Abstract

Perubahan kebiasaan makan serta ketersediaan berbagai macam makanan tinggi energi membuat obesitas dan overweight  menjadi salah satu masalah serius. Prevalensi obesitas di Indonesia pada usia 18 tahun ke atas tergolong tinggi (23,4%) berdasarkan Survei Kesehatan Indonesia (2023). IMT membantu memantau status gizi pada dewasa gizi lebih dengan mudah. Gizi lebih ditandai dengan nilai IMT ≥25,0 kg/m2 untuk overweight dan ≥30,0 kg/m2 untuk obesitas. Orang dengan obesitas atau overweight memiliki rasio bakteri Firmicutes lebih banyak. Firmicutes meningkatkan penyimpanan energi di jaringan adiposa. Probiotik dapat memanipulasi mikrobiota usus untuk memulihkan ketidakseimbangan rasio bakteri Firmicutes sehingga dapat mengatasi gizi lebih. Untuk mengetahui efek suplementasi probiotik terhadap IMT dewasa gizi lebih. Menggunakan metode Literature Review terhadap 7 artikel desain penelitian Randomized Controlled Trial (RCT) 10 tahun terakhir (2014-2024) dipilih dari Pubmed dan Google Scholar reputasi internasional (Q1-Q4) dan nasional (S1-S3). Kata kunci digunakan probiotics, obesity, BMI, body mass index,  probiotik, obesitas, IMT. Sebanyak 5 artikel (71.42%) menyatakan ada penurunan IMT yang signifikan pada dewasa gizi lebih setelah suplementasi probiotik. Suplementasi probiotik dapat memberikan efek penurunan IMT signifikan pada penderita gizi lebih diimbangi dengan dosis 107 hingga 109  dan durasi pemberian 9-12 minggu atau jenis probiotik lebih dari satu.

Abstract

Masa remaja adalah periode krusial dalam kehidupan yang ditandai dengan percepatan pertumbuhan dan perkembangan, sehingga kebutuhan gizi menjadi lebih tinggi. Namun, perubahan dalam gaya hidup dan pola makan yang tidak seimbang sering kali menyebabkan ketidaksesuaian antara kebutuhan gizi dan makanan yang dikonsumsi. Selain itu, durasi tidur juga berperan dalam memengaruhi proses metabolisme dan nafsu makan. Studi ini bertujuan untuk menilai keterkaitan antara lamanya tidur dan konsumsi energi dengan kondisi gizi pada siswa SMP Negeri 22 Surakarta. Penelitian ini menggunakan desain potong lintang dengan melibatkan 141 responden yang berusia antara 14 hingga 17 tahun, yang dipilih secara acak. Data diperoleh melalui wawancara dengan metode pengingat makanan selama 3 × 24 jam, pencatatan durasi tidur, serta pengukuran status gizi berdasarkan indeks massa tubuh menurut usia (IMT/U) menggunakan nilai z-score. Analisis mengenai hubungan dilaksanakan dengan menggunakan uji statistik Spearman Rank, yang menunjukkan bahwa tidak ada hubungan signifikan antara durasi tidur (p = 0,469) dan asupan energi (p = 0,112) terhadap status gizi. Sebagai kesimpulan, walaupun tidak terdapat hubungan yang signifikan, mayoritas siswa mengalami kekurangan energi serta kurang tidur yang dapat berpengaruh negatif terhadap konsentrasi dan kesehatan. Dengan demikian, sekolah harus menyelenggarakan program pendidikan dan pencegahan untuk membangun kebiasaan hidup sehat yang berkelanjutan.

Abstract

Pandemi COVID-19 berdampak signifikan pada tenaga masak di PCM Wonosari, memaksa banyak dari mereka untuk kembali ke desa dan memulai usaha kuliner sendiri. Melalui program pengabdian masyarakat, pelatihan diberikan untuk meningkatkan kualitas dan daya saing usaha kuliner lokal. Fokus pelatihan meliputi edukasi gizi, penerapan prinsip-prinsip hygiene dan sanitasi, serta pengembangan keterampilan kewirausahaan dan pemanfaatan teknologi digital dalam pemasaran. Hasil program menunjukkan peningkatan signifikan dalam keterampilan dan pengetahuan para pelaku usaha kuliner, yang berkontribusi pada peningkatan kualitas produk dan layanan. Dengan pendampingan berkelanjutan dan pemberian alat hygiene, usaha kuliner di PCM Wonosari diharapkan mampu bersaing di pasar yang lebih luas, meningkatkan kesehatan masyarakat, dan memajukan ekonomi lokal. Program ini menegaskan pentingnya kolaborasi antara akademisi, pemerintah, dan masyarakat dalam mengembangkan potensi ekonomi desa.

