Abstract

ABSTRACT Pregnant women are a group who is at risk of undergoing malnutrition. One effort to meet the nutritional needs of pregnant women is to modify dietary menus such as fish nuggets made from lemuru and moringa leaf powder to meet protein and calcium needs. The purpose of this study was to analyze the effect of adding moringa leaf flour to protein content, calcium, and acceptance of lemuru fish nuggets with the addition of moringa leaf flour. This type of research is Quasi-Experimental using the Completely Randomized Design (CRD) method, with the 12 experimental units in 4 treatments, addition of moringa flour to lemuru fish nuggets by 0, 20, 30, and 40 percent. Protein levels were analyzed using the Kjeldahl Semi-Micro method, calcium using the Permanganometric method, and the acceptability test using the Scale Test. data from the test results of protein levels and calcium levels were analyzed using the Kruskal Wallis test and the Mann Whitney U test, while the results of the acceptance test were analyzed using the Friedman test and the Wilcoxon Sign Rank test with a significance level of 5% (α = 0.05). The results showed that the addition of moringa leaf flour increased the protein and calcium content of lemuru fish nuggets, and had an effect on the taste acceptability of the nuggets (p-value ≥ α). Lemuru fish nuggets recommended are lemuru fish nuggets with the addition of 20 percent (X1) Moringa leaf powder, which contains 21.18 percent protein content and 410 mg calcium level. Lemuru fish nuggets with the addition of 20 percent moringa leaf powder (X1) contain protein content by SNI 7758: 2013. One-piece or 15 grams of lemuru fish nugget with the addition of 20 percent of moringa leaf powder(X1) can fill 29.28-34.16 percent of Recommended Dietary Allowances(RDA) of calcium is recommended for pregnant women aged 16-49 years. Consumption recommendations for pregnant women aged 16-49 years are 3-5 pieces per day to fill protein needs and 3-4 pieces per day to fill calcium needs. ABSTRAK Ibu hamil merupakan kelompok yang berisiko mengalami gizi kurang. Salah satu upaya memenuhi kebutuhan gizi ibu hamil dengan modifikasi menu makanan seperti nugget ikan berbahan lemuru dan tepung daun kelor untuk memenuhi kebutuhan protein dan kalsium. Penelitian ini menganalisis pengaruh penambahan tepung daun kelor terhadap kadar protein, kalsium, dan daya terima nugget ikan lemuru. Penelitian Quasi Experimental dengan metode Rancangan Acak Lengkap (RAL), terdiri dari 12 unit percobaan dalam 4 perlakuan, yaitu penambahan tepung daun kelor pada nugget ikan lemuru sebesar 0, 20, 30, dan 40 persen. Kadar protein dianalisis dengan metode Semi Mikro Kjeldahl, kalsium dengan metode Permanganometri, dan uji daya terima menggunakan Scale Test. Data hasil uji kadar protein dan kadar kalsium dianalisis menggunakan uji Kruskal Wallis dan uji Mann Whitney U Test sedangkan hasil uji daya terima menggunakan uji Friedman dan uji Wilcoxon Sign Rank dengan tingkat signifikasi 5% (α=0,05). Hasil penelitian menunjukkan penambahan tepung daun kelor meningkatkan kadar protein dan kalsium nugget ikan lemuru, dan berpengaruh pada daya terima rasa nugget (p-value ≥ α). Nugget ikan lemuru yang direkomendasikan adalah nugget ikan lemuru dengan penambahan tepung daun kelor sebesar 20 persen (X1) yang mengandung kadar protein 21,18 persen dan kadar kalsium 410 mg, kandungan protein sesuai dengan SNI 7758:2013. Setiap potong atau 15 gram nugget ikan lemuru dengan penambahan tepung daun kelor 20 persen (X1) dapat memenuhi Angka Kecukupan Gizi (AKG) sebesar 32,09 - 34,72 persen protein dan 29,28 - 34,16 persen kalsium untuk ibu hamil usia 16-49 tahun. Konsumsi 3-5 potong per hari mencukupi kebutuhan protein harian dan 3-4 potong per hari mencukupi kebutuhan kalsium harian untuk ibu hamil usia 16-49 tahun. [Penel Gizi Makan 2021, 44(1):1-10]

