Abstract

Ale-ale are popular clams in the coastal area of Ketapang. The local community uses the clams as food, one of which is in the form of fermented products. In the fermentation process, the nutritional content of course will be different from fresh ale-ale because it has gone through the preservation process. One of the goals of processing it into fermented products is to increase the product's durability. Essential mineral contents (Fe, Mn, Zn) in fermented products is different and tends to decrease. Essential mineral testing used the Atomic Absorption Spectroscopy (AAS) method. The water content and ash content of fresh ale-ale were 63.1% and 15.8%, respectively. While the water content and ash content of the fermented ale-ale were 68.69% and 17.2%, respectively. The essential mineral contents of fresh ale-ale obtained Fe 23 mg/kg, Zn 1.70 mg/kg and Mn 0.138 mg/kg. In fermented ale-ale, the content of Fe is 9.76 mg/kg, Zn is 0.740 mg/kg and Mn is 0.387 mg/kg.

Abstract

The waters of Lemukutan Island have the potential of natural resources, including seaweed. Since 2011, Lemukutan Island has been the largest seaweed cultivation center in West Kalimantan. However, the Covid-19 pandemic has attacked all sectors and caused a decline in prices for fishery-based food commodities. This condition causes the farmers to suffer losses and the seaweed cultivation activity also decreases. Training on making snacks and seaweed jelly boba has been carried out to revive the economy of the coastal communities of Lemukutan Island. This activity involves all levels of the community through representatives of each RT using a hybrid method. Training is carried out with strict health protocols. This activity aims to improve the skills of coastal communities in processing seaweed-based foods. The training participants were very enthusiastic, from the presentation about the benefits of consuming seaweed for human health to the practice of making seaweed snacks and jelly. ===== Perairan Pulau Lemukutan memiliki potensi sumber daya alam yang melimpah termasuk rumput laut. Sejak 2011, Pulau Lemukutan menjadi sentra usaha budi daya rumput laut terbesar di Kalimantan Barat. Namun, pandemi Covid-19 telah menyerang semua sektor kehidupan dan menyebabkan kemerosotan harga pada komoditas pangan berbasis perikanan. Kondisi ini mengakibatkan pembudi daya mengalami kerugian dan usaha budi daya rumput laut di Pulau Lemukutan juga menurun. Pelatihan pembuatan snack krenyes dan jelly boba rumput laut telah dilaksanakan untuk menumbuhkan kembali perekonomian masyarakat pesisir Pulau Lemukutan. Kegiatan ini melibatkan seluruh lapisan masyarakat Pulau Lemukutan melalui perwakilan tiap RT dengan metode hibrid. Pelatihan dilaksanakan dengan protokol kesehatan yang tegas. Kegiatan ini bertujuan untuk meningkatkan keterampilan masyarakat pesisir dalam mengolah makanan berbasis rumput laut. Peserta pelatihan sangat antusias mengikuti kegiatan, mulai dari pemaparan materi tentang manfaat dari mengonsumsi rumput laut bagi kesehatan manusia hingga praktik pembuatan snack dan jelly rumput laut.

Abstract

Acaudina molpadioides was found along the coast of Paloh, Sambas Regency, West Kalimantan in recent months. This sea cucumber known as one of the typical foods of the coastal community of Karimun. This species has similarities with Paracaudina sp. belonging to the Caudinidae family. Proximate content, essential minerals and heavy metal contamination have never been carried out on A. molpadioides from Paloh waters. Nutrition in this biota will varies in different places. It is due to different environmental influences in terms of physical and chemical parameters. Proximate analysis were carried out. They were content of water, ash, protein and fat. The essential minerals analyzed from the samples were zinc (Zn), copper (Cu), iron (Fe) and manganese (Mn) using Atomic Absorption Spectrophotometer (AAS). Heavy metal contamination of Pb and Cd was also measured by AAS. Moisture, ash, fat and protein content of A. molpadioides were 36.23%; 7.61%; 0.004% and 3.35% respectively. The essential minerals detected in A. molpadioides were Zn (0.054 ppm), Fe (3.35 ppm) and Mn (0.150). Heavy metal contamination of Pb and Cd was not detected from A. molpadioides samples.

Abstract

Tembakul or mudskipper has the ability to adapt the condition of tidal area trough walking on the mud. The purpose of this research, wich held on February – March 2019 at Pasir Village Mempawah Regency, are to found out the species of tembakul on that area, with its abundance and the characteristic of its habitat. Sample taken from 3 sampling sites wich determinated by purposive method with the help of net for caught tool. The result of this research found 3 species of mudskipper, i.e Boleophthalmus boddarti, Periophthalmus schlosseri and P. chrysospilos. P. Schlosseri had the highest abundance (0,82 Ind/m²), followed by B. Boddarti 0,74 Ind/m² and P. Chrysospilos (0,52 Ind/m²). Site I had the highest abundance of mudskippers (0,94 Ind/m²), while site II was the lowest (0,53 Ind/m²). Based on the regression analysis of enviromental actors of its habitat, salinity had the big impact for mudskipper.

