Abstract

Probiotic play important role on immune systems. This study was to investigate effect of probiotic milk containing L. casei Shirota on immunoglobulin G levels among anemic adolescent girls. A total of 22 adolescent girls aged 13-18 years with anemia were included on this study. The subjects were separated into 2 groups i.e. a probiotic group and a control group by simple random sampling. During 4 weeks, a probiotic group received 1 tablet of 60 Fe elemental + 250 µg folate acid once a week and probiotic milk once daily. While a control group received 1 tablet of 60 Fe elemental + 250 µg folate acid once a week. Blood samples were collected at 0 and 4 weeks and assayed for immunoglobulin G levels by ELISA. Immunoglobulin G levels were not significantly increase after intervention. Compared with control group, probiotic milk administration in probiotic group did not significantly increased immunoglobulin G levels (p>0.05). The probiotic milk containing L. casei Shirota did not improve immunoglobulin G levels on anemic adolescent girls. Keywords: Probiotic, Immunoglobulin G levels, Anemia, Adolescent girls

Abstract

WHO declares that obesity is a global epidemic. In 2014, 39% of adults >18 years old were overweight and 13% had obesity. This research aims to determine the effect of green coffee extract on the weight rats fed high-fat diet. Method: This research is true experimental pre-post test with control group design. The animals were grouped into 5 groups, i.e., group1 (negative control), group2 (positive controls fed high-fat diet), group3 (high-fat diet and GCBE dose of 100 mg/kg BW), group4 (high-fat diet and GCBE with dose of 200 mg/Kg BW), group5 (highfat diet and GCBE dose of 400 mg/Kg BW). The obtained data were tested with one-way ANOVA followed by LSD analysis with α=0.05. Results: This research proves that green coffee bean extract with a dose of 100, 200 and 400 mg/kg BW can lower weight of rats with higt fat diet. Discussion: Green coffee extract contains active compound of chlorogenic acid that can increase AMPK activity so it has positive impact that can direct the result of metabolite substance, which is useful in decreasing fat synthesis. The high fat oxidation process results in decreased fat synthesis characterized by burning fat into energy thereby decreasing fat cells in adipose tissue.Keywords: Obesity, Body weight, Chlorogenic acid, Green coffee

Abstract

Nutritious food giving in under-fives to sustain the growth and development of under-fives optimally required the involvement of family members other than fathers. The purpose of this study was to determine the correlation between family members' involvement with the mother's nutrition care pattern of poor families in the Mojokerto regency of East Java. This research design was using case control with case population of poor mother with healthy under-five and control population was poor mother with nutritious problem child. Number of case group samples 79 people and control group 41 people. Sampling technique with multi stage sampling. Data collection using questionnaires that have been tested the validity and reliability to 30 people. Data analysis using chi square statistic test. The results showed that the involvement of other family members in the positive deviance mothers was good as much as 35 people (44.30%). In non-positive mother deviance involvement of most other family members were less than 31 people (75.61%), chi square obtained p = 0,000 and value α = 0,05, meaning there was correlation of family member involvement with care pattern of positive deviance mother. The involvement of family members motivated mothers to provide a good nutritional food to under-five children.Keywords: Positive deviance, Under five children, Care pattern, Nutrition

Abstract

Obesity is a global epidemic, it was health issues that must be addressed immediately. There was a very significant increase in the prevalence of overweight and obesity of adolescents. Several studies showed that social support related to eating disorders and physical activity of adolescents causes of overweight and obesity. Other study showed that personality contributes to health outcomes and it was associated with a controllable risk factor such as obesity. The aim of the study was to measure the relationship of personality type, fatty food consumption, and physical activity level to overweight and obesity among adolescents. We used a case-control design with 270 subjects. Case population was vocational or senior high school students with overweight or obesity and the control population was vocational or high school students without overweight or obesity. Data analysis used chi-square test with 95% confidence level (α = 0.05) and Odds Ratio (OR). The results showed that there was no significant relationship between personality type and overweight or obesity (p> 0.05). There was a significant relationship between the consumption of fatty foods (p = 0.001), the level of physical activity (p = 0.040) and overweight or obesity among adolescents. Abstract

Nutrition is the main requirement for a toddler, if not obtained food according to needs its nutrition value, it will interfere with the growing swell of current or next time. The purpose of this research was to analyze the effect of Additional Feeding Program Recovery on the intellectual intelligence children aged 4-5 years. Design of this research was observational cohort retrospective. The sample size was 70, were divided into two groups, group with a history of getting Additional Feeding Recovery and the Group didn't get Additional Feeding Recovery. Independent variable was Additional Feeding Recovery and the dependent variable was intellectual intelligence. Data was analyzed using Independent Sample t-test. There was no difference in the level of intelligence on the two group with p-value = 0.129. Kewords: Additional feeding recovery, Intellectual intelligence

Abstract

Chicken, soy tempeh, and Isolated Soy Protein (ISP) can be processed into sausages that can be alternative for highprotein snack. Red Yeast Rice is a natural food colorant added to that the sausage to make more interest. This research was aimed to determine the substitution effect of tempeh and addition of Isolated Soy Protein (ISP) to the organoleptic quality, protein value of chicken sausages. The type of research was pure experimental with completely randomized design. There was 3 types of formula, 1 control formula F0 (chicken) and 2 formula modifi cations F1 (50 g chicken, 50g tempeh, 15 g ISP, and 3 g of red yeast rice), F2 (100 g tempeh, 25 g ISP, 5 g red yeast rice ) with three replications. The organoleptic quality was determined by 35 untrained panelists. The results of organoleptic tests showed that F2 (color, taste, texture) was most preferred formulations. The highest protein content per 100 g sausage was F2 (17.4 g) compared with F0 (14.6 g). There were signifi cant differences between F0 to F1, F2 on fl avors (p = 0.000) and color (p = 0.000). The best formula rated by the composition, organoleptic test, and the protein content was F2.

