Abstract

The Indragiri River in Inuman Subdistrict, Riau, faces ecological pressures due to human activities such as domestic activities, agriculture, settlements, and unauthorized gold mining (PETI). These activities can reduce the physicochemical quality of the water and affect aquatic organisms. Macrozoobenthos, benthic organisms sensitive to changes in water quality, are used as bioindicators of aquatic conditions. This study aims to analyze the macrozoobenthos community structure through species composition, diversity index (H’), evenness (E), dominance (C), and physicochemical water parameters. The research employed a descriptive quantitative method, with sampling conducted at three stations (upstream, midstream, downstream) and subsequent laboratory analysis. The results revealed nine species from five classes, with Gastropoda being the dominant class (40.75%). Station I (upstream) exhibited the highest diversity (H' = 2.05) and the lowest dominance (C = 0.14), whereas Station II (midstream) had the lowest diversity (H' = 0.68) with moderate dominance (C = 0.51). Station II was classified as moderately to heavily polluted, indicated by low DO (3.34 mg/L) and BOD, COD, and TSS exceeding the water quality standards stipulated in Indonesian Government Regulation No. 22 of 2021. A research gap exists as heavy metals such as mercury have not yet been analyzed, suggesting that future studies could expand chemical indicators for a more comprehensive environmental assessment.

Abstract

The use of student worksheets in schools is still predominantly print-based and has not fully attracted students’ interest, particularly in virus material, which requires visual, interactive, and contextual presentation. The development of electronic student worksheets based on Project Based Learning is needed as an alternative teaching material that can encourage students’ active participation, creativity, and independence in understanding virus material. This study aimed to determine the validity and quality of electronic student worksheets based on Project Based Learning for virus material in Grade X senior high school. This research employed a Research and Development method using the ADDIE model, which was limited to the Analyze, Design, and Development stages. The research subjects consisted of four validators, namely two Biology Education lecturers and two Biology teachers, as well as limited trial respondents involving 10 Biology Education students and 35 Grade X students of SMA Negeri 5 Pekanbaru. The instruments used were validation sheets and respondent questionnaires, and the data were analyzed using mean scores. The results showed that the developed electronic student worksheets obtained a validation score of 3.68, which was categorized as highly valid. The results of the first limited trial obtained a score of 3.70, while the second limited trial obtained a score of 3.76, both categorized as very good. Overall, the quality of the electronic student worksheets obtained a score of 3.71, which was categorized as very good. Therefore, the electronic student worksheets based on Project Based Learning for virus material are feasible to be used as Biology teaching materials for Grade X senior high school students.

Abstract

The increasing public awareness of healthy lifestyles has led to a growing demand for functional foods, including water kefir as a non-dairy probiotic beverage. Pineapple (Ananas comosus) has considerable potential as a raw material for water kefir production due to its rich nutritional content and widespread availability. Furthermore, different types of sweeteners and fermentation durations are presumed to influence the quality of the resulting water kefir. This study aimed to investigate the effect of the combination of sweetener types (corn sugar and stevia) and fermentation durations (12 and 18 hours) on the quality of pineapple water kefir based on lactic acid content, total lactic acid bacteria (LAB), pH, organoleptic characteristics, and consumer acceptability. This research employed a descriptive experimental method and was conducted at the Biology Education Laboratory, Faculty of Teacher Training and Education, Universitas Riau, and the Laboratory of Agricultural Product Processing and Analysis, Faculty of Agriculture, Universitas Riau. The collected data were analyzed descriptively. The results showed that the lactic acid content ranged from 0.32% to 0.41%, total LAB counts ranged from 3.69 × 10⁸ to 8.92 × 10⁸ CFU/mL, and pH values ranged from 3.88 to 4.07. All treatments met the Indonesian National Standard (SNI) requirements for fermented beverages. Based on organoleptic and hedonic evaluations, the best treatment was obtained using stevia with an 18-hour fermentation period (M2J2), achieving a consumer preference score of 2.66 (liked). This treatment was characterized by a light yellow color, a distinctive pineapple fermentation aroma, a slightly sweet taste, and a liquid texture. Therefore, the combination of sweetener type and fermentation duration significantly influenced the quality of pineapple water kefir.

Abstract

The Kampar River is one of the potential areas for freshwater fish cultivation, particularly catfish (Pangasius sp.) cultured in floating net cages. However, aquaculture activities, feed waste, fish metabolic waste, community activities, industrial activities, and the use of motorboats may reduce water quality and contribute to heavy metal pollution, particularly lead (Pb). Lead is toxic, difficult to degrade naturally, and can accumulate in aquatic organisms, thereby posing risks to human health and the environment. This study aimed to isolate and identify Pb-resistant bacteria in catfish (Pangasius sp.) cultivated in floating net cages in the Kampar River. This research was an exploratory observational study conducted through laboratory observations. Fish samples were collected from floating net cages in the Kampar River, and bacterial isolation was carried out using Nutrient Agar (NA) medium supplemented with 0.8 grams of Pb. Bacterial identification was performed through macroscopic observation, microscopic observation using Gram staining, and biochemical tests, including TSIA, SCA, and SIM tests. The results showed that five Pb-resistant bacterial isolates were obtained from the gills and intestines of catfish. Based on the identification results, the bacteria found consisted of Aeromonas sp., Edwardsiella ictaluri, and Bacillus sp. All isolates had bacillus-shaped cells, with the majority classified as Gram-negative bacteria and one isolate classified as Gram-positive. These findings indicate that catfish cultivated in floating net cages in the Kampar River harbor bacteria capable of surviving in Pb-containing media and potentially serving as bioindicators as well as bioremediation agents for heavy metals.

