Abstract

Tujuan penelitian ini adalah untuk mengevaluasi pengaruh penambahan tepung rebung terhadap kualitas mie instan yang dihasilkan, untuk mengetahui pengaruh penambahan tepung rebung terhadap mutu hedonik mie instan produksi. Jenis penelitian ini bersifat eksperimen menggunakan pola rancangan acak lengkap (RAL) karena bahan percobaan menggunakan satu variabel. Perlakuan terdiri dari penambahan tepung rebung betung 0% (kontrol), 11%, 22%, dan 33%. Variabel pengamatan antara lain kadar air, kadar abu, kadar protein, kadar serat, dan uji hedonik terdiri dari warna, rasa, aroma dan tekstur. Hasil penelitian menunjukkan Penambahan tepung rebung dengan berbagai konsentrasi memberikan pengaruh nyata terhadap kadar air, kadar abu, kadar protein, serat mie, terhadap mutu hedonik pada mie instan yang dihasilkan. Penambahan tepung rebung 22% merupakan perlakuan terbaik, mie instan pada parameter kadar air 8,29%, kadar abu 2,43%, kadar serat 3,25%. Penambahan tepung rebung memberikan pengaruh nyata terhadap mutu hedonik mie instan yang dihasilkan. Penambahan tepung rebung 22% merupakan perlakuan yang disukai panelis, baik dari segi warna, rasa, aroma dan tekstur. Sedangkan pada parameter warna panelis lebih menyukai perlakuan 22% dan pada parameter tekstur panelis menyukai perlakuan kontrol.

Abstract

This research aims to identify the influence of SETS (Science, Environment, Technology, and Society) based e-modules in increasing scientific literacy using the discovery learning learning model. This research uses a quantitative approach with a quasi-experimental design in the form of a Nonequivalent Control Group Design. How to apply the sample using the Purposive Sampling technique where a total of 32 students were obtained consisting of 16 students in classes X1 and X2 as the control and experimental classes. The results showed that the average pretest score obtained by students in the experimental class was 29.68 and the average posttest score was 84.06, while in the control class the average pretest score obtained by students was 30.62 and the average score the posttest average was 69.68. Based on statistical test data using the independent sample test in SPSS Version 25, the results obtained were sig (2-tailed) 0.002 < significance 0.05, meaning that H0 was rejected and Ha was accepted. Where H0 is that there is no influence of SETS-based e-modules on students' scientific literacy and Ha is that there is an influence of SETS-based e-modules on students' scientific literacy.

Abstract

This narrative study explores the transformation of culinary arts practicum learning post-pandemic from the perspectives of lecturers and students. The COVID-19 pandemic forced a sudden shift from face-to-face to online learning, particularly challenging for practicum-based courses like culinary arts. This qualitative research employed narrative inquiry design, involving 4-6 lecturers and 6-8 students as participants selected through purposive sampling. Data were collected through in-depth interviews and documentation, then analyzed using thematic analysis. The findings reveal several major themes: initial shock and unpreparedness, innovation within limitations, changing roles of educators, continuous transformation, and the development of adaptability and resilience. Lecturers demonstrated creativity in adapting demonstration methods through technology, while students developed self-directed learning skills despite limited facilities. Post-pandemic, practicum learning has transformed into a hybrid model integrating technology with hands-on practice. This research contributes to understanding adaptive learning in higher education and provides recommendations for developing effective practicum curriculum in the post-pandemic era.

Abstract

This study provides a comprehensive bibliometric review of how signaling theory has been applied in sustainability research during the period 2015–2025. Although signaling theory has been widely used to explain how firms reduce information asymmetry through sustainability communication, its rapid expansion has led to conceptual fragmentation. To address this issue, the study analyzes Scopus-indexed publications using VOSviewer to map scientific production, influential authors, collaborative networks, co-citation patterns, and keyword clusters. The results show a significant growth of sustainability-related signaling studies, with strong contributions from the United States, China, and several European countries, reflecting a globally interconnected research landscape. Citation networks highlight foundational works on sustainability reporting, legitimacy, greenwashing, and environmental performance as core theoretical anchors. Keyword co-occurrence analysis reveals that signaling theory is increasingly integrated with themes such as ESG disclosure, CSR, corporate governance, environmental values, consumer behavior, and green innovation, indicating a broad and interdisciplinary application of sustainability signals. However, the findings also show persistent inconsistencies in how signals are conceptualized, particularly regarding the credibility and authenticity of sustainability disclosures. Overall, this study offers an updated intellectual mapping of the field, clarifies dominant theoretical patterns, and identifies conceptual gaps. Future research is encouraged to strengthen theoretical integration, expand focus on emerging markets, and explore new forms of digital and AI-driven sustainability signaling.

