Abstract

Until the year of 2008, Indonesia’s food consumption quality has not met its ideal pattern yet as shown by DDP (Desirable Dietary Pattern) Score 81.9 and the domination of rice consumption up to 64.1%. The government of Indonesia’s effort to accelerate food consumption diversification requires coordination and good preparation of all related stakeholders. Therefore the aims of this study were to assess the perceptions of the key persons at the local government regarding the food consumption diversification program and to analyze the strategy priority in achieving the acceleration program. This research was carried out in March to December 2008 and used a cross sectional study. Survey was done in three provinces which represent the differences of food consumption pattern. In each province, twenty head officers at the local government purposively selected were assessed about their perception. The perception data was measured by Likert scale and analyzed by the trends using percents and mode score. The strategy priority was measured by AHP (Analytical Hierarchy Process) method. This research shows that there are variations among stakeholders in the three provinces ranging “from poor to good” in perceiving the concept and application of food consumption diversification program. Nevertheless, local food is mainly defined as should be locally produced. Increasing the commitment and participation within all stakeholders (29. 3%) are the strategy priority besides promoting local food business through capital and marketing support (25.1%).

Abstract

This study aimed to analyze the impacts of feeding practices on underfive children’s nutritional status in different level of household food security. The study design was a cross-sectional study. Data on feeding practices were collected through personal interviews used questionnaire and nutritional status was calculated by using WHO-NCHS z-score. The average scores of feeding practices among samples were categorized as low (54.4%) and children of group very food-insecure had the lowest score of feeding practices. There was a significantly difference among the groups in the scores of sample’s feeding practices. The study showed that about 86 percent of children were categorized as normal (BB/TB indicator), but there were 11.6 percent categorized as wasting, while 32.0 percent and 54.3 percent categorized as underweight and stunting, respectively. Statistical analyses showed significant difference in term of nutritional status. There was a significant correlation between child’s nutritional status (BB/U, TB/U and BB/TB) and household food security. The study showed that child’s nutritional status (BB/TB) was influenced by energy’s adequacy level.

Abstract

Malnutrition is an ecological problem in the sense influenced by various aspects, as explained in the framework of UNICEF (1988). Indonesia as developing country at present still faced such a problem. Eco-nutrition is important to understand related factors affecting malnutrition in Indonesia to find out more effective programs. Eco-nutrition have three key areas : public health (access to quality water, sanitation and health services), socio economic (livelihood assets) and malnutrition. The purpose of this research was to study the linkages between socioeconomic and public health factors with the problem of underweight, stunted, and wasted in Indonesia.This research was conducted using cross-sectional study design, analyzed the 424 districts/cities in Indonesia. Data prevalence of underweight, stunted, wasted, level of education and public health factors (access to quality water, hygiene behavior, utilization of Posyandu, complete immunization coverage, incidence of diarrhea, and the incidence of acute respiratory infections (ARI) obtained from Riset Kesehatan Dasar (Riskesdas ) 2007. Socio-economic data (level of poverty and GDP/capita) obtained from the Central Statistic Agency (BPS). Statistical test of Pearson correlation and stepwise linear regression method were implemented to understand factors affecting underweight, stunted, wasted and correlation among variables. The study shows that factors affecting underweight were educational level, poverty level, hygiene behavior and use of Posyandu. While factors affecting stunted were GDP/capita, education level, poverty level, hygiene behavior, and utilization of Posyandu. Factors affecting wasted were hygiene behavior, utilization of Posyandu and complete immunization.

Abstract

This research aims to analyze underlying factors affecting child malnutrition at Timor Tengah Utara district, NTT. The design was a cross-sectional study. Sample of this study was household that have underfive years old children residing in the areas of Plan International. Data was collected by using structured questionnaire, focus group discussion and in-depth interview. Nutritional status was measured using anthropometric measurement with weight and height indicators and child consumption was recorded using 24 hours food’s recall. Result showed that in three villages prevalence of malnourished children was high, which were 6.0% classified as severe underweight, 15.3% severe stunting and 0.7% severe wasting. There was no significant difference in term of nutritional status. Child malnutrition was influenced by low access to nutrition and health information, low nutrition knowledge and practices, and low family income.

Abstract

Malnutrition may decrease in human resources work capacity which is lead to regional economic lost. The study was aimed to find the relationship between severe underweight, GDRP and poverty level and to estimate economic lost due to severe Protein Energy Malnutrition (PEM) among underfive children in various districs/cities at Java and Bali Islands. A descriptive study designed was implemented and a set of secondary data was used in the study. The data uses are prevalence of PEM among underfive children from 2007 Riskesdas, Gross Domestic Regional Product (GDRP), population by sex and age group, and poverty level. Data processing and analysis were conducted in Bogor, from April to July 2010. The result showed that economic lost due to PEM was highest in Bekasi Regency, West Java and lowest in Kepulauan Seribu Regency, DKI Jakarta. Higher GDRP per capita means lower severe PEM prevalence and higher poverty level means higher severe PEM prevalence. Percentage of total economic lost due to severe PEM among under five children was ranged from 0,039% GDRP - 0,177% GDRP.

