Abstract

This research was aimed at determing the effect of fish bone gelatin supplementation on protein content and consumer acceptability of rice-based traditional foods. Three types of traditional foods, i.e. dange, surabeng andonde-onde were supplemented with fish bone gelatin at concentrations of 0, 5, 10, 15 and 20% (w/w) with three replicates for each treatment and for each type of foods. The protein contents were analyzed using micro-kjeldahlmethod whereas the consumer acceptability was determined organoleptically by employing 15 panelists. Data on the protein contents were subjected to ne-way Annova, while those of consumer acceptability were analyzed descriptively using percentage of frequency of occurrence. Results indicated that addition of fish bone gelatin significantly increased the protein contents of the foods and that the protein content of each type of foods was differ between the gelatin concentration treatments. The protein contents of foods were increased by 1.68-4.77 folds, and may be predicted using a simple regression formula: Y=0.578x + 6.037, R2=0.978 for dange; Y=0.660x + 4.068, R2=0.992 for surabeng; and Y=0.554x +5.39, R2=0.967 for onde-onde. The level of consumer acceptability showed that the addition of 10% of fish bone gelatin into each of the three traditional foods produced food products with good acceptability levels.

Abstract

Makassar Strait is a waters area with a large and relatively fertile water resource potential. The Makassar Strait area represents the confluence zone between the Pacific Ocean and Indian Ocean fish populations. The fertility of the waters makes this area one of the breeding zones for most aquatic biota. This study aims to map the catch of small pelagic fishes with water conditions in the Makassar Strait. The data used in this study was fish catches data from Makassar Strait waters from June to September 2021. Data on environmental conditions in the form of Sea Surface Temperature and chlorophyll-a concentration in the waters during the study period were obtained from the AQUA satellite with MODIS sensors, then combined with the Geographic Information System (GIS). The results of this study indicate that the sea surface temperature range in Makassar Strait waters was between 26.7°C–31.3°C and the concentration of chlorophyll-a was between 0.7 mg/m³ - 1.30 mg/m³. The highest catch points were at two points with the same catch of the purse seine, namely 4,000 kg at 118°51'E and 5°10'59"S and at 118°52'59"E and 5°3'S, while the lowest catch was 5 kg at 118°19'E and 4°57'S. It can be concluded that the presence of fish may be influenced by the water’s conditions favored by the target fish in the Makassar Strait.

Abstract

As the population increased, the requirement for housing increased as well. The Randuputih coastal area on the coasts of Probolinggo Regency is located in the northern part of Java Island, so most residential areas are in the north coastal area. In this area, there is housing development close to the coastal area. With the housing development near the Probolinggo coastal area, we plan to build a coastal protection building as a groin structure to prevent erosion along the coast. In designing the groin structure, it is necessary to analyze the coastline changes in the Randuputih coastal area, Probolinggo Regency, to calculate the length of the groin built in that area. As a reference for calculating the groin structure, the analysis carried out observed changes in the coastline over 20 years (2003-2023). The sediment transport method used is the Ijima Sato sediment transport method because this method approximates changes in coastlines based on observations over 20 years in the Randuputih coastal area, Probolinggo Regency. The average sediment transport is 3.74 m3/day from the northwest. Adding three groin structures along 700m can maintain coastline change stability by up to 6.61%. Before the groins were applied, the average coastline change was 34%.
