Abstract

Latar Belakang: Stunting merupakan kondisi gagal tumbuh pada balita sehingga balita menjadi pendek dan tidak sesuai dengan usianya. Stunting disebabkan oleh multifaktor, antara lain faktor genetik, pola asuh, serta perilaku hidup bersih dan sehat. Perilaku hidup bersih dan sehat pada balita memiliki hubungan dengan penyakit infeksi, terutama diare. Balita bergantung pada ibu yang berperan dalam pengasuhan dan perawatan. Salah satu faktor genetik yang mempengaruhi kejadian stunting balita adalah tinggi badan orang tua. Tujuan: Untuk mengetahui hubungan tinggi badan orang tua, pola asuh praktik pemberian makan, rangsangan psikososial, dan perawatan kesehatan, serta kejadian diare sebagai faktor risiko stunting pada balita di wilayah kerja Puskesmas Ijen Kabupaten Bondowoso. Metode: Penelitian ini menggunakan desain cross sectional. Subjek penelitian ini adalah 76 balita berusia 24-59 bulan beserta orang tua sesuai kriteria inklusi dan eksklusi dengan teknik cluster sampling. Penelitian ini dilakukan di wilayah kerja Puskesmas Ijen, Kabupaten Bondowoso pada Agustus 2019. Data dikumpulkan dengan alat bantu berupa kuesioner dan microtoice. Analisis data menggunakan uji Chi Square dengan derajat kemaknaan 95% (p<0,05). Hasil: Tidak ada hubungan antara tinggi badan orang tua, pola asuh rangsangan psikososial, dan kejadian diare dengan kejadian stunting pada balita (p>0,05). Ada hubungan antara pola asuh praktik pemberian makan dan perawatan kesehatan dengan kejadian stunting pada balita (p<0,05). Kesimpulan: Ada hubungan yang signifikan antara pola asuh praktik pemberian makan dan perawatan kesehatan dengan kejadian stunting pada balita berusia 24-59 bulan.

Abstract

Latar Belakang: Anemia pada remaja putri umumnya disebabkan kebiasaan konsumsi makanan yang rendah gizi salah satunya fast food. Sosis merupakan fast food yang cukup digemari masyarakat Indonesia. Modifikasi pengolahan sosis menggunakan bahan baku utama yang berbeda yaitu tempe dan penambahan tepung daun kelor merupakan bentuk diversifikasi pangan (protein dan zat besi) untuk pencegahan anemia khususnya bagi remaja putri. Tujuan: Menganalisis pengaruh penambahan tepung daun kelor terhadap kadar protein, zat besi dan uji kesukaan sosis tempe. Metode: Quasi experimental dengan 12 unit perobaan dengan empat perlakuan: sosis tempe tanpa penambahan tepung daun kelor/kontrol (X0), dengan penambahan tepung daun kelor lima gram (X1), 10 gram (X2), dan 15 gram (X3). Kadar protein sampel dianalisis dengan metode Kjeldahl, zat besi dengan metode Spektofometri Serapan Atom (AAS) dan uji kesukaan menggunakan Hedonic Scale Test. Data hasil uji kadar protein dan zat besi dianalisis menggunakan uji Kruskall Wallis dan Mann Whitney U-Test, sedangkan hasil uji kesukaan dianalisis menggunakan uji Friedman dan Wilcoxon Signed Ranks Test dengan tingkat signifikasi 5%. Hasil: Semakin banyak penambahan tepung daun kelor, kadar protein, dan zat besi sosis tempe semakin meningkat. Penambahan tepung daun kelor berpengaruh terhadap kadar protein, zat besi dan uji kesukaan (warna, aroma, rasa, tekstur) sosis tempe (0,002≥α). Kesimpulan: Sosis tempe dengan penambahan tepung daun kelor 15 gram (X3) memiliki kadar protein dan zat besi tertinggi. Sosis tempe yang direkomendasikan yaitu penambahan tepung daun kelor lima gram (X1) karena paling disukai panelis dan telah memenuhi standar persyaratan mutu sosis daging. Abstract

Dysmenorrhea primer merupakan masalah gangguan menstruasi seperti kram dibagian bawah perut yang menjalar ke punggung atau kaki dan terjadi pada tahun pertama atau lebih setelah mengalami menstruasi dan dapat dirasakan pada 24 jam pertama menstruasi dan dapat bertahan sampai 48-72 jam. Remaja wanita yang mempunyai status gizi tidak normal dan usia menarche dini akan berdampak pada kejadian dysmenorrhea primer. Penelitian ini bertujuan untuk menganalisis Hubungan Antara Status Gizi, Usia Menarche dengan Kejadian Dysmenorrhea Primer pada Remaja Putri di SMPN 3 Jember. Penelitian ini merupakan penelitian analitik observasional dengan menggunakan pendekatan cross sectional. Populasi penelitian sebanyak 445 orang dengan sampel sebanyak 82 orang. Hasil uji statistic menunjukkan terdapat hubungan antara status gizi dengan usia menarche (p= 0,000), terdapat hubungan antara status gizi dengan dysmenorrhea primer (p= 0,042) dan tidak terdapat hubungan antara aktivitas fisik dengan dysmenorrhea primer (p= 0,913)