Abstract

Moringa leaves and soybean sprouts is local plant in Indonesia. Moringa leaves and soybeans sprouts have high enough of nutrient content but still less to utilization. Moringa leaves are rich in iron and soybeans sprouts as an alternative food material who source of vegetable protein can be substituted to cookies for supplementary food recovery in the rehabilitation phase. The purpose of this study was to analyze the effect of ubstitution of Moringa leaf powder and flour soybean sprouts against acceptance, the levels of protein, and iron cookies. Type of research was true experimental design with completely randomized design at 2 times replicating. Untrained panelists were used 30 mother ofchildren aged 1-3 years. Product acceptance was tested using statistical analysis Kruskal Wallis (α≤0,05). The result of product acceptance test was the most preferred panelist is cookies F1 (150g wheat flour, flour 10g Moringa leaves and soybean sprouts flour 40g) have modus 3 (like) and protein content 9g and iron content 3,21mg per serving size (100g cookies). Statistical analysis showed significant difference to the characteristic colour (p=0,000), odour (p=0,000), texture (p=0,000) and flavor (p=0,000).

Abstract

Antioxidant plays a role as the free radical savaging. The red guava and the red dragon fruit peel contain high  antioxidants so it is potentially to be a functional product. The aim of this study was to analyze the effect of red guava juice and red dragon fruit peel essence addition on yoghurt acceptability and total cost. The research used a factorial design of 5 repetitions on 5 formulas. There are 1 control formula (F0) and 4 modifi cation formulas (F1, F2, F4, F5) with the addition of red guava juice and red dragon fruit peel. The panelist on this research consist of 30 untrainedpanelists. Descriptive analysis and inferential statistic using Friedman and Wilcoxon Sign Rank Test with α = 0,05 were used to analyze the difference of acceptability between the formulas. Panelists showed that the best treatment was F4 yoghurt formula (44% addition of fruit juice with the ratio of guava juice and red dragon fruit peel 50:50) and it has the most preferred acceptability (color, aroma, texture, and taste) with the average value was 2.91 and food cost per serving (100 ml) was Rp 2.900,00. Formula F4 has a good acceptability and lower total cost than commercialyoghurt. This formula has a potential to be an alternative functional drink. The aroma of yoghurt can be increased by eliminate cooking process on the red dragon fruit peel juice.Keywords: acceptability, red guava, red dragon fruit peel, total cost, yoghurt

Abstract

Biscuit is a food product made from the basic ingredient fl our that baked until moisture content less than 5%.  Commercial biscuits are generally rich in energy and high in sugars derive from carbohydrates and fats, but low infi ber. Seaweed (Eucheuma cottonii) and arrowroot fl our are high-fi ber food, while oyster mushroom contains high protein so it can be a potential ingredients to be substituted in biscuits. The addition of seaweed and oyster mushroom was expected to increase the fi ber content of biscuits compared to other biscuits. This study aimed to determine the acceptability and improve fi ber content in biscuits with the substitution of seaweed and oyster mushrooms. This study used a completely randomized design (CRD) with 3 treatments and 4 repetitions. Arrowroot fl our substitution treatment,seaweed, and oyster mushrooms were applied as F1 (25%: 50% to 25%), F2 (25%: 45%: 30%), and F3 (25%: 40%: 35%). Acceptability of biscuits based on organoleptic test and fi ber content from calculation based on Indonesia Food Composition Database and also laboratory analysis using proximate test. This research showed that formula 3 had the highest score based on organoleptic test with score 2.86. The highest fi ber content per serving (50 g) was found in formula 1 with 10.59 g of fi ber. The conclusion of this research is that the biscuit with substitution of seaweed andoyster mushroom has a good acceptability and higher fi ber content compared to commercial biscuits.Keywords: biscuit, oyster mushroom (Pleurotus ostreatus), seaweed (Eucheuma cottonii)

Abstract

Vitamin A defi ciency in Indonesia is still unresolved, especially in children. Pumpkin is a type of tubers and a local  food product that contains high beta-carotene. It is also potential to be used as a substitution for snacks which favored by children such as donuts. The purpose of this study was to determine the acceptability and beta-carotene level of pumpkin donut substitution. This research was true experimental for product development and quasi experimental for acceptability with a completely randomized design, 6 repetitions on one control formula (F0) and 3 modifi cation formula (F1, F2, F3) with additional of pumpkin. Panelist consists of 4 people as limited panelists and 30 people as non trained panelists. The difference of acceptability was analyze using Friedman test and continued with Wilcoxon Signed Rank Test if it shows a signifi cant difference. The level of beta-carotene was analyze using spectrophotometer. The result of this study showed the best acceptability found in formula 3 (with 40% addition of pumpkin) with an average value of 2,28 and beta-carotene level of was 0,139 ppms. Formula 3 donut have a good acceptability and also contains higherbeta-carotene than commercial donuts, so it is potential as an alternative healthy snack for schoolchildren.Keywords: beta-carotene, acceptance, donuts, pumpkin