Abstract

This study was aimed to analyze the effect of multi-micronutrients (MMN) supplementation and nutrition education on nutrition knowledge, mean adequacy ratio (MAR) and iron status of young adolescent girls (YAG). The study was done in three purposively selected junior high schools (JHS) in rural Bogor by implementing a quasi experiment control trial for 112 YAG for 16 weeks: thirty five YAG in the first JHS as a MMN group (SG) were given three times of MMN tablets per week, forty two YAG in the second JHS were given MMN tablet plus nutrition education delivered by trained teacher fortnightly called SGP group and thirty five YAG in the third JHS as a control group. The result showed that the increment of nutrition knowledge score as well as MAR of SGP group were significantly higher than the other two groups. The decrement level of hemoglobin (Hb) in SG and SGP groups was significantly lower than in control group, but in the subset data of anemic group, both intervention groups had significantly increased level of Hb. This imply that nutrition education improved nutrition knowledge of YAG, but MMN tablet could not improve Hb level in general and only had effect on YAG suffering from anemia.Key words: multi-micro nutrients, nutrition education, iron status, adolescent girls

Abstract

This study aimed to estimate waste of cooked rice not consumed by customer at various restaurants in Bogor. Cross sectional study design was implemented in this study. The number of subjects were 279 consumers from 32 restaurants. Food weighing method was used to measure cooked rice waste and the weight was then converted into rice weight using a conversion factor. The calculations show that rice loss from sunda restaurant was the highest with an average of 4.7 g/capita/day of rice equivalent, while the smallest in padang restaurant with the average of 2.5 g/capita/day of rice equivalent. For java and warung tenda restaurant were equal to 3.6 g/capita/day of rice equivalent and 4.2 g/capita/day of rice equivalent. Respectively loss of nutrients per meal from sunda restaurant was equal to 8.3 kcal/capita (0.4% of energy RDA), 0.1 g/capita (0.2% of the protein RDA). While the loss of nutrients from padang restaurant was as much as 4.5 kcal/capita (0.2% of energy RDA), 0.05 g/capita (0.1% of the protein RDA). Loss of nutrients from java restaurant was 6.3 kcal/capita (0.3% of energy RDA), 0.07 g/capita (0.1% of the protein RDA). For warung tenda, loss of nutrients was 7.5 kcal/capita (0.4% of energy RDA), 0.09 g/capita (0.2% of the protein RDA). It seems that the loss of the waste of the rice on sunda restaurant by serving in a bakul, has not been able to reduce of rice waste.

Abstract

The purpose of this research was to find out acceptance and preference of households and catering to non-branded cooking oil fortified with carotene from Red Palm Oil (RPO). The subjects in this study was 30 people respectively for each households and catering. Data was collected through interviews and discussions using questionnaires. Data of subjects acceptance and preference were analyzed using descriptive statistics and Friedman test. Average cooking oil used by household subjects was 0.185+0.070 kg/day and catering was 3.87+2.46 kg/day. Most households (73.3%) and catering (66.7%) could not accept cooking oil fortified with carotene from RPO due to its colour and aroma. Fortified cooking oil had orange colour and rotten aroma (of odor). More than half of households (66.7%) and catering (63.3%) could not accept the fried product using fortified cooking oil because of its yellow colour. Friedman test showed that there were differences in both subjects acceptance to nonfortified and fortified non-branded cooking oil (p<0.05). Both household and catering subjects preferred nonfortified cooking oil.

Abstract

Susenas data shows that almost 100 % of the Indonesian people consume cooking oil regularly with an average per capita consumption of more than 20 gram/day. Palm oil is a dominant cooking oil in Indonesian market.Approximately 70 % of palm oil is sold bulk in the market, which is commonly called as ‘minyak curah’. Previous studies recommended that cooking oil, particularly the bulk palm oil, should be used as the vehicle in vitamin A fortification. The objective of the study was to evaluate the retention of vitamin A in foods that were fried using the fortified bulk palm oil. The selected food products were the most frequently consumed food by school children in Barranglompo Island, Makassar City, i.e of roti lasuna, roti kambu, jalangkote, and ikan kembung como goreng. The study showed that the retention of vitamin A significantly decreased with increasing number of frying repetition, but in general, the loss of vitamin A was less than 50% after the third frying. The retention of vitamin A after the first, second and third frying wasin range of 81-94%, 64-77%, and 51-63% respectively.

Abstract

Deterioriation of palm oil fortified with vitamin A and provitamin A could be caused by the presence of oxygen and light exposure. The purpose of this study was to determine the effect of the initial peroxide value (PV) in palm oil (1.99, 3.98, and 9.95 meq O2/kg oil) and light intensity (15000, 10000, and 5000 lux) on the rate of oxidation and the shelf life of palm oil fortified with Red Palm Oil (RPO) equal to 45 IU vitamin A. The RPO contained β-carotene as provitamin A in the amount of 504.67 ppm. The PV and free fatty acid (FFA) content were observed as the parameters of oil deterioriation during storage. The results showed that the rate of PV was influenced by light intensity, while the rate of FFA formation were more influenced by the amount of initial PV in the oil. Based on the palm oil standard quality for PV (SNI 7709: 2012), the shelf life of palm oil with the lowest initial PV at ambient temperature was 9.5 days, while that with the highest PV was 1.32 hours. The deterioration rate of RPO fortified palm oil due to light exposure was also compared with its deterioration rate due to heat and the deterioration rate of palm oil fortified with vitamin A. The shelf life of vitamin A fortified palm oil stored in the dark was 90.67 days, while RPO fortified palm oil was 68.12 days. This shelf life results showed that RPO had a potency as provitamin A fortificant for palm oil as long as it is stored in a closed container in the dark.