Abstract

Indonesia memiliki kawasan perairan yang sangat luas yang merupakan potensi sumber daya yang besar untuk bisa dimanfaatkan bagi pembangunan nasional. Tujuan penelitian ini yaitu Untuk mengetahui pengaruh harga terhadap pendapatan nelayan, pengaruh pengalaman kerja terhadap pendapatan nelayan, pengaruh biaya produksi terhadap pendapatan nelayan dan pengaruh harga, pengalaman kerja dan biaya produksi terhadap pendapatan nelayan di Desa Pulau Kerayaan Kecamatan Pulau Laut Kepulauan Kabupaten Kotabaru. Penelitian ini merupakan penelitian kuantitatif dengan pendekatan regresi linier berganda. populasi dalam penelitian ini adalah seluruh masyarakat nelayan di desa pulau kerayaan dengan berjumlah 60 responden. Sampel dalam penelitian ini menggunakan analisis multivariate dengan korelasi atau regresi berganda sehingga jumlah anggota sampel diambil berjumlah 45. Metode analisis data yang digunakan berupa Uji Validitas, Uji Reliabilitas, Uji Statistik, Uji Asumsi Klasik (Normalitas, Multikolinieritas, dan Heteroskedastisitas), Uji Linieritas, Uji Regresi Linier Berganda, dan Uji Hipotesis (Uji Determinasi, Uji t, dan Uji F). Untuk mempermudah proses analisis data penelitian ini maka dibantu dengan program SPSS versi 25. Hasil penelitian ini menyatakan bahwa terdapat pengaruh harga terhadap pendapatan nelayan di Desa Pulau Kerayaan Kecamatan Pulau Laut Kepulauan Kabupaten Kotabaru. Terdapat pengaruh pengalaman kerja terhadap pendapatan nelayan di Desa Pulau Kerayaan Kecamatan Pulau Laut Kepulauan Kabupaten Kotabaru. Tidak Terdapat pengaruh biaya produksi terhadap pendapatan nelayan di Desa Pulau Kerayaan Kecamatan Pulau Laut Kepulauan Kabupaten Kotabaru. Dan Terdapat pengaruh harga, pengalaman kerja terhadap pendapatan nelayan di Desa Pulau Kerayaan Kecamatan Pulau Laut Kepulauan Kabupaten Kotabaru.

Abstract

This study aims to analyze the Islamic legal aspects of Sharia-compliant investments in the digital era, highlighting the challenges and opportunities in applying Sharia principles amidst rapidly evolving technologies. Digital transformation has fundamentally changed the investment landscape, creating an urgent need for regulatory adaptation that can accommodate technological innovation without compromising adherence to Sharia principles. The research employs a qualitative approach with a focus on comprehensive document analysis, reviewing academic literature, legal regulations and policies, Islamic scholar fatwas, and current research reports. The findings indicate that while technologies such as blockchain, smart contracts, and digital investment platforms offer tremendous potential to enhance transparency, efficiency, and accessibility in Sharia-compliant investments, significant challenges remain that require serious attention. These challenges include adaptive regulatory adjustments, strengthening consumer protection systems, international legal harmonization, and improving digital and Sharia literacy among investors. This study contributes to the development of more adaptive and inclusive regulatory frameworks for Sharia-compliant investments and underscores the urgency of comprehensive education and international collaboration in addressing the complexities of digital Sharia-compliant investment issues in the future.

Abstract

Introduction: Fall risk is a major geriatric concern linked to age-related gait instability. Changes in gait parameters, such as step length, step width, and walking speed, reflect neuromuscular decline and increase instability. While international evidence supports this association, local data among community-dwelling older adults in Tabanan Regency, Bali, remain limited. This study aimed to examine the association between gait parameters and fall risk.Methods: This cross-sectional observational study included 119 community-dwelling adults aged 60–79 years. Gait parameters, including step length, step width, and walking speed, were assessed using the 10-meter walk test, and fall risk was measured using the Timed Up and Go (TUG) test. Chi-square tests were used for bivariate analysis, and binary logistic regression was used to identify independent predictors.Results: A total of 36.1% of participants were classified as at risk of falling. Bivariate analysis showed significant associations between fall risk and step length (p = 0.050), step width (p = 0.006), walking speed (p < 0.001), and age (p < 0.001). Multivariate analysis identified walking speed (AOR = 0.150; p = 0.005), leg-length symmetry (AOR = 0.292; p = 0.026), and step width (AOR = 0.345; p = 0.038) as independent predictors. Step length was excluded from the multivariate analysis due to complete separation in the data.Conclusion: Walking speed, step width, and leg-length symmetry were independent predictors of fall risk. These findings support the use of simple gait assessments for early fall risk screening in community and primary care settings.