Abstract

Stunting and Tuberculosis (TB) are still serious health problems in Indonesia, due to the low level of public knowledge about stunting and TB, so a solution is needed in the form of nutrition education. One of the recommended nutrition education methods is the Emo-Demo method, because this method has a high success rate for increasing awareness and behavior change. This community service aims to increase cadres' knowledge about stunting and tuberculosis (TB) using the Emo-Demo method. This community service was carried out at Posyandu Anyelir 47 Klungkung Village, Sukorambi District, Jember Regency on May 23, 2024. The targets of this community service are cadres totaling 10 people. The results of increasing cadre knowledge in this community service activity were analyzed by the Wilcoxon non-parametric test to measure the difference in the mean values of two paired samples. In the cadre Pre-test results, the average value was 60% and during the Post-test the cadre's knowledge increased to 80%. The Wilcoxon Pre-test and Post-test test results obtained a value of 0.046 <0.05, meaning that there is an average difference between the level of knowledge about stunting and tuberculosis after education with the Emo-Demo method. Based on this, it can be concluded that there is an increase in knowledge of cadre about stunting and TB infection after nutrition education with the Emo-Demo method, and this method can be used for knowledge improvement activities in the community.

Abstract

Background: Stunting is a growth problem caused by long-term malnutrition that occurs within the first 1000 days of life, and accumulation of the effects of inadequate nutritional intake and infections during pregnancy is a the causes of child malnutrition. The impact from low levels sanitation is reducing the quality of life of the community, one of the causes of stunting. The water quality for daily needs must meet the requirements so as not to cause stunting. The Emo-Demo activity with the theme of clean living water in Mandiro Village aims to increase the understanding of pregnant women about the importance of using clean water for daily needs. Methods: The Emo-Demo activity with the theme “Clean Water, Radiant Life” was held on Monday, December 9, 2024, located in Mandiro Village, Tegalampel District, Bondowoso Regency. The targets of this Emo-Demo were 15 pregnant women. The method of this activity starts from the preparation stage including coordination, implementation of Emo-Demo, and evaluation. The results of correct and incorrect answers in pre-test and post-test were calculated manually. To determine the increased knowledge of the participants a paired sample t-test was used. Results: From the results of the data analysis, there was a significant increase of 13% in the understanding of mothers of toddlers about clean water in preventing stunting. The result of the pre-test calculation was 62.8%, while the post-test obtained an average result of 92.4%. Conclusion: Emo-Demo activity in Mandiro Village, pregnant women received new information that touched their emotions, so they would change their habits and minimize using river water.

Abstract

Prediabetes merupakan kondisi metabolik kronis yang serius dimana kadar gula darah lebih tinggi dari normal dan memiliki risiko tinggi terkena diabetes dalam lima tahun. Berdasarkan IDF, pada tahun 2024, penderita prediabetes pada orang dewasa, jumlah IGT mencapai 16,3%, dan IFG mencapai 16,3%. Dari SKI 2023, prevalensi prediabetes di Indonesia, IGT mencapai 18,5% dan IGF mencapai 13,4%, dimana angka tersebut lebih tinggi dari prevalensi global. Prediabetes di pesisir juga cukup besar, untuk penelitian sebelumnya prevalensinya lebih dari 40%. Berdasarkan data profil kesehatan Jember tahun 2020-2023, PKM Sabrang mengalami peningkatan kasus pada tahun 2020 (593), 2021 (623), 2022 (627), dan (629). Terdapat perbedaan temuan antara faktor risiko sehingga perlu diketahui kondisi di wilayah Sabrang. Penelitian ini bertujuan untuk mengetahui prevalensi dan faktor risiko prediabetes di wilayah kerja Puskesmas Sabrang. Penelitian ini menggunakan desain penelitian cross-sectional dan menggunakan data primer. Sampel minimal dengan rumus Kelsey didapatkan sebanyak 104, namun pada penelitian ini didapatkan sebanyak 105 yang memenuhi kriteria penelitian dan menggunakan purposive sampling. Penelitian ini menemukan prevalensi prediabetes pada masyarakat pesisir mencapai 16,19%. Hasil uji Chi-square didapatkan hubungan yang signifikan antara pendidikan dan tempat tinggal dengan kejadian prediabetes (p-value < 0,05). Analisis multivariat didapatkan hubungan antara variabel obesitas sentral dan tempat tinggal dengan prediabetes setelah variabel IMT dikontrol. Responden yang lingkar pinggangnya masuk kategori obesitas sebesar 3,57 dan tinggal diperkotaan memiliki risiko 3,91 kali lebih tinggi untuk mengalami prediabetes setelah variabel IMT dikontrol. Masyarakat dan pemerintah berperan aktif dalam program Gerakan Nusantara Tekan Angka Obesitas (GENTAS). Perlu skrining kesehatan rutin dan sosialisasi terkait prediabetes.