Abstract

Latar Belakang: Anemia merupakan masalah gizi pada remaja putri yang perlu dicegah dan ditanggulangi karena akan berdampak pada periode 1000 Hari Pertama Kehidupan (HPK). Pemerintah memprioritaskan program suplementasi Tablet Tambah Darah (TTD) remaja putri dan Wanita Usia Subur (WUS) untuk menurunkan prevalensi anemia pada kelompok tersebut. Salah satu indicator keberhasilan program tersebut yakni kepatuhan remaja putri dalam mengonsumsi TTD. Perilaku seorang individu dapat diprediksi dari niat individu tersebut yang dirumuskan dalam Theory of Planned Behavior (TPB). Tujuan: Menganalisis hubungan kontrol perilaku dengan niat patuh dalam mengonsumsi TTD secara teratur. Metode: Jenis penelitian ini adalah analitik observasional dengan pendekatan cross sectional. Sampel berjumlah 328 remaja putri yang diambil dengan metode stratified proporsional random sampling. Variabel penelitian adalah persepsi kontrol perilaku dan niat patuh minum TTD yang dianalisis dengan uji statistik Chi-Square. Hasil: Hasil penelitian ini didapatkan 51,2% responden berumur ≤ 13 tahun, 85,7% responden mengalami pubertas yang normal, dan 85,4% responden mengalami gejala anemia yang rendah serta mayoritas 81,4% responden memiliki status gizi normal. Terdapat hubungan antara kontrol perilaku (P Value= 0,000; OR= 3,906; 95 % Cl= 1,906-6,640) dengan niat patuh konsumsi TTD teratur. Kesimpulan: Remaja yang memiliki kontrol perilaku yang kuat akan memiliki niat patuh konsumsi TTD teratur 3,906 kali dibandingkan remaja putri dengan kontrol perilaku lemah terhadap konsumsi TTD.

Abstract

Background: The world's population is currently in an era of aging with the number of elderly people exceeding 7% of the population. This condition will certainly bring positive and negative impacts. It’s needed to pay attention to the elderly, especially on their quality of life. Objective: To determine the differences in the quality of life of the elderly who live with their families in the working area of the Puskesmas Sukorejo and at Jember Tresna Werdha Social Service Unit. Methods: The type of this research was observational analytic using a cross-sectional research design. The study was conducted from January to March 2020. The population in this study amounted to 3472 elderly, consisting of elderly who live in the Tresna Werdha Jember Social Service Unit and live at home with their families in the working area of Sukorejo Community Health Center, Jember. The sample in this study amounted to 100 respondents, consisting of 50 respondents at each research location. The variable studied was the quality of life of the elderly from each place of residence. The data collection instruments included the MMSE questionnaire to assess cognitive impairment in the elderly and the WHOQOL-BREF questionnaire to measure the quality of life in the elderly. The sampling technique used was proportional random sampling. Results: The results showed that the majority of the elderly were aged 60-74 years, most of the elderly were female and never attended school. The majority of the elderly who live at home still have a partner, while those who live in the Social Service have no partner. Chi-square test results showed that there was no difference in the quality of life of the elderly in the physical, psychological, and environmental domains, but there were differences in the quality of life in the social domain. Conclusion: There were no differences in the quality of life in the physical, psychological, and environmental domains, but there were differences in the social domain, among respondents. The elderly who lived at home with their family had a better quality of life in the social domain. Suggestion for the elderly who live at home in the working area of the Sukorejo Community Health Center is to increase positive activities that can entertain themselves and participate in social activities, for the elderly who live at the Tresna Werdha Jember Social Services Unit, it is hoped that they can increase the intensity of good social relations between fellow elderly in homestead and do not close themselves off to the people around them, while for supervisors and caregivers in Tresna Werdha Jember Social Service Unit, it is expected to further improve assistance to the elderly to determine the quality of life of the elderly in each homestead.

