Abstract

Indragiri Hilir is one of the districts with extensive waters and abundant fishery production. The potential for capture fisheries in Indragiri Hilir Regency is very large. In 2021, the potential for capture fisheries was 53,057.13 tons. Shrimp is a fishery commodity with high economic value and a favorite of Indonesian exports in the fisheries sector. Shrimp crackers are a series of food processing processes that combine tapioca flour with fresh shrimp to produce crispy snacks with a distinctive flavor. This process involves several critical stages that must be carried out carefully to produce high-quality products. Shrimp crackers are one of Indonesia's traditional snacks that have a distinctive taste and are in demand by various groups. Based on this, this study aims to determine how the shrimp cracker-making business process in Indragiri Hilir will be carried out in 2024. The research results obtained from this study are the shrimp cracker-making business in Indragiri Hilir, precisely in Tanah Merah Village, starting from the preparation, processing, and packaging stages. Shrimp crackers have been marketed to regions including Irian Jaya, Batam, Pekanbaru, Palembang, and Java. The development of the shrimp cracker processing business not only increases the livelihood of local people but also contributes to reducing unemployment in the area.

Abstract

Riau Province has abundant natural resources of mangrove forests almost along the coast of Riau. Mangrove fruit can be developed into various processed foods, but processed foods derived from mangroves have not been widely developed and are of interest to coastal communities. Kombucha tea is a probiotic beverage produced through the fermentation of tea and sugar using a kombucha starter known as SCOBY (Symbiotic Culture of Bacteria and Yeast). The presence of sugar in kombucha colonies is a vital source of nutrition. Additionally, fruit juice can be incorporated to create variations of kombucha tea. Kedabu fruit (Sonneratia ovata B.), a native fruit of Riau Province, is recognized for its high carbohydrate content and secondary metabolites, which exhibit potential antibacterial properties. This research developed four formulations of kombucha tea, each with different concentrations of kedabu fruit juice (0%, 10%, 20%, and 30%). The study’s objectives were to formulate, evaluate the physicochemical properties and antibacterial activity of these formulations against Escherichia coli and Staphylococcus aureus. The organoleptic properties, alcohol content, pH, %TTA (Total Acidity Titratable), total LAB (Lactic Acid Bacteria), and yeast count were assessed during a 14-day fermentation period. The assay results indicated that the kombucha fruit kedabu tea formulation exhibited favorable organoleptic characteristics, a decrease in pH, an increase in %TTA, total LAB, and yeast count within the acceptable range defined by standards. Moreover, it displayed inhibitory activity against Escherichia coli and Staphylococcus aureus bacteria, falling within the weak to moderate categories.

Abstract

Ramadhan merupakan bulan penuh berkah sekaligus tantangan bagi umat Muslim yang sedang menjalani terapi obat. Perubahan pola makan, jam tidur, serta waktu konsumsi makanan dan minuman secara langsung menyebabkan pergeseran jadwal penggunaan obat. Kondisi ini tidak hanya berpotensi mengurangi kenyamanan pasien, tetapi juga dapat memengaruhi farmakokinetika obat, sehingga berisiko menurunkan efektivitas terapi maupun meningkatkan kemungkinan timbulnya efek samping apabila tidak dikelola dengan baik. Oleh karena itu, pemahaman yang tepat mengenai cara penggunaan obat selama berpuasa menjadi hal yang sangat penting bagi masyarakat. Berdasarkan fenomena tersebut, kegiatan pengabdian ini dilaksanakan dengan tujuan memberikan edukasi kepada masyarakat tentang penggunaan obat yang aman, bijak, dan sesuai aturan medis di bulan Ramadhan. Edukasi dilakukan melalui penyuluhan interaktif dengan dukungan media edukasi berupa brosur atau leaflet yang mudah dipahami. Untuk mengetahui efektivitas kegiatan, masyarakat terlebih dahulu diberikan kuesioner pre-test dan kemudian post-test dengan menggunakan lembar ceklis sebagai instrumen evaluasi. Hasil analisis menunjukkan adanya peningkatan pengetahuan yang signifikan dengan nilai p-value 0,000 (p < 0,05) berdasarkan uji Wilcoxon. Temuan ini membuktikan bahwa penyuluhan sederhana yang disertai media edukatif mampu meningkatkan pemahaman masyarakat terkait cara penggunaan obat saat berpuasa. Dengan demikian, kegiatan ini tidak hanya bermanfaat bagi keberlanjutan terapi, tetapi juga mendukung kualitas hidup umat Muslim selama menjalankan ibadah Ramadhan

