Abstract

A canteen in the campus environment is one of the infrastructures that educational units must own that will support educational activities if it is managed well by paying attention to the nutritional content of food and implementing proper hygiene and sanitation. This research aims to find an overview of the canteen management policy at Sriwijaya University. This research used a qualitative design with 23 research informants, consisting of 2 Vice Chancellors, 1 Dean, 2 Deputy Deans, 6 canteen owners, 6 employees, and 6 students at Sriwijaya University. Data collection was carried out using in-depth interviews and observation.The data was  analyzed using the Content Analysis method and presented in a narrative for interpretation. Monitoring of each faculty's canteen for the management of a healthy canteen has mainly been carried out by handlers or sellers. However, facilities and infrastructure, such as access to electricity, clean water, canteen area, and canteen location, still need to be improved. Regarding food quality, practices, and sanitation, the food sold in each canteen already has good nutritional content. The implementation of healthy canteen management policies has been regulated in policies per faculty, although it is not evenly distributed. It is stated that the central policy for managing healthy canteens is still being designed. The implementation of canteen management policies at Sriwijaya University is that facilities and infrastructure still need to be improved, he food handlers and canteen managers are expected to continue to pay attention to food hygiene and sanitation of canteen buildings by the Indonesian Minister of Health Regulation Number 1096 of 2011.

Abstract

Hemodialysis patients experience changes in all aspects of their life, particularly due to fluid and dietary restrictions. Excessive interdialytic weight gain and malnutrition are common problems that negatively impact the increase of morbidity and mortality in these patients, as well as a decrease in their quality of life. This research aims to determine the relationship between interdialytic weight gain and nutritional status with the quality of life of chronic kidney disease patients undergoing hemodialysis at Dr. Mohammad Hoesin General Hospital Palembang. 102 patients were involved in this cross-sectional study, and they were taken by purposive sampling. IDWG data was collected using The Interdialytic Weight Gain (IDWG) observation sheet, nutritional status was identified using the Dialysis Malnutrition Score (DMS), and quality of life was assessed using The Kidney Disease Quality of Life Short Form-36 (KDQOL-36TM). The data analysis used in this study is Fisher Exact test. Based on The Fisher Exact test, there is a relationship between IDWG and quality of life (p=0.048). The results of statistical analysis also showed a relationship between nutritional status and quality of life (p=0.047). Most patients had IDWG in the mild category, good nutritional status, and poor quality of life based on KDQOL-36TM. This study concludes a relationship between interdialytic weight gain and nutritional status with the quality of life of patients undergoing hemodialysis. It is recommended that health workers in hemodialysis units monitor interdialysis weight gain regularly and conduct routine nutritional screenings to prevent a decrease in quality of life.

Abstract

Adolescent girls are more susceptible to anemia so good nutritional intake is needed to meet these iron needs. to meet iron needs in adolescents. Bangun-bangun leaves biscuits and anchovies that are rich in iron can be a solution to meet the iron needs of adolescent girls. This study aimed to determine the selected formulation, the effect of adding bangun-bangun leaves and anchovies to biscuits and the iron content of biscuits. This research was an experimental research, with the RAL (Complete Randomized Design) research method. Laboratory tests on the products of bangun-bangun leaves and anchovies were conducted to determine the iron content contained in the products. Data collection was conducted on 22 fairly trained panelists, to test the organoleptic of the products of bangun-bangun leaves and anchovies. Based on the results of the hedonic test, F3 biscuits were the most preferred formula compared to other formulations. Based on statistical tests, data was obtained that there was a significant difference (p <0.05) between the color, aroma, taste and texture of all formulas. The results of laboratory tests showed that the more bangun-bangun leaves and anchovies were added, the higher the iron content in the biscuits. By consuming F3 biscuits as additional food, it could meet the iron needs of adolescent girls, which was 15% of the total daily requirement. F3 biscuits can be an alternative substitute for snacks or supplementary food for adolescent girls to meet their iron intake needs so that they can prevent anemia.

Abstract

Elevated blood glucose when fasting is among the hazards associated with Diabetes Mellitus (DM). Obesity and diabetes mellitus are tightly associated. Body Mass Index (BMI) and Waist-Hip Ratio (WHR) measurements may be used to determine obesity. Prabumulih is known as city with a DM incidence of 2.02% in 2018, was placed second in South Sumatra. This research aims to investigate the relationship between BMI and WHR and older patient fasting blood glucose level in Tanjung Rambang Public Health Center operating region. Cross-sectional observational analysis is the method used in this study. The pre-elderly (45–59 years old) who resided in Tanjung RambangPublic Health Center working area made up as the population. Purposive sampling was used to choose 190 participants, meeting inclusion and exclusion criteria. This research use univariate and bivariate data analysis (using Chi Square test α=0.05). The majority of respondents (66.8%) are overweight; 53.2% of respondents had abnormal WHR; and 15.3% of respondents still had abnormal fasting blood glucose level. The analysis findings demonstrated no correlation (p=0.633) between BMI and fasting blood glucose level. The association between WHR and fasting blood glucose level is concluded to exist (p=0.001).