Abstract

The adolescent age group had a tendency to have an unhealthy diet, such as consuming more sugar (53,1%) than the other age groups. The increasing consumption of sugar-sweetened beverages (SSBs) is a major contributor to the increasing prevalence of obesity in adolescents in Indonesia. Increased consumption of SSB in adolescents is thought to be one of the factors contributing to the increase in obesity prevalence. Jember Regency as one of the areas with modern lifestyle trends shows a trend of consumption of these drinks that needs to be analyzed in more depth. The purpose of this study was to analyze the consumption patterns of SSB in adolescents and the relationship between the characteristics of respondents and the type, amount, and frequency of SSB consumption. This was an analytical observational study with a cross-sectional design. The study was conducted from June to September 2024. The independent variables of the study consisted of respondent characteristics, including gender, age, and education, while the dependent variable was the consumption pattern of sugar-sweetened beverages in packaging (SSB), including the type, size, amount, and frequency of SSB consumption. Data collection on SSB consumption patterns in adolescents was carried out with an instrument in the form of a semi-quantitative food frequency (SQ-FFQ) questionnaire online using the Google form. The research data were analyzed univariately and bivariately using the chi-squared test. The results showed that almost all respondents (97,75%) consumed more than one type of SSB. Tea type SSB (37,39%) was the most consumed/favored, with a frequency of consumption of 2-3x/week by (48%). In addition, the absence of significant differences in the consumption patterns of SSB in terms of the type of SSB consumed and the characteristics of respondents indicates that SSB is favored by adolescents with a fairly high frequency, regardless of differences in individual characteristics.

Abstract

Stunting is a form of long-term reflection of the quality and quantity of food consumed is inadequate and often suffers from infectious diseases in childhood. The problem of stunting is a nutritional problem that needs attention because it can affect the quality of human resources. Stunting problems, especially those that occur in toddlers, are considered serious because stunting conditions in toddlers can cause delays in motor development and decrease intelligence levels. The type of research used in this study is an analytical observational study with a case control research design. The results of data analysis showed that there was an effect of parenting on the incidence of stunting in toddlers. The amount of risk is 5, 1 which means that families who apply good parenting to toddlers will reduce the risk of stunting. This study is in line with research conducted by Rahmayana, et al (2014) which states that there is a significant relationship between parenting patterns and the incidence of stunting. Parenting patterns of parents to children in this case is the practice of giving food is an important foundation in growth. The role of parents, especially mothers when breastfeeding their children, when giving food, how to give food to children and controlling the portion size and nutritional content in children's food will improve nutritional status so that it will reduce the incidence of stunting in children. The solution to this problem is to screen children under five to detect stunting.

Abstract

Background: Health problems that often occur in Kasemek Village, Tenggarang Subdistrict, Bondowoso Regency are dengue fever and stunting in toddlers. This is caused by waste problems and lack of knowledge of mothers regarding balanced nutrition. The purpose of this activity is to increase community knowledge related to how to manage waste and prevent stunting in children. Method: This activity partnered with the Kasemek Village Government and the Bondowoso District Environment Office with 40 participants. The methods used were community education and advocacy. Community education was conducted through education with pre-test and post-test. Result: The results achieved from this activity included the availability of waste containers, waste carts, and a management system for temporary shelters (TPS) in Kasemek Village. In addition, educational activities resulted in increased knowledge of mothers regarding balanced nutritious food to fulfill nutrition in toddlers to prevent stunting. Conclusion: Community empowerment activities have made waste disposal facilities more adequate and increased mothers' knowledge of healthy food menus.

