Abstract

Ice cream from goat milk kefir is lower lactose than cow milk kefir. Combining goat milk kefir with red dragon fruit in ice cream formulations can improve the quality of the product. This study aims to determine the sensory characteristics, total solid, total flavonoid, and antioxidant activity of goat kefir-based ice cream flavored red dragon fruit as quality evaluation. The study used a completely randomized design with 4 treatments and 3 replications. The treatment was the ratio of goat kefir and dragon fruit, including 40:60, 50:50, 60:40, and 70:30 in the ice cream mixture. 30 panelists participated in the organoleptic test. Total solid testing referred to SNI 01-3713-1995. Determination of total flavonoid content was carried out by forming AlCl3 complexes spectrophotometrically and assaying antioxidant activity used 2.2-diphenyl-1-picrylhydrazyl (DPPH) method. The results showed that there was no significant difference in the organoleptic test for taste, color, and texture. The results of the total solids test showed that the higher the addition of goat kefir to ice cream, the lower the total solids produced. While the addition of goat kefir increased the total flavonoids in ice cream. The antioxidant activity with the best formulation of 50:50 was categorized as moderate level, which is 136.59 ppm.

Abstract

The increasing dependence on fossil fuels to meet fuel needs has caused several problems, such as air pollution, greenhouse effects, unpleasant odors, and loud noises. This research aims to design an alternative fuel in the form of biodiesel by applying a heterogeneous catalyst based on palm bunch to synthesize biodiesel through transesterification. The research stages include activating the active sites of palm bunches through calcination at temperatures of 400 °C, 500 °C, and 600 °C; refining waste cooking oil; esterification; and transesterification. The active components of palm bunch ash (PBA) were characterized using XRF and alkalinity testing. XRF results indicated that PBA contains active basic compounds such as K₂O and CaO, crucial in catalytic activity. Physical-chemical property testing revealed that the synthesis achieved the highest yield of 93.744 %. The results of the physical-chemical characteristic tests produced the best density with an average of 0.888 g mL⁻¹, and the lowest viscosity with an average of 3.79 cSt at 40 °C with an iodine number of 80.116 g I₂ 100 g⁻¹, a saponification number of 170.57 mg KOH g⁻¹, and a refractive index of 1.445. The catalyst demonstrated stable performance up to three reuses with yields ranging from 80–90 %. FTIR spectra showed strong absorption bands at 1172–1165 cm⁻¹, indicating C-O-CH₃ stretching from methyl esters. GC-MS analysis showed that the biodiesel consists of various fatty acid methyl esters (FAME), with the main component being methyl oleate, which appears at a retention time of 37.096 minutes with an area of 40.31 %. So it is shown that PBA catalysts have an excellent potential for commercial applications as they can reduce dependence on fossil fuels by utilizing household waste.

Abstract

Fatty acid methyl esters can be obtained from the synthesis of vegetable oil with methanol using a base catalyst. Vegetable oil has the potential as biodiesel feedstock, the methyl ester character of various vegetable oils is different as from castor seed oil. Synthesis of methyl esters by transesterification reaction with the addition of a heterogeneous catalyst, namely MgO/K2O. The purpose of this study was to synthesize methyl esters from castor seed oil with MgO/K2O catalyst and to determine the yield and character. The research went through 6 stages which included (1) isolation of castor seed oil, (2) determination of free fatty acid (ALB) levels of castor seed oil, (3) manufacture of MgO/K2O catalyst (4) esterification of castor seed oil with H2SO4 catalyst (5) transesterification of jatropha seed oil with methanol and various variations in the concentration of the catalyst MgO/K2O 1%, 2%, 3%, (6) characterization of the synthesized methyl ester which includes tests of density, viscosity, acid number, refractive index and moisture content. The results showed that the concentration of MgO/K2O had an effect on the synthesis of methyl esters from castor seed oil, where the optimization condition was achieved at a concentration of 2% MgO/K2O with a yield of 97.99%. The methyl ester character which is synthesized from castor seed oil with a 2% MgO/K2O catalyst is having a density of 1.0244 g/mL, a viscosity of 22.531 cSt, an acid number of 2.81 g KOH/g methyl ester, a refractive index of 1.456, and a moisture content. 0.035%.

Abstract

Global population growth has driven increased demand for energy, particularly fossil fuels. A sustainable alternative to address this issue is the production of biodiesel from renewable sources, such as waste cooking oil. This study utilized a heterogeneous potassium oxide (K₂O) catalyst derived from local Trenggalek durian peel ash to enhance the efficiency of the transesterification reaction. The catalyst was synthesized via calcination at 400°C, 500°C, and 600°C for 5 hours. The transesterification reaction was carried out with a methanol-to-oil molar ratio of 12:1 and catalyst concentrations of 1%, 3%, and 5% (w/w) at 65°C. The optimum condition was achieved using durian peel ash catalyst calcined at 600°C at a concentration of 3% (w/w), yielding a biodiesel conversion of 96.24% via ultrasonic-assisted transesterification. The physicochemical characterization of the produced biodiesel showed results that met standard specifications, including analyses of yield, density, viscosity, refractive index, acid value, saponification value, and iodine value. Furthermore, FT-IR and GC-MS analyses were performed to confirm the functional groups and components of the biodiesel product, in accordance with the expected specifications.

Abstract

Work in the 21st century demands strong critical thinking skills. However, high school students still exhibit relatively low levels of critical thinking ability. Integrating learning journals into the 5E Learning Cycle model represents an educational innovation that enhances these skills. This study compares the critical thinking abilities of students in experimental and control classes using a quantitative quasi-experimental design with a non-equivalent control group. Two classes were involved: an experimental group (35 students) and a control group (34 students), each receiving different treatments. The sampling technique used was simple random sampling. Data were collected using 10 questions based on Ennis's five aspects of critical thinking. The instrument was validated and showed a reliability coefficient of 0.725. The results showed a difference in critical thinking scores between the control and experimental classes. The experimental class, which used the 5E Learning Cycle model supported by learning journals, achieved higher outcomes. This was confirmed by an independent t-test, which yielded a p-value (<0.001) and a higher post-test mean score in the experimental class (26.05). A Cohen’s d value of 2.39 indicated a large effect size, while an N-Gain score of 0.95 showed that the intervention fell into the high category.

Abstract

The Batik Science Demonstration Program (PODESABA) for the Enlightened Generation was conducted by the Department of Chemistry's community service team at Sanggar Muhammadiyah, Kampung Baru, Kuala Lumpur, Malaysia, in 2025. This international community service initiative aimed to introduce fundamental chemistry concepts through culturally contextualised learning, enhancing students' scientific literacy and creativity. The program comprised four main sessions: (1) a redox reaction demonstration using Betadine solution and citrus juice to visualize vitamin C presence, (2) a simple paper chromatography experiment to illustrate separation techniques, (3) an ecoprint batik workshop utilizing plant-based dyes and alum solution as a natural mordant, and (4) a jumput (tie-dye) batik activity using natural dyes. Each activity was designed to be interactive and culturally relevant, enabling participants to connect scientific principles with traditional batik-making practices. The program yielded positive outcomes, including heightened enthusiasm and active participation among children, improved comprehension of redox and separation concepts, and the creation of innovative batik products. This initiative successfully integrated science and art, embodying the spirit of The Enlightened Generation through cross-cultural collaboration and exchange.