Abstract

Insufficiency ferrum anaemia still be one of the inclusive major nutritional problem in Indonesia. This Analytic research Survey performed to learn the correlation between food pattern and anaemia status. Interview was executed at 125 adolescent women. Subjects were identified from population by simple random sampling method. The data gathered was analysed using chi square test on α = 0,05. It was found that the anamia prevalence was 17.6%  and for the food pattern, egg and meat are most iron source which consumption with respondent. The respondent rarely consumption Fe and vitamin C supplementation. For level of consumption, there was protein and fat had sufficient dietary intake, unless energy. Statistical analysis showed that food pattern are Fe and vitamin C supplementation, meats products and vegetables diet, level of consumption of energy, protein and fat had not correlation with anamia status in both rural and urban area. Key word : Food pattern, anamia status

Abstract

This research is a qualitative study that analyzed the determinant factor is the occurrence of malnutrition  among children under the age of 6-24 months of non-poor families in the working area Rogotrunan District Health Center Lumajang, Lumajang.  The target of this research is the mother of a toddler, who has a child under five with poor nutrition or malnutrition 6-24 months of age on non-poor families as much as 8 informants. The samples taken by purposive. The results showed that characteristics of children under five who became the subject of research is mostly women. Although the nutritional status of all children under five in this study were malnourished and underweight but their weight at birth was normal, all born with a weight > 2500 grams. Spacing of all children under five with a brother or sister is more than 2 years, and nearly all children under five was the second child. The characteristics of mothers, the average education level is high, and most are workers. The level of nutrition knowledge of mothers is enough. Based on the informant in-depth interview study that parenting becomes a major determinant, although the level of higher education and high levels of maternal knowledge but in terms of child care that is the practice of exclusive breastfeeding and complementary breastfeeding is really not done well. In terms of time less than the maximum care and parenting than mothers who tend to be left to the maid or grandmother for informants who worked without any special attention by the mother also helped support the occurrence of malnutrition and undernourishment among the children. Abstract

Disorders caused by iodine deficiency remains aglobal health problem in the world with a prevalenceof 30.6% in 2007 (De Benoist et al., 2003; De Benoistet al., 2008). The causing factors are not only limitedto iodine deficiency. Instead, other factors of IDD aregoitrogenic substances; one of them is thiocyanateresulted from cyanide detoxification. The workmechanism of thiocyanate disrupts thyroid functionby inhibiting the uptake of the iodine and interfereswith the thyroid peroxidase (TPO) activities (Gaitan,1990; Taurog, 1970; Van Etten, 1969; Stoewsand,1995; Virion et al., 1980 cit Chandra & Ray, 2001;Chandra et al., 2004; Delange, 2000; Erdogan, 2003;Gibbs, 2006; Sinebeeh, 2007; Semba & Delange,2008). In addition, small amount of cyanide is alwaysavailable in many kinds of plants commonlyconsumed by community. Goitrogenik source foodsare easily accessible by the community because theprices are cheap or they can be self-planted (Nio,1989; Chandra et al., 2004).Some studies mention that most of the goitrogenicsubstances do not cause clinical effects except theyare going along with iodine deficiency. Therefore,the consumption of goitrogenic substances becomesetiologic agent in an endemic area (Zimmermann etal., 2008). Jember is one of regencies in East Javawhich experiences an increase in TGR from 21.94%in 2003 to 23.57% in 2007. Most of its districts areincluded in the category of endemic goiter area(Jember regency Health Department, 2007). Theresults of previous studies made by the researchersshow that goitrogenic substance as a causativefactor of IDD in Jember, through one of theindicators of urinary iodine levels, is included in thecategory of normal and tend to be high. In addition,urinary thiocyanate levels goiter group are higherthan those in non-goiter group (Ningtyias, 2006;Ningtyias et al., 2007; Ningtyias et al., 2008).Consumption pattern of goitrogenic source food inJember of at least 3-5 times per week with anaverage consumption of 505 μg per day is a riskfactor of IDD in Jember (Megawati, 2007; Ningtyiaset al., 2008). The existence of these substances willdisrupt the process of the formation of thyroidhormones; therefore, it needs to be eliminated, orthe levels are reduced, so that the food ingredientscontaining goitrogenic substances are safe forconsumption. This study used local wisdom to solveproblems of nutrition, that is, one of the habits ofpeople in Jember to boil vegetables for freshvegetables for overcoming nutritional problem ofIDD because the boiling process can reducecyanogenic levels up to 93% (Murdiana, 2001). Bythe decrease in cyanogenic levels, it is expected thatgoitrogenic substance intake into the body willdecrease indicated by the decreasing biomarkers ofgoitrogenic substance of urinary thiocyanate levels.