Abstract

Cassava peel waste is a by-product of cassava processing that still contains fiber and starch, making it a potential alternative food resource. However, its utilization is limited by its high crude fiber content and the presence of hydrogen cyanide (HCN). One approach to improving the quality of cassava peels is fermentation using Lactobacillus fermentum. This study aimed to determine the effect of different fermentation durations on the characteristics of cassava peel flour (Manihot esculenta) fermented with Lactobacillus fermentum. An experimental method was employed using treatments consisting of different fermentation periods (0, 48, and 72 hours) and Lactobacillus fermentum concentrations (0%, 10%, and 20%). The observed parameters included hydrogen cyanide (HCN) content, protein content, crude fiber content, and pH value. Data were analyzed using Analysis of Variance (ANOVA), followed by the Least Significant Difference (LSD) test at a 5% significance level. The results showed that fermentation duration and Lactobacillus fermentum concentration significantly affected the characteristics of cassava peel flour. The 72-hour fermentation treatment produced the best characteristics, with the lowest HCN content (0.15%), crude fiber content of 40.80%, and pH value of 3.56. Overall, fermentation for 72 hours improved the quality of cassava peel flour, indicating its potential as a value-added alternative food ingredient.

Abstract

Duku fruit (Lansium domesticum) is a horticultural commodity rich in nutrients and antioxidants; however, its utilization remains largely limited to fresh consumption, making it highly susceptible to postharvest deterioration. One approach to increasing the added value of duku fruit is processing it into yogurt using palm sugar as a natural sweetener. This study aimed to determine the effect of palm sugar concentration on the characteristics of duku fruit yogurt. An experimental method was employed using a Completely Randomized Design (CRD) consisting of four palm sugar concentrations (0%, 8%, 10%, and 12%) with three replications. The observed parameters included lactic acid content, protein content, fat content, pH value, and organoleptic quality. Data were analyzed using Analysis of Variance (ANOVA), followed by Duncan’s Multiple Range Test (DMRT) at a 5% significance level. The results showed that palm sugar concentration significantly affected the characteristics of duku fruit yogurt. The best treatment was obtained with a palm sugar concentration of 12%, resulting in a lactic acid content of 0.78%, protein content of 6.02%, fat content of 1.91%, and a pH value of 3.52. Furthermore, this treatment achieved the highest level of consumer acceptance based on organoleptic evaluation, indicating its potential to produce high-quality duku fruit yogurt that is well accepted by consumers.

Abstract

Kombucha is a fermented beverage that offers various health benefits and can be produced using different raw materials, including sapodilla fruit (Manilkara zapota), which is rich in carbohydrates and nutrients. This study aimed to analyze the effect of different fermentation periods on the quality of sapodilla kombucha based on chemical and organoleptic parameters. The research employed an experimental method using a Completely Randomized Design (CRD) consisting of four fermentation treatments, namely 0, 4, 6, and 8 days, with three replications each. The observed parameters included reducing sugar content, total titratable acidity, pH value, antioxidant activity, as well as organoleptic quality and consumer acceptability. The data were analyzed using Analysis of Variance (ANOVA) followed by Duncan’s Multiple Range Test (DMRT) at a 5% significance level. The results showed that variations in fermentation duration significantly affected the quality of sapodilla kombucha. The best treatment was obtained after 6 days of fermentation, resulting in a reducing sugar content of 2.57%, total titratable acidity of 0.36%, pH of 3.45, antioxidant activity with an IC50 value of 39.44 ppm, and the highest panelist acceptance score (4.83). This treatment was characterized by a clear brown color, a distinctive acidic kombucha aroma, and a slightly sweet-sour taste.

Abstract

Kecamatan Bunga Raya merupakan salah satu sentra produksi padi di Kabupaten Siak yang memiliki ekosistem sawah dengan keanekaragaman serangga aerial yang berpotensi dimanfaatkan sebagai sumber belajar kontekstual pada materi keanekaragaman hayati. Namun, penggunaan bahan ajar berupa buku saku di sekolah masih terbatas sehingga peserta didik lebih sering menggunakan buku paket yang kurang praktis. Penelitian ini bertujuan untuk mengembangkan buku saku keanekaragaman serangga aerial di lahan pertanian padi Kecamatan Bunga Raya sebagai sumber belajar tambahan bagi peserta didik SMA. Penelitian ini menggunakan metode deskriptif kualitatif yang dilaksanakan pada bulan Mei– Oktober 2025 di tiga kampung di Kecamatan Bunga Raya, yaitu Kampung Kemuning Muda, Kampung Bunga Raya, dan Kampung Tuah Indrapura. Pengambilan sampel serangga dilakukan menggunakan yellow trap dan insect net pada pagi, siang, dan sore hari. Identifikasi serangga dilakukan berdasarkan ciri morfologi menggunakan buku kunci determinasi dan bantuan website GBIF.org serta iNaturalist.org. Hasil penelitian kemudian dikembangkan menjadi buku saku menggunakan model ADDIE sampai tahap development. Hasil validasi menunjukkan bahwa buku saku memperoleh skor 86,5% dari ahli materi dan 98% dari ahli media dengan rata- rata 92,25% yang termasuk kategori sangat layak. Dengan demikian, buku saku yang dikembangkan layak digunakan sebagai sumber belajar kontekstual pada materi keanekaragaman hayati.