Abstract

Mangrove are plants that can survive in extreme areas with high salinity levels and have an important role for marine organisms. Mangrove are also a parameters that can absorb carbon much higher than other forest types. The purpose of this research was to observe mangrove community structures. This research was conducted from February to March 2020 in the mangrove ecosystem of Setapuk Besar Village. This research was conducted using purposive sampling method which is based on different environmental hues. The results showed that there were 4 types, namely Avicennia marina, Avicennia lanata, Rhizopora stylosa and Rhizopora mucronata. Species of A. marina at tree level have a density value of 66.55 Ind / ha and an Importance Value Index of 300%. Type A. marina at seedling level has a density value of 6266.66 Ind / Ha and an Importance Value Index of 200%. Seedling rate: The highest Importance Value Index for R. stylosa was 127.53%

Abstract

Caulerpa racemosa belongs to Chlorophyceae grow abundantly along Indonesian waters, including Kabung Island, West Kalimantan. This species has important role and is able to synthesize a wide range of bioactive compounds that are potential to be developed. However, their existence have not been used optimally. This study aims to determine the bioactive compound and evaluate total phenol contents in methanol and ethyl acetate of C. racemosa from Kabung Island. The methods in this study were maceration, phytochemicals, and Folin-Ciocalteau using Atomic Absorption Spectroscopy (AAS). The result showed that methanol and ethyl acetate extracts of C. racemosa contained alkaloids, flavonoids, saponins, phenols, and tannins. Thus, the total phenol content in ethyl acetate extracts was 0.077817 mgGAE/g while in methanol extract was 0.05682 mgGAE/g, respectively. This value was classified as low category.

Abstract

Kepah shells have important economic value and are widely used as food ingredients because they contain high nutritional content. Heavy metals that enter the waters will generally be accumulated in sediments and absorbed by biota. As filter feeder, Kepah accumulate heavy metals from the environment that toxic to humans. This study aimed to determine the effect of cooking methods on the concentration of lead (Pb) in Kepah shell. The measurement of Pb content was conducted according to SNI 2345.5-2011 by Atomic Absorption Spectrophotometer (AAS). Result showed that different cooking methods influenced the Pb content in Kepah shells. Frying and boiling processes reduced the Pb concentration of 46.34% and 31.48%, respectively. According to the result, frying suggested as the best cooking method to provide healthful food for consumption.

Abstract

Caulerpa is a green macroalgae found on Lemukutan Island, West Kalimantan. Caulerpa contains bioactive compounds that have potential to inhibit the alpha-glucosidase enzyme for people with diabetes mellitus. Inhibition of the alpha-glucosidase enzyme will have an impact on delaying glucose absorption. In addition, it is necessary to carry out a toxicity test to detect toxic effects and assess safety in the use of compounds. Therefore, the purpose of this study was to determine the inhibitory activity of the alpha-glucosidase enzyme and the toxicity of the ethanolic extract of Caulerpa seaweed in Lemukutan Island waters. Identification of secondary metabolites was determined from phytochemical tests. Inhibitory activity of the alpha-glucosidase enzyme determined by using enzymatic reactions, while the toxicity by method of BSLT. The showed that the percentage yield of Caulerpa ethanol extract was 3.66%. The content of bioactive compounds in the ethanolic extract of Caulerpa contains positive alkaloids, flavonoids, saponins, tannins, steroids, and phenolics. The inhibitory of the alpha-glucosidase enzyme had the highest percentage of inhibition with a concentration of 300 ppm indicating a percent inhibition of 16.85%. Toxicity obtained LC50 value of 598.19 ppm which is classified as low toxic.

Abstract

Naturally, the human body has tolerance to free radical attacks. However, the natural antioxidant ability will decrease when exposure to free radicals from within and outside the body occurs intensively. Antioxidants play potential preventive role to protect the body from damage associated with oxidative stress by free radicals. One of the potential marine resources used as an antioxidant is macroalgae. Turbinaria is widely distributed in tropical waters of Indonesia, including West Kalimantan. This genus produces secondary metabolites with several biological activities. This genus abundantly grows in Kabung Island. However, it has not been used by the local community, even tends to be considered as a weed that disturbs others marine biota. This study aimed to evaluate the potential antioxidant activity of tropical brown macroalgae Turbinaria ethanol extract from Kabung Island, West Kalimantan. antioxidant activity was evaluated using the DPPH (1,1-diphenyl-2-picrylhydrazyl) free radical scavenger method with UV-vis spectrophotometer. The result showed that the ethanolic extract had a high of potential antioxidant activity which IC50 was 87.31 mg/L and it was classified into strong antioxidant potential.

Abstract

Lemukutan Island in West Kalimantan has marine natural resources with a high level of diversity such as seagrass, coral reefs, macroalgae, and gastropods. Gastropods are one of the largest Mollusc phylum groups that are abundant in the waters of Lemukutan Island. Several types of gastropods have been reported to have high economic value and high nutritional content as well as macro minerals such as Na, Ca, K, F, and P. Therefore, these biota are more widely used as food. This study aims to analyze the proximate and mineral content of gastropods (Lambis and Monetaria) from the waters of Lemukutan Island. The moisture content and ash content of the sample were determined by the gravimetric method. The results of the study found that macro mineral content was determined in Lambis and Monetaria by Atomic Absorption Spectrophotometer (AAS). The protein content in both types of gastropods is quite high. Monetaria has a higher protein content (63.69%) than Lambis (50.06%). However, the fat content in Lambis is 1.88% and Monetaria is 1.14%. The highest mineral content of these two types of gastropods is iron (Fe). Lambis and Monetaria have Fe content of 0.2762 mg/kg and 0.1818 mg/kg, respectively.