Abstract

Distribusi obat yang sesuai dengan standar Cara Distribusi Obat yang Baik (CDOB) berperan penting dalam menjaga mutu, keamanan, dan khasiat obat hingga ke pasien. Penelitian ini bertujuan mengevaluasi tingkat penerapan CDOB pada salah satu Pedagang Besar Farmasi (PBF) “X” di Kota Pekanbaru sesuai Peraturan BPOM No. 20 Tahun 2025. Penelitian menggunakan metode observasional dengan pendekatan deskriptif melalui observasi langsung, wawancara dengan Apoteker Penanggung Jawab (APJ), serta pengisian daftar ceklis kuesioner berdasarkan indikator CDOB. Hasil evaluasi menunjukkan skor penerapan CDOB sebesar 89,18% yang termasuk kategori sangat baik. Aspek yang sudah terlaksana optimal meliputi penyimpanan, dokumentasi, pengiriman, dan pengendalian mutu. Namun, terdapat kelemahan pada pemusnahan obat kadaluarsa yang belum berjalan konsisten, serta ketiadaan area khusus untuk penyimpanan bahan radioaktif atau berbahaya, meskipun tidak relevan dengan lingkup distribusi PBF ini. Secara keseluruhan, tingginya kepatuhan terhadap CDOB di PBF “X” Pekanbaru memberikan dampak positif terhadap mutu distribusi obat dan keselamatan pasien. Diperlukan penguatan SOP pemusnahan obat, pelatihan SDM secara berkelanjutan, serta inspeksi internal rutin untuk memastikan keberlanjutan penerapan CDOB.

Abstract

The liver is an organ that plays many roles in the body's metabolism. These include macronutrient metabolism, blood volume regulation, immune system support, lipid and cholesterol homeostasis, and breakdown of xenobiotic compounds, including various drugs. Hepatitis is one of the many diseases that is a major world health threat. One of the plants used to prevent and treat hepatitis is turmeric (Curcuma domestica Val) whose main content is curcumin. The Community Service Activities will be carried out on April 08 2023 at Air Putih Village, Tuah Madani District, Pekanbau City, Riau Province. The aim of this community service is to increase public understanding and awareness about the treatment and prevention of liver disease by using herbal plants and to see the level of public knowledge about diseases that attack the liver so it is hoped that this community service can improve the level of public health which will certainly help reduce the number of sufferers. liver disease. From the results of this service activity, it can be seen that the level of knowledge of each individual is different. The number of respondents obtained was 50 respondents, and the results showed that the majority had a good level of knowledge about liver disease after counseling and providing education with leaflets.

Abstract

Food is one of the most important needs for humans because it relates to daily nutritional needs. The solution to this problem is to consume food with good nutritional content supported by appropriate food processing innovations. Milk can be drunk directly or processed into various forms of food and drinks with milk-based ingredients, such as yogurt. This study aims to make yogurt products from soy milk using red dragon fruit juice as a substitute for sugar and to test their antibacterial activity in inhibiting Salmonella typhi and Shigella dysenteriae bacteria. This study used a completely randomized design (CRD) with 3 treatments, namely the addition of red dragon fruit juice with concentrations of 5%, 10%, and 15%, 3 replications, and the diffusion method for testing antibacterial activity. The results showed that the best yoghurt formula was obtained from F3 (yoghurt with the addition of 15% concentration of red dragon fruit juice). The panelist hedonic test gives values ranging from slightly like to like for color, aroma, taste, and texture; for organoleptic F3, these are: color (dark pink), taste (sour), texture (liquid-thick), and aroma (typical); pH 3.49; TAT 1.39%; Lactic Acid Bacteria (LAB) 2.09 x 1010 CFU/mL; and also had an average diameter of inhibition of 18.96 mm against Salmonella thypi (P<0.05) and 20.10 mm against Shigella dysenteriae (p<0.05). Soy milk yogurt with the addition of varying concentrations of red dragon fruit juice has antibacterial activity.

Abstract

Carrot extract (Daucus carota L.) contains various bioactive compounds, including vitamins A, B, and C, alkaloids, flavonoids, tannins, anthraquinones, saponins, diterpenes, steroids, beta-carotene, phenols, terpenoids, and minerals, all of which possess antioxidant properties. These compounds are known to help slow down the aging process. The aim of this study was to determine the optimal concentrations of gelling and alkalizing agents, assess their interactions, and evaluate the anti-aging effects of the most effective serum formulation. The formulation was optimized using the Box–Behnken design with two key factors: Carbopol 940 concentration (0.5–1%) and triethanolamine (0.5–1%). The effects on pH, adhesion, and spreadability were evaluated. The best formulation was achieved with 0.837% Carbopol 940 and 0.855% triethanolamine, showing a pH error of 2.45%, adhesion error of 0.76%, and spreadability error of 1.01%, all within acceptable limits (errors < 10%). After four weeks of stability testing, the formulation remained stable, well-mixed, with a pH of 5.16, an adhesion time of 1.60 seconds, and spreadability of 6.73 cm, with no discomfort. The combination of Carbopol 940 and triethanolamine improved the physical properties, enhancing anti-aging effects compared to the base formula. The optimized serum increased skin moisture by 84.62%, reduced pore size by 64.71%, lightened spots by 62.79%, and reduced wrinkles by 67.50%. This indicates the optimized carrot extract serum is stable, safe, and effective as an anti-aging agent, making it a promising natural skincare product.