Abstract

Background: Nutritional anemia is a condition where the hemoglobin level in the blood is below normal. Anemia education is very important because there are still many young women who do not know about anemia. This activity aims to increase knowledge about balanced nutrition and anemia among young women in Menanti Village. Methods: This activity is in collaboration with the Head of Menanti Village, Kec. Kelekar Muara Enim Regency with a total of 36 participants, using lecture and discussion methods. The activities carried out are measuring knowledge and providing education using the lecture method. Results: Nutrition and anemia education activities in Menanti Village, Kelekar District, Muara Enim Regency were carried out on Tuesday 11 June 2024 for 36 young women. Conclusion: Community service activities by lecturers at the FKM Nutrition Study Program at Sriwijaya University in the form of nutritional education regarding anemia in young women using leaflets as a medium increase female students' knowledge regarding anemia. Knowledge about applying the principles of balanced nutrition is one of the efforts to prevent anemia from an early age in adolescents.

Abstract

Abstrak Kasus Diare selalu menjadi sepuluh besar penyakit yang selalu muncul di tiap puskesmas. Salah satu penyebabnya adalah kurangnya hygiene dari penjamah makanan. Beberapa studi menyebutkan bahwa penjamah makanan beranggapan tangan yang bersih adalah yang tidak terlihat kotor saja. Pemikiran seperti ini menjadi kekhawatiran pemerintah atas kondisi kesehatan masyarakat. Padahal kuman-kuman tak terlihat yang ada ditangan masih bisa menempel disana. Untuk memperbaiki anggapan yang keliru tentang tangan yang bersih hanya dari kasat mata, maka perlu dilakukan edukasi dengan konsep Emo-Demo agar masyarakat menjadi lebih paham tentang pentingnya cuci tangan pakai sabun (CTPS). Tujuan dari program pengabdian kepada masyarakat (PKM) ini adalah untuk meningkatkan pengetahuan dan kesadaran penjamah makanan dalam menerapkan kebiasaan CTPS. Metode PKM yang diterapkan berupa penyuluhan dan emo-demo disertai dengan evalusai melalui pre-test dan post-test.  Sasarannya ibu rumah tangga di Desa Babatan Saudagar, Kecamatan Pemulutan, Kabupaten Ogan Ilir. Hasil PKM ini menunjukkan bahwa pengetahuan tentang CTPS sebelum dan setelah penyuluhan terdapat peningkatan. konsep emo-demo juga membuat responden lebih memahami tentang pentingnya CTPS meskipun tangan terlihat bersih. Praktik baik dan pengetahuan yang meningkat diharapkan menjadi solusi untuk mengurangi kasus diare pada tingkat rumah tangga dan Indonesia pada umumnya. Kata kunci: Emo Demo; cuci tangan; pengetahuan; penjamah makanan. Abstract Diarrhea cases are always in the top ten diseases that always appear in every health center. One of the causes is the lack of hygiene of food handlers. Several studies have stated that food handlers assume that clean hands are those that do not look dirty. This kind of thinking is a concern for the government regarding the health conditions of the community. In fact, invisible germs on the hands can still stick there. To correct the mistaken assumption that hands are clean only from the naked eye, it is necessary to conduct education with the Emo-Demo concept so that the community becomes more aware of the importance of washing hands with soap (CTPS). The purpose of this community service program (PKM) is to increase the knowledge and awareness of food handlers in implementing CTPS habits. The PKM method applied is in the form of counseling and emo-demo accompanied by evaluation through pre-test and post-test. The target is housewives in Babatan Saudagar Village, Pemulutan District, Ogan Ilir Regency. The results of this PKM show that knowledge about CTPS before and after counseling has increased. The emo-demo concept also makes respondents more aware of the importance of CTPS even though hands look clean. Good practices and increased knowledge are expected to be a solution to reduce diarrhea cases at the household level and generally in Indonesia. Keywords: Emo-Demo; handwash; knowledge; food handler.