Abstract

Insulin resistance in Type 2 Diabetes Mellitus (T2DM) is indicated with high fasting blood glucose level, fasting insulin and HOMA-IR. The long-time consume of diabetes drugs would bring harm. Rosella can be used as a complementary drug to improve insulin resistance and prevent T2DM complications. This study seeks the effect of consuming Rosella on fasting blood glucose, fasting insulin and HOMAIR in T2DM patients.The study design used double-blinded & placebo-controlled randomized clinical trial with intervention (placebo and Rosella) for 8 weeks. The sample consisted of 52 T2DM outpatients at Health Office Yogyakarta City. Measurement of fasting blood glucose was conducted through GOD-PAP method, fasting insulin was measured by MEIA, HOMA-IR was calculated with HOMA Calculator 2.2.3 Version. Analysis of the influence of Rosella on fasting blood glucose, fasting insulin and HOMA-IR level in one group were tested with the Wilcoxon Signed Test and the effect between groups were tested through Mann Whitney with a significance level of 95%.Rosella consumption can reduce fasting blood glucose, fasting insulin and HOMA-IR levels. There was a significant effect of Rosella administration on decreasing fasting blood glucose level in T2DM patients (p=0.001) but there were no significant effect on decreasing fasting plasma insulin level and HOMA-IR levels (p=0.932 and p=0.368). Rosella can improve insulin resistance by reducing fasting blood glucose levels, fasting insulin levels and HOMA-IR values.

Abstract

The purpose of the research was to evaluate the physical characteristics and sensory of bread from the composite flours of wheat and cassava with optimum fermentation and the proportional water volume. The study was conducted by optimizing the fermentation of the dough and using the proportional water volume. The research was conducted with 4 treatments of composite wheat flour and cassava flour, which were 100: 0, 90:10, 80:20, and 70:30. The bread was then tested for the expansion, hardness, elasticity and sensory acceptance. The results indicated that the higher portion of cassava flour, the lower the expansion of bread. The highest expansion of bread was given by the 100: 0, which was 64.9 mm for 55 min fermentation. The highest hardness of bread was displayed by the 70:30, which was 3482.7 g for 75 min fermentation and 3372 g for 85 min fermentation, whereas, the lowest hardness of bread was shown by the 100:0, was 1355.3 g for 55 min fermentation. Variations of composite flour ratios of wheat and cassava flours affected the color, aroma, taste, texture and overall acceptance of bread. The composite flour 100:0 gave the highest overall sensory acceptance, followed by the 80:20.

Abstract

Stress management or coping strategies of stress are individual efforts to manage the emotional pressure they experience. One form of coping strategy that is often practiced is emotional eating, the behavior of overeating arising from emotional factors. This behavior can affect nutritional status. Therefore, this study aims to determine the relationship between stress levels and emotional eating with nutritional status in high school adolescents. This type of research is observational analytic with a quantitative approach and the research design used a cross-sectional study design. This study was conducted in two locations, namely SMA Muhammadiyah PK Kottabarat Surakarta and MAN 1 Surakarta, with a total of 154 respondents selected using a proportional random sampling technique. The instruments used included the Depression Anxiety Stress Scale for Youth (DASS-Y 21) and the Adult Eating Behavior Questionnaire (AEBQ) as well as anthropometric measurements. Data analysis was carried out univariately and bivariately using the Spearman Rank correlation test. The research findings show no significant relationship between stress levels and nutritional status (p-value = 0.629), and between emotional eating and nutritional status (p-value = 0.051). Therefore, it can be concluded that there is no statistically significant relationship between stress events and emotional eating behavior and nutritional status in high school adolescents. This is because stress factors and emotionally triggered eating behavior do not directly affect adolescents' nutritional status in this context. These findings demonstrate the importance of monitoring students' stress levels, which can influence emotional eating, which in turn can affect nutritional status.
