 80% of the population relying on it for healthcare and treatment. In Indonesia, natural medicines continue to be a primary choice for public health, aligning with local traditions and cultural practices. One such medicinal plant is raru bark, which possesses various pharmacological activities, including antidiabetic, astringent, antilaxative, antibacterial, antiseptic, antidiarrheal, and blood-clotting properties. This study aims to characterize the methanol extract of raru bark and determine its flavonoid content using UV-Vis spectrophotometry. The research stages included plant material processing, methanol extraction, characterization tests, macroscopic and microscopic examinations, phytochemical screening, and flavonoid quantification. Phytochemical analysis revealed that the methanol extract of raru bark contains flavonoids, tannins, saponins, and triterpenoids. Characterization tests showed that all evaluated parameters met the required standards. Flavonoid quantification was performed by determining the maximum wavelength of quercetin using UV-Vis spectrophotometry at different solvent concentrations. The results indicated that the total flavonoid content at a 96% solvent concentration was 1.625 ± 0.153 mgQE/g, at 70% was 1.318 ± 0.003 mgQE/g, and at 50% was 1.146 ± 0.006 mgQE/g.

Abstract

Currently, people are beginning to shift towards traditional medicine using natural ingredients. One of the medicinal plants is Yellow Wood (Arcangelisia flava (L.) Merr). Yellow wood has been proven to have antioxidant, antimalarial, antidepressant, antidiabetic, and anticancer activities. The purpose of this study is to determine the antioxidant activity of yellow wood by analyzing its IC50 value and to evaluate the toxicity of yellow wood extract by determining its LC50 value. In this study, the antioxidant activity of the extract was tested using the 1,1-diphenyl-2-picrylhydrazyl (DPPH) method, while the toxicity of yellow wood extract was assessed using the brine shrimp lethality test (BSLT) method with several concentration variants. The analysis of antioxidant activity in yellow wood using the 1,1-diphenyl-2-picrylhydrazyl method resulted in an IC50 value of 9.65 µg/ml, while vitamin C had an IC50 value of 3.96 µg/ml. Based on these results, both yellow wood and vitamin C fall into the category of very strong antioxidant activity. The probit analysis of the toxicity test of yellow wood extract using the brine shrimp lethality test method showed an LC50 value of 287.872 µg/ml, which is categorized as toxic.

Abstract

Protein helps the body to grow and maintain tissue and replace damaged cells. If the intake of protein in toddlers is insufficient during their growth period, the growth and development of toddlers can be delayed and nutritional problems related to stunting can arise. And the level of protein adequacy affects the occurrence of stunting. One of the highly nutritious and easily accessible local foods that can be used as additional food is green beans, soybeans have the best source of vegetable protein, red beans have a protein content of between 16% and 20%, and are also a source of minerals and vitamins. The objective of the research was to determine the protein content in several types of beans (red beans, green beans, fresh soybeans) for handling stunting using the kjeldahl method and visible spectrophotometry. The method used in this research used the kjeldahl method, a simple way to determine total nitrogen in samples of several types of beans. This research also used a spectrophotometric method that can determine specific protein levels, had high accuracy and could measure small substances. The protein content obtained in the samples using the Kjeldahl method is Fresh Soybeans 35,19 gram, Green Beans 33,7 gram and Red Beans 28,6 gram divided by 100 grams of sample. The spectrophotometric method is Fresh Soybeans 29,09 gram, Green Beans 17,82gram and Red Beans 13,63 gram divided by 100 grams of sample. The protein content in the samples, namely fresh soybeans, green beans and red beans can be used in handling stunting because the levels obtained in the three samples can meet daily protein.

Abstract

Penelitian dan pengabdian kepada masyarakat mengenai pengembangan jamu instan kunyit asam dengan pendekatan edukasi partisipatif di Desa Sumber Makmur. Berawal dari fakta masyarakat yang masih menggunakan jamu tradisional yang memerlukan proses perebusan yang lama, kurang bersih, dan tidak awet. Situasi ini menunjukkan perlunya inovasi dalam produk jamu yang lebih sesuai dengan kebutuhan zaman, seperti jamu instan kunyit asam, yaitu suplemen herbal dalam bentuk bubuk yang mudah diseduh, bersih, tahan lama, serta dikemas secara modern dan menarik. Kunyit (Curcuma longa L.) dipilih karena mengandung kurkumin yang berfungsi sebagai antiinflamasi, antioksidan, dan antibakteri. Di sisi lain, asam jawa (Tamarindus indica L.) memiliki asam organik yang efektif untuk memperlancar pencernaan, menyegarkan tubuh, dan membantu menjaga kesehatan secara alami. Program ini menerapkan metode Participatory Action Research (PAR) yang menekankan peran aktif masyarakat dalam setiap langkah, mulai dari penentuan masalah, perencanaan, pelatihan, hingga evaluasi. Edukasi partisipatif dilakukan melalui sosialisasi, diskusi kelompok, dan workshop pembuatan jamu instan kunyit asam.