Abstract

Kabupaten Jember masih menghadapi masalah gizi gangguan akibat kekurangan iodium (GAKI), sebagian besar kecamatannya termasuk dalam kategori daerah endemik GAKI. Salah satu penyebabnya adalah faktor goitrogenik sianida yang mengganggu pembentukan hormon tiroid. Keberadaannya pada beberapa sayuran yang biasa dikonsumsi masyarakat menyebabkan diperlukannya pola konsumsi dan proses pengolahan yang baik agar aman dikonsumsi. Penelitian ini bertujuan mengubah pola konsumsi goitrogenik sianida dan cara pengolahannya melalui penyuluhan gizi dan demonstrasi cara pengolahan pangan sumber goitrogenik sianida yang benar. Penelitian ini adalah sebuah penelitian kuasi eksperimental dengan rancangan pretest-posttest control design. Jumlah sampel sebanyak 196 ibu rumah tangga, terdiri dari 98 orang di setiap kelompok perlakuan dan kontrol. Penelitian dilakukan di Kecamatan Arjasa Kabupaten Jember pada bulan Maret hingga Mei 2013. Hasil penelitian menunjukkan adanya peningkatan konsumsi bahan mentah sumber goitrogenik sebesar 25,98 gram. Namun, tidak terjadi peningkatan konsumsi sianida, justru menurun sebesar 9,09 miligram pada kelompok perlakuan. Hal ini terjadi karena pemilihan cara pengolahan yang tepat sesuai materi intervensi, yaitu beralih ke kulub dan rebus berkuah. Namun penurunan ini tidak signifikan (p = 0,56). Materi tentang GAKI dan cara mereduksi kadar sianida pada bahan pangan sumber goitrogenik sianida bisa dijadikan materi penyuluhan dalam program pencegahan GAKI di Kabupaten Jember. Jember still encounter the problem of nutrition iodine deficiency disorders (IDD), most of the district are included in the category of endemic areas. One reason is the cyanide goitrogenic factors that can interfere with the function of the thyroid hormone. Its presence in some commonly consumed vegetables society, causes the need for patterns of consumption and good processing in order to make it safe for consumption. Cyanide is a precursor thiocyanate which disrupt the formation of thyroid hormones through two pathways, active transport and interfere with the activity of thyroid peroxidase. This study aimed to change food pattern and way of processing goitrogenic cyanide food stuff through nutritional counseling and demonstration of food processing to reduce cyanide in goitrogenic food stuff. The research was a quasy-experimental study with pretest-posttest control design. The number of samples 196 housewives, consist of 98 people in the respective treatment groups and control. The study was conducted in the District Arjasa Jember between March and May 2013. The result showed presence of increased consumption of raw materials sources goitrogenic cyanide of 25.98 grams, was not followed by an increase in the consumption of cyanide, which has decreased by 9.09 miligram in the treatment group. This occurs because of the selection of appropriate food processing, switching to boil and blanching (kulub). However, this decrease was not significant (p = 0.56). The material on IDD and how to reduce levels of cyanide in the food source of cyanide can be used as material counseling in prevention programs IDD in Jember.

Abstract

Upaya edukasi berbasis pendekatan interaktif dinilai penting untuk meningkatkan pengetahuan remaja terkait pencegahan pernikahan dini. Penelitian ini bertujuan untuk menganalisis efektivitas metode edukasi Emo Demo dalam meningkatkan pengetahuan siswa mengenai pernikahan dini dan kaitannya dengan stunting. Penelitian menggunakan rancangan pre-eksperimental dengan desain one group pre-test dan post-test. Subjek penelitian adalah 47 siswa kelas X di salah satu SMK Kabupaten Jember yang dipilih dengan metode total sampling. Instrumen pengukuran berupa kuesioner dengan 10 soal pilihan ganda yang mencakup aspek pengetahuan dasar stunting, dampak pernikahan dini, dan upaya pencegahannya. Data dianalisis menggunakan uji Paired Sample T-Test dengan tingkat signifikansi 0,05. Hasil penelitian menunjukkan adanya peningkatan pengetahuan siswa setelah intervensi. Nilai terendah meningkat dari 50 menjadi 70, nilai tertinggi dari 90 menjadi 100, dan rata-rata skor dari 74,8 menjadi 84,4. Uji Paired Sample T-Test memperoleh nilai signifikansi 0,000 (p < 0,05), yang berarti terdapat perbedaan bermakna antara pengetahuan sebelum dan sesudah edukasi. Sebanyak 27 siswa (56,2%) juga mengalami peningkatan skor pengetahuan pada post-test, sehingga indikator capaian peningkatan minimal 50% terpenuhi.

Abstract

Predisposing factors and husband’s support in the practice of feeding weaning food infants aged 6-12 monthsBackground: Nutritional problems are caused by several factors, one of which is weaning food feeding. Objective: This research aims to analyze the predisposing factors and the husband's support for feeding weaning food to infants aged 6-12 months. Methods: This observational analytic study, using a cross-sectional approach, was conducted in the working area of Kemuningsari Kidul Public Health Center in Jember Regency. Eighty mothers of infants aged 6-12 months were chosen as the sample, and the sample selection was done using a simple random sampling technique. Meanwhile, the Chi-Square test and multiple logistic regression were used for the statistical analysis. Results: The research showed that most respondents were 26-35 years old, and their latest education was junior high school/equivalent. They were unemployed, had good knowledge, a positive attitude, family support, and no cultural influence. Fifty-four people (67,5%) had appropriate behavior in feeding weaning food, while the other 26 people (32.5%) had not. Besides, based on the results of the bivariate analysis, there was a relationship between occupation (p=0.007), knowledge (p=0.023), attitude (p=0.004), culture (p=0.000), and husband's support (p=0.008) with the practice of feeding weaning food. The results of the multivariate analysis indicated that culture was the dominant factor in feeding weaning food. Conclusions: Factors related to feeding weaning food to infants aged 6-12 months include work, knowledge, attitudes, culture, and husband's support. Culture is the most dominant factor.