Abstract

School lunch facilities may be an alternative to solve food problems in school-age children. The contribution of food nutrients in schools will affect the total consumption of nutrients as well as nutritional status. The contribution of school lunch is 30% of nutritional needs per day. This study was to analyze both the nutritional contribution of school lunch and nutritional adequacy towards the nutritional status of students at Al-Furqan Jember Elementary School. This study was an observational analytic study with a cross-sectional approach. The population was 141 students with total samples of 58 students. This study indicated that most of the respondents did not meet 30% of the daily nutritional needs based on their lunch nutritional contribution. However, both the nutritional adequacy and nutritional status of most respondents were in the normal category. Abstrak Fasilitas makan siang sekolah dapat menjadi salah satu alternatif untuk mengatasi masalah makanan anak usia sekolah. Kontribusi zat gizi makanan di sekolah akan berpengaruh pada total konsumsi zat gizi yang juga akan berdampak pada status gizi. Kontribusi makan siang sekolah adalah 30% dari kebutuhan gizi sehari. Penelitian ini bertujuan untuk menganalisis kontribusi zat gizi makan siang sekolah dan kecukupan gizi terhadap status gizi siswa di SD Al-Furqan Jember.Penelitian ini merupakan penelitian analitik observasional dengan menggunakan pendekatan cross sectional. Populasi penelitian ini sebanyak 141 siswa dengan sampel sebanyak 58 siswa. hasil penelitian menunjukkan bahwa sebagian besar responden kontribusi zat gizi makan siang sekolahnya tidak memenuhi 30% kebutuhan gizi sehari. Sedangkan kecukupan gizi dan status gizi sebagian besar responden dalam kategori normal.

Abstract

Gerakan Memasyarakatkan Makan Ikan (GEMARIKAN) is launched as an effort to increase fish consumption and improve people’s nutrition through the consumption of fishery products. Food processing modification is an effort to support GEMARIKAN by increasing food processing method to improve fishery products’ nutrition. Tilapia and tofu waste flour are used as ingredients in making tilapia fish meatballs. This study aims to analyze the effect of the addition of tofu waste flour on protein, fiber, water content, and acceptability of tilapia fish meatballs. This research was experimental research with a quasi-experimental type and used a posttest only control group research design. The addition of tofu waste flour (X0: 0 gram; X1; 5 grams; X2: 10 grams; X3: 15 grams) caused the increasing level of protein, fiber, and water of tilapia fish meatballs. Protein content on tilapia fish meatballs are X0: 16.59%; X1: 16.88%; X2: 17.24%; X3: 17.42%, fiber content are X0: 0.08%; X1: 0.14%; X2: 0.25%; X3: 0.35%) and water content were X0: 63.63%; X1: 63.55%; X2: 63.75%; X3: 64.07%). Tilapia fish meatballs with 10 grams addition of tofu waste flour were the most acceptable product. This innovation produced the most preferred meatball product by panelists, and the nutritional content had met the fish meatball's quality standards. Abstrak Gerakan Memasyarakatkan Makan Ikan (GEMARIKAN) merupakan suatu usaha untuk meningkatkan konsumsi ikan serta perbaikan gizi masyarakat melalui konsumsi produk perikanan. Upaya yang dapat dilakukan untuk mendukung GEMARIKAN adalah dengan melakukan modifikasi pengolahan ikan untuk menambah variasi produk perikanan maupun memperkaya kandungan gizinya. Bahan yang digunakan dalam modifikasi produk perikanan pada penelitian ini adalah ikan nila dan tepung ampas tahu yang kemudian diolah menjadi bakso ikan nila. Penelitian bertujuan menganalisis pengaruh penambahan tepung ampas tahu terhadap kadar protein, kadar serat, kadar air dan daya terima pada bakso ikan nila. Penelitian ini merupakan penelitian eksperimen dengan jenis quasi eksperimental menggunakan desain penelitian posttest only control group design. Hasil penelitian menunjukkan seiring peningkatan jumlah penambahan tepung ampas tahu (X0: 0 gram; X1: 5 gram; X2: 10 gram; X3: 15 gram) meningkatkan kadar protein, serat dan air bakso ikan nila. Kadar protein menjadi X0: 16,59%; X1: 16,88%; X2: 17,24%; X3: 17,42%; kadar serat menjadi X0: 0,08%; X1: 0,14%; X2: 0,25%; X3: 0,35%; dan kadar air menjadi X0: 63,63%; X1: 63,55%; X2: 63,75%; X3: 64,07%. Bakso yang disarankan adalah bakso ikan nila dengan penambahan tepung ampas tahu sebanyak 10 gram. Perlakuan ini menghasilkan bakso ikan nila yang paling banyak disukai oleh panelis dan dari segi mutu gizinya telah sesuai dengan standar mutu bakso ikan.