Abstract

Kombucha tea is a traditional fermented beverage known for its probiotic benefits, produced from sweetened tea fermented with a Symbiotic Culture of Bacteria and Yeast (SCOBY). Recent innovations have focused on enhancing its functional properties using local fruit extracts. However, studies on the incorporation of Spondias dulcis (kedondong), a native fruit of Riau, remain limited. This study aims to formulate kombucha tea enriched with kedondong juice and evaluate its quality and antibacterial activity against Escherichia coli and Staphylococcus aureus. Four formulations were prepared with kedondong juice concentrations of 0% (F1), 10% (F2), 20% (F3), and 30% (F4). Parameters observed included organoleptic properties, pH, alcohol content, microbial growth, and total acidity. Antibacterial activity was tested using the disc diffusion method, and results were statistically analyzed using One-Way ANOVA. F4 on day 7 showed the highest inhibition zones (13.30 mm for E. coli and 14.49 mm for S. aureus), with significant differences between formulations (p < 0.05). This study highlights the potential of kedondong-enriched kombucha tea as a functional probiotic beverage and a natural source of mild antibacterial agents, offering an innovative approach to utilizing local biodiversity in public health.

Abstract

Lactic acid bacteria (LAB) are capable of producing bioactive metabolites that can inhibit the growth of molds, including Aspergillus parasiticus. However, the potential of local LAB strains from Riau as biocontrol agents has not been extensively explored. This study aimed to optimize the concentration of LAB isolated from Riau to obtain the best antifungal activity, evaluate the effectiveness of their supernatants against the growth of A. parasiticus, and assess their potential application in food commodities.The antifungal activity of cell suspensions was tested using the well-diffusion method with varying concentrations (OD). Cell-free supernatants were analyzed through dilution assays to determine the percentage of fungal inhibition. Application testing was conducted on corn kernels as a biocontrol model. The results showed that increasing LAB cell density correlated with a larger inhibition zone against the mold. The two best isolates, S28 and AERH7, at OD 0.8 and 48 hours of incubation, produced inhibition zones of 18.67 mm and 17.58 mm, respectively. The supernatants of both isolates also demonstrated strong activity, with inhibition percentages of 72.17% and 64.39%, confirming the role of LAB metabolites in antifungal activity. Application on corn kernels further showed a visible reduction in mold growth compared to the control.This study concludes that LAB strains from Riau possess significant potential as natural biocontrol agents against A. parasiticus. These findings provide practical benefits for developing microbial-based biopreservation strategies to enhance food safety and quality.

Abstract

Pengabdian kepada masyarakat ini dilaksanakan di Desa Sungai Pinang, Kecamatan Tambang, Kabupaten Kampar, Provinsi Riau dengan sasarannya masyarakat yang ada di desa tersebut. Pengabdian ini bertujuan agar masyarakat dapat mengetahui dan memahami identifikasi boraks pada makanan terutama bakso dengan penambahan boraks menggunakan sari bunga telang (Clitoria ternatea L) sebagai indikator alami. Diharapkan kepada masyarakat dapat melakukan identifikasi boraks secara mandiri sebagai bentuk kewaspadaan terhadap makanan yang belum diketahui keamanannya. Selain itu agar masyarakat dapat memahami perbedaan antara bakso yang baik (non boraks) dengan bakso yang sudah terpapar boraks. Pengabdian ini dilaksanakan pada 3 Agustus 2023 dan diikuti oleh 40 masyarakat desa. Bentuk kegiatan berupa edukasi melalui penyuluhan dan penampilan video yang menunjukkan langkah-langkah dalam mengidentifikasi boraks pada bakso menggunakan sari bunga telang sebagai indikator. Adapun untuk mengetahui tingkat pengetahuan masyarakat desa maka dilakukan pemberian kuisioner pre-test dan post-test. Hasil didapatkan bahwa kegiatan pengabdian masyarakat oleh Sekolah Tinggi Ilmu Farmasi Riau berjalan dengan baik karena adanya peningkatan pengetahuan masyarakat sesudah penyuluhan dibandingkan sebelum penyuluhan.
