Abstract

Bakasang is one of the traditional products of North Maluku, this product has not been studied scientifically. The purpose of this research is to know the organoleptic characteristics of bakasang to be known and accepted by public. This research was fermented using 25% of salt with duration (0, 2, 4, 6, and 8 days), and storage with duration (0, 30, 60, and 90 days).Bakasang’s have organoleptic tested include: appearance, odor, taste and texture. Bakasang elected to compared with commercial bakasang are usually consumed by people in North Maluku.This research shown that: fermentation treatment 4 days at 0 days storage (F4P0) and fermentation bakasang 8 days at 0 days storage (F8P0) was chosen.Paired comparison test results show that bekasang tuna has the advantage of taste and smell unique because it is more preferred by panelist.

Abstract

Ipong-Ipong (Fasciolaria salmo) snail is a mollusk from marine gastropod class in Cirebon, West Java which is consumed by public and believed to improve health, but no research on the protein and amino acid content. This study aimed to determine the proximate content, acid insoluble ash, amino acids (before and after treatment), and content of taurine on the best methods. The research was conducted in two parts. The first part covers sampling, identification, preparation, determination of size and weight, calculation of body recovery, processing, and organoleptic tests. The second part consists of processing treatments boiling (100ºC for 15 minutes), steaming (100ºC for 20 minutes), and boiling with the addition of 3% salt for 15 minutes. The results showed that the treatment gives a significant effect in fat, protein, water, ash and acid insoluble ash content (α=0.05). The highest content of essential amino acids in Ipong-ipong snail was arginine and non-essential amino acid was glutamic. The treatment method causes decreased in amino acid content. Steaming resulted in a decrease of taurine content of 164.17 mg/100 g to 149.62 mg/100 g.

Abstract

This study aimed to analyze the effect of seaweed rice on Fasting Blood Glucose (FBG) and Superoxide Dismutase (SOD) levels in humans measured using finger prick method. This research was a quasi-experimental study with pre-posttest design. A total of 34 adult subjects were divided into control and intervention groups. The intervention group received 250 g/day of seaweed rice made by extrusion method at 8 AM for 42 days, while the control group received none. The results showed that the intervention had no significant effect on either FBG or SOD levels.

Abstract

This study aimed to determine the potential of watercress extract as an antioxidant and antiproliferation against cancer cells in vitro. Cells used in this study were breast cancer culture cells (MCF-7) and vero cells. Watercress was extracted using water solvent and 70% ethanol. Phytochemical test was performed on both types of extract. Toxicity test was measured using BSLT method, assessment of antioxidant activity was measured using DPPH method and inhibitory proliferation in cancer cell was measured using MTT Assay method. Analysis of the data using ANOVA, if there is a significant difference between treatments will be followed up with Duncan test. The results of phytochemical tests showed that watercress extracts had bioactive content namely flavonoids, tannins, saponins, and steroids. The result of BSLT test showed that the strongest extract toxicity was 70% ethanol extract with LC50 value of 406.02 ppm and had the highest antioxidant activity with IC50 value of 102.26 ppm, while proliferation inhibitory test found in MCF-7 breast cancer cells had IC50 value of 1.696 μg / ml and not toxic to vero cells. Result showed that the ethanolic extract of Nasturtium Officinale gave a significant effect on MCF-7 breast cancer cells inhibition (p=0,015) at concentration 50, 400, 800 and 1000 ppm. The mechanism of proliferative inhibition was associated with phytochemical content present in watercress.