Abstract

Background: Physical and psychological alteration during adolescence could determine adolescents’ nutritional status, especially for female adolescents. The Indonesian Ministry of Health estimated about 26.5% of female adolescents aged 12 – 18 years in South Sumatera Province were at risk of chronic energy deficiency in 2017. One of the direct predictors which affect nutritional status is eating behavior. The research aims to describe perceived body image and eating behavior of high school female adolescents and find the correlation between these variables.Method: The research applied a cross-sectional design and chose respondents purposively with inclusion criteria i.e., female adolescents at 1st and 2nd grade from four different high schools in Palembang. About 138 respondents completed the questionnaires of body image and eating behavior. The data were analyzed using a chi-square test on SPSS Application.Results: The majority of respondents (55.80%) were not satisfied with their own body shape. Above 15%  were on a diet. However, the respondents’ perception of body image was mostly classified as positive (54.35%), and they also had good eating behavior (56.52%). Body image significantly impacted eating behavior (p = 0.035). Those with positive body image are possibly at 2.210 times chances of having good eating behavior (95%CI: 1.112 – 4.391). Female adolescents have to build self-appreciation, not only based on their physical appearance. The health nutritionists should work together with the government to facilitate them to practice healthy eating behavior which may improve their nutrition status.

Abstract

Food safety is a critical public health issue, especially in institutional settings such as university canteens, where large populations are served daily. Inadequate hygiene and sanitation practices by food handlers can lead to foodborne illnesses, placing students and staff at risk. This study evaluated hygiene and sanitation conditions in the canteens of a leading public university in South Sumatra Province, Indonesia, known for its active food service facilities. This study examined food handlers’ knowledge, attitudes, and practices and assessed the microbiological safety of chicken curry by testing for Escherichia coli (E. coli) contamination and total plate count. Using a cross-sectional design, data were collected from 35 food handlers and 7 chicken curry samples across multiple canteens. Structured questionnaires and microbiological analysis were employed. Results revealed that although most food handlers demonstrated good knowledge and positive attitudes, 57.1% exhibited poor hygiene practices. Several chicken curry samples exceeded acceptable E. coli levels, indicating potential health risks. These findings underscore the urgent need for ongoing hygiene training, strict supervision, and standardized certification for food handlers to mitigate microbial hazards and ensure food safety in university settings.

Abstract

A review of the socio-demographic characteristics and children fish consumption on stunting incidenceBackground: Social demographics and protein intake are widely known to be related to stunting incidence. Fish, a source of complete and high-quality protein, contains essential amino acids and high digestibility protein so the body can absorb high amounts of protein. Fish contains nutrients that are very important for the growth and development of toddlers.Objective: This research aims to determine the socio-demographic characteristics and consumption of fish and its processed products related to the stunting incidence in children aged 12-59 months. Methods: This cross-sectional study was conducted from August to September 2022 at three health centers in Palembang City. A total of 120 toddlers aged 12-59 months, with 51.7% male and 48.3% female, were selected by purposive sampling.  The variables of this study were toddler characteristics (age, gender, and nutritional status), family characteristics (mother's education, mother's occupation, number of family members, and family income), family fish consumption (type of fish product, portion size, frequency of fish consumption). The study was conducted by interviews using a questionnaire and anthropometric measurements of toddlers. Data were analyzed using the Chi-Square test with a 95% confidence interval and p<0.05 significance level. Results: Lower education of mothers, working mothers, large families, high family incomes, consuming processed fish with less large portions, and often consuming fish had a higher percentage of stunting incidence. On the other hand, it was found that all variables were not significantly correlated to stunting in toddlers.Conclusions: This study showed that socio-demographic variables and fish consumption were not significantly associated with stunting in children under five.

Abstract

Background: Primary school children need adequate nutrition to avoid deviations in growth and development. The imbalance between intake and nutritional adequacy will cause nutritional problems. This activity aims to determine elementary school children's diet, nutritional status, and knowledge about balanced nutrition. Methods: This service activity is integrated with the Food Consumption Assessment course of Nutrition Study Program students of the Faculty of Public Health Semester V. This activity participants were 5th-grade students of State Elementary School 129 Palembang, totaling 53 people. This activity was carried out in 3 stages: nutritional status screening, interviews related to food intake, and nutrition education. Results: Most of the students had underweight status 81.1% (weight-for-age) and normal nutritional status 69.8% (height-for-age) and 62.3% (BMI-for-age). Most students consumed incomplete meals (79.2%) and a deficit energy adequacy level (67.9%). There was an increase in knowledge at pretest (28.3%) and posttest (56.6%). Conclusion: There is an increase in student knowledge after being given education in the form of lectures and educational games with an additional average score of 8.49 points.
